    • 1/4 cup butter or ghee, melted
    • 1/2 cup water
    • 1 cup milk
    • 1/2 tsp rose water

    Step 1

    Place milk in a saucepan and warm it gently. Dissolve sugar in it. Then add rose water.

    Step 2

    In a large mixing bowl, sieve flour. Add salt, ghee and milk in it. Knead a soft dough by using water (if required).

    Step 3

    Then covered with a wet cloth and set aside for 40 minutes.

    Step 4

    Flatten the dough into a rectangular shape. Put 1 tbsp clarified butter on it.

    Step 5

    Spread evenly then dust with flour. Fold and make 3 layers. Then cover with a wet cloth and refrigerate for 10 minutes.

    Step 6

    Repeat this method 3 to 4 times. Now place the dough on a hard surface.

    Step 7

    Dust flour and roll it into a rectangular shape. Cut into squares by using sharp knife.

    Step 8

    Make 2 or 3 breads on each square. Then put individual sheets of butter paper.

    Step 9

    Refrigerate for 4 hours or until freeze.

    Step 10

    Heat a griddle and place paratha on it. Fry with clarified butter or ghee.

    Step 11

    Cook on medium heat for 2 minutes on each each side or until golden brown. Flaky Paratha is ready to serve. ENJOY!

    Chocolate Paratha

    Ingredients

    • 500 gm Wheat flour
    • 1 cup Chocolate
    • 1/2 cup walnuts crushed
    • Milk for kneading
    • Ghee or oil for cooking
    • 1/4 cup peanut butter Optional

    Instructions

    • Place flour in a large bowl. Knead a soft dough with milk.
    • Keep aside.
    • Melt chocolate in a double boiler.
    • Stir in the walnuts.
    • Make 12 small balls from the dough.
    • Roll out into round shape chapati.
    • Spread chocolate mixture over a chapati.
    • Cover with second chapati.
    • Seal edges.
    • Heat a griddle or tawa.
    • Put paratha on the griddle, apply ghee over it.
    • Cook on low flame for 2 minutes or until lightly browned.
    • Take it out in a serving plate.
    • Drizzle with chocolate syrup. Delicious Chocolate Paratha is ready to serve.ENJOY!!

    Step 1

    Melt butter in a microwavable bowl. Put in a pan containing ice and water. Beat well. Remove water. Squeeze well and set aside.

  • RECIPE: Spring Onion Paratha

    Spring Onion Paratha

    Ingredients:

    • 1 cup spring onions, chopped
    • 1-1/2 cup Wheat flour
    • 2 tbsp chickpeas flour
    • 1 tsp Chilli powder
    • 1 tsp turmeric powder
    • 1 tsp garam masala powder
    • 1 tsp coriander powder
    • 1 tsp cumin powder
    • salt to taste
    • A handful Chopped coriander leaves
    • 2 tbsp Oil to knead
    • 1 tsp lemon juice

    How to make Spring Onion Paratha:

    • Wash, chop spring onion greens and the small pearl onions  at the tip of the greens   and grind it in the mixer without water to a fine consistency.
    • Transfer ground spring onion from step 1 to a broad bowl and add wheat flour, chick peas flour, chilli power, turmeric powder, garam masala powder, coriander powder,cumin seeds, salt, lemon juice, and cooking oil to it and knead it into a soft and pa liable  dough.
    • Pinch out required quantity of the dough from it.
    • Spring onion paratha dough and the pinched out ball.
    • Dust the pinched out ball in wheat flour and roll it the required thickness on a thick plastic sheet.
    • Place a skillet on medium flame and sprinkle a little oil or ghee on it.
    • When heated place rolled paratha from step 3 on it and roast it .
    • When done apply oil again ,flip and roast the other side as well.
    • When done enjoy with either butter and chutney powder or tomato ketchup.
    • Spring onion Paratha is ready to serve.

    Cheese Paratha (Stuffed Paneer Paratha)

    Ingredients:
    For the dough :

    • 1 cup  plain flour
    • 1 tbsp Oil
    • Water for kneading

    For filling :

    • 1 cup paneer crumbs
    • 4-5 green chilies,finely chopped
    • 1 onion,finely chopped
    • 2 tbsp fresh coriander leaves,finely chopped
    • 2 tbsp mint leaves,finely chopped
    • salt to taste
    • 2 tbsp ghee, Clarified butter
    • Oil or Clarified butter for making the paratha

    How to make Paneer Paratha:

    • Knead the flour as stated.
    • Mix paneer with all the other dry ingredients together.
    • Roll out the dough into small puris & spread some of the paneer filling over it.
    • Make a tight Swiss roll.
    • Press together and re-roll to full size parantha.
    • Now cook on a tava (griddle) with Ghee (clarified butter) until light brown.
    • Serve hot with any Chutney or pickle or just plain fresh curds.

    For the dough :Mix the wheat flour with salt, water and knead to a smooth dough. Keep it aside for 10 minutes.

    Then make small balls from the dough and keep it aside.

    For filling: Boil the minced mutton in salted water until it is tender.

    Now heat the oil in a pan, add onions and fry until brown.

    Step 5

    Also add grated ginger-garlic, salt, turmeric, chili powder, coriander powder, garam masala, boiled mutton and fry till the water dries and the oil separates.

    Step 6

    Add the chopped coriander leaves and remove from the heat.

    Step 7

    Keep it aside.

    Take the dough balls and roll out each ball into a thin disc or a chapati and in the middle.

    Step 9

    Place the filling mixture on one round chapati and cover with a another round chapati and seal the edges.

    Step 10

    Now sprinkle a little dry flour on top, then roll the paratha to a thin round shape chapati.

    Step 11

    Take care it should not break while rolling it out.

    Step 12

    Grease the griddle (tawa) with Ghee or clarified butter.

    Step 13

    Place the paratha over it and when the base turns slightly golden color, apply Ghee on the top and turn the paratha on the other side.

    Step 14

    Fry these parathas on both sides, pressing gently and keep turning the paratha until it turns golden brown. Keema Paratha is ready to serve.

  • Malabar Paratha Recipe

    Ingredients:

    • 2 cups all purpose flour (Maida)
    • 1 Egg white (optional)
    • 1 tsp Sugar
    • Salt to taste
    • 2 tbsp Coconut oil

    How to make Malabar Paratha:

    • Mix the flour, coconut oil, and sugar and salt with little water.
    • Knead well to make smooth dough.
    • Cover with wet muslin cloth and set aside for 2 hours.
    • Then take the dough, add little more oil and knead well once again.
      Now the dough should expand like elastic, when you pull it.
    • Make lemon sized balls out of the dough.
    • Roll out each ball into very thin flat round shape using a rolling pin.
    • Then roll from one end to the other to make a lengthy string.
    • Now roll the string spirally towards inside.
    • Then flatten it with your hands to join all the curves.
    • By doing this the paratha will become a single round shape with several spiral layers in it.
    • Now the paratha is ready to fry.
    • Repeat doing this with all the dough balls.
      Heat a tava and grease it with little oil.
    • Place the parathas in the hot tava and cook until both the sides are golden brown.
    • Dot with little oil on both sides in between the process.
    • Repeat this with all the parathas.
    • Malabar Paratha is ready to serve.
    • Serve hot.

    To Make the dough: Combine the all purpose flours,wheat flour,salt and butter. Put enough milk and make soft dough.

    Knead the dough properly and keep aside for at least 15 minutes.

    To Make Stuffing: Heat the ghee, put the onion and cook till it becomes soft. Put the vegetables, potatoes, green chillies, chilli powder, garam masala, coriander and salt and cook for 1 or 2 minutes.

    Step 4

    Take out and keep it cool.

    Step 5

    Divide the dough into 12 equal portions.

    Step 6

    Apply a little flour and roll out into rounds.

    Step 7

    Put 2 tbsp of the stuffing in the center of each dough round and fold like an envelope from all the corners.

    Step 8

    Roll into rounds and cook on hot griddle (tawa) for 1-2 minutes, turn over on the other side and cook again till it becomes crispy.

    Step 9.

    Repeat the same procedure for the remaining rounds. Sabzi ka paratha is ready to serve.

    • 500 gm green peas
    • 5 garlic cloves
    • 1 inch ginger piece
    • 1/2 tsp cumin seeds
    • 3-4 green chillies

    • 2 cup of Wheat Floor
    • 4 tbsp Cooking Oil

    How to make Green Peas Paratha:

    • Mix green peas, ginger,garlic, cumin seeds , green chilies into mixing jar and grind finely till it forms smooth paste.

  • The Perfect Hara Bhara Paratha Recipe (Healthy and Delicious!)

    Ingredients:

    • 1 cup wheat flour
    • 3/4 cup spinach
    • 2 tsp Oil
    • salt to taste
    • 1 cup fresh coriander leaves
    • 1 tsp ginger paste
    • 1 tsp chili paste
    • 1 lemon
    • 1/2 tbsp flax seeds
    • 1/2 tbsp cumin seeds

    How to make Hara Paratha:

    For Masala:

    • Grind coriander, chili ginger paste, lemon, flax seeds and salt in a mixer.
    • Remove in a bowl and keep aside.

    For Dough:

    • Blanch the spinach and puree.
    • Make dough using wheat flour, salt, and spinach puree.
    • Do not use water.
    • Cover the dough and keep it for 5-7 minutes.

    For Paratha:

    • For each paratha, roll out 2 chapatis.
    • Apply chutney on one of them and press the other on top.
    • Heat griddle, smear it with oil and roast the paratha.
    • Remove when brown spots appear on both sides.
    • Serve hot with yogurt.
