    Step 1

    Heat oil in a pan,add cumin seeds. Add green peas, ginger and green chillies. Mix well.

    When green peas are cooked, add coriander powder, red chilli powder, chat masala and salt, mix well.

    Add coriander leaves and mix well.

    Prepare the dough. Put 2 tbsp oil, flour and water in a bowl. Knead well and make dough, roll lengthwise.

    Make small round balls out of this make for chapatis.

    Roll out on a lightly floured board till about 6 inches in diameter.

    Put 2 tsp of the above prepared stuffing in the center. Close and give shape of a potli. Repeat for all the balls of dough.

    Wash the mutton liver pieces thoroughly in lukewarm water.

    Heat oil in a karahi. Add ginger and garlic. Saute for 1 to 2 minutes till they are nicely browned.

    Add onions and fry for 3 to 4 minutes on high flame to turn them reddish-brown.

    Pour a little water to form smooth paste and stir fry. Add the marinated liver pieces and green chilies. Stir well.

    Cook the liver pieces for 10 to 15 minutes on low flame or until tender.

    Take it out in a dish. Garnish with chopped coriander leaves. Mutton kaleji is ready to serve.

    Ingredients

    • 500 gm dates remove seeds
    • 2 cups milks
    • 1/4 cup desi ghee
    • 1/4 teaspoon cardamom powder elaichi
    • 1/2 cup Pistachio
    • 1/2 cup Almond grinds

    Instructions

    • Dates should be fresh and big in size.
    • Wash them and pick out there seeds.
    • Boil dates with the milk.
    • Now mash the dates.
    • Heat ghee in a separate pan. Add cardamon powder, pistachios and almonds.
    • Fry for few seconds then pour over the dates mixture.
    • Fry it well.
    • When all water’s get dry, remove from the heats.
    • Dish it out. Garnish with almonds and pistachios.Dates Halwa is ready to serve. Enjoy.

    Step 1

    Heat oil in a heavy based sauce pan. Add onions and stirring frequently, fry for 8-10 minutes to a light golden color.

    Step 2

    Remove onions from oil and fry the whole chillies just for a moment, otherwise they will burn.

    Step 3

    Reserve the oil and put the onions and whole chillies in a chopper or food processor and blend to a smooth paste without using water.

    Step 4

    Thoroughly wash the mince and squeeze out any water.

    Step 5

    Put the mince in a bowl. Add onion paste, ginger paste, salt, garam masala and yogurt. Knead the mixture really well for a few minutes with your hands until it is smooth.

    Step 6

    Cover and leave to marinate at room temperature for about 3-4 hours or overnight in the refrigerator.

    Step 7

    One hour before cooking mix in the ground papaya.

    Step 8

    Put the charcoal over medium flame, wait until the coal is fully red and is covered by white ash.

    Step 9

    Meanwhile place the mince in a metal pan. Make a well in the center. Put a small piece of aluminum foil in it. Place the burned coal over it and put 2-3 drops of oil on it.

    Step 10

    Cover it at once with a tight fitting lid and put aside for 20-25 minutes. Take out 1/2 cup of oil from the reserved oil.

    Step 11

    Reheat the oil in a heavy based pan. Discard the charcoal and fry the mince over low heat for 4-5 minutes.

    Step 12

    Cover with a tight fitting lid and cook for 15-20 minutes or until all excess moisture has absorbed.

    Step 13

    Transfer into a serving dish and decorate with onion ring, green chili and coriander leaves. Dam Ka Qeema is ready to serve. ENJOY!!

    Ingredients

    • 4 cups Refined flour
    • 1 tsp Salt
    • 4 tbsp Ghee
    • 2 tbsp Yoghurt
    • 1/2 cup Water, chilled
    • 2 – 3 Green chillies, deseeded, finely chopped
    • 1 tbsp Ginger , finely chopped
    • 300 gm Potatoes, boiled, mashed
    • 1 tsp Coriander powder
    • 1 tsp Cumin powder
    • 1/2 tsp Fennel , ground
    • 1 tsp Garam masala
    • a pinch Turmeric powder
    • 1 tbsp Lemon juice
    • 1 tsp Salt
    • 2 tbsp Green coriander , finely chopped
    • Vegetable oil for frying

    Directions:

    Step 1

    Mix the flour and salt in a mixing bowl. Add ghee, rub until fully incorporated and the mixture resembles coarse breadcrumbs.

    Step 2

    Add yoghurt and 6 tbsp chilled water; knead to make a smooth and pliable dough.

    Step 3

    Cover with plastic wrap and keep aside for half an hour.

    Step 4

    Combine the remaining ingredients except oil in a mixing bowl and knead with hands until well blended.

    Step 5

    Divide into 18 portions and keep aside.

    Step 6

    Divide the dough equally into 18 portions. Shape each portion into a patty. Cover with a damp towel or plastic wrap and set aside.

    Step 7

    Flatten each patty into a 2 1/2 inch. or 6.5 cm round.

    Step 8

    Place one portion of filling in the center of the dough, then bring the sides of the dough over the filling to enclose completely.

    Step 9

    Pinch the seams together until thoroughly sealed. Cover with a plastic wrap or a moist towel. Keep aside.

    Step 10

    Shape and stuff the remaining patties.

    Step 11

    Heat the oil in a wok till it starts smoking. Slip in a few patties (seam-side down) at a time.

    Step 12

    Fry until pale golden in colour and until they sound hollow when tapped. The crust should be delicately blistered and crisp. Drain excess oil. Hot Aloo Kachori is ready to serve.

    Place cabbage, paneer, coriander leaves, green chilies and salt in a mixing bowl. Mix well.

    Step 4

    Divide the filling mixture into five equal portions.

    Step 5

    Take another small bowl, add gram flour and 2 tsp of water. Mix well and make a  smooth paste. Set aside.

    Step 6

    Put the stuffing in the corner of the bread slice and roll the slice.

    Seal the edges of rolled slice with gram flour paste.

    Step 8

    Heat oil in a pan and deep fry the rolls until becomes golden color. Cabbage Paneer Roll is ready to serve.

    Step 1

    Crumble paneer and mix with milk blending both well with hands.

    Step 2

    Add sugar and knead it for few minutes.

    Step 3

    Heat this on a skillet in medium flame stirring constantly for 1 or 2 minutes till sugar melts completely.

    Remove from fire and allow it to cool.

    Step 5

    Mix fried nuts to this mixture and keep aside.

    Step 6

    Sieve plain flour with baking powder twice. Add a pinch of salt, rawa, powdered sugar to flour and mix well in a bowl.

    Step 7

    Add melted butter.

    Step 8

    Sprinkle water and knead it gradually to a thick dough.

    Step 9

    Ensure the melted butter is at room temperature. Keep aside for 1/2 an hour.

    Step 10

    Knead well again till the dough becomes pliable and soft.

    Step 11

    Make small balls and roll it into thin circles.

    Step 12

    Keep 1 tblsp of filling inside and fold it in the center and seal the edges with little water.

    Step 13

    Using a samosa cutter cut the edges or shape it with hands like a plait.

    Step 14

    Deep fry on low heat for 5-7 minutes or until crisp.

    Step 15

    Drain on paper towel. Brush honey on top and decorate with roasted almonds. Paneer Samosa is ready to serve. Enjoy!

    Ingredients:

    • 250 gms all purpose flour
    • 1 cup Water
    • Pinch of chilli powder
    • 500 gms potatoes
    • 100 gms green peas
    • 2 onions chopped
    • 6 green chillies chopped
    • 1 bunch cilantro (coriander) washed and chopped
    • 2 tsp lemon juice
    • 1 tsp ginger garlic paste
    • 1 tsp coriander seeds (dhaniya) powder
    • Pinch of turmeric
    • Oil for frying
    • Salt to taste

    Yield: 8 servings

    Directions:

    To make the Aloo Samosa filling:

    Step 1

    Boil the potatoes and mash them (not too soft).

    Step 2

    Take a sauce pan add a tbsp of oil. Once the oil is hot add chopped onions and green chilies.

    Step 3

    Fry the onions till golden brown and add ginger garlic paste and a pinch of turmeric After a minute add green peas and potatoes previously mashed. Mix them well.

    Step 4

    Add lemon juice, dhaniya powder and salt. Mix it well and let it cook for 10 min on low flame Garnish it with cilantro. Allow to cool and set aside.

    To make Samosa:

    Step 1

    Take the flour in a bowl, heat 3 tbsp oil add it with salt to the flour.

    Step 2

    And kneed the mixture into dough by adding water gradually and set it aside for 30 min.

    Step 3

    Now divide the dough into 10 equal parts, make them into round flat balls

    Step 4

    Roll each ball into a chapatti (medium thick) then cut it into 2 equal semi circles.

    Step 5

    Fold the semi circle into half and seal one side with water making a triangle pocket

    Step 6

    Now stuff it with filling and seal the other side with water again. Keep the oil ready for frying in a wok

    Step 7

    Fry the samosas in oil on medium flame till they are golden brown. Make sure the side are sealed properly before putting the samosas in oil.

    Step 8

    Remove from the oil and drain on kitchen paper. Aloo Samosas are ready to serve. ENJOY!!

    • Serve with green chutney or imli chutney.

    • 2 cups plain flour
    • 2 tablespoon coco powder
    • 1-1/2 teaspoon baking powder
    • 4 eggs
    • 1 cup butter or oil
    • 1 cup caster sugar
    • 1 teaspoon vanilla essence
    • 1/4 cup milk

    For Serving

    • vanilla ice cream
    • chocolate syrup
    • fruit of your choices

    Instructions

    • In a large bowl, Cream butter with sugar.
    • Now add eggs and beat well.
    • Sieve flour, baking powder and cocoa powder in another bowl.
    • Now fold dry ingredients into the egg mixture.
    • Stir in the 1/4 cup of milk and then whisk it well.
    • Meanwhile, Preheat your sandwich maker and brush with oil.
    • Once maker gets hot, Spoon enough batter to the sandwich maker.
    • Close it and cook for 3-4 minutes or until the green light of the sandwich maker appears.
    • Remove the cooked cake from the maker and repeat the same process with remaining batter.
    • Delicious Chocolate Cake is ready to serve.

    You can serve it with chocolate syrup.

    Ingredients

    • 4 Potatoes
    • 1 Onion finely chopped
    • 2 cups Chopped vegetables carrots, beans, peas
    • 2 Green chilies finely chopped
    • 1/2 tsp crushed red chilli
    • 1/2 tsp freshly ground black pepper
    • 1/4 bunch fresh Coriander leaves finely chopped
    • 1 cup All-purpose flour
    • 1 cup Bread crumbs
    • Oil for Frying
    • Salt to taste

    Instructions

    Method

    • Boil and mash the potatoes.
    • Boil the other vegetables.
    • Heat oil in a pan and fry the chopped onions until brown. Add green chillies, potatoes and boiled vegetables. Cook and stir for few minutes.
    • Add chilli powder, black pepper and salt. At last add coriander leaves.
    • Make heart shaped cutlets out of this veg mixture.
    • Mix all purpose flour in little water and make a smooth paste.
    • Dip cutlets in the paste and then roll them in bread crumbs.
    • Heat oil in a shallow frying pan and fry cutlets until both sides becomes brown.
    • Then Remove from the oil and drained on paper towel. Vegetable Cutlets is ready to Enjoy!!
