    Chicken Spring Rolls

    Making Chicken Spring Rolls yourself ensures a maximum freshness of flavour.Give this Chicken Spring Rolls recipe a try.

    Ingredients

    • 250 gm chicken
    • 1 packet ramen noodles
    • 1/2 cabbage finely julienne cut
    • 5 to 6 carrots grated
    • 4 spring onion sliced
    • black pepper to taste
    • salt to taste
    • 3 to 4 tbsp soy sauce
    • spring roll wrapper one pack
    • 3 to 4 tbsp oil

    Instructions

    Method

    • Boil the chicken pieces and shred them.
    • Then heat some oil and put the cabbage in it and fry it till it become soft but don’t over cook it.
    • Then do the same thing with carrots.
    • Do not fry the chicken, ramen noodles and spring onion. In the end mix all the ingredients together.
    • Make the rolls.
    • Heat oil in a deep pan over medium heat. Fry for 2-3 minutes or until crispy and golden brown. Chicken Spring Rolls is ready to serve.

    Step 1

    Put chicken and tandoori marinade in a large plastic food storage bag. Shake well to coat evenly.

    Step 2

    Let marinate in refrigerator for at least 2 hours. Remove chicken from marinade.

    Step 3

    Grill or broil chicken breasts 8-10 minutes or until chicken is cooked through, brushing with additional marinade during grilling.

    Step 4

    Put tandoori chicken breasts on rolls.

    Ingredients

    For Ice Cream

    • 2 cups mango pulp
    • 1 cup milk
    • 1 cup condensed milk
    • 1/2 cup sugar
    • 1/2 cup lukewarm water
    • 1 tsp gelatin powder
    • 1 packet fresh cream

    For Custard:

    • 1/2 liter milk
    • 1/2 cup sugar
    • 1/2 tsp vanilla essence
    • 2 tbsp strawberry custard
    • 2 cups mixed fruit
    • 1 cup whipped cream
    • Cherries as required

     

    Directions:

    1. To Make Ice Cream:Dissolve gelatin powder in water.Set aside.
    2. Place mango pulp, milk, cream, gelatin, sugar and condensed milk in a blender.
    3. Blend until smooth.
    4. Then take it out in air tight box.
    5. Place in the refrigerator for 6-8 hours or until freeze.
    6. To Make Custard: Dissolve custard in 1/4 cup of milk.Pour remaining milk in a saucepan. Bring to a boil then add dissolve custard.
    7. Stir constantly and cook for 4-5 minutes or until thicken.
    8. Stir in vanilla essence.
    9. Take it out in a serving dish and leave it for 1 hour or until cool.
    10. Now add frozen ice cream.
    11. Then spread mixed fruits over it.
    12. Top with cream and cherries.
    13. Ice Cream Fruit Custard is ready to serve.

    • 1 package egg roll wrappers (about 14 ounce)
    • 2 pound chicken mince
    • 2 boiled potatoes, finely chopped
    • 2 cups cabbage, finely chopped
    • 1 cup carrot, finely chopped
    • 1 cup spring onions, finely chopped
    • 2 eggs, lightly beaten
    • 1 tbsp soy sauce
    • 1 tsp black pepper
    • salt to taste
    • oil for frying

    Directions:

    Step 1

    Heat 2 tbsp oil in a pan or deep skillet.

    Step 2

    Place chicken mince in it and cook for 10 minutes or until no longer pink and all juices runs clear.

    Now add potatoes, cabbage and carrot.

    Stir fry 2-3 minutes then add soy sauce.

    Step 5

    Add egg and stir well. Cook for 3-4 minutes until eggs are cooked and cabbage is tender.

    Step 6

    Season with salt and pepper.

    Transfer the mixture to a medium bowl.

    Step 8

    Place 1 tbsp of chicken mixture in the center of each egg roll wrapper.

    Step 9

    Roll wrappers around the mixture and fold edges inward to seal.

    Repeat this procedure with all remaining ingredients and make egg rolls.

    Step 11

    Heat oil in a heavy bottom skillet. Fry egg rolls in the hot oil for 3-4 minutes or until golden brown.

    Step 12

    Remove from the oil and drain on paper towels.Hearty Egg Rolls are ready to serve.

    Ingredients

    • 300 gm boneless chicken
    • 1/2 kg puff pastry
    • 1 egg,lightly beaten
    • 1 onion, finely chopped
    • 2 green chilies, finely chopped
    • 1 sachet Maggi taste enhancer
    • 1 tbsp ginger garlic paste
    • 1 tbsp vegetable oil
    • 1 tbsp white vinegar
    • 1 tsp cornflour
    • 1/2 tsp carom seeds
    • 1/2 tsp red chili
    • 1/2 tsp black pepper
    • salt according to taste

     

    Directions:

    1. Place chicken in a large bowl.
    2. Add red chili, black pepper, salt, vinegar, ginger garlic paste, carom seeds and Maggi taste enhancer.
    3. Mix well.
    4. Cover and marinate for 30 minutes.
    5. After 30 minutes, place marinated chicken in a grill pan.
    6. Grill for 12-15 minutes or until chicken is tender.
    7. Remove from the heat and let it cool completely.
    8. Shred the grilled chicken properly.
    9. Dissolve cornflour in 2 tbsp water.
    10. Set aside.
    11. Heat vegetable oil in pan over medium heat.
    12. Sauté onion in it.
    13. Then add shredded chicken, green chilies and corn flour paste.
    14. Cook for 5 minutes or until well done.
    15. Roll puff pastry and cut into rounds with round cutter.
    16. Place 1 tbsp chicken filling on a round pastry.
    17. Cover with another circle.
    18. Brush with beaten egg.
    19. Preheat oven to 200 degree C.
    20. Bake chicken patties for 20 minutes or until light golden and crispy.
    21. Remove from the oven.
    22. Chicken BBQ Patties are ready to serve.
    • Serve hot with Tomato Sauce.

    Ingredients

    For Dough:

    • 1 egg
    • 1-1/2 cups flour
    • 4 tbsp dry milk
    • 4 tbsp oil
    • 1 tsp sugar
    • 1 tsp yeast
    • 1/4 tsp salt

    For Filling:

    • 1 cup cheddar cheese, grated
    • 2 boiled potatoes
    • 1 raw potato, finely chopped
    • 2 spring onions, thinly sliced
    • 2 tbsp butter
    • 1 tsp crushed garlic
    • 1 tsp red chili flakes
    • 1/2 tsp black pepper
    • 1/2 tsp oregano

     

    Directions:

    To Make Dough:

    1. In a bowl, combine plain flour with yeast, dry milk, half beaten egg, sugar, salt and oil.
    2. Knead a soft dough.
    3. Then covered with a wet cloth.
    4. Leave it for an hour.
    5. Then again knead the dough.
    6. Roll into a 6 inches long and 4 inches thick bread.

    To Make Filling:

    1. Place boiled potatoes in a bowl.
    2. Mash them properly.
    3. Add spring onions, black pepper, salt, butter, cheese and red chili flakes.
    4. Mix well.

    To Proceed:

    1. Put this mixture on bread and roll over.
    2. Brush with beaten egg on top of it.
    3. Top with raw potato, remaining cheese, garlic and oregano.
    4. Cover with a plastic bag and leave it for 30 minutes.
    5. Preheat the oven to 180 degree C.
    6. When dough has risen to double the size bake it for 30 minutes.
    7. Delicious Cheesy Potato Bread is ready to serve.

     

    • Serve with Red Chilli Sauce.

    • 1 packet mozzarella cheese
    • 2 cups boiled macaroni
    • 1 cup sweet corn
    • 1/2 cup cornflour
    • 2 eggs, lightly beaten
    • 1 green bell pepper, thinly sliced
    • 2 green chilies, thinly sliced
    • 1/2 bunch parsley, finely chopped
    • 2 tsp red chili flakes
    • 1 tsp oregano
    • 1/2 tsp salt
    • 50 gm butter
    • 2 tbsp oil

     

    Directions:

    1. Place boiled macaroni in a chopper.
    2. Chop for few minutes.
    3. Take it out in a large bowl.
    4. Add 1/2 mozzarella cheese, cornflour, butter, eggs, green bell pepper, green chilies, parsley, oregano, red chili flakes, salt and corn.
    5. Combine all the ingredients.
    6. Preheat oven to 200 degree C.
    7. Grease a baking dish with oil.
    8. Pour the mixture on baking dish.
    9. Sprinkle remaining grated mozzarella cheese over it.
    10. Bake in the preheated oven for 50-60 minutes.
    11. Let it cool for 5 minutes on wire rack then take out of the oven.
    12. Cut into thin slices.
    13. Macaroni and Cheese wedges are ready to serve.
    • Serve with Cheese Dip.

    Step 1

    Place fish, eggs, bread crumbs, cheese, onion, garlic, parsley, dill weed and pepper in a large bowl. Mix until well combined.

    Step 2

    Shape into 1-inch. balls or cubes.

    Step 3

    Heat oil in a deep skillet over medium heat.

    Step 4

    Fry fish nuggets for 5-6 minutes or until golden brown.

    Step 5

    Remove from the oil and drain on paper towels. Fried Fish Nuggets are ready to serve.

    Mint Roti (Pudina Roti)

    Mint is a magic ingredient, which adds zing to any preparation, however simple. Here is a simple process of dry roasting and crushing the leaves boosts the aroma of mint extraordinarily, adding a flavourful punch to the whole wheat flour rotis.

    Pudina roti is such a healthy dish with a wonderful aroma. Its a healthy treat for your taste buds. This is my most favourite style of eating roti. Its a lighter version of roti and I just love it. Check it out the Pudina Roti Recipe here!!

    Ingredients:

    • 2-1/2 cups flour
    • 1 cup mint,finely chopped
    • 2 tbsp oil or butter
    • Oil for shallow frying
    • Salt to taste

    How to make Mint Roti:

    • Sift the flour and salt in a bowl.
    • Add 2 tbsp of oil and mint and knead a stiff but non-sticky dough..
    • Cover with a damp cloth and leave aside for 30 minutes.
    • Divide the dough into 15 parts.
    • Shape like balls and press flat with the palm of your hand.
    • Roll out the roti into a round disc about 5″ diameter.
    • Put roti on a preheated griddle, dry roast both sides first then spread oil on both sides and shallow fry until well browned.
    • Mint Roti is ready to serve.
    • Serve with any pickle or raita.

  • RECIPE: Moong Dal Paratha (Protein Rich Yellow Lentil Stuffed Paratha)

    Moong Dal Paratha 

    Ingredients:
    For the Filling:

    • 3/4  cup yellow split moong dal (soaked for 30 minutes)
    • 2 tsp chopped ginger
    • 1 tsp chopped green chillies
    • 1/2 tsp turmeric powder
    • 1 tsp cumin seeds
    • 1 tsp coriander powder
    • 1 tsp cumin powder
    • 1 tsp garam masala powder
    • 2 tsp dry mango powder
    • 3 tbsp fresh coriander leaves, finely chopped

    For the Dough:

    • 2 cups whole wheat flour
    • 1 tsp salt
    • Water to knead the dough
    • Oil or ghee for cooking

    How to make Dal Paratha:

    For the Filling:

    • Soak the moong dal for 30 minutes.
    • Once soaked, steam the moong dal for about 25 minutes until cooked, draining all excess water.
    • Once steamed and cooked,allow it to cool.
    • Add the remaining ingredients to the dal and mix it until it becomes like a ball of mass.
    • Divide it into 12- 15 equal portions.
    • Set aside.

    For The Dough:

    • Add flour and salt in a large bowl, adding little water at a time to make soft, pliable dough.
    • Knead dough until it is smooth and elastic.
    • Add 1 tsp oil to coat the dough and knead little more.
    • The dough will be soft and non sticky.
    • Set aside covered for 10 minutes.
    • Make 12- 15 lemon sized balls of the dough and roll them out thin to approximately 3 inches in diameter.
    • Note tossing the dough in dry flour while rolling will prevent it from getting sticky when rolling them out.
    • Add a portion of the stuffing in the center. Gather the sides and bring them together, as shown in the picture.
    • Remove the little excess dough which popped out when you brought them together.
    • Press the stuffed dough down. Toss it in some flour and roll it gently applying just even pressure to roll.
    • Roll it to desired thickness and your comfort level in rolling.
    • Place the stuffed parathas on the hot griddle/skillet.
    • Cook for about 1/2 a minute, flip over and add 1 teaspoon of oil/ ghee in and around the paratha.
    • Keep pressing the parathas while on the skillet so the dough gets cooked and the stuffing also gets the heat and gets pressed down into the parathas.
    • Flip and cook the other side for about 1 minute adding 1 more teaspoon of oil.
    • Cook until light golden spots appear on the parathas.
    • Dal Paratha is ready to serve.

    Gajar Ki Barfi is one of my all time favourite deserts, I make it more often than any other sweets. I make it lots of different way and each time it turn out to be good. Carrots are a great veg for desserts, anything made out of it taste yum, like american carrot cake and my carrot raisan cake.

    So Today I came up with Gajar Ki Barfi recipe and believe me it turned out to be good.Method for making carrot barfi, prepared by cooking grated carrots in milk, is same to that of making carrot halwa.     Gajar Ki Barfi

    Ingredients

    • 1/2 kg carrots
    • 250 gm ricotta cheese khoya
    • 1-1/2 cup white sugar
    • 1/2 cup full cream dry milk powder
    • 6 green cardamom
    • 2 tbsp ghee or clarified butter

    For Garnishing

    • 1/4 cup sliced almonds
    • 1/4 cup pistachios
    • 1/4 cup cashew nuts

    Instructions

    Directions

    • Peel carrots then grate properly.
    • Now put grated carrots in a pan.
    • Cook on low heat for 10-15 minutes or until its own water dries.
    • Now put cooked carrots in a chopper.
    • Process until well chopped.
    • In a mixing bowl, combine chopped carrots, ricotta cheese (khoya), dry milk powder, and green cardamoms.
    • Mix well.
    • Place this mixture in the pan.
    • Add ghee or clarified butter in it and fry for 2-3 minutes.
    • Turn the heat off. Add sugar and mix well.
    • Pour this batter in the greased dish.
    • Garnished with almonds and pistachios.
    • Cut into small cubes and leave it for 30 minutes or until set. Gajar ki Barfi is ready to serve.Enjoy!

    Notes

    1. After adding khoya in carrots, keep stirring the mixture at regular intervals. Make sure it doesn’t stick to the bottom of pan.
    2. This burfi will be on the softer side. But taste really yummy.
    3. Instead of setting it as burfi, you can spoon it into bowls and serve as halwa.

    Ingredients

    • 300 gm boiled rice
    • 50 gm currants
    • 2 eggs beaten
    • 1 cup cocktail fruits
    • 1 cup pineapple chopped
    • 1/4 cup oil
    • 4 tbsp sugar
    • 2 tbsp soy sauce
    • 1/2 tsp black pepper
    • salt to taste

    Instructions

    Method

    • Heat oil in a deep skillet.
    • Add beaten eggs and cook for 2 minutes.
    • Then add cocktail fruits, pineapple, currants and sugar.
    • Stir frequently.
    • Cook for 2-3 minutes
    • Now add boiled rice, soy sauce in it.
    • Season with salt and pepper.
    • Cook on high flame for 4-5 minutes or until cooked thorough.
    • Delicious Sweet Fried Rice is ready to serve. ENJOY!

    Ingredients

    • 6 eggs
    • 1/2 liter coconut milk
    • 1/2 cup grated coconut
    • 1/2 cup sugar
    • 1 tbsp butter
    • Few drops of vanilla essence

    Directions:

    1. Preheat oven to 200 degree C.
    2. Put eggs in a bowl.
    3. Beat them properly.
    4. Then add sugar and coconut milk.
    5. Beat for 4-5 minutes or until sugar has completely dissolved.
    6. Now add 3 tbsp grated coconut in it.
    7. Stir in vanilla essence.
    8. Grease a pudding mould with butter.
    9. Sprinkle remaining grated coconut on it.
    10. Pour the prepared mixture in greased pan.
    11. Place pudding pan in preheated oven.
    12. Bake for 15-20 minutes or until its turn nice golden brown.
    13. Take out of the oven.
    14. Garnish with cherries
