    • 1 kg minced meat
    • 2 medium onions, cut into large pieces
    • 1/2 cup curd
    • 1 tbsp ginger-garlic paste
    • 1 tsp red chilli powder
    • 1 tsp garam masala
    • 1/4 tsp turmeric powder
    • 1 tbsp soy sauce
    • Salt as per taste
    • 1 tbsp vinegar
    • 1/4 cup

    For Filling:

    • 4 boiled eggs, finely chopped
    • 1 cup coriander leaves, finely chopped
    • 1 cup mint leaves, finely chopped
    • 2 or 3 green chilies finely chopped
    • 1 tsp. chat masala

    For Frying:

    • 1/4 cup besan
    • 2 eggs
    • 1/4 tsp salt
    • 1/4 tsp turmeric powder

    Step 1

    Cook onions in oil until light brown Add yogurt, garlic & ginger paste, salt, red chili, garam masala, Soya sauce & vinegar to the onions and cook for 6 to 8 minutes.

    Step 2

    Add mince meat to it and cook for 3 minutes.

    Step 3

    Add 1/2 cup of water in it and cook until the meat is tender and
    water has completely absorbed.

    Step 4

    Remove from heat and put aside to become cool.

    Step 5

    Put the mince in a food processor or chopper and grind to a smooth thick paste which hold is shape.

    Step 6

    Prepare the stuffing. In a bowl mix together boiled eggs, coriander, mint, green chilies, chat masala.

    Step 7

    Break off 1-2 tablespoons of the mince paste. Wet your palm with little water. Place the mince in the center of your palm.
    Shape it into a smooth ball and then flatten it.

    Step 8

    Place 1 tbsp. of stuffing in the center. Fold the sides over carefully and reshape into a smooth flat shape. Repeat with remaining mince.

    Step 9

    Stir the eggs and crumbs tougher with a fork.

    Step 10

    Dip the kabab in it and shallow fry over medium heat to a crisp golden color, turning them once. Remove from frying pan carefully. Nargisi Kabab is ready to serve.

    Step 1

    In a medium bowl, whisk eggs with salt.

    Step 2

    Heat oil in a pan , add mustard seeds and fry for 30 seconds.

    Then add onion and stir fry for 2 minutes or until soft.

    Now add red chili powder, green chili, coriander leaves, tomato and little water. Cook for 5 minutes or until all water absorbed.

    Now pour whisked eggs over it; gently scramble and cook for 2 minutes.

    Cook potatoes well and drain the water.

    Cut the eggs into halves and remove the egg yolks.

    Ingredients

    • 1/2 cup carrots chopped
    • 10 each napa cabbage leaves chopped and ends removed
    • 2 stalks bok choy chopped
    • 4 cups bean sprouts fresh
    • 1/2 medium onion chopped
    • 4 each garlic cloves minced
    • 1/2 cup bamboo shoots chopped
    • 1 cup water chestnuts chopped
    • 1 pound chicken mince cooked
    • 1 pound shrimp small sized or chopped
    • 1/2 pound beef cooked ground
    • 1/4 cup wine Chinese cooking style
    • 1/4 cup soy sauce
    • 3 tablespoons sesame oil
    • 1 pk egg roll skins or wrappers
    • 1 cup vegetable oil for frying
    • 1 each egg beaten

    Instructions

    Method

    • Mix filling ingredients together.
    • Put mixture in the freezer awhile to cool.
    • Warm meat tends to soften the wrappers and make things messy.
    • Heat vegetable oil in fryer to 325 degrees.
    • To roll, place about 3 tbsp filling mixture in the center of the wrapper.
    • Fold 1 corner over mixture and fold in ends.
    • Continue rolling.
    • Brush egg mixture on exposed corner of wrapper to help seal egg roll.
    • Put egg rolls in hot oil, a few at a time, and fry a few minutes on each side until golden brown.
    • Remove to drain on paper towels.
    • Chinese Egg Roll is ready to serve.

    Notes

    Serving Suggestions:
    Serve warm with soy sauce, hot mustard sauce.

    Step 1

    Take a enough water in a sauce pan. Boiled eggs in it. Then remove the shells.

    Step 2

    Clean potatoes and cut into large pieces. Soak potatoes in salty water. Set aside.

    Step 3

    Heat oil in a large skillet or wok over medium heat. Put minced onion in it.

    Step 4

    Stir fry for 2 minutes then add ginger-garlic paste. Keep stirring.

    Step 5

    Place tomato puree, and all spices into the skillet. Cook for 4-5 minutes or until masala is cooked.

    Step 6

    Add 2 cups of water, bring to a boil. Then add potatoes.

    Step 7

    Cover with a lid and cook for 8-10 minutes or until potatoes are cooked and curry is thickened.

    Step 8

    Put the boiled eggs into the gravy. Now dish it out.

    Step 9

    Sprinkle fresh coriander leaves and green chilies over the top. Egg and Potato Gravy is ready to serve.
