    Ingredients:

    • 4 cups cubed, cooked chicken
    • 2 cups sliced snow peas
    • 1 cup creamy salad dressing
    • 1 cup finely diced red onion
    • 1 cup shredded lettuce
    • 1 cup blanched slivered almonds, toasted
    • 1/4 cup sour cream
    • 1 tbsp lemon juice
    • 1 tsp dried basil
    • 1 tsp dried parsley
    • 1/2 tsp lemon pepper

    Method:

    • Place salad dressing, sour cream, lemon juice, lemon pepper, basil and parsley in a large bowl.
    • Stir until well combined.
    • Stir in chicken, peas, onion, lettuce and almonds.
    • Mix until evenly coated.
    • Cover and refrigerate for 2 hours or until chill.
    • Lemon Chicken Salad is ready to eat.

    Ingredients:

    For Sauce:

    • 1 tbsp vinegar
    • 1 tbsp Brown sugar
    • 1 tbsp Oyster sauce
    • 1 tbsp Sesame oil
    • 1/4 cup  Soup stock
    • 1-1/2 tsp Salt
    • 1-1/2 tsp Cornstarch

    Main Ingredients:

    • 2 tbsp Oil
    • 2 tbsp Ginger, more if desired
    • 1 Chicken, with bones cut in bit sized pieced (boned works well, too)
    • 1  Lemon, sliced and seeded
    • 2 Green onion stalks, cut-into 1 1/2 in pieces

    Directions:

    • Combine sauce ingredients and set aside.
    • Heat wok or frying pan with oil and ginger over high heat.
    • Add chicken, stirring continuously for 1 1/2 to 2 minutes.
    • Add lemon, green onion and sauce mixture.
    • Stir for another 1 1/2 to 2 minutes.
    • Transfer mixture to a clay pot, or a saucepan.
    • Cover and simmer on low heat for 15 to 18 minutes.
    • Use a cornstarch solution to thicken the liquid.
    • Hot Pot Lemon Chicken is ready to serve.
    • Serve with rice.

    Ingredients:

    • 4 skinless, boneless chicken breast halves
    • 2 large cloves garlic, minced
    • 1/4 cup olive oil
    • 1/3 cup lemon juice
    • 2 tbsp chopped red pepper
    • 1 tbsp Dijon mustard
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper

    Method:

    • In a small bowl, combine together olive oil, lemon juice,Dijon mustard, garlic, red bell pepper, salt, and pepper.
    • Reserve 1/4 cup for basting.
    • Place chicken in a resealable bag.
    • Pour remaining marination over it.
    • Seal again and shake to coat.
    • Place in the refrigerator for 20 minutes.
    • Preheat grill for high heat.
    • Lightly grease the grill grate with oil.
    • Drain and discard marinade.
    • Grill chicken for 6-8 minutes on each side or until all juices run clear and chicken is no longer pink.

  • Recipe: Chinese Style Lemon Chicken

    Chinese Style Lemon Chicken Ingredients:

    For The Sauce:

    • 1 tsp sesame oil
    • 1 tsp canola oil
    • 1 tsp grated fresh ginger
    • 2 crushed garlic cloves
    • the zest of one lemon
    • 1 cup chicken broth
    • 2 tsp soy sauce
    • 2 tbsp lemon juice
    • 1 tbsp brown sugar
    • 1 tbsp honey
    • 1 tsp corn starch

    For The Chicken:

    • 2 boneless, skinless chicken breasts
    • 2 eggs beaten
    • 1 cup breadcrumbs
    • 3 tbsp oil
    • salt and pepper to taste

    How to make Chinese Lemon Chicken:

    For The Sauce:

    • In a small sauce pan add the first 5 ingredients on low heat for about 3-5 minutes.
    • Then add everything else and turn up heat to medium.
    • When Sauce will thicken, it is done.

    For the Chicken:

    • Pound chicken with a tenderizer hammer until chicken breasts are about 1/4 inch thick.
    • Heat oil in the skillet over medium high heat.
    • Whisk eggs and add salt and pepper.
    • Mix well.
    • Dip chicken in egg, then in breadcrumbs
    • Put the chicken in skillet and pan fry for about 3-4 minutes on each side.
    • Then remove from the heat and transfer into a serving plate.
    • Pour the lemon sauce over it.
    • Chinese Lemon Chicken is ready to serve.
    • Serve with white boiled rice.

  • Saffron Roast Chicken Recipe

    Ingredients for Saffron Roast Chicken:

    • 1 chicken, about 1.6 kg

    For saffron butter

    • 50 gm unsalted butter, softened
    • 1/2 packet saffron threads, crumbled
    • 1/2 tsp salt

    For the onions

    • 1 tbsp olive oil; 25 gm butter
    • 450 gm onions, halved and thinly sliced
    • 2 tsp garam masala;
    • 2 tsp cumin seeds
    • 6 cardamom pods, lightly crushed
    • 2 tsp finely chopped fresh ginger
    • 50 gm sultanas

    How to make Saffron Roast Chicken:

    • Preheat oven to 200C/Gas Mark 6.
    • Loosen the skin from the chicken breast by easing your fingers under the neck flap, over the breast and down to the legs, without puncturing the skin.
    • Mix the ingredients for the saffron butter and spread evenly over the chicken breast under the skin.
    • Secure the neck flap under the bird with a cocktail stick.
    • Heat the oil and butter in a wide pan and deep fry the onions until softened.
    • Add all the spices and cook for 2-3 minutes.
    • Add the sultanas, then transfer to a roasting dish and place the chicken on top, breast side down.
    • Roast for 45 minutes.
    • Lower setting to 190C/ Gas 5 and turn the chicken breast side up.
    • Stir the onions, piling some of the lighter ones on top of the chicken to keep it moist.
    • Roast for a further 45 minutes or until the chicken is cooked through and the onions are crisp.
    • Saffron Roast Chicken is ready to serve.

    • Serve with Lemon Wedges.
