    • 6 cups white flour
    • 2 cups whole milk

    • 1 cup granulated sugar
    • 1/2 cup cashews
    • 1/4 cup almonds
    • 1 cup maraschino cherry, well drained

    Step 1

    To Make Dough:

    Place flour, 2 tsp sugar, baking powder and salt in a large bowl.

    Step 2

    Add milk, egg and vegetable oil. Mix well

    Step 3

    Knead a soft dough by usinf 2-3 tablespoo water ( if required).

    Step 4

    Cover the dough with a wet cloth, and keep aside in a warm place for a few hours.

    Step 5

    To Make Stuffing:

    Place 1 cup sugar, cashew nuts, almonds and maracshino cherry in a food processor.

    Step 6

    Process ingredients to a fine paste.

    Step 7

    To Make Kashmiri Naan:

    Divide dough into fourteen equal portions.

    Step 8

    Shape into balls.

    Step 9

    Roll into a round shape, approximately 6 inches in diameter.

    Step 10

    Put 1 tablespoon of the stuffing in the center of it.

    Step 11

    Fold the edges of the dough up over the stuffing and pinch it together to enclose the stuffing.

    Step 12

    Press with your hands to flatten the dough into a large 9-inch diameter circle.

    Step 13

    Preheat broiler in oven to the highest possible temperature.

    Step 14

    Heat a cast iron skillet over very high heat until very hot.

    Step 15

    Slap the naan onto the skillet.

    Step 16

    Immediately place the skillet under the broiler; it will puff up.

    Step 17

    Cook for 5 minutes, or until the naan turned golden brown.

    Step 18

    Remove from the oven, wrap in clean napkin and make the other naan’s with the same way. Kashmiri Naan is ready to serve.

    Dissolve yeast in luke warm milk and leave it for 20 minutes to rise.

    Sift flour in a mixing bowl. Rub butter and knead with yeast-milk mixture.

    Preheat oven to 200 degree C.

    Clean chicken and pat dry.

I am not a fan of shop bought pizza bases, but one really good ready-made solution is naan bread; it makes the perfect pizza base and because it is pre-baked you simply need to melt your cheese to finish off your pizza.

    If the first thing you do when you crave pizza is pull out a take-out menu, it’s time to switch things up a bit. Step (leap?) outside of your comfort zone and make your own at home. Don’t worry, this doesn’t require whipping up your own dough and waiting for it to rise (or whatever it’s supposed to do). Now you can use a traditional Asian flatbread, a.k.a. naan, to bring your favorite food to life. It’s as simple as 1, 2, 3… literally.

    This one is topped simply with pizza sauce, leftover grilled chicken, with some vegetables (onion, sweet corn, green pepper, mushrooms) olives and herbs and chili flakes for flavour; you could also use a sore bough Pizza sauce if you prefer. I use a mixture of mozzarella and cheddar cheeses but really you can use whatever kind of cheese you like, or happen to have in the fridge.     Put the yeast in a jug with about 100 ml of the water.

    Pour in the yeast liquid, the yogurt and oil and another 200ml of the water.

    Mix to a rough dough, adding more water if necessary – it should be soft and slightly sticky.

    Put it in a lightly oiled bowl, cover and leave for about 1 hour, or until doubled in size.

    Then cut it into four pieces and roll each out until about 5mm thick.

    Leave to rest for 5 minutes while you heat a heavy-based pan over a medium-high heat.

    Put one of the pieces of dough into the hot pan and cook for 5 minutes or so until its underside has formed a crust and is golden and patched with brown.

    Step 12

    Turn it over and continue cooking until the other side is golden brown.

    Step 13

    Repeat with the other pieces of dough. Delicious Naan are ready to serve.

    Garlic Naan Recipe Ingredients:

    • 1 tsp  active dry yeast
    • 4 tbsp  white sugar
    • 1 cup   warm water
    • 1 beaten egg
    • 3 tbsp   milk
    • 2 tsp salt
    • 4 cup bread flour
    • 2 tsp minced garlic
    • 1/4 cup    melted butter

    How to make garlic Naan:

    • In a large bowl, dissolve yeast in warm water.
    • Proof until frothy.
    • Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise.
    • Let it rise until the dough has doubled in volume.
    • Punch down dough, and knead in garlic.
    • Pinch off small amounts of dough to make 12 to 14 pieces.
    • Roll into balls, and allow to rise again.
    • While the dough is rising, preheat grill to high.
    • At grill side, roll one ball of dough out into a thin circle.
    • Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned.
    • Brush uncooked side with butter, and turn over.
    • Brush cooked side with butter, and cook until done, another 2 to 4 minutes.
    • Remove from grill, and continue cooking until all the naan has been prepared.
    • You can lightly sprinkle some more garlic on top for garnish
    • Garlic Naan is ready to serve.
    • Serve hot!

    To Make the Dough: Add yeast and sugar in warm water and let it rise for 10 minutes.

    Cover with kitchen towel in warm place. Let the dough rise for about 35 minutes.

    Punch the dough and take out air. Let it sit again for 30 minutes.

    Make small balls out of the dough and cover them with awet cloth.

    Place chicken keema in a large bowl. Now put all the filling ingredients in keema. Mix well and set aside.

    Heat a griddle on medium heat.

    Step 8

    Turn the oven to broiler setting and put the rack on top most part.

    Step 9

    Roll the ball into about 3-inch circle.

    Step 10

    Take Keema mixture and fill in the circle and make ball again like you make for kachori.

    Step 11

    Roll out into a size of naan you want.

    Step 12

    Make depressions with the tip of fingers or with soft baby spoon handle.

    Step 13

    Put the naan on tawa on low to medium heat and spray Pam on it. Let it cook for 10 minutes or you see the keema is changing the color to pink or light brown.

    Step 14

    Transfer naan into the oven. Let it broil for 10 minutes or until it turns to your desired color.

    Step 15

    Remove from the oven. Chicken Keema Naan is ready to serve. ENJOY!!

    Preheat a grill at high temperature.

    Make small balls of the dough and spread it in a tear shaped bread.
    Note: [ To make a good quality Kulcha try spreading it by hand by patting and pressing the dough firmly. Otherwise use the rolling pin.]

    Brush oil on one side of the kulcha.

    Put it in the grill and cook for 8-10 minutes. Once the Kulcha is almost cooked turn the heat to full to get some black burn marks. Lahori Kulcha is ready to serve.

    Ingredients

    • 2 cup gram flour besan
    • 1/2 cup water or as required
    • 1 onion finely chopped
    • 1/2 cup spinach finely chopped
    • 2 green chilies thinly sliced
    • 1 tsp red chilli powder
    • 1/2 tsp coriander powder
    • 1/2 tsp garam masala powder.
    • salt to taste
    • 6 naans
    • 3 tablespoon butter or oil

    For Garnishing

    • green chilies optional

    Instructions

    Method

    • In a small bowl, mix together the gramflour(besan), onion, spinach, green chilies, spices, salt and red chili. Add water and make a thick mixture.
    • Spread the besan mixture on the naan.
    • Put naan on a greased baking tray.
    • Sprinkle green chilies over it. Bake in the preheated oven for 8-10 minutes or until golden brown.
    • Remove from the oven.
    • Brush with butter or oil. Besan Wala Naan is ready to serve. ENJOY!!

    Step 1

    Take a large mixing bowl, add flour, semolina, dry yeast, sugar, salt to it. Mix well.

    Step 2

    Add butter, yogurt. Knead a soft, smooth dough with warm water. Cover the dough and keep in warm place for 2 hours or until it double in size.

    Step 3

    Preheat the oven over 200 degree C.

    Step 4

    Now divide the dough into 6 equal sized balls.

    Step 5

    Roll balls with a pin roll. Stuff each bread with cheese. Roll again and flatten into round shape bread.

    Step 6

    Put kulchas on the greased baking tray. Brush each kulcha with oil and leave it for 20 minutes.

    Step 7

    Sprinkle coriander leaves and sesame seeds over them. Bake in the preheated oven for 8-10 minutes or until crispy and golden.

    Step 8

    Remove from the oven. Cheese Kulcha is ready to serve. ENJOY!!

This is a simple recipe that’s low in saturated fat and cholesterol,and still big on taste. Leftover naan can be use in delicious naan roll. Its filled with cooked chicken, cucumber and ketchup then brushed with mango and green chutney. You can use any leftover meat or fish mince filling also.

    If you have leftovers from a Sunday roast chicken, you’ll be set for lunches or suppers for days afterwards. Check out the website for my two other chicken wrap recipes, perfect for kid’s school lunchboxes but tasty enough for a packed lunch for the office too. Why not make a different wrap on each day to keep things interesting?

    This is one of my favourite quick meals; delicious chicken, a tangle of onions and tomatoes and tangy herb chutney are wrapped in lovely soft breads. I have been eating variations of this dish since my childhood; you substitute the chicken for lamb or even paneer or stir-fried chickpeas. I have added some seasoned Greek yoghurt here but that is optional.

    • 1 plain naan
    • 1 boneless chicken breast, cooked
    • 1/2 cucumber, thinly sliced
    • 1 tbsp mango chutney
    • 1 tbsp green chutney
    • 1 tbsp ketchup
    • 1 tsp oil

    Cut cooked chicken into thin strips.

    Heat oil on a griddle or a non-stick pan.

    Put naan on griddle and toast it from both sides.

    Spread mango chutney, ketchup, and green chutney over it.

    Add cucumber then again put on hot griddle and roll with butter paper.

    Take a large bowl, add yogurt, allspice, salt, chili powder, lemon juice, coriander leaves and green chilies to it.

    Bakarkhani Naan is a yeast-raised Pakistani flat bread with a delicious crunchy texture. Goes great with curries.

    This recipe make 8 serving(s).
    Ingredients

    • 4 cups flour
    • 1 egg, lightly beaten
    • 1 cup warm milk
    • 1/2 + 1/4 cup clarified butter
    • 1 tbsp poppy seeds
    • 2 tsp sugar
    • 1-1/2 tsp instant yeast
    • 1/2 tsp salt
    • 1/2 tsp green cardamom powder

    Method

    • Sift flour, yeast and salt in a large bowl. Add sugar, cardamom powder, egg and 1/2 cup clarified butter. Knead with warm milk and make a soft dough. Cover and let it aside for 2 hours to rise.
    • Preheat oven at 200 degree C.
    • Divide dough into eight portions and shape into the balls. Roll out each ball into a thin round flat bread.Apply a little clarified butter on bread then fold into half. Apply butter again and fold length wise.
    • Now roll into a spiral and flatten with your palm. Again roll into a thick naan. Place naan on a baking sheet. Sprinkle with poppy seeds.
    • Bake in the preheated oven for 10 minutes or until crispy and golden.
    • Immediately brush with remaining butter and cover with a damp cloth.
    • Bakarkhani Naan is ready to serve.
    • Enjoy with Butter Chicken.

    Ingredients:
    For the dough :

    • 500 gm plain flour
    • 25 gm ghee or butter
    • 20 gm fresh yeast or 2 tsp dry yeast
    • 1 tsp salt
    • 2 tbsp fresh yogurt
    • 1 tbsp sugar

    For the Stuffing:

    • 100 grams paneer,grated
    • salt to taste
    • 3-4 green chillies, chopped
    • 1 onion, chopped
    • 2 tbsp fresh coriander leaves,chopped

    How To make Spicy Paneer Naan :

    • Take plain flour and sieve it.
    • Yeast sugar in 1 cup warm water and mix it well, till yeast dissolves.
    • Cover it for 5-7 minutes till the mixture becomes full of froth.
    • Take the sieved flour and add this mixture, curd, salt and ghee to the flour.
    • With the help of water, make a dough of it.
    • Knead well for at least 6-8 minutes.
    • Cover the dough with wet cloth and keep it aside for 30 minutes.
    • After 30 minutes knead it again for 1 minute.
    • Meanwhile mix the ingredients of stuffing together properly in a bowl.
    • Take the dough and divide it into small parts and roll them in shape of naan.
    • Put 1 tbsp of stuffing in center and bring the edges in the center to cover the stuffing completely with the dough.
    • Roll it in shape of your choice.
    • Take a pressure cooker and grease it lightly with oil.
    • Remove the lid and heat pressure cooker upside down.
    • Take the naan and apply a wet hand on one side of the naan.
    • Stick this wet side around  the inside of the pressure cooker.
    • Roast till brown spots appear.
    • Repeat it with all naans.
    • Around 3–4 naans can be placed inside the walls of pressure cooker at one time.
    • Spicy Paneer Naans are ready to be served.
    • Apply butter on them before serving.
    • Enjoy!

    Stuffed Kulcha

    Kulcha is a popular Pakistani flat bread from Punjab, especially Lahore. These soft textured breads (kulcha) are easy to prepare. You can make kulchas in the tandoor as well as on a tawa or griddle.

    I don’t like the soapy smell of yeast in breads. Hence have used less amount of it and thus added milk too.

    Kulcha can be made plain or stuffed. you can also stuff kulcha with potato filling as shown in the aloo paratha recipe.  You can also make different variations of kulcha like onion, paneer or pudina kulcha.

    Roll out on a floured board into roughs, almost 1/4-inch thick. If using a filling, put it in the center, seal edges over filling and roll out again carefully.

    Let kulchas rise for approximately 15 minutes.

    Heat a griddle or tawa or a non-stick pan.

    Step 14

    Carefully place kulcha on it and cook on medium heat. Turn before it browns.

    Step 15

    When the other side begins to cook, add some oil and fry until golden.

    Make the other kulchas the same way. Stuffed Kulcha is ready to serve.Enjoy!

    Step 1

    Mix all the ingredients and knead well until the dough is very smooth about 5-10 minutes.

    With oily hands put the dough in a bowl.

    Cover with a damp cloth or polythene bag and leave in a warm place to rise for about 3 hours or until the dough has doubled in size.

    Mean while prepared the stuffing.

    On a floured surface, roll out the ball to about 3 inches in diameter and place it on the palm of you hand.

    Place good amount of mince mixture in the center and carefully fold up the edges to completely cove the filling.

    Press the edges taught together to seal.

    Dip the stuff ball in dry flour and roll out into a round about 6 – 7 inches in diameter.

    Brush the naan with a little cold milk and sprinkle sesame seeds over it.

    Step 13

    Place in a hot oven at 200 degree C for 12-15 minutes until the top is golden in color.

    Step 14

    Remove the naan from the baking sheet and brush with desi ghee or butter.

    Cut each naan into half and transfer into a serving platter. Keemay Waly Naan is ready to serve. ENJOY!
