    • 1 kg chicken drumsticks
    • 1 kg basmati rice
    • 1 cup yogurt
    • 1/2 cup oil or ghee
    • 4 green chilies
    • 2 onions, thinly sliced
    • 3 tomatoes, chopped
    • 2 cardamom
    • 2 bay beaves
    • 2 cloves
    • 1 inch cinnamon stick
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon red pepper, crushed
    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander powder
    • salt to taste
    • a pinch of Yellow food color

    For Garnishing:

    • few mint leaves
    • fresh coriander leaves
    • lemon wedges

    Directions:

    Step 1

    Soak rice in water for 25-30 minutes.

    Step 2

    Heat oil in a large skillet over medium heat. Add onion and fry for 5 minutes or until golden brown.

    Step 3

    Remove half of the brown onion and set aside.

    Step 4

    Add ginger garlic paste, cumin seeds, bay leaf, cinnamon stick, cardamom, and cloves. Coof for 1 minute or until cook until aroma comes out.

    Step 5

    Now add chicken drumsticks and fry for 10 minutes or until all water dries up.

    Step 6

    Now add tomatoes, red pepper, corainder powder and salt.

    Step 7

    Cover and cook for 5 minutes then add yogurt.

    Step 8

    Cover and cook on low flame for 10 minutes or until chicken is tender and gravey is thickened.

    Step 9

    Keep aside.

    Step 10

    Meanwhile, separately boil rice with a little salt and drain.

    Step 11

    Divide rice into 3 portions. Layer one portion of rice in a large pot

    Step 12

    Spread half of the chicken mixture over it.

    Step 13

    Cover with 2nd portion of the rice and again spread remaining chicken mixture.

    Step 14

    Again cover with reamining rice

    Step 15

    Sprinkle brown onion over the rice.

    Step 16

    Garnish with green chilies, mint leaves and corainder leaves.

    Dissolve yellow color in little water.

    Step 18

    Drizzle yellow color over it.

    Step 19

    Cover the pot and let it simmer for 10-12 minutes or until done.

    Ingredients

    • 500 gm rice, boiled
    • 500 gm boneless chicken, cut into 2 inch pieces
    • 2 potatoes, peeled, cut into medium size
    • 2 onions, thinly sliced
    • 1 cup plain yogurt
    • 1/2 cup cooking oil
    • 4 green chilies, thinly sliced
    • 4 star anise
    • 4 green cardamom
    • 4 tbsp lemon juice
    • 1 tbsp ginger garlic paste
    • 2 tsp red chili powder
    • 1 tsp cumin seeds
    • 1 tsp allspice
    • 1 tsp screw pine essence
    • 1/2 tsp turmeric powder
    • 1/2 tsp yellow food color, dissolve in 2 tbsp milk
    • salt according to taste
    • 1/2 bunch fresh mint, chopped
    • 1/2 bunch fresh coriander, chopped
    • 1 piece of coal

     

    Directions:

    1. Heat oil in a large skillet over medium heat.
    2. Fry potatoes in hot oil for 5-8 minutes or until golden.
    3. Take it from the oil and keep aside.
    4. In the remaining oil , fry sliced onion for 5 minutes or until golden brown.
    5. Now add ginger garlic paste and cook for 30 seconds.
    6. Then put chicken in it.
    7. Stir fry for 5 minutes or until its change color.
    8. Now add allspice powder, red Chilli powder, turmeric, salt, green cardamom, star anise and cumin seeds.
    9. Cover and cook for 10 minutes on medium heat.
    10. In a bowl, whisk yogurt with mint and coriander, green chilies, sliced tomatoes and fried potatoes.
    11. Mix well.
    12. Spread this yogurt paste on top of the chicken.
    13. Cook for 10-15 minutes or until all water dries up and chicken is tender.
    14. Layer the boiled rice over it.
    15. Drizzle screw pine essence and food color on top.
    16. Cover and cook on low heat for 10-15 minutes.
    17. Place a inflamed piece of coal in a small cup.
    18. Put it on top of cooked Biryani.
    19. Drizzle 2 tbsp oil on coal.
    20. Cover tightly with a lid and leave it for 5 minutes.
    21. Remove coal from the skillet.
    22. Transfer Biryani in a serving dish.
    23. Garnish with mint leaves.
    24. BBQ Biryani is ready to serve. ENJOY!!

    Step 1

    Marinate the chicken with curd, red chilli powder,coriander powder, turmeric powder and salt for 1hour.

    Step 2

    Cook the basmati rice with salt, till half done and drain the water and keep it aside.

    Step 3

    Soak the saffron strands in1 tbsp warm milk and keep it aside.

    Step 4

    Take a pan and heat with ghee.

    Step 5

    Add cashew nuts, bay leaf, cardamom, cinnamon and cloves; Saute for few minutes.

    Step 6

    Then add marinated chicken pieces and garam masala. Mix well and fry well till the yogurt is absorbed.

    Step 7

    Add enough water and cook till the chicken pieces are tender.

    Step 8

    Now divide the cooked rice into two portions. Mix saffron milk with one portion of rice.

    Step 9

    Add half of the chicken gravy to it.

    Step 10

    Sprinkle half of the mint and coriander leaves.

    Step 11

    Cover with cooked basmati rice and remaining chicken gravy and remaining coriander and mint leaves.

    Step 12

    Now cover with a lid and cook on low flame for 30
    minutes. Then Remove from the heat. Kashmir Chicken Biryani is ready to eat.

    In a shallow saucepan heat ghee I oil and fry onions till golden brown.

    Step 2

    Add 3 tsp ginger I garlic paste. Fry and then add tomato puree and seasonings.

    Stir till tomatoes become soft and oil separates from the gravy.

    Step 4

    Turn up the heat, add chicken and mix well. Cover the pan and simmer on low heat till chicken is cooked and tender.

    Step 5

    In another saucepan, heat butter or oil and fry cumin seeds, coconut powder and sesame seeds on low heat till light brown.

    Step 6

    Pour over the chicken gravy and stir to mix.

    Step 7

    Grease a large pan with ghee / oil. Put a thin layer of chicken topped with a thick layer of rice and sprinkle onion rings, green chillies, mint and coriander leaves and garam masala powder.

    Step 8

    Repeat with a thick layer of chicken and a layer of remaining rice.

    Step 9

    Sprinkle with onion rings, green chillies, garam masala powder, coriander and mint leaves.

    Step 10

    Heat 4 tbsp of oil or desi ghee and pour over the rice. Cover and leave on very low heat for 10 minutes. Dum Pukht Biryani is ready to serve.

    Step 1

    Take a large pot and pour the three cups water. Then add the rice, half of all the spices and salt. Mix it well and cook till the rice is half cooked.

    Step 2

    Drain the water completely and spread out the rice on a big platter.
    Let it cool.

    Finely chop the onions and slit the green chilly in the center and keep them aside.

    Step 4

    Now in another pan heat the clarified butter. When the ghee begins bubbling add the remaining spices and sauté till an aroma begins to rise.

    Step 5

    Now put in the chopped onions and sauté till golden brown. Add the chicken pieces, masala powders, green chilly, coriander leaves, ginger-garlic, salt and sugar.

    Step 6

    Pour in the hot water. Mix it well and cover, simmer and cook for 20 minutes or till the chicken is soft.

    Step 7

    Then pour the yoghurt and cook till the gravy reaches your desired level of thickness.

    Step 8

    Now take a big pot and smear it’s inside walls with melted ghee/butter.

    Step 9

    Then put a layer of rice, then a layer of chicken. In this way put in all the rice and chicken in layers.

    Step 10

    Cover with a lid.

    Step 11

    Now make some dough from wheat flour and with that dough seal the edges of the pan so that its air tight.

    Step 12

    Then take a tava and place it on the flame. Keep this sealed pot over it so that it’s not directly on the fire.

    Step 13

    Cook for another 25 minutes on a low flame till the rice is ready.

    Step 14

    Garnish with fried cashew nuts and fried onion slices. Ahmedi Biryani is ready to serve.

    • 500 gm boneless skinless chicken, cut into 2 inch pieces

    • 1 piece of nutmeg
    • 1 pinch of saffron
    • 2 piece mace
    • 6 green chilies
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon kewra
    • 1 teaspoon black cumin seeds
    • 1 teaspoon black pepper
    • 1/2 teaspoon badyaan flower powder
    • 1/2 teaspoon yellow food color
    • salt according to taste

     

    Directions:

    Step 1

    Heat ghee or clarified butter in a large pot.

    Step 2

    Add ginger garlic paste, bay leaves, black cumin, nutmeg and mace. Cook for 1 minute then add boneless chicken and cook until all juices run clear.

    Step 3

    Add chicken stock salt and green chilies. Cover with a lid and simmer for 10 minutes or until chicken is tender.

    Step 4

    Now Layer boiled rice, badyaan flower powder, kewra, saffron, mint and yellow color. Tightly cover the pot and simmer for 10-15 minutes on low flame.

    Step 5

    Turn the stove off. Take it out in a dish. Delicious Boneless plain biryani is ready to serve. ENJOY!!

    • 6 dried plums
    • 1 star anise
    • 1 cinnamon stick

    • 1 teaspoon black peppers
    • 1 teaspoon salt
    • 1/2 teaspoon yellow food color
    • Few drops biryani essence

    Instructions

    Directions

    • Rinse rice with few changes of water and soak for 30 minutes.
    • Then boiled rice and drain all excess water. Set aside
    • Place chicken in a large bowl. Add yogurt, black cumin, black pepper, hot spices powder, plums, red pepper powder, star anise, cinnamon stick, ginger garlic paste, and few drops of biryani essence.
    • Mix well and marinate for 30 minutes.
    • Heat oil in a cooking pot. Fry potatoes for 10-12 minutes.Remove from the oil and keep aside.
    • Now add marinated chicken. Cover and let it simmer for 20 minutes or until chicken is tender.
    • Add potatoes and cook for 5-8 minutes or until tender.
    • Now take a heavy bottom skillet, layer rice, chicken masala, fried onions, mint leaves, green chilies, yellow color and boiled eggs.
    • Cover the skillet and cook on low flame for 20 minutes or until done.
    • Stir well and dish it out. Egg and Chicken Biryani is ready to serve.

    Step 1

    Heat oil in a deep pan over medium high heat. Add onions and cook until lightly browned.

    Step 2

    Remove half of the onions and place on absorbent paper.
    Set aside.

    Step 3

    Now add chicken, all of the spices. Cook and stir for 10 minutes or until chicken is no longer pink.

    Step 4

    Add yogurt. Cover and cook on low heat until all water evaporates and chicken is tender.

    Step 5

    Now add tomatoes, potatoes, dried plum and green chillies. Stir and cook on high heat for 5 minutes until done.

    Step 6

    Boil rice with whole spices then strain.

    Step 7

    Now take a large pot, layer rice and chicken curry one by one with a last layer of rice on top.

    Step 8

    Sprinkle with mint leaves and green chilies. Drizzle food color over the rice.

    Put pot on a griddle( tawa) and cook on high heat for 5 minutes or until steam appears.

    • 3 pounds boneless chicken, cut into chunks
    • 4 potatoes, peeled and cut into half
    • 2 onions, finely chopped
    • 2 tomatoes, peeled and finely chopped
    • 2 cloves garlic, minced
    • 4 tbsp vegetable oil
    • 2 tbsp plain yogurt
    • 2 tbsp chopped fresh mint leaves
    • 1 tbsp minced fresh ginger root
    • 1 tsp salt
    • 1 tsp cumin powder
    • 1/2 tsp red chili powder
    • 1/2 tsp black pepper
    • 1/2 tsp turmeric powder

    • 1 (about 2-in) piece cinnamon stick

    • 5 pods cardamom

    Step 1

    To Make Chicken Masala:

    Heat 2 tablespoons vegetable oil in a large skillet over medium high heat. Add potatoes and fry until lightly browned. Take it out in a plate and keep aside.
    Step 2

    Heat remaining oil over high heat. Add onion, garlic and ginger. Cook and stir for 3-4 minutes or until onions turn golden. Season with red chili, pepper, turmeric, cumin, salt. Stir in the tomatoes.

    Step 3

    Cover and simmer for 5 minutes or until tomatoes are soft. Add yogurt, cardamom and cinnamon stick. Cover and simmer for 15 minutes or until all water dries up.

    Step 4

    Place chicken into the skillet. Stir chicken to coat evenly with the spice mixture. Cover and cook for 35 minutes or until the chicken is tender. Remove the lid, and cook on high heat for 3-4 minutes or until gravy is thickened.

    Step 5

    To Make Rice

    Wash rice with few changes of water and soak for 30 minutes. Drain. Heat the chicken stock and salt in a medium-size pot. Meanwhile, heat ghee in a large skillet over medium heat. Add onions and fry until golden brown. Add saffron, ginger, cardamom and cloves. Stir in rice and cinnamon stick. Stir until the rice is coated with the spices.
    Step 6

    Pour hot stock-mixture over the rice. Stir well. Bring to boil. Cover and simmer for 15 minutes. Then add chicken mixture and potatoes. Gently stir them into the rice. Turn heat to low and cook 10 minutes longer or until rice are fluffy.

    Step 7

    Do not lift lid and stir while cooking. Transfer into a serving dish. Chicken Biryani is ready to serve. ENJOY!!

    • 4 onions, thinly sliced

    • 3 medium tomatoes, chopped
    • 6 green chilies, thinly sliced
    • 1/2 cup plain yogurt
    • 1/2 cup chopped mint and coriander leaves
    • 4 tablespoon oil or clarified butter
    • 1 tablespoon ginger garlic paste
    • 1 teaspoon black cumin
    • 2 pinch of yellow food color
    • oil as required

    Step 1

    Place chicken in a large mixing bowl.

    Step 2

    Add ginger garlic paste, vinegar, yogurt,tikka masala, salt, red chilli,cumin powder in it. Stir to coat evenly. Cover and marinate for 1 hour.

    Preheat oven on 150 degree C. Light grease a baking dish with cooking oil.

    Step 4

    Arrange chicken in the greased baking dish. Bake for 25 minutes or until the chicken tenders and lightly golden.

    Step 5

    Meanwhile, heat oil in a large pan. Add onion and cook for 4-5 minutes or golden brown.

    Step 6

    Add ginger garlic paste , chicken cubes and tomatoes. Cover the pan and cook on low flame for 10 minutes or until tomatoes become soft.

    Step 7

    Add potatoes, green chilies, yogurt. Stir well. Cook 10 minutes longer or until potatoes are tender. Now stir in the sindhi biryani masala. Mix well. Turn the heat off and set aside.

    Step 8

    Layer boiled rice , food colour, chicken curry,coriander and mint leaves. Repeat again this procedure.

    Step 9

    Sprinkle black cumin and brown onion on the top. Drizzle with 4 tablespoon oil.

    Step 10

    Put the lid on and let it cook for 15 minutes on very low flame.

    Step 11

    Stir in the way that some rice are white and some yellow and some are orange. Dish it out. Delicious Tikka Biryani is ready to serve.

    Heat remaining 1/4 cup ghee and fry onion slices till brown and crisp. Drain and keep aside.

    Step 8

    In a large pan, put a layer of rice.

    Top with a few fried onion slices and saffron strands then add a layer of chicken.

    Step 10

    Repeat till all rice and chicken pieces are over.

    Step 11

    Cover tightly and finish cooking by placing the pan on a hot griddle till each grain of rice is fluffy and the biryani is aromatic.

    Step 12

    Dish it out. Garnish with almonds and mint leaves. Nawabi biryani is ready to serve.
    Serve hot.
