    Step 1

    Add cumin seeds, turmeric powder, coriander powder and mustard seeds.

    Cook for 10 minutes or until nicely golden. Stirring often.

    Now add peas and water in it.

    Reduce heat to low and let it simmer for 20 minutes or until potatoes and peas are tender.

    Add yogurt and cook on high flame for 10 minutes or until all water dries up. Potato Peas Curry is ready to serve. ENJOY!!

    Mutton Korma Ingredients:

    • 1 kg mutton (rinse and drained)
    • 3 onions, thinly sliced
    • 1 cup oil
    • 1cup plain yogurt
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 1 tsp cayenne pepper
    • 1 tsp coriander powder
    • 1/4 tsp turmeric powder
    • 1/2 tsp  black pepper
    • 1 tsp cumin seeds, roasted
    • 4-5 green cardamom pods
    • 1 cinnamon stick (about 1-inch)
    • 2 tbsp kewra water
    • 3 bay leaves
    • 4 cloves
    • salt to taste

    For Garnishing:

    • 1/4 cup blanched almond
    • 2 tbsp brown onion
    • 1 tbsp julienne ginger

    How to make Mutton Korma:

    Heat oil or ghee in a pan , add sliced onions and fry on high heat for 8-10 minutes or until the onions turn transparent.

    Stir frequently then reduce heat to low and continue to fry until the onion are light golden.

    Remove from the oil and drain.

    Spread the fried onions on absorbent paper.

    Allow it to cool and when crispy ,

    crush it coarsely with a rolling pin

    .

    In the same oil add ginger-garlic paste and fry for few seconds.

    Ingredients

    • 500 gm long grain rice
    • 3/4 cup oil
    • 1/2 cup brown onion
    • 1 tsp garlic paste
    • 2 potatoes, cut into cubes
    • 1 cup green peas
    • 2 carrots, cut into cubes
    • 2 tomatoes, thinly sliced
    • 1/2 cup plain yogurt
    • 1 tbsp whole spice
    • 1 tsp red chili powder
    • 1/2 tsp turmeric powder
    • 2 tsp salt

    Yield: 4 servings

    Directions:

    1. Rinse rice with few changes of water and soak for 30 minutes.
    2. Heat oil in a deep skillet over medium heat.
    3. Add whole spices, brown onions, garlic paste.
    4. Cook for 1 minute then add ¼ cup water.
    5. Add chili powder, salt, turmeric powder, yogurt.
    6. Cook for 5 minutes then add potatoes, carrots and green peas.
    7. Cook for 10 minutes.
    8. Add 1 cup water.
    9. Cover with a lid; cook until vegetables half done.
    10. Add rice with 2 cups of water.
    11. Cover and Cook for 10 minutes or until water nearly dry.
    12. Add green chilies and tomatoes on top.
    13. Simmer for 5 minutes or until done.
    14. Tehri is ready to serve.
    • Serve with Raita.

    Place chicken mince in a food processor. Add all remaining ingredents except oil. Process until well combined.

    Step 2

    Don’t over chop the meat in the food processor, just a few spins. Take it out in a bowl. Cover and keep aside for 30 minutes to blend flavors.

    Put some oil on your hands to prevent meat from sticking to them. Make round small balls and put on skewers. Press firmly and shape into seekh kabab.

    Step 4

    Put the seekh kabab on very low heat of coal fire or in a oven.

    Step 5

    Cook and turn skewer ocassionally, until the kabab are light brown.

    Step 6

    Brush over the remaining oil with the seeds for the last minute of cooking.

    Once done, remove the kebabs from the skewers  (seekhs) with the help of a piece of bread so you don’t burn yourself.

    Step 8

    Garnish with Lemon wedges and ring onions. Sesame Chicken Seekh Kababs are ready to serve. ENJOY!!

    1. Do not over gril or brown the kabab.
    2. Another way to make chicken seekh kabab is that put the mixture around the satay stick and then place them on a hot tawa or griddle, drizzle oil or butter and cook evenly all around until browned.
    3. If you are making this kabab on the tawa then you need to baste them with butter or oil at regular intervals.
    4. These delicious, juicy kebabs can be made with any minced meat you like, but I like chicken best Minced chicken is easily available in the market, but in case you do not get it then simply buy the boneless chicken, cut into small pieces and chop little bit in the chopper. Your minced chicken will be ready.

    This masala omelette recipe is very versatile and you can choose which way you want to go with it.  Commonly Masala omelette is really very tasty to serve at any time.     Break the eggs into a large bowl.

    Beat eggs lightly with a fork.

    Add the seasoning and spices. Mix until well combined.

    Heat oil in a large pan over medium heat.

    Pour half of the egg mixture in the pan and draw the edges into the centre, allowing the uncooked mixture to fill its place.

    Turn the heat down and cook for 2 minutes or until the edges curl over and the center bubbles up.

    Take your spatula and insert under your omelet. Flip the side of the omelet and cook another 2 minutes or until crispy on both sides.

    In the similar way make other omelette as well.

    Garnish with freshly chopped coriander and top wit cheese (optional). Masala Omelette is ready to serve. ENJOY!!

    1. I deseed the green chillies since biting into them can be very unpleasantly spicy. I like their flavour so I take the trouble to remove the seeds and them in. You can just skip this and add red chilli flakes or only pepper for spice
    2. Add some grated cheese just before removing the omelette from the pan and fold in half. Awesome cheese masala omelette ready. I have used both cheddar cheese and pizza cheese with great results
    3. You can add other vegetables like shredded carrots, mushroom, cabbage, etc.
    4. You can saute the vegetables lightly before adding to the omelette, just takes extra time which I don’t like spending on an omelette
    5. You can also cook the omelette by covering it with a lid after pouring the mixture into the pan. I personally prefer the flipping method

    To Make the Dough: Add yeast and sugar in warm water and let it rise for 10 minutes.

    Make a well in flour and add yeast mixture, yogurt and oil. Mix well. Knead a soft dough you can use extra warm water if needed.

    Cover with kitchen towel in warm place. Let the dough rise for about 35 minutes.

    Punch the dough and take out air. Let it sit again for 30 minutes.

    Make small balls out of the dough and cover them with awet cloth.

    Place chicken keema in a large bowl. Now put all the filling ingredients in keema. Mix well and set aside.

    Heat a griddle on medium heat.

    Turn the oven to broiler setting and put the rack on top most part.

    Roll the ball into about 3-inch circle.

    Step 10

    Take Keema mixture and fill in the circle and make ball again like you make for kachori.

    Roll out into a size of naan you want.

    Make depressions with the tip of fingers or with soft baby spoon handle.

    Step 13

    Put the naan on tawa on low to medium heat and spray Pam on it. Let it cook for 10 minutes or you see the keema is changing the color to pink or light brown.

    Step 14

    Transfer naan into the oven. Let it broil for 10 minutes or until it turns to your desired color.

    Step 15

    Remove from the oven. Chicken Keema Naan is ready to serve. ENJOY!!

    Bring to a boil then reduce heat to low. Cook over medium heat for 1 hour or until done.

    Heat oil or ghee in a pan, add onion and cumin seeds. Saute for 1 minute or until translucent.

    When they change color, add asafoetida, ginger-garlic paste and sauté for a minute.

    Then add tomatoes and cook until soft and pulpy.

    Now add boiled Bengal gram and lemon juice; stir occasionally.Cover the lid and simmer for 4-5 minutes.

    Ingredients

    • 16 small chunks of chicken breast
    • 1 large onion
    • 1 inch a piece of ginger
    • 1 clove garlic
    • 2 jalapeño pepper
    • 1 teaspoon lemon juice
    • 2 teaspoon plan yogurt
    • 1/2 cup gram flour (besan)
    • 1/4 cup rice flour
    • 2 tablespoon cornflour
    • a pinch of baking soda
    • 1/2 teaspoon red chilli flakes
    • salt to taste

    Directions:

    Step 1

    Place yogurt, onion, ginger, garlic, lemon juice and jalapeño pepper in a blender. Blend  until fine.

    Step 2

    Take it out in a mixing bowl. Add chicken, red chili and salt. Mix well.

    Step 3

    Marinate the chicken for 1 hour to blend flavors.

    Step 4

    Now add gram-flour, rice flour, and cornflour and little water in the batter. Batter should be thin as honey.

    Step 5

    Heat oil in a deep pan over medium heat.  Fry chicken pieces under low heat to a medium brown.

    Step 6 

    Remove from the oil and drain on paper towel to drain excess oil. Crunchy Chicken Pakora is ready to serve.

    1. Serve hot with ketchup or mint chutney.
