    • 2 whole pita breads
    • 1 small tomato, seeded & chopped
    • 1/2 cup torn fresh spinach
    • 1/3 cup crumbled feta cheese
    • 1/4 cup sliced stuffed olives
    • 1/4 cup shredded Parmesan cheese
    • 1 garlic clove, minced
    • 2 tbsp olive oil, divided
    • 2 tsp apple cider vinegar
    • 1/4 tsp dried basil
    • Dash pepper

    Step 1

    Place pita breads on a baking sheet; brush with 1 tablespoon oil. Broil 4-inch. from the heat for 2 minutes.

    Step 2

    Meanwhile, in a small bowl, combine vinegar, olives, garlic, basil, oregano, pepper and remaining olive oil. Spread this mixture over the pitas. Top with tomato, spinach, feta cheese and Parmesan cheese.

    Step 3

    Broil for 3 minutes longer or until cheese is melted and heated thorough. Cut into wedges. Greek Pita Pizzas are ready to serve. Enjoy!!

    • 1 pound boneless lamb,cut into thin strips
    • 1 small onion, thinly sliced
    • 1 cucumber, thinly sliced
    • 1/2 yellow bell pepper, thinly sliced
    • 1/2 red bell pepper, thinly sliced
    • 2 clove garlic, minced
    • 1/2 cup tomato sauce
    • 2 tbsp vinegar
    • 2 tbsp oregano
    • 4 tbsp olive oil
    • 4 tbsp plain yogurt
    • 4 pieces of pita bread
    • 2 lettuce leaves
    • 1/2 tsp black pepper, freshly ground
    • Salt to taste

    Step 1

    Rinse and drain lamb meat.

    Step 2

    Trim all excess fat over it and cut into strips.

    Step 3

    Take a heatproof glass dish, place meat, oregano, olive oil,vinegar, yogurt in it.

    Add onion, cucumber, bell pepper in it.

    Step 5

    Season with salt and pepper.

    Step 6

    Stir to coat evenly.

    Step 7

    Cover and place in the refrigerate for at least 4 hours.

    Step 8

    Soak bamboo skewers into cold water for 30 minutes.

    Step 9

    Preheat a grill for medium high heat.

    Step 10

    Remove marination and thread meat, onion, bell peppers onto pre-soaked bamboo skewers.

    Step 11

    Lightly greased the grill with cooking spray.

    Step 12

    Place skewers over it and cook for 15 minutes or until done.

    Step 13

    Turn skewers frequently while grilling.

    Step 14

    Remove from the skewers and transfer into a platter.

    Step 15

    Heat a frying pan over medium heat and toast pita bread over it.

    Step 16

    When toasted, cut it into halves

    Step 17

    Place chopped lettuce leaves, cucumber, onion, bell peppers and grilled lamb in it.

    Season with the tomato sauce. Lamb Souvlaki is ready to serve. Enjoy!
