    • 1/2 cup yogurt whipped
    • 1/8 piece of nutmeg ground
    • 2 inch piece of papaya with peel ground
    • 1 tsp ginger / garlic

    • 1 onion sliced
    • 1/4 cup oil
    • 1 tbsp fresh coriander leaves chopped
    • 1 tbsp mint leaves chopped
    • 1 tbsp spring onion chopped

    Step 1

    Mix the first 14 ingredients, i.e. from the yogurt to the cumin seeds.

    Step 2

    Apply this mixture all over the meat pieces and let it marinate for 2 hours.

    Step 3

    Then fry the onions in the heated oil till they are light golden.

    Step 4

    Add the meat to the onions and stir occasionally. Cook till the meat is tender and flakes off slightly.

    Step 5

    When the oil floats on top, give dum of coal i.e put the piece of coal directly on a flame.

    Step 6

    When it becomes red put it on a small piece of roti or bread or a small receptacle made of aluminum foil.

    Step 7

    Place this in the pan containing the food. Pour 1 tsp. of oil on the piece of coal. Immediately cover the pan with a lid for 5 minutes.
    This gives the food a barbecue flavour.

    Step 8

    Garnish with the coriander, mint and spring onion. Dum Ka Gosht is ready to serve.

    Simmer until water has evaporated. Sprinkle with pepper and the ground cardamom.

    Ingredients

    • 500 gm boiled potatoes
    • 2 eggs lightly beaten
    • 4 green chilies thinly sliced
    • 4 bread slices
    • 1/4 cup chopped mint leaves
    • 1/4 cup chopped coriander leaves
    • 1 tsp chopped garlic
    • 1 tsp red chili powder
    • 1 tsp cumin seeds
    • 1/2 tsp salt
    • oil for frying

    Instructions

    Method

    • Soak 4 slices of bread in water then gently squeeze out the water.
    • Place potatoes and bread slices in a large bowl. Slightly mash the boiled potatoes, add the spices and salt. Now add fresh coriander, mint, green chilies and garlic.
    • Mix well.
    • Shape into kebabs.
    • Dip tikki in egg then fry until golden brown. Sindhi Aloo Tikki is ready to serve.

    Serving Suggestions:
    You can serve Sindhi Aloo Tikki along with Punjabi Dhaba Dal or green chutney.

    Step 1

    Heat oil in a deep pan over medium high heat. Add onions and cook until lightly browned.

    Step 2

    Remove half of the onions and place on absorbent paper.
    Set aside.

    Now add chicken, all of the spices. Cook and stir for 10 minutes or until chicken is no longer pink.

    Step 4

    Add yogurt. Cover and cook on low heat until all water evaporates and chicken is tender.

    Step 5

    Now add tomatoes, potatoes, dried plum and green chillies. Stir and cook on high heat for 5 minutes until done.

    Step 6

    Boil rice with whole spices then strain.

    Step 7

    Now take a large pot, layer rice and chicken curry one by one with a last layer of rice on top.

    Step 8

    Sprinkle with mint leaves and green chilies. Drizzle food color over the rice.

    Step 9

    Put pot on a griddle( tawa) and cook on high heat for 5 minutes or until steam appears.

    Step 10

    Then lower heat for 10- 15 minutes. Dish it out. Sindhi Biryani is ready to serve. ENJOY!!

    Directions:

    Heat oil in a deep wok over medium heat. Add onions, and fry until golden brown.

    Soak saffron strands in water.

    Melt butter in the same pan. Add ginger garlic paste, red chilies and almonds. Saute in butter for 2 minutes or until fragrant.

    Step 5

    Add mutton and salt. Stir and cook for 5 minutes or until lightly browned.

    Step 6

    Add water. Bring to a boil then lower heat to medium low. Cook until meat becomes tender and all water evaporates.

    Step 7

    Now boil rice with salt in another wok.

    Step 8

    In a small bowl, mix together the yogurt,cloves, cardamoms, cumin seed, mint leaves, chopped chillies and coriander. Strain the saffron water and add lemon juice. Pour over the mutton.
    Cook 2-3 minutes longer.

    Step 9

    Sprinkle half of the boiled rice over the mutton. Add fried onion. Then cover with remaining rice. Pour milk and butter on top.

    Step 10

    Cover with a lid; seal the edges of the pan with flour paste. Put the wok on hot griddle for one hour. Mughlai Biryani is ready to serve. ENJOY!

    Clean all fat and silver skin from lamb.

    Prick lamb thoroughly with a sharp knife or large fork or cut small slits all over lamb with a sharp knife.

    Cover and marinate for an hour.

    Pour the marinade over the lamb and coat well all over.

    Cover and place it back in the refrigerator for 6-8 hours or preferably over night.

    Prepare the grill and grill lamb on an oiled rack set 5-6 inches over glowing coals for 20 minutes on each side.

    • 4 eggs
    • 1-2 slices bread, crumbled
    • 2 tsp ghee
    • 1 green chilli, finely chopped
    • 1 tsp minced onion
    • Salt to taste

    For the sauce:

    • 1 tbsp butter or ghee
    • 1 small onion, chopped
    • 1 lb ripe tomatoes, skinned
    • 2 tsp coriander leaves, chopped
    • 1/2 tsp garam masala
    • 1 tsp chilli powder

    Step 1

    Hard-boil eggs. shell and set aside.

    Step 2

    Soak the bread in the cold water until soft then drain and squeeze out any liquid.

    Step 3

    Slice the eggs lengthwise and remove the yolks.

    Mash the egg yolks into the bread and ghee. Stir in the chilli, onion and salt.

    Heap the mixture into the halved egg whites and place in a flat flameproof dish.

    TO Make CURRY:Melt the butter and fry the onion until soft but not browned. Stir in the remaining ingredients and simmer fro 10 minutes until tender.

    Step 7

    Pour the sauce over the eggs, cover and cook in a preheated oven at 180 deg C for about 20 minutes until the sauce is hot.

    Step 8 

    Take it out in the serving platter. Egg Kofta is ready to serve.

    Heat oil in a handi (deep frying pan) and fry chopped onion. When onions are golden brown, add rest of spices.

    Add in mutton and fry well. In local languages, it is called Bhoun-na. Add yogurt and heat again.

    Then, add 2 cups of water. Cover and cook for 1 hour or until meat is tender.

    For Kofta:

    • 500 gm chicken mince
    • 12 hot green chili, with green stem
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 2 tbsp bread crumbs

    • 1 onion, blended
    • 1/4 cup oil
    • 1 cup tomatoes

    Step 1

    Wash green chilies and drain. Set aside.

    Step 2

    Place chicken mince in large mixing bowl. Add ginger garlic paste, bread crumbs, black pepper and salt. Mix well.

    Take ball size chicken mince and cover the green chili leaving the green stems. Cover and leave it for 30-40 minutes or until set.

    Step 4

    Heat oil in a cooking pot and fry prepared koftas for 5-8 minutes or until brown on all sides. Then remove from oil and set aside.

    Blend tomatoes with red chili powder and tomato paste.

    Step 6

    In the remaining oil add Onion, tomato blend, black pepper and salt. Cook for 5 minutes then add water. Bring to a boil, put fried koftas in it.

    Step 7

    Let it simmer for 20 minutes or until chicken is tender and gravy is slightly thick. Take it out in a serving bowl.

    Garnish with mint and coriander leaves. Green Chili kofta is ready to serve.

    I was about 10 when Pakistan’s first private television channel – NTM started broadcasting. Thunder cats became my favorite cartoons back then. The Thunder Cats used to be aired around dinner time. Meaning all of us siblings and cousind will be fixated around the tv while having dinner.
    My Mommy gave up on trying to station us at the dinner table while our favorite cartoons were on. At that time, my favorite dinner was Aloo Gosht (Potato Meat Curry) served with a paratha or a bowl of rice while watching our favorite cartoons. Life was perfect!

    I can’t seem to forget those Dinner prepared by mom. A steaming pile of boiled rice slathered in curry flavored with fresh ground spices and drippings of meat. Tender and juicy pieces of mutton which you pull apart with fingers and potatoes cooked to the point of crumbling but still retaining their shape till you serve them in the plate. Simple, homey and satisfying – plain soul food for us. A tradition which conjures up numerous childhood memories.

    It still amazes me how a 10 year old could eat parathas without any guilt or even a remote thought of weight gain. Now I feel that even the thought of having a buttered paratha adds couple of pounds to one’s waist.
    So Today, I am sharing my favorite aloo gosht recipe in the loving memory of my childhood, guilt free Paratha and rice eating and being a 10 year old.

    It can be served with pea pulao, home made chappati – flat bread or buttered paratha.

    • 1 Kg mutton on the bone, cut into chunks
    • 1/2 cup vegetable oil

    • 1/2 tsp turmeric powder
    • 1 piece of ginger, peeled and chopped
    • 4 cloves
    • 3 black cardamom
    • 1 tbsp cumin seeds
    • 1 tbsp coriander seeds, crushed
    • 1 tbsp red chili
    • 1/2 tsp black pepper corns
    • salt according to taste
    • 3 cups water

    For Garnishing:

    • 4 tbsp chopped coriander leaves
    • 4 green chilles, thinly sliced

    Step 1

    Wash meat thoroughly and drain in a colander.

    Step 2

    Heat oil in a large skillet over medium heat. Add ginger and garlic; cook for few seconds. Now add the meat and cook for a 10 minutes.

    Step 3

    Meat will leave a lot of water let it cook in that for another 10 minutes or until its near enough dried.

    Step 4

    Add all the dry ingredients, except the turmeric powder.

    Step 5

    Grind the onions and make a smooth paste of it. Add onion paste to the small pan and cook for 10-12 minutes or until the rawness of the onions is gone. Now add tomato and the tomato paste. Stir and cook on low heat for 10 minutes or until all water dries up.

    Step 6

    Add to the skillet and mix well. Add turmeric powder and water. Cook for 40 minutes or until meat is almost done.

    Step 7

    Meanwhile, peel, wash and cut the potatoes into halves.

    Step 8

    Add potatoes and water to get the sauce consistency you desire. Cover and simmer on low flame for 8 minutes or until potatoes are cooked and the oil separates.

    Step 9

    Remove from the heat. transfer into a serving dish. Sprinkle with green chilies and coriander leaves.

    Step 10

    Aloo Gosht is ready to serve. Enjoy!

    Take a large bowl, add milk powder, baking powder, plain flour, semolina, butter, fresh cream and cardamom powder. Mix until well combined.

    Step 2

    Now add egg in small portions. Knead a smooth dough. Cover dough with a wet cloth and leave it at room temperature for 15 minutes.

    Step 3

    To Make Sugar Syrup ( Sheera):

    Take a medium pot, add water, sugar and cardamom pods. Bring to a boil and cook for 10-12 minutes or make half thread sugar syrup. Keep warm.
    Step 4

    First, take a little ball of dough and make it round with your hands then fill with chocolate chips and shape into a ball.

    Step 5

    Heat oil in a deep wok over medium-low heat. Fry them on the low flame for few minutes or until golden brown; stirring constantly.

    Step 6

    Remove from the oil and put chocolate gulab jamun into sugar syrup. Cover with the lid and soak for 20 minutes.

    Step 7

    Transfer into a servings bowl. Leave it for few minutes or until chocolate will set. So when you will cut it with spoon so you will see chocolate chunks in it. Chocolate Gulab Jamun is ready to serve. Enjoy!!
