  • Turnip Paratha Recipe

    Turnip Paratha (Shalgam Paratha):

    As you know me, I am always on a hunt to try different veggies. So this Sunday, at local sabzi shop, White Turnip caught my eye. This is a root vegetable called as Shaljam or Shalgam in Urdu. The best way to try out a new veggie is to make a stuffed paratha. It turned out great.
    Whole wheat is good for you, we all know that but if you would like to maximize that goodness? Thats exactly what this recipe is about. I used whole wheat flour, milk and oil to make this paratha.
    I’m so excited to share my Turnip Paratha recipe with you. This Turnip paratha recipe was given to me by a good friend (Nabeela).

    Yes, Turnip (Shalgam) Paratha, sounds strange but you´re gonna love this stuffed bread. Try out this delicious turnip paratha recipe and I am sure you are going to love it. You can have this paratha along with yogurt, raita or any kind of pickle.

    For paratha dough:

    • 3 cups whole wheat flour
    • 1/2 cup milk
    • 2 tablespoon oil
    • 1/2 teaspoon salt
    • water as required

    For Paratha Stuffing

    • 4 medium sized turnip (shalgham)
    • 2 green chilies, finely chopped
    • 3 tablespoon ghee or butter
    • 2 tablespoon oil
    • 2 tablespoon chopped fresh coriander
    • 1 teaspoon chopped ginger
    • 1 teaspoon cumin seeds, roasted and crushed
    • 1 teaspoon coriander seeds, roasted and crushed
    • 1 teaspoon red chili powder
    • 1/4 teaspoon turmeric powder
    • 1/4 teaspoon garm masala powder
    • salt according to taste

    To Make Paratha Dough:

    Step 1

    Place wheat flour, salt, milk and oil in a mixing bowl.

    Step 2

    Knead a soft dough with water.

    Step 3

    Cover with a wet cloth and set aside for 30 minutes.

    To Make Paratha Stuffing:

    Step 1

    Peel off the turnips and grate them.

    Step 2

    Heat 1 tablespoon oil in a pan. Add cumin seeds.

    Step 3

    When it start crackle, add grated turnips.

    Step 4

    Saute till most moisture is gone.

    Step 5

    Now add coriander seeds, red chili, ginger, green chili, turmeric powder, garam masala and salt.

    Step 6

    Cook and stir for 4-5 minutes or until all the ingredients are mixed well and stuffing turns dry.

    Step 7

    Allow to cool completely.

    To Make Turnip Paratha:

    Step 1

    Make 6 round balls from the dough.

    Step 2

    Roll each ball in the shape of roti (about 5-inch diameter) to hold the stuffing.

    Step 3

    Put 2-3 tablespoon stuffing in the center of roti and gather the edges into a round ball.

    Step 4

    Roll each stuffed bread gently dusting flour as per desired thickness.

    Step 5

    Heat a tawa or griddle over medium heat.

    Step 6

    Put the stuffed paratha on the hot griddle (tawa). Cook for 2 minutes then flip the paratha and apply ghee or oil on the paratha.

    Step 7

    Cook 2-3 minutes longer or until the paratha color changes to light golden brown. Transfer into a serving platter. Delicious Turnip Paratha is ready to serve. ENJOY!!

    1. Half cook the parathas and put them in a zip lock bag.
    2. Keep it in the freezer and you can thaw and cook them when required.
    3. This saves a lot of time for especially for working women.

    • 1 teaspoon mustard seeds
    • 1 teaspoon fenugreek seeds
    • 1 teaspoon coriander seeds
    • 1/4 teaspoon fennel seeds
    • 1/4 teaspoon cumin seeds
    • 1/4 teaspoon asafoetida

    To Be Toasted Each Separately and Powdered Together

    Heay oil in a wide pan over medium heat.

    Add sliced okras, salt, turmeric and red chili powder. Stir-fry till it turns crispy.

    When the vegetable is 3/4 th done. Then add the achari powder.

    Now fry over high heat.

    Heat oil in a separate sauce pan. Add tempering items.

    Step 6

    Now run this seasoning over the above masala made.

    Take a bowl, put yogurt in the bowl.

    Add sugar and whisk it for about 10 minutes until the sugar gets dissolves.

    Add the ice cubes and then keep it aside for 2 to 3 minutes so that the mixture gets chilled.

    Now take four tall serving glasses and then pour the lassi in the glasses.

    Take thick cream or fresh malai, add 1 tablespoon of cream to each glass.

    Now take malai pedas and crumble them in a bowl.

    Chicken Tawa Kabab Recipe

    Chicken Tawa Kabab is a restaurant specialty in Lahore city. It has a little spicy taste due to use of poppy seeds and almonds. My whole family also like it.

    Ingredients

    • 1 kg boneless and skinless chicken cut into 1 inch pieces
    • 1/2 cup plain yogurt
    • 1/4 cup oil or ghee
    • 2 tablespoon brown onion crushed
    • 2 tablespoon grinded almonds
    • 2 teaspoon poppy seeds
    • 1 teaspoon ginger garlic paste
    • 1 teaspoon papaya
    • 1 teaspoon all spice
    • 1 teaspoon red chili powder
    • 1 teaspoon salt

    Instructions

    Method

    • Marinate chicken with all above masala for an hour.
    • Heat oil on tawa (griddle) and spread chicken botis on the tawa.
    • Sprinkle a little water on it then cover and cook when water dries and oil comes on top.
    • Remove give dam of coal. Transfer into a serving platter. Garnish with lemon wedges. Murgh Tawa kabab is ready to serve.

    Notes

    Serving Suggestions:
    Serve hot with naan and raita.

    • Enough stock to cover the rice (lamb or vegetable) from a cube is fine

    • 1 Lemon juice
    • 1 medium size onion
    • 1 tsp ginger garlic paste
    • 1 teaspoon cumin seeds
    • Salt to taste
    • 6-8 tbsp oil

    For meatballs:

    • 400 gm minced lamb
    • 1 tsp ginger garlic paste
    • 1 tsp red chilli powder
    • 1/4 tsp turmeric
    • 1/2 tsp chopped green chillies
    • Salt to taste
    • 1/2 tsp garam masala powder
    • 2 tsp corn flour

    Step 1

    Wash rice nicely and drain. keep it aside for 10 minutes.

    Step 2

    Take a bowl and mix the lamb minced with the corn flour, turmeric, red chilli powder, ginger garlic paste, salt, garam masala powder and chopped green chillies.

    Step 3

    Mix well and shape into about 16 balls – it’s easier if you wet your hands.

    Step 4

    Heat a large frying pan (with a lid for later), then fry the meatballs for about 8 mins until golden and cooked through.

    Step 5

    Remove from the pan, get aside.

    Step 6

    Heat more oil in this pan adds chopped onion. Once onion turns slightly golden, add 1 tsp ginger garlic paste and add 1 tsp cumin seeds and add green peas and saute till peas are nicely cooked.

    Step 7

    Now add salt the rice and add enough stock so that it reaches about 1.5 cm above the level of the rice.

    Step 8

    Cover and cook till the rice become tender and the water dries.

    Step 9

    Now add the meatballs top on the rice and cover again.

    Step 10

    Stir in the lemon juice and the remaining mint.

    Step 11

    Reduce flame to minimum and allow to cook for another 5 minutes in its own steam.

    Step 12

    To finish the pulao, stir in the lemon juice and the remaining mint. Meatball and Pea Pulao is ready to serve.

You can also use dried fenugreek if you don’t have access to fresh leaves and you should be able to find both fairly easily in any grocery.

    Mix all the ingredients and marinate the chicken for 30 minutes.

    Ingredients:

    • 500 gm minced chicken
    • 250 gm plain wheat flour
    • 6 green chillies, finely chopped
    • 4 tomatoes, chopped
    • 1 tablespoon ginger garlic paste
    • 2 tablespoon ghee or oil
    • 1 teaspoon red chilli powder
    • 1 teaspoon garam masala powder
    • salt to taste
    • a handful – chopped coriander leaves
    • ghee for parathas as required

     

    Directions:

    To Make Chicken filling:

    Step 1

    First of all, heat ghee, fry ginger and garlic. Put in minced chicken and simmer well.

    Step 2

    Stir in garam masala, salt and chilli powder. Add tomatoes and fry till tender, and ghee begins to separate.

    Step 3

    Add onions, green chillies and chopped coriander leaves. Set it aside to cool it off.
    To Make Chicken Paratha:

    Step 1

    First take wheat flour. Rub in some ghee and 1/2 teaspoon salt.

    Step 2

    Add some water to make a dough. Knead well till it is smooth and pliable.

    Step 3

    Roll it out with your hands into a long roll about 2 inches in diameter.

    Step 4

    Cut into pieces of equal size and flatten it.

    Step 5

    Fill in the chicken mixture.

    Step 6

    Put other flattened pieces on the first, weld the edges, flatten, roll out with a rolling pin into a cake.

    Step 7

    Shallow fry on a hot tawa (griddle)on both sides till light brown. Chicken Paratha is raedy to serve. ENJOY!!

    To Make pastry:

    Step 1

    Mix salt oil into the flour until it is crumbly, add enough cold water for a chapatti-like dough.

    Step 2

    Divide the dough into about 20-25 balls, Roll out with into 3 inch circles.

    Step 3

    Spread oil and flour mixture over one roti, place the second one one top, pressing together gently, repeat until you have pile of seven rotis.

    Step 4

    Roll out the whole pile until it is 7-8 inch in diameter, use extra flour during rolling if necessary.

    Step 5

    Place on a medium hot tawa, cook lightly on 1 side then turn the roti over and cook lightly on the other side for approximately 20 seconds
    To Make Chicken Filling:

    Step 1

    Dry cook the minced chicken with garlic, ginger, chillies and salt, until all the water evaporates, break the lumps if they form.

    Step 2

    Add Worcestershire sauce, mustard mix, and remove from heat when cooked, let it cool

    Step 3

    Add garam masala, onions and coriander. Mix well.

    To Make Chicken Samosa:

    Step 1

    Fold one end over in a diagonal to create a triangle stick down using the flour and water paste, then fold again, the other way, sticking it down with the paste.

    Step 2

    Fill the triangle with the filling ; fold the flap, glue down using the flour paste.

    Step 3

    Repeat for until all the filling is used up. Deep fry 3-4 at a time until golden.

    Step 4

    Remove from the oil and drain on paper towel. Chicken samosa is ready to serve. ENJOY!!

    Mix besan and wheat flour. Add salt and mix well.

    Add a little water and mix. The consistency should be soft and putty-like. It helps if you kneed it with a wet hand.

    Divide this dough into 4 portions.

    Roll each portion into a ball and flatten it into a chapati shape (round).

    Channa Pulao is always my favorite.I have made it many times but this time I wanted to try it with Potatoes ( My fav veggie) and it came so good.

    I do remember my khala (anty) who would make fabulous chana pulao along with potatoes. Well, while making this aloo chana pulao recipe and writing this post i do remember the aroma and taste still lingering in my mind of her pulao. Her dishes was always cooked to perfection and the taste of the pulao was just heavenly.

    Though I make chana biryani often this [highlight]chana pulao[/highlight] is always my quick fix whenever I am pressed for time. Do try this Aloo Channa Pulao recipe. I had it Korma, mint raita and salad.It was a satisfying lunch.

    Note’s:

    1. For the chana pulao obviously you have to first cook the [highlight]chickpeas(kabuli channa)[/highlight].
    2. if you have leftover boiled chickpeas than these too can be added.
    3. The pulao has to be made with basmati rice and desi ghee or else something will be a little amiss if you do not use basmati rice and ghee. This is pretty easy pulao, great to put in your kids lunch box. If you pre cook the chana the previous day itself, then you don’t have to worry about anything. It can be made in minutes.
    4. If you are diet conscious you can add olive or sesame oil.

    This could be also quick fix for lunch box for office going people or students, since less cutting work. You can pack this with cucumber or vegetable raita.

    • 2 cups basmati rice
    • 1 cup chickpeas white channa
    • 2 onion thinly sliced
    • 2 potatoes cubed
    • 2 bay leaves
    • 4 cloves
    • 5 black pepper pods
    • 3 cinnamon stick
    • 1 black cardamom
    • 3 green chilies thinly sliced
    • 4 tablespoon clarified butter or ghee
    • 1 teaspoon ginger garlic paste
    • salt to taste
    • 3-1/2 cups water or chicken stock

    For Garnishing

    • Fresh coriander leaves chopped

    Instructions

    Directions

    • Wash rice with few changes of water and soak them for 30 minutes. Keep aside.
    • Heat oil in a heavy bottom skillet over medium heat.
    • Add the cloves, cinnamon, cardamom, black pepper and bay leaves.
    • Now add the sliced onions, sliced green chilli and also the ginger garlic paste.
    • Saute them until the raw flavor fades.
    • Now add the Potato cubes and the boiled channa.
    • Stir well.
    • Cook for 5-6 minutes or until potatoes are tender.
    • Add rice and lightly stir.
    • Now add the salt and water.
    • Mix well and allow the rice to cook for 10 minutes or until done.
    • Cover with a lid and put on low flame.
    • After 10 minutes, turn the heat off.
    • Fluff the rice and dish it out.
    • Garnish with the coriander leaves. Aloo Channa Pulao is ready to serve.
