    Wash chicken properly then drain.

    Cut chicken into small cubes.

    In a bowl, combine yogurt, ginger and garlic powder, pepper, red chili and salt. Mix well.

    Put chicken cubes in it turn to coat evenly.

    Cover and marinate for 4 hours in the refrigerator.

    Place the corn flour and 1/4 tsp pepper and salt in a resealable plastic bag.

    Heat oil in a deep pan or skillet over medium high heat.

    Step 1

    Place chicken mince in a food processor. Add all remaining ingredents except oil. Process until well combined.

    Don’t over chop the meat in the food processor, just a few spins. Take it out in a bowl. Cover and keep aside for 30 minutes to blend flavors.

    Put some oil on your hands to prevent meat from sticking to them. Make round small balls and put on skewers. Press firmly and shape into seekh kabab.

    Step 4

    Put the seekh kabab on very low heat of coal fire or in a oven.

    Cook and turn skewer ocassionally, until the kabab are light brown.

    Step 6

    Brush over the remaining oil with the seeds for the last minute of cooking.

    Once done, remove the kebabs from the skewers  (seekhs) with the help of a piece of bread so you don’t burn yourself.

    1. Do not over gril or brown the kabab.
    2. Another way to make chicken seekh kabab is that put the mixture around the satay stick and then place them on a hot tawa or griddle, drizzle oil or butter and cook evenly all around until browned.
    3. If you are making this kabab on the tawa then you need to baste them with butter or oil at regular intervals.
    4. These delicious, juicy kebabs can be made with any minced meat you like, but I like chicken best Minced chicken is easily available in the market, but in case you do not get it then simply buy the boneless chicken, cut into small pieces and chop little bit in the chopper. Your minced chicken will be ready.

    I’ve made these kabab’s on the Griddle Pan but you could also broil it in the oven if you wish. These kabab is a nice combination of chicken mince, raw papaya, fried onion and spices.This tawa kebab recipe is fast and fabulous—and sure to satisfy any palate!!

    They’re easy and always a crowd pleaser. I used papaya and fried onion in this tawa kabab recipe which make the kabab’s very moist, juicy and flavorful. Also I marinated these kabab’s for just a couple of hours and they still came out really flavorful. You can use any meat beef, mutton or lamb of your choice and you can make them spicy or non spicy according to your preference.I love the sizzle when the Kabab touches the hot pan. 😛

    • 500 gm chicken mince
    • 4 tablespoon fried and ground onion
    • 3 tablespoon cooking oil
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon raw papaya
    • 1 tablespoon red chili crushed
    • 1 tablespoon whole coriander crushed
    • 1 tablespoon cumin seeds roasted and crushed
    • 1/2 teaspoon garam masala powder
    • Salt to taste

    • In a small pan, dry roast cumin seeds, coriander seeds and red chilli. Let it cool and grind.
    • Put chicken mince in a mixing bowl. Add fried onion,green chilies, ginger garlic paste, raw papaya, garam masala, salt and grinded masala. Mix until well combined.
    • Leave it for 20 minutes to blend flavors. Then shape into seekh kababs.
    • Refrigerate for 1 hour or until set.
    • Now heat oil on a griddle (tawa) over medium heat.
    • Put kabab on the griddle (tawa). Fry kabab on each side for 2-3 minutes or until they turn golden.
    • When done, give them smoke of charcoal. Take it out in a serving platter. Tawa Kabab is ready to serve. ENJOY!!

    Serving Suggestions:
    1.You can served these kababs in a tortilla wrap or chapati with some green chutney.
    2.Serve with naan and raita.

    Recipe Note’s:

    1. While mixing chicken mince, make sure it’s completely drained of water or else it will cause problems later while making the kebab.
    2. For a healthy and lighter version, these kababs can also be baked.
    3. You can prepare the kababs and place them in the fridge to fry when needed.
    4. You can even fry them and wrap them in aluminium foil to warm up later and they taste good.
    5. You can grill or BBQ them as well.

    • 1/2 kg chicken mince

    • 1 packet fresh cream
    • 1 tsp white cumin
    • 1 tsp red chili powder
    • 1 tsp papaya paste
    • 2 tbsp seekh kabab masala
    • 2 tbsp oil
    • 1 tbsp poppy seeds
    • 1 tbsp dry milk powder
    • 1 tbsp roasted gram
    • 4 whole black pepper
    • 6 green cardamoms
    • salt to taste
    • 2 green chilies chopped
    • 1/2 bunch mint leaves finely chopped

    Instructions

    Method

    • Place chicken mince and bread slices in a large bowl.
    • Grind roasted gram, cumin seeds, green cardamom, black pepper and poppy seeds.
    • Add this powder into chicken mince.
    • Place chicken mince in a Chopper.
    • Process until well combined.
    • Take it out in a bowl.
    • Add seekh kabab Masala, dry milk powder, fresh cream, salt, red chili powder, green chilies, mint leaves and papaya paste.
    • Mix well.
    • Leave it for 20 minutes.
    • Then make seekh kabab out of mixture.
    • Preheat a grill on medium high heat.
    • Cook kabab on the grill for 10 minutes or until cooked thorough, brush with a little oil.

     Prep Time: 20 minutes

    Cook Time: 15 minutes

    • 500 gm boneless  fish
    • 1 onion, finely chopped
    • 8 green chilies
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 1 tsp red chili powder
    • 1 tsp cumin seeds, roasted & crushed
    • 1/2 tsp turmeric powder
    • 1 tsp salt
    • 3 tbsp fresh coriander leaves, finely  chopped
    • 2 tbsp fresh mint leaves, finely  chopped
    • 3 tbsp Ghee or oil

     

    Directions:

    1. Place boneless fish, green chilies, onion, salt, red chili powder, cumin seeds, turmeric powder, ginger garlic paste in a chopper.
    2. Process until well blended.
    3. Put into a large bowl, add chopped coriander leaves, mint leaves.
    4. Mix well.
    5. Make kebabs of it and put on skewers.
    6. Preheat grill on medium high heat.
    7. Lightly greased the grill with oil.
    8. Place skewers on preheated grill and grill for 10-12 minutes or until done.
    9. Turning occasionally.
    10. When cooked remove from the skewers, sprinkle lemon juice over it.
    11. Mahi Seekh Kabab is ready to serve.

    Potato Cheese Seekh kabab

    Ingredients

    • 500 boiled potatoes
    • 200 gm cheese grated
    • 1 egg white
    • 2 tbsp rice flour
    • 2 green chilies finely chopped
    • 1/2 bunch mint leaves finely chopped
    • 1 tbsp seekh kabab Masala
    • 1 tsp red chili powder
    • 1/2 tsp black pepper crushed
    • 2 bread slices
    • salt to taste
    • 2 tbsp Oil
    • Salt to taste

    Instructions

    Method

    • Peel boiled potatoes and mash them with a fork.
    • Add rice flour, mint leaves, red chili, bread slices, black pepper, green chilies, seekh kabab Masala and salt.
    • Add egg white and cheese mix well.
    • Make seekh kababs out of this mixture.
    • Cook on a hot greased grill for 4-5 minutes or until well done. Delicious Potato Cheese Seekh kabab is ready to serve.

    Chicken Russian Kebabs Recipe

    Ingredients

    • 4 boneless chicken breasts
    • 3 eggs
    • 2 tbsp butter
    • 1 green bell pepper finely chopped
    • 1 boiled carrot finelt chopped
    • 2 cups boiled potatoes
    • 1/2 cup sweet corn
    • 1/4 cup spring onion finely chopped
    • 4 tbsp plain flour
    • 1/2 cup milk
    • 3 tbsp fresh corinader leaves finely chopped
    • 2 green chilies thinly sliced
    • 1 tsp black pepper
    • 1/2 tsp all spice powder
    • 1 tsp salt
    • Oil for frying

    Instructions

    • Cook chicken for 20-25 minutes or until tender then shredded properly.
    • Set aside.
    • Mash boiled potatoes.
    • Place all ingredients except oil in a large bowl.
    • Mix well.
    • Wet the palms and shape the mixture into oval shapes.
    • Beat egg with salt and pepper.
    • Dip kebabs in egg.
    • Deep fry for 2-3 minutes on each side or until golden.
    • Remove from the oil and drain on paper towel.
    • Russian Kebabs are ready to serve. ENJOY!!

    Make a smooth paste of cooked corn without adding water.

    Place the corn in a bowl.

    Heat oil in a deep pan over medium heat.

    Make the rolls out of the dough like seekh kabab.

    Kebabish Rice

    An unusual rice dish made by adding spicy kebabs to rice, cooked with egg, spring onion and other spices. Try this tasty Kebabish Rice recipe, another variation of regular Pulao. Like this recipe, you can also modify the recipes to breakout the boring routine and collect praises.

     Prep Time: 40 minutes

    Cook Time: 1 hour

     Servings: 5

    Ingredients

    For Kebabs:

    • 500 gm mince
    • 1 egg, lightly beaten
    • 1 onion
    • 5 cloves garlic
    • 1 inch piece of ginger
    • 4 green chilies
    • 4 tbsp fresh coriander leaves
    • 4 tbsp pomegranate seeds
    • 1 tbsp red chili, crushed
    • 1 tbsp turmeric powder
    • 1 tbsp whole spice powder
    • salt to taste

    For Rice:

    • 300 gm rice
    • 1/4 cup cooking oil
    • 1 onion, finely chopped
    • 2 tomatoes, finely chopped
    • whole spice as required
    • 8 green chilies, cut it from center

     

    Directions:

    1. Wash rice with few changes of water then soak in water for 30 minutes.
    2. Place mince in a chopper or food processor.
    3. Also add onion, ginger, garlic, green chili, coriander leaves, egg, red chili, turmeric, whole spice, and pomegranate seeds
    4. Process until well combined.
    5. Take it out from the chopper and make kebabs of it.
    6. Heat oil in a deep pan over medium heat.
    7. Deep fry kebabs for 10 minutes or until golden brown.
    8. Saute onion in a deep wok or pot.
    9. Add whole spice and soaked rice into the wok.
    10. Pour water as required to cook rice.
    11. Now add tomatoes and green chilies.
    12. When rice is almost cooked.
    13. Then put kebabs in it and mix slightly.
    14. Cook on low flame for 10 minutes or until cooked thorough.
    15. Transfer into a serving plate.
    16. Kebabish Rice are ready to serve.

    • Enjoy with Pudina Raita.
  • Recipe: Mini Kebab

    Mini Kebab 

    Prep Time: 15 minutes

    Cook Time: 20 minutes

    Servings: 5

    Ingredients

    • 1/2 kg lamb mince
    • 1 cup spring onion
    • 4 green chilies
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 2 tsp cumin seeds
    • 1 tsp coriander seeds
    • 1 tsp red chili, crushed
    • 1 tsp chaat masala
    • salt to taste
    • 2 eggs, lightly beaten
    • oil for frying

    Directions:

    1. Place mince in a chopped.
    2. Add spring onion, green chilies, coriander seeds, ginger garlic paste, cumin seeds, chaat masala, red chili and salt in it.
    3. Chop for 1 minute or until well combined.
    4. Take it out in a bowl.
    5. Make small kebabs out of the mixture.
    6. In a small bowl, beat egg.
    7. Heat oil in a deep pan over medium heat.
    8. Dip kebab in beaten egg.
    9. Fry kebabs on low heat for 10 minutes or until golden.
    10. Remove from the oil and drain on kitchen paper.
    11. Mini Kebabs are ready to serve.

    • Enjoy with Yogurt Sauce.

     

  • Recipe: Keema Cutlets (Mince Patties)

    Keema Cutlets (Mince Patties)

    Ingredients

    • 500 gm Mutton Keema
    • 2 lb potatoes
    • 4 onions, chopped thinly
    • 4 cloves
    • 4 cinnamon sticks
    • 4 cardamoms
    • 8 garlic flakes
    • Small piece ginger
    • 2 tsp poppy seeds
    • 2 eggs
    • salt, turmeric, red chilli powder
    • 4 tsp besan flour
    • Oil for deep frying
    • Few coriander leaves and curry leaves, finely chopped

     

    Directions:

    Step 1

    Boil potatoes, peel the skin and mash the potatoes.

    Step 2

    Grind ginger and garlic to fine paste. Grind cloves, cinnamon, cardamoms and poppy seeds.

    Step 3

    Add this to mashed potato mixture then add coriander leaves and curry leaves and mix well.

    Step 4

    Wash keema.

    Step 5

    Add onions, salt, chilli powder and turmeric to keema, mix well add some water and cook.

    Step 6

    When cooked grind this and add ginger-garlic paste and mashed potato mixture to it.

    Step 7

    Take besan flour and add some water and beat eggs in that and mix well.

    Step 8

    Heat oil in a shallow pan over medium heat. Take Keema mixture and make small balls.

    Step 9

    Take each ball and dip in the besan flour mixture and put them in oil and fry until golden brown.

    Step 10

    Deep fry all the keema balls. Keema Cutlet is ready to serve.

    Serving Suggestions:

    • Serve hot with tamarind sauce.

     

  • Pathar kabab Recipe

    Step 1

    Grind fresh coriander leaves, mint leaves, green papaya, green chillies to a fine paste.

    Step 2

    Mix in ginger garlic paste and all the dry ingredients, mix well and apply equally on the mutton pasanda.

    Step 3

    Let it marinate for one hour. Cooking on stone slabs:(traditional way of cooking on kadapa stone.

    Step 4

    Take a flattish piece of rough granite or kadappa of about 11/2″ length x 1″ breadth x 2″ thickness. Wash the stone and rest it on bricks on two sides to make a bridge, taking care that it is safely balanced.

    Step 5

    Heat up the granite well with live charcoals underneath.

    Step 6

    Sprinkle a little oil or ghee on the surface and put the marinated meat picattas. Turn them a few times basting them occasionally with oil.

    Step 7

    Take off when cooked through. Pathar Kabab is ready to serve.
