    Lahori Kulcha is a popular flat-bread from Pakistan. kulcha are very famous in Lahore. These soft textured breads are easy to prepare and delicious to eat. Lahori Kulcha traditionally made with plain flour and yogurt. The Yogurt add a yummy tanginess and soft texture to the kulcha. It can be made in the tandoor or grill as well as on a tava or griddle.     • 3 cups white flour
    • 1/2 cup oil
    • 1/2 cup plain yogurt
    • 3/4 cup water
    • 1 teaspoon sugar
    • 1 teaspoon salt
    • 1/2 teaspoon baking powder
    • a Pinch of Baking Soda

    Step 1

    Take a bowl, add white flour, sugar, baking powder, baking sode and salt in it.

    Step 2

    Pour some oil in this mixture. Add yogurt and knead the dough add water if necessary. The dough should not be very tight.

    Step 3

    Cover the dough with wet cloth and leave it for 2 hours. The dough will swell up a bit by now due to the effect of Baking Powder and Baking Soda.

    Step 4

    Preheat a grill at high temperature.

    Step 5

    Make small balls of the dough and spread it in a tear shaped bread.
    Note: [ To make a good quality Kulcha try spreading it by hand by patting and pressing the dough firmly. Otherwise use the rolling pin.]

    Step 6

    Brush oil on one side of the kulcha.

    Step 7
    Put it in the grill and cook for 8-10 minutes. Once the Kulcha is almost cooked turn the heat to full to get some black burn marks. Lahori Kulcha is ready to serve.

    Chapati

    Chapati is a [highlight]Pakistani and Indian flatbread[/highlight]. It’s also called “Roti”. Chapati accompanies most Pakistani and Indian meat, vegetable and lentil curries. This is a most basic and simple recipe of Chapati. If you want to make these ahead, keep them moist and pliable under a damp towel. Do try it!!

    Step 1

    Mix the ingredients in a bowl.

    Step 2

    Add water a little at a time until you get a pliable dough which is not runny.

    Step 3

    If you over do the water just add more flour you are looking for something like the consistency of play dough.

    Step 4

    Now flour your hands well, pour a little over the dough too and knead well for 5 minutes.

    Step 5

    Regularly reflour your hands as needed to prevent the dough sticking.

    Step 6

    Divide the dough into 4 pieces and roll each flat and thin using a well floured rolling pin on a floured surface.

    Step 7

    Heat a heavy pan or griddle to a high heat and cook the chapatis without any oil for about 2 minutes on each side.

    Step 8

    Cover in foil and keep in a warm oven until required.Chapati is ready to serve.

    • 25 gm ghee or butter

    Sieve the flour properly.

    Put the sugar and yeast in 1 cup of warm water and mix till the yeast gets dissolves.

    Cover and leave for 5 to 7 minutes till the mixture is full of froth.

    Put this liquid along with the curds, ghee and salt to the flour.

    Step 5

    Put some warm water to make a soft dough.

    Step 6

    Knead the dough for 6 to 7 minutes.

    Keep the dough in a wet cloth for 30 minutes.

    Step 8

    Knead for 1 minute.

    Step 9

    Divide the dough into 20 parts.

    Step 10

    Apply a little ghee and roll out puris.

    Step 11

    Deep fry the puris in oil. Bhatura is ready to serve.
