  • Healthy & Flavorful: The Light Chicken Kabobs Recipe!

    These light chicken kabobs gives you a different flavor to traditional kabobs, without the heartburn that can occur with the usual kabobs recipe. They are easy to make ahead and grill in less than 30 minutes. Goes well with Rice Pilaf.

    This recipe make 6 serving(s).

    Ingredients

    • 6 (4 ounce each) boneless skinless chicken breast halves, cut into strips
    • 1 bottle (8 ounces) low-fat Italian salad dressing
    • 18 medium fresh mushrooms
    • 2 green peppers, cut into cubes
    • 2 onions, cut into cubes
    • 1/4 cup Worcestershire sauce
    • 1/4 cup light soy sauce
    • 2 tbsp lemon juice

    Method

    • Place chicken strips, green peppers, onion, mushrooms in a large resealable plastic bag.
    • In a bowl, combine together the salad dressing, soy sauce, Worcestershire sauce and lemon juice.
    • Reserve 1/3 cup marination; cover and refrigerate.
    • Pour remaining mixture over the chicken and vegetables.
    • Seal the bag and shake to coat.
    • Refrigerate for 4 hours or overnight, turning occasionally.
    • Drain and discard marinade.
    • Alternately thread chicken and vegetables on 18 soaked wooden skewers.
    • Grill over medium heat for 15 minutes or until chicken juices run clear.
    • Turning and basting with reserved marinade occasionally. Light Chicken Kabobs are ready to serve.
    • ENJOY!!

    • 4 skinless, boneless chicken breast halves
    • 2 large cloves garlic, minced
    • 1/4 cup olive oil
    • 1/3 cup lemon juice
    • 2 tbsp chopped red pepper
    • 1 tbsp Dijon mustard
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper

    Method:

    • In a small bowl, combine together olive oil, lemon juice,Dijon mustard, garlic, red bell pepper, salt, and pepper.
    • Reserve 1/4 cup for basting.
    • Place chicken in a resealable bag.
    • Pour remaining marination over it.
    • Seal again and shake to coat.
    • Place in the refrigerator for 20 minutes.
    • Preheat grill for high heat.
    • Lightly grease the grill grate with oil.
    • Drain and discard marinade.
    • Grill chicken for 6-8 minutes on each side or until all juices run clear and chicken is no longer pink.
    • Turning and basting occasionally with the reserved marinade.

    Ingredients:

    • 8 bone-in chicken breast halves
    • 2/3 cup lemon juice, divided
    • 2/3 cup chicken broth
    • 1/4 cup minced parsley

    • 2 tsp dried rosemary, crushed
    • 2 tsp dried thyme
    • 2 tsp pepper

    Method

    • In a small bowl, add peppers, lemon juice, parsley, garlic, rosemary and thyme.
    • Mix well.
    • Stuff seasoning mixture under the skin of each chicken breast.
    • Place chicken breasts in a greased 13-in. x 9-in. x 2-in. baking dish.
    • In a small bowl, combine together chicken broth, pepper, lemon peel and remaining seasoning mixture.
    • Pour this mixture over the chicken.
    • Cover and refrigerate for 6-8 hours.
    • Drain and discard marinade.
    • Place chicken skin side up on grill grate.
    • Grill, covered, over medium heat for 45 minutes or until chicken is no longer pink and all juices run clear, turning once.

    Ingredients:

    • 4 skinless, boneless chicken breast halves
    • 1 clove garlic, chopped
    • 2 tbsp reduced fat peanut butter
    • 1 tbsp fresh lime juice
    • 2 tsp soy sauce
    • 1/3 tsp curry powder
    • 1 dash cayenne pepper

    Method:

    • Preheat a grill for high heat. Brush the grill grate with cooking oil.
    • In a small bowl, combine the peanut butter, lime juice, soy sauce, garlic, curry powder, and cayenne pepper.
