    Seasoned Oven Fries

    Crispy homemade fries – baked, not fried! – tossed in a delicious spicy seasoning mix. The perfect side to burgers, sandwiches, roasted meat, steak and so much more.
    This is my go-to french fry recipe! I’ve been making my fries like this for years and years! My family LOVES ’em!! These french fries are easy to make and really do get a little crispy on the outside just like a good french fry should!! Every bit as crispy and addictive as our regular fries, but with a smoky, spicy, super flavorful twist!
    Baking fries is so much easier and healthier than frying. The clean-up is a breeze and by making them yourself you control the ingredients and save money too! Y’all know I love that!

    This recipe takes a little planning to prep the fries before they are ready to bake, but it’s worth it!!

    Some Tricks to make Crispy Seasoned Oven Fries

    Here’s one very important trick I’ve learned for making the perfect batch of french fries: Soak ’em. Soak ’em good!

    Soaking your potatoes will help remove a lot of the starch, which allows them to crisp up on the outside while keeping a soft potato texture on the inside. If I’m in a hurry, I’ll just soak them for 30 minutes, but I generally like to let them sit for several hours if I’m smart enough to plan ahead that day. Which rarely happens, but hey, I try!

    Another good tip is to bake these on a wire rack so any additional moisture will drip down away from the fries. I use an oven safe cooling rack and place it in a foil lined baking sheet. This method works for me and keeps my oven clean at the same time.

    A little bit of oil and a simple seasoning mixture are all you need for delicious baked fries that will go with just about any meal.

    Sometimes I like to jazz up my fries with a little extra spice, some garlic, or a sprinkle of cheese, but this is a great basic recipe that I promise you and your family will love. Make sure you have plenty of ketchup or your favorite dipping sauce on hand, and you might even want to make a double batch… they will disappear quickly!

    Seasoned Oven Fries

    Ingredients

    • 4 large potatoes
    • 2 tablespoon canola oil
    • 2 tablespoon cornstarch
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon paprika powder
    • 1/4 teaspoon black pepper powder
    • 1/4 teaspoon cumin powder
    • salt to taste
    • chaat masala for sprinkling optional

    Instructions

    Method

    • Coat a baking sheet with cooking spray.
    • Cut potato lengthwise in half then cut each piece into 4 wedges.
    • Place oil, butter and seasoned salt in a large resealable plastic bag.
    • Mix well.
    • Add potatoes wedges then shake to coat.
    • Place potatoes in a single layer on a baking sheet.
    • Bake at 450 degree F, for 20 minutes or until tender, turning once.
    • Transfer into a serving plate.
    • Seasoned Oven Fries are ready to serve.

  • Recipe: Chinese Cabbage Salad

    Ingredients:

    For Salad:

    • 500 gm cabbage, shredded
    • 1 tbsp butter
    • 1/2 cup slivered almonds, blanched
    • 1/2 cup sesame seeds
    • 8 green onions, thinly sliced
    • 1/4 cup fresh cilantro, coarsely chopped
    • 2 packages ramen noodles, broken into small pieces

    For Dressing:

    • 1/4 cup granulated sugar
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 6 tbsp seasoned rice vinegar
    • 1/2 cup vegetable oil

    How to make Chinese Cabbage Salad:

    For Dressing:

    • Mix first 4 ingredients in jar or other container with a tight-fitting lid.
    • Add oil and shake vigorously to blend.

    For Salad:

    • Over medium heat, melt butter in a small skillet; add almonds and sesame seeds and cook until golden brown, stirring constantly; set aside to cool.
    • Prepare vegetables and place in large mixing bowl, add the crushed ramen noodles,almonds and sesame seeds.
    • Toss with the dressing.
    • Chinese Cabbage Salad is ready to serve.
    • Serve immediately.
  • Oriental Beef Salad Recipe

    Ingredients:

    • 1 lb. boneless beef sirloin OR top round steak, cut 3/4 inch thick
    • 1/4 cup dry sherry
    • 1/4 cup low-sodium soy sauce
    • 1 tbsp cornstarch
    • 3 tbsp vegetable oil, divided
    • 8 oz. mushrooms, sliced
    • 1 6-oz. package frozen pea pods, defrosted
    • 4 cup lettuce, thinly sliced
    • Crisp chow mein noodles (optional)
    • Red bell pepper slices (optional)

    How to make Oriental Beef Salad:

    • Cut beef steak into 1/8-inch thick strips.
    • Combine sherry, soy sauce and cornstarch; pour over strips, stirring to coat.
    • Heat 2 tbsp. oil in wok over medium high heat.
    • Add mushrooms and pea pods; reserve.
    • Drain marinade from beef and reserve.
    • Add remaining oil to wok. Stir-fry beef strips (1/2 at a time), 1 to 2 minutes.
    • Return vegetables, beef and marinade to wok; cook and stir until sauce thickens.
    • Serve beef mixture over lettuce.
    • Garnish if desired.
    • Oriental Beef Salad is ready to serve.

  • Chinese Peanut Chicken Recipe

    Ingredients:

    • 1/3 Cup soy sauce
    • 3 tbsp hot (spicy) sesame oil plus oil to saute chicken (divided)
    • 1/4 Cup packed brown sugar
    • 1/4 Cup pineapple juice
    • salt and white pepper to taste
    • 4 boneless skinless chicken breast halves, cut into julienne strips
    • about 3 inches long
    • flour to dredge chicken

    For Sauce:

    • 1 tbsp butter
    • 1 tbsp flour
    • 1/2 cup chicken stock
    • 1/2 cup whipping cream
    • 1/4 cup smooth or chunky peanut butter
    • Roasted peanuts and chopped green onions to garnish

    How to make Chinese Peanut Chicken:

    • In bowl, mix soy sauce, sesame oil, brown sugar, pineapple juice, salt and white pepper.
    • Add chicken strips and marinate 2 to 3 hours in refrigerator.
    • Drain and discard marinade.
    • Dredge in flour; shaking off excess flour.
    • Heat medium-size skillet, then add additional oil to coat skillet.
    • Saute chicken strips, turning occasionally, until golden brown and cooked through, about 2 minutes each side.
    • In small saucepan, over low heat, combine butter and flour and mix until smooth.
    • Cook slowly until bubbly.
    • Add stock and increase heat to high.
    • When stock begins to thicken, add whipping cream and peanut butter, stirring until peanut butter is dissolved and sauce is creamy and the consistency of a heavy gravy.
    • Place chicken strips on plate, top with sauce and sprinkle with green onions and peanuts.
    • Chinese Peanut Chicken is ready to serve.
    • Serve hot!
  • Chinese Almond Chicken Recipe

    Ingredients:

    • 1 large chicken breast half boned and skinned
    • 3 tablespoons vegetable oil
    • 1/2 cup whole blanched almonds
    • 2 tbsp sherry
    • 2 tbsp soy sauce
    • 2 tsp cornstarch
    • 1 tsp granulated sugar
    • 1/2 tsp ground ginger
    • 6 ounce package frozen snow peas thawed
    • 2 tbsp sliced green onions

    How to make Chinese Almond Chicken:

    • Cut chicken into 3/4 inch cubes.
    • Set aside.
    • Heat oil in wok over medium high heat.
    • Add almonds and toss until browned about 5 minutes.
    • Remove with slotted spoon and set aside.
    • Add chicken to wok and toss 3 minutes.
    • In small bowl mix sherry soy sauce, cornstarch, sugar and ginger.
    • Stir into chicken then cook and stir until thickened.
    • Stir in snow peas, onion and reserved almonds.
    • Chinese Almond Chicken is ready to serve.
    • Heat through then serve with hot steamed rice.
