    • 1 kg Fish (medium size of fish suitable)
    • 1 cup chopped onion
    • 3/4 cup cooking oil
    • 1/2 cup plain Yogurt
    • 2 tablespoon lemon juice
    • 1 tablespoon ginger paste
    • 1 tablespoon garlic paste
    • 2 green cardamon
    • 2 cloves
    • 1 inch piece of cinnamon stick
    • 1 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon garam masala powder
    • salt to taste

    For Garnishing:

    • Few coriander leaves, chopped
    • 2 Green chilies, thinly sliced

    Step 1

    Heat oil in a pan or wok and fry Onion till brown.

    Step 2

    Mix all other ingredients except sugar and lemon juice and heat through.

    Step 3

    Keep together fish and heat covered in low heat.

    Step 4

    Turn over the fish once (be careful).

    Step 5

    When the water has almost dried up,mix lemon juice.

    Step 6

    When the Cooking Oil begins to float on top, turn the heat off.

    Step 7

    Transfer korma into a serving bowl.

    Step 8

    Garnish with coriander leaves and green chilies. Fish Korma is ready to serve.

    Degi Korma

    At special occasions, wedding and large festive occasion, its popular to make degi korma in Pakistan. Do try it!!

    Ingredients

    • 500 gm Chicken or mutton
    • 1 tablespoon Ginger garlic paste
    • 1 cup Yogurt
    • 1/2 cup Oil
    • 4 Onion thinly sliced
    • 2 black cardamon
    • 4-5 Small cardamon
    • 5 Cloves
    • 2 Cinnamon sticks
    • 2 bay leaves
    • 1 teaspoon Black Pepper
    • 1 teaspoon cumin powder
    • 1 teaspoon red chili powder
    • 1/2 teaspoon Black cumin seeds
    • 1/4 teaspoon nutmeg powder
    • 1/4 teaspoon javitri powder
    • 1/2 teaspoon Coriander powder
    • Salt to taste
    • 2 drops Korma Essence dissolved in 1 tsp milk

    Instructions

    Directions

    • Take oil in a pan.Fry onion to golden brown, sprinkling 1 pinch of salt.
    • Take fried onion in a plate & spread it to cool & crispy.
    • In the same oil fry meat in it very well, until colour changes & smell is gone.
    • Add Ginger garlic paste and fry again well using little water time to time.
    • Add Yogurt and fry until it is fried very well.
    • Add all garam masala, coriander powder, salt & chillies. Again fry well.
    • Add ground fried onion. Mix well.
    • Put water as much as you require for the curry in it.
    • Cover lid & cook until meat is tender.
    • In the end sprinkle ground jaifal, javitri & 2 small ilaichi, korma Essence.
    • Put on low heat on dum for 5 minutes.
    • Take out in a bowl. Degi Korma is ready to serve.

    Mutton Korma Ingredients:

    • 1 kg mutton (rinse and drained)
    • 3 onions, thinly sliced
    • 1 cup oil
    • 1cup plain yogurt
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 1 tsp cayenne pepper
    • 1 tsp coriander powder
    • 1/4 tsp turmeric powder
    • 1/2 tsp  black pepper
    • 1 tsp cumin seeds, roasted
    • 4-5 green cardamom pods
    • 1 cinnamon stick (about 1-inch)
    • 2 tbsp kewra water
    • 3 bay leaves
    • 4 cloves
    • salt to taste

    For Garnishing:

    • 1/4 cup blanched almond
    • 2 tbsp brown onion
    • 1 tbsp julienne ginger

    How to make Mutton Korma:

    Heat oil or ghee in a pan , add sliced onions and fry on high heat for 8-10 minutes or until the onions turn transparent.

    Stir frequently then reduce heat to low and continue to fry until the onion are light golden.

    Remove from the oil and drain.

    Spread the fried onions on absorbent paper.

    Allow it to cool and when crispy ,

    crush it coarsely with a rolling pin

    .

    In the same oil add ginger-garlic paste and fry for few seconds.

    Step 1

    Grind poppy seeds, almonds, cashew nuts, cumin seeds in a grinder and make a smooth paste.

    Step 2

    Heat oil in a deep wok or skillet over medium heat. Add the whole spices, cook and stir for 30 seconds.

    Now add onion and cook for 5 minutes or until golden brwon.

    Heat the oil and fry the onions till they are light golden in colour.

    Remove with a slotted spoon and grind them together with the cardamoms, cloves, nutmeg and mace.

    Chicken White Korma(also known as Qorma) is a luxurious and delicious dish that is really easy to prepare and makes a delightful change from the regular reddish curries! Love it with Rice and Naan. Finger-licking goodness!

    Cook Time: 40 minutes

    Ingredients

    • 1 kg chicken, cut into 12 pieces
    • 1 cup oil
    • 1 cup plain yogurt
    • 2 onions, thinly sliced
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 6 cardamoms
    • 1 tsp whole black pepper
    • 1 tsp white cumin powder
    • 1/2 tsp turmeric powder
    • 1/2 tsp mace powder
    • 1/2 tsp nutmeg powder
    • 1 tbsp kewra
    • 1 tsp salt
    • 6-7 green chilies, thinly sliced
    • 2 tbsp finely sliced ginger

     

    Directions:

    1. Heat oil in a deep skillet or wok.
    2. Add onions and cook on low flames for 3-4 minutes or until onion’s water dry completely.
    3. Then add chicken and cook for 5 minutes or until no longer pink.
    4. Add ginger garlic paste and stir fry for 30 seconds.
    5. Now add salt, turmeric powder,whole black pepper, mace powder and nutmeg powder.
    6. Keep Stirring.
    7. Add yogurt and green chilies.
    8. Cover with a lid and let it cook on low flames for 15-20 minutes or until chicken is tender.
    9. Stir frequently.
    10. Add 1 cup of water in it.
    11. Bring to a boil, add cardamoms and white cumin seeds in it.
    12. Pour kewra essence and turn off the heat.
    13. Take it out in a serving bowl.
    14. Sprinkle ginger slices over it.
    15. Delicious White Korma is ready now.

  • Recipe: Chandi Korma

     Chandi Korma 

     Prep Time: 1 hour + 10 minutes

    Cook Time: 40 minutes

    Ingredients

     

    • 500 gm chicken
    • 250 gm clarified butter
    • 1 cup onion, chopped
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 250 gm yogurt
    • 2 tbsp green chili paste
    • 1 tsp cardamom powder
    • 1 tsp whole black peppers
    • 1 tsp salt
    • 1 tsp kewra essence
    • 1 tsp rose water
    • 4 sliver paper
    • 4 eggs, hard boiled
    • Few rose petals

     

    Directions:

    1. Rinse chicken and trim all excess fat.
    2. Place chicken in a large bowl, add yogurt, green chili paste, cardamom powder, salt, ginger- garlic paste and black peppers.
    3. Mix well.
    4. Cover and marinate for 1 hour.
    5. Heat a deep pan or skillet.
    6. Melt butter and sauté onion in it.
    7. Now add marinated chicken.
    8. Cover and turn heat to low.
    9. Simmer for 30 minutes.
    10. Stir frequently.
    11. Add 1 cup water and cook for more 10 minutes.
    12. Remove from the heat and add kewra essence and rose water.
    13. Take out in a serving bowl.
    14. Place boiled eggs and silver paper on top of it.
    15. Garnish with rose petals.
    16. Chandi Korma is ready to serve.

    Step 1

    Grind cashew nuts, garlic and ginger into a paste with the help of mortar, pestle or blender.

    Step 2

    Soak saffron threads in 1/4cup boiling hot water for about 10 minutes. Strain and keep aside.

    Step 3

    Take a wok or pot and heat ghee. Combine meat with it, brown well to seal in the juices, keep aside.

    Step 4

    In the same wok, add a little more ghee, if required. Add sliced onions and cinnamon stick, cook till onions turn translucent.

    Step 5

    Add meat curry powder, ground paste, and chili powder, stir-fry till quite toasted and oil starts to ooze from paste.

    Step 6

    Add meat and season with salt, stir fine to coat equally. Add the saffron water and additional water.

    Step 7

    Bring it to a boil, decrease the heat to medium-low. Cover and simmer for about 45 minutes, stir occasionally, add a little water if it starts to dry up too rapidly.

    Step 8

    Add tomatoes and yogurt, when the meat is almost cooked.

    Step 9

    Cover, and simmer on low flame till the meat is very tender. Lamb Cashew Korma is ready to serve.

    Ingredients
    1 kg Mutton boneless (cut into small pieces)
    3 cup fresh cream (thick top cream of milk)
    2 cup fresh yogurt
    3 thinly sliced onion
    1 tbsp red chili powder
    1 tbsp coriander powder
    1 tsp turmeric powder
    1 tsp black pepper
    6 cloves
    4 cardamom
    2 inch cinnamon stick
    4 green cardamom
    Few strands of saffron
    1/2 tsp cumin seeds
    1 tsp ginger paste
    1 tsp garlic paste
    Salt to taste
    1/2 cup pure ghee (Desi Ghee)
    1/3 cup Oil
    2 tbsp almond paste
    2 tbsp cashew nuts paste
    Directions:

    Heat oil in a pan. Add thinly sliced onion and cook till golden brown.
    Drain and keep set aside.
    In a same oil add mutton pieces, yogurt, ginger paste, garlic paste, red chili powder, coriander powder, turmeric powder, salt, green cardamom, cardamom, cinnamon stick, cumin seeds, black pepper and 1/2 cup water. Cook till meat completely done.
    Now add almond paste, cashew nuts paste and cook 6-8 minutes on a low flame.
    Add pure ghee (Desi ghee) and cook another 2-3 minutes.
    Fresh thick cream of milk add into korma and mix well. Cook 2-3 minutes and remove from heat. Malai Korma is ready to eat.ENJOY!

    • 4 eggs
    • 2 onion, chopped
    • 2 medium tomatoes, chopped
    • 4 garlic cloves, minced
    • 1/2 inch piece of ginger
    • 2 green chillies, thinly sliced
    • 4 tablespoon oil or ghee
    • 2 tbsp chopped coriander leaves
    • 1 teaspoon pepper powder
    • 1/4 teaspoon turmeric powder
    • 1 teaspoon coriander powder
    • 1 teaspoon red chilli powder
    • 1/2 teaspoon garam masala
    • 1/2 cup grated coconut
    • salt to taste
    • 10 cashew nuts (soaked in water)

     

    Directions:

    Step 1

    Boil the eggs, remove the shells, make slits on them and set aside.

    Step 2

    Blend cashew nuts and coconut to a smooth paste.

    Step 3

    Grind garlic, ginger and chilli together.

    Step 4

    Heat oil, saute chopped onions till golden; add ginger-garlic-chilli paste and stir well.

    Step 5

    Then add the coriander leaves, salt and chopped tomatoes, saute till the tomatoes are cooked well.

    Step 6

    Add all the powders and place the eggs in this and cover with the mixture.

    Step 7

    • 1 kg chicken
    • 1 cup oil or clarified butter
    • 1/2 cup plain yogurt
    • 2 onions, thinly sliced
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon red chili powder
    • 1 teaspoon cumin powder
    • 1 teaspoon dry coriander powder
    • 1 pinch fennel
    • 4 cloves
    • 1 big cardamom
    • 4 small cardamom
    • 1/2 teaspoon mace and nutmeg powder
    • salt to taste

    For Garnishing:

    • few blanched almonds
    • green chilies

    For Smoke:

    • a piece of coal
    • aluminium foil
    • few drops of oil

    Step 1

    Heat oil in a deep pot over medium heat.

    Fry onion for 8-10 minutes or until golden brown.

    Remove from the oil and crush them.

    Now fry chicken in the leftover oil.

    Add ginger and garlic paste and all the ingredients expect yogurt and fried onions.

    Cook few minutes until gravy is cooked thorough.

    Rinse chicken pieces and pat dry.

    Heat oil in a heavy skillet and fry onions until golden brown.

    Then remove from the oil and drained.

    Put fried onions and water in a blender and make a fine paste.

    Mix the onion paste with yogurt and set aside.

    Again heat the oil over medium heat , add cumin seeds, bay leaves, cloves, green cardamom and fry for 1 minute to bring out the aroma of the spices.

    Ingredients:

    • 1/2 cup oil
    • 1 cardamom
    • 1 tsp chilli powder
    • 1 kg chicken pieces
    • 1 tsp coriander powder
    • 1 pinch nutmeg (jaifal)
    • 2 tbsp garlic-ginger paste
    • 4 green cardamoms
    • 5 tbsp yoghurt
    • 5 onions, medium-sized
    • 8 cloves
    • 10 whole black peppers
    • Salt to taste
    • A few drops of khewra essence

    How to make Shahi Chicken Korma:

    • Slice the onions finely and fry on low flame till they are golden-brown.
    • Remove the fried onion from the oil and keep aside.
    • Now add all the spices, except nutmeg and yoghurt, in the oil and add a little water to prevent burning.
    • Mix well.
    • Add the chicken pieces and fry for a couple of minutes on high flame.
    • Add about a cup of water, or as much as needed, and cover.
    • Now crush the fried onions and mix with yoghurt, and add to the chicken.
    • Mix well, cover and cook at medium flame till the chicken is done.
    • Add a little water if the gravy is too dry.
    • Just before taking off the heat, add a pinch of nutmeg and a few drops of khewra essence.
    • Garnish with finely cut ginger and coriander leaves.
    • Shahi Chicken Korma is ready to serve.
    • Serve hot with naan.
