    Spicy Chickpea Salad (Chana Chaat) Recipe

    I think it’s time that I take a quick break from the highly caloric Iftar snacks I’ve been posting about recently, and share a favorite healthy recipe.  This Spicy Chickpea Salad (Chana Chaat) is a traditional Pakistani Iftar Staple.  We love munching on it throughout the year, but it’s especially nice in the summer after a long day of fasting. Known as a salad in the West and a savory snack or “Chaat” in the East. This low-fat dish has traveled a long way from Pakistan to make its way onto Iftar tables in South Asia and lunch/dinner tables across the rest of the world.

    • 3 cups boiled chickpeas
    • 3 cups basmati rice
    • 2 Onions, finely chopped
    • 4 tomatoes, finely chopped
    • 6 whole green chilies
    • 1/4 cup milk
    • 4 tablespoon lemon juice
    • 3 tablespoon tomato paste
    • 3 tablespoon yogurt
    • 2 tablespoon fried onion
    • 2 teaspoon ginger garlic paste
    • 1 teaspoon Vinegar
    • 2 teaspoon red pepper flakes
    • 2 teaspoon cumin seeds, roasted and crushed
    • 1 teaspoon red chili powder
    • Salt according to taste

    For Garnishing:

    • 2 green chillies, finely chopped
    • few coriander leaves, finely chopped
    • Orange Food color

    Directions:

    Step 1

    Boil rice with salt and vinegar till 2/3 is done.

    Step 2

    Drain water and keep aside.

    Step 3

    Heat oil in a large pot or skillet over medium heat.

    Step 4

    Fry onion when brown add ginger garlic paste.

    Step 5

    Add tomatoes, tomato paste, green chilis whole, salt chili powder, chili flakes, cumin seeds, yogurt and boiled chickpeas.
    Cook and simmer for 5 minutes till oil separates and water dries.

    Step 6

    Now take a large pot, layer half of boiled rice then layer all chickpea masala and top with other layer of rice.

    Step 7

    Pour lemon juice, milk and few drops of food colour on top and put on dum for 15 minutes.

    Step 8

    Lastly garnish with fried onion, green chiliess and green coriander and close lid. Turn off stove after 5 minutes.

    Step 9

    Dish it out. Delicious Chana Biryani is ready to serve. ENjoy!!

  • The Best Murgh Cholay Recipe Ever: Tender Chicken with Creamy Chickpeas!

     Lahore’s most famous dish murgh cholay (Chicken and Chickpea Curry) is utterly tasty and spicy dish. Its prepared in chicken, chick peas with different spices. It goes great with naan or boiled rice.

    Ingredients

    • 1 kg chicken
    • 2-1/2 cups boiled chick peas
    • 1/8 cup pink lentil ( masoor dal), soaked in water for 30 minutes
    • 2 cups chicken stock (yakhni)
    • 2 onions, chopped
    • 1 tomato
    • 1 tbsp garlic paste
    • 1 tbsp ginger paste
    • 1 teaspoon crushed red chili
    • 1 teaspoon red pepper
    • 1/2 teaspoon turmeric powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala powder
    • 4 tbsp fresh coriander leaves,chopped
    • 2 green chilies
    • 1/2 cup Oil or ghee

     

    Directions:

    Step 1

    In a vessel, put half cup of oil and fry onions in it until brown.

    Step 2

    Then add garlic-ginger paste and green chillies. Fry for 1 minute and then add the spices; stir for 2-3 seconds.

    Step 3

    Now, add the tomatoes and put enough water to allow the tomatoes to tenderize.

    Step 4

    When the tomatoes are tender, add chicken and allow the chicken to cook in its own water on medium heat.

    Step 5

    Let the water dry up.

    Step 6

    Add chickpeas, pink lentil (masoor dal) to the cooked chicken.

    Step 7

    Mix well and cook for a few minutes.

    Step 8

    Now add chicken stock to make the gravy.

    Step 9

    Cook for 20 minutes or until gravy is thickened. Dish it out.

    Step 10 

    Garnish with coriander leaves and green chilies. Murgh Cholay is ready to serve.

    • Serve with hot naan or chapatis and salad.

    Ingredients

    For Chaat:

    • 1/2 kg chickpeas
    • 2 boiled potatoes, cut into small cubes
    • 1 tsp ground turmeric
    • salt according to taste
    • oil for frying
    • pastry strips, for serving

    For Green Chutney:

    • 1/2 cup tamarind paste
    • 1/2 bunch mint leaves
    • 1/2 bunch fresh coriander leaves
    • 6 green chilies
    • 2 tbsp sugar
    • salt to taste

    For Special Masala:

    • 2 tbsp all spice
    • 2 tbsp whole black pepper
    • 3 pepli

    For Garnishing:

    • 1 cup plain yogurt
    • 1/2 cup fresh coriander leaves, finely chopped
    • 1/2 cup onions, finely chopped
    • 1/2 cup tomatoes, finely chopped
    • chat masala according to taste

     

    Directions:

    To Prepare the chickpeas:

    1. Soak chickpeas overnight with 1 tsp baking soda.
    2. Now place pre-soaked chickpeas in a large pot.
    3. Also  salt and ground turmeric.
    4. Boil for 1 hour or until lentils and chickpeas are tender.
    5. Now add potatoes and cooked for 2-3 minutes.
    6. Let it cool completely.

    To Make Special Masala:

    1. Place all masala ingredients in a grinder.
    2. Process until grind together.
    3. Special masala is ready now.

    To Make Green Chutney:

    1. Put coriander, mint leaves, green chilies, tamarind paste, sugar and salt in a blender.
    2. Process for 2 minutes or until smooth.
    3. Green Chutney is ready now.

    To Proceed:

    1. Heat oil in a deep wok or karahi over medium heat.
    2. Place a pastry strip in a sieve.
    3. Cover the sieve with another one and deep fry pastry for 1-2 minute
    4. Repeat this procedure with remaining pastry strips.
    5. Put 3 tbsp chickpeas mixture in each fried pastry strip.
    6. Sprinkle chat masala and special masala over it.
    7. Also add whipped yogurt, prepared green chutney, onions, tomatoes and coriander.
    8. Crispy Pyala Chaat is ready to serve.
    9. Enjoy!

     

    • Serve with chutney.

    Channa Pulao is always my favorite.I have made it many times but this time I wanted to try it with Potatoes ( My fav veggie) and it came so good.

    I do remember my khala (anty) who would make fabulous chana pulao along with potatoes. Well, while making this aloo chana pulao recipe and writing this post i do remember the aroma and taste still lingering in my mind of her pulao. Her dishes was always cooked to perfection and the taste of the pulao was just heavenly.

    Though I make chana biryani often this [highlight]chana pulao[/highlight] is always my quick fix whenever I am pressed for time. Do try this Aloo Channa Pulao recipe. I had it Korma, mint raita and salad.It was a satisfying lunch.

    Note’s:

    1. For the chana pulao obviously you have to first cook the [highlight]chickpeas(kabuli channa)[/highlight].
    2. if you have leftover boiled chickpeas than these too can be added.
    3. The pulao has to be made with basmati rice and desi ghee or else something will be a little amiss if you do not use basmati rice and ghee. This is pretty easy pulao, great to put in your kids lunch box. If you pre cook the chana the previous day itself, then you don’t have to worry about anything. It can be made in minutes.
    4. If you are diet conscious you can add olive or sesame oil.

    This could be also quick fix for lunch box for office going people or students, since less cutting work. You can pack this with cucumber or vegetable raita.

    Ingredients

    • 2 cups basmati rice
    • 1 cup chickpeas white channa
    • 2 onion thinly sliced
    • 2 potatoes cubed
    • 2 bay leaves
    • 4 cloves
    • 5 black pepper pods
    • 3 cinnamon stick
    • 1 black cardamom
    • 3 green chilies thinly sliced
    • 4 tablespoon clarified butter or ghee
    • 1 teaspoon ginger garlic paste
    • salt to taste
    • 3-1/2 cups water or chicken stock

    For Garnishing

    • Fresh coriander leaves chopped

    Instructions

    Directions

    • Wash rice with few changes of water and soak them for 30 minutes. Keep aside.
    • Heat oil in a heavy bottom skillet over medium heat.
    • Add the cloves, cinnamon, cardamom, black pepper and bay leaves.
    • Now add the sliced onions, sliced green chilli and also the ginger garlic paste.
    • Saute them until the raw flavor fades.
    • Now add the Potato cubes and the boiled channa.
    • Stir well.
    • Cook for 5-6 minutes or until potatoes are tender.
    • Add rice and lightly stir.
    • Now add the salt and water.
    • Mix well and allow the rice to cook for 10 minutes or until done.
    • Cover with a lid and put on low flame.
    • After 10 minutes, turn the heat off.
    • Fluff the rice and dish it out.
    • Garnish with the coriander leaves. Aloo Channa Pulao is ready to serve.

    Notes

    Serving Suggestions:
    Serve with Mint Raita and salad.

    This Chicken and Chickpea Pulao is one of the quickest and yet tastiest meal one can make in emergency situations. This Chicken and Chickpea Pulao recipe is way different than the usual Pulao recipe. This one is a bit spicy and more “masalay daar” as I call it. Very delicious and healthy pulao, love it. You can make also it from left over chickpea curry. Just add a little more salt and garam masala to the curry and cook rice with the curry, mixed together.     • 1 pound boneless skinless chicken thighs, cubed
    • 3-1/2 cups chicken stock
    • 2 cups long grain rice
    • 1 cup boiled chickpeas
    • 1 Onion, thinly sliced
    • 1/4 cup clarified butter (desi ghee)
    • 1 tablespoon  oil
    • 1 teaspoon ginger garlic paste
    • 1 teaspoon coriander powder
    • 1 teaspoon ground cumin
    • 1 teaspoon garam masala, crushed
    • 1 teaspoon crushed red chili
    • 1 pinch saffron threads
    • 1 cinnamon stick
    • 2 bay leaves
    • 1/4 cup sultanas
    • 1/4 cup cashew nuts, toasted
    • 2 tablespoon fresh coriander, chopped
    • salt to taste

    Step 1

    In a small bowl, soak the saffron threads in 2 tbsp boiling water. Mix well and set aside.

    Step 2

    Meanwhile, heat oil in a large skillet or wok over medium heat.

    Add the chicken, coriander, red chili, cumin and salt. Stor and cook over medium heat for 5 minutes, or until chicken is no longer pink.

    Step 4

    Remove from the pan and set aside.

    Step 5

    Now Melt butter over medium heat. Saute onion for 5 minutes or until softened.

    Step 6

    Add ginger garlic paste and cook 1 more minute.

    Step 7

    Stir in the rice, return the chicken to the pan and pour in the chicken stock. Adjust the seasoning.

    Step 8

    Add the bay leaves, cinnamon stick and saffron with its soaking water.

    Step 9

    Bring to the boil. Cover and simmer for 15 minutes or until the rice is almost cooked, adding more stock as needed.

    Step 10

    Stir in the chickpeas and sultanas, and continue cooking until the rice is tender.

    Step 11

    Transfer to a warm serving platter. Sprinkled with the toasted nuts and chopped corainder. Delicious Chicken and Chickpea Pulao is ready to serve.

    1. If you are not used to have it that spicy you can always lessen the quantity of chili powder.
    2. Ginger garlic paste is also optional in this recipe. Yeah yeah I know its the core ingredient in Pakistani dishes but you can skip it if you want.
    3. A good tip while making any kind of Pulao is that after you add rice in the water mixture. Cook on a high heat till the water dries up completely then cover and simmer it on low heat, otherwise you’ll end up with a mushy halwa rather than your regular Pulao rice.

    Ingredients

    • 250 gm chick peas soaked overnight
    • 6 cups water
    • 1/2 tsp baking soda
    • 3 potatoes boiled
    • 1 medium onion finely chopped
    • 2 to matoes finely chopped
    • 1/2 cup tamarind pulp imli ka ras
    • 1 tsp oil
    • 2 tbsp lemon juice
    • 1 tsp chat masala powder
    • 1 tsp cumin seeds roasted
    • 1/2 tsp red chili powder
    • 2 tbsp fresh coriander leaves finely chopped
    • 2 tbsp fresh mint leaves finely chopped
    • 2 green chilies finely chopped
    • 2 -3 lemon wedge for garnishing
    • salt to taste

    Instructions

    Method

    • Soak the chickpeas overnight in water.
    • Put the chickpeas in a large saucepan; add water,baking soda and salt in it.
    • Bring to the boil, cover and cook for 2 hours or until the chickpeas tender.
    • Then remove from the water and drained.
    • Boil potatoes for 20 minutes or until cooked through.
    • Peel it and cut into small cubes.
    • Chop onion and tomato into small pieces; set aside
    • Remove seeds from green chilies and chop it finely.
    • Heat 1 tsp oil in a pan over medium heat.
    • Add red chili powder,chaat masala, cumin seeds, tamarind pulp, potatoes and chickpeas; stir fry for 2-3 minutes or until well combined.
    • Remove pan from the heat.
    • Put it into serving bowl, add chopped onion, tomato green chilies and lemon juice in it.
    • Mix well.
    • Sprinkle chopped fresh coriander and leaves over the top.
    • Aloo Chana Chaat is ready to serve.

    Notes

    Serving Suggestions:
    Serve with papri and Imli ki Chutney.
