    Step 1

    Pour water in a large resealable plastic bag. Add mustard and shake well. Add beef steaks. Seal the bag and shake to coat. Let stand for 10 minutes. Drain and discard marinade.

    Place flour, salt and pepper in a shallow bowl. Roll steaks in flour mixture.

    Step 1

    Marinate meat for at least 5 hours with papaya paste, ginger/garlic paste, 1 tbsp oil and salt.

    Put 4-5 pieces of meat on each bamboo stick and place them in a wide frying pan with 4 tbsp oil.

    Cover the frying pan with a lid and cook till meat becomes tender.

    Turn the sticks once.

    Put tomato ketchup, lemon juice, tamarind pulp, chat masala, red chillies, and black pepper in a bowl to make a mixture.

    When meat becomes tender and all the water dries up, add the tomato mixture and cook till water dries up. Delicious chilli milli beef is ready.

    Take it out in a serving dish. Garnish with sliced onion and lemon.

    Step 1

    Place beef fillets in a large bowl. Apply ginger garlic paste over the fillets. Season with salt and mix well. Cover and place in the refrigerator for 30 minutes to blend flavors.
    Step 2

    Heat 3 tablespoon oil in a large skillet or karahi over medium high heat. Add red pepper flakes. Cook and stir for 30 seconds then add tomatoes. Cook for 2-3 minutes then add the beef fillets.

    Cover and cook for 40 minutes or until all water dries up and beef fillets are tender. Fry the fillets 5 minutes longer then remove from the fire. Transfer into a serving dish.

    Step 1

    Rinse & drain beef properly and cut into small cubes.

    In a blender,add spring onions, lemon juice,ginger-garlic paste,cumin seeds, coriander seeds, nutmeg powder,bay leaves,salt and chili powder. Blend it and make a smooth paste.

    Spread this paste over the beef pieces and marinate for 2-3 hours, them thread the meat onto skewers.

    For Sauce: In a pan, add peanut butter,lemon juice,soy sauce,honey, red chili and sugar for preparing the sauce.
    Bring to the boil and simmer for about 15-20 minutes then add the lemon juice.

    While the sauce is cooking turn the grill/broiler onto a high heat and allow the skewered meat to cook.

    Turn every 2 minutes for the first 6 minutes, then lower the heat and continue cooking. The time will depend on whether you like your meat slightly rare or well cooked. Beef Satay is ready to serve.

    • 1 kg table salt or powdered salt
    • 50 gm saltpeter or lime salt, powdered

    1. Wash and dry the meat well.
    2. Puncture holes all over it.
    3. Mix the salt, saltpeter and brown sugar together.
    4. Divide this mixture into 4 parts.
    5. Rub the beef all over with one portion of the salt mixture and juice of 2 limes.
    6. Turn the beef around so that the salt solution seeps into it well.
    7. Repeat this after every 2 hours rubbing it well several times during the day.
    8. Next morning remove from the old dish and place it on another dry dish, and rub into it the second portion of the prepared salt.
    9. Let it stand for an hour or so, then pour over it the remainder of the 2nd portion of the salt solution.
    10. Repeat the rubbing two or three times during the day, turning the beef continually.
    11. On the 3rd and 4th day repeat the procedure of placing in a fresh dish and rubbing the beef well with the 3rd and 4th portions of the prepared salt solutions and lime juice.
    12. On the 5th day boil or pressure cook the meat with all the residue of the salt solution for at least 1 hour on low heat.
    13. Cool and store.
    14. Corned Beef is ready.

    Hot ‘n’ Spicy Nihari

    Nihari is a very famous traditional dish of Pakistan. It is a type of stew cooked in fiery spices. Further more you build up the taste with the fresh chopped green chilies, ginger and lemon.

    • 1 kg Beef Bong Ka Gosht or Mutton
    • 1 Nali (optional)
    • 1 tbsp ginger paste
    • 1tbsp garlic paste
    • 2 cups ghee
    • 4 tbsp Nihari Masala Prepared
    • 1 cup flour (Atta)
    • 1/2 cup plain flour (maida)
    • 3 tbsp chilly Powder
    • salt to taste
    • 12 cups water

    Masala For Nihari

    • 20 gm cinnamon sticks (dalchini)
    • 20 gm black cardamom
    • 20 gm green cardamom
    • 10 gm cloves
    • 1/4 cup saunf
    • 1/4 cup kas Kas
    • 10 gm javatri
    • 10 gm saunt
    • 20 gm kachri
    • 1/4 cup chana
    • 1/2 cup chilly Powder

     

    Directions:

    Step 1

    Heat ghee in a large pot over moderate heat.

    Step 2

    Add ginger garlic paste. Cook for 1 minutes or until lighlty browned.

    Step 3

    Add meat along with chilly powder, salt and nihari masala.

    Step 4

    Cook well by sprinkling little water.

    Step 5

    Add in nali and 12 cups hot water. Cover with a lid and cook for 2 minutes or until meat is almost tedner.

    Step 6

    In a small bowl, sift plain flour and atta together. Make a smooth paste with water.

    Step 7

    Pour over the meat to make thick gravy; stirring constantly. Cook on very low flame for 30 minutes or until gravy is thickened.

    Step 8

    Transfer into a large serving dish. Garnish with green chilies, lemon wedges and ginger. Hot ‘n’ Spicy Nihari is ready to serve

    Step 1

    Wash and pat dry the beef. In a large Matka add beef, garlic, ginger in Oil or Ghee.

    Then add the remaining spices with onions and water.

    Keep the matka on low fire and let it cook until the water has dried.

    Then stir-fry till brown.

    Once more add water and let it simmer on low heat.

    Now take the knob of kneaded flour and keep it an a small bowl of water.

    Mix it gently so that it dissolves in the water.

    • 1 lb. boneless beef sirloin OR top round steak, cut 3/4 inch thick
    • 1/4 cup dry sherry
    • 1/4 cup low-sodium soy sauce
    • 1 tbsp cornstarch
    • 3 tbsp vegetable oil, divided
    • 8 oz. mushrooms, sliced
    • 1 6-oz. package frozen pea pods, defrosted
    • 4 cup lettuce, thinly sliced
    • Crisp chow mein noodles (optional)
    • Red bell pepper slices (optional)

    How to make Oriental Beef Salad:

    • Cut beef steak into 1/8-inch thick strips.
    • Combine sherry, soy sauce and cornstarch; pour over strips, stirring to coat.
    • Heat 2 tbsp. oil in wok over medium high heat.
    • Add mushrooms and pea pods; reserve.
    • Drain marinade from beef and reserve.
    • Add remaining oil to wok. Stir-fry beef strips (1/2 at a time), 1 to 2 minutes.

    • 1 pound beef flank steak
    • 2 tablespoons soy sauce, low sodium
    • 4 teaspoons sesame oil, divided
    • 1-1/2 teaspoons granulated sugar
    • 1 teaspoon cornstarch
    • 2 cloves garlic, crushed
    • 1 tablespoon ginger root, minced
    • 1/4 teaspoon red pepper flakes
    • 1 small red bell pepper, cut into 1 inch cubes
    • 8 ounces frozen baby corn, defrosted
    • 1/4 pound pea pods, julienne
    • Hot rice

    How to make Hunan Beef:

    • Cut beef lengthwise into 2 strips; slice across the grain into 1/8 inch thick strips.
    • Combine soy sauce, 2 teaspoons oil, sugar and cornstarch; stir into meat.
    • Heat remaining 2 teaspoons oil in large skillet or wok over medium-high heat.
    • Add garlic, ginger, and red pepper; cook 30 seconds.
    • Add bell pepper and corn; stir fry 1 1/2 minutes.
    • Add pea pods; stir fry 30 seconds.
    • Remove vegetables.
    • Stir fry beef strips (1/2 at a time) 2 to 3 minutes.
