    Step 1

    Mix maize flour, oil and salt.

    Step 2

    Knead in a soft pliable dough, adding very little water at a time.

    Step 3

    When the dough is very smooth and soft, bread a lump.

    Step 4

    Shape into a ball, flatten and pat with palm, to make a thin roti.

    Step 5

    Use dry plain flour to help. Or roll with a rolling pin.

    Step 6

    Take care to dust with flour and lift and turn to avoid sticking.

    Step 7

    Place on a heavy iron or earthen griddle and roast till crisp.

    Step 8

    Repeat on both sides. Repeat for all rotis.

    Step 9

    Cover and line with napkins to keep warm.

    Step 10

    Drizzle with ghee or butter if desired. Makki Ki Roti is ready to serve.

    Mint is a magic ingredient, which adds zing to any preparation, however simple. Here is a simple process of dry roasting and crushing the leaves boosts the aroma of mint extraordinarily, adding a flavourful punch to the whole wheat flour rotis.

    Ingredients:

    • 2-1/2 cups flour
    • 1 cup mint,finely chopped
    • 2 tbsp oil or butter
    • Oil for shallow frying
    • Salt to taste

    How to make Mint Roti:

    • Sift the flour and salt in a bowl.
    • Add 2 tbsp of oil and mint and knead a stiff but non-sticky dough..
    • Cover with a damp cloth and leave aside for 30 minutes.
    • Divide the dough into 15 parts.
    • Shape like balls and press flat with the palm of your hand.
    • Roll out the roti into a round disc about 5″ diameter.
    • Put roti on a preheated griddle, dry roast both sides first then spread oil on both sides and shallow fry until well browned.
    • Mint Roti is ready to serve.
    • Serve with any pickle or raita.

    Step 1

    Preheat oven at 250 degree C.

    Beat egg well.

    Step 3

    Add sugar and milk and beat nicely once again.

    Sieve together flour, salt and baking powder.

    Mix in melted butter along with Curd and milk and mix well.

    Step 6

    Knead the dough until it turns very smooth. Cover and set aside for half an hour.

    Step 7

    Then divide the dough into large balls and shape each ball into an oblong-shaped roti.

    Apply melted butter or ghee(clarified butter) on both sides of the roti.

    Step 9

    Smear one side of the roti liberally with onion seeds and then bake it in the oven. Tandoori Roti is ready to serve.

    Step 1

    Mix besan and wheat flour. Add salt and mix well.

    Step 2

    Add a little water and mix. The consistency should be soft and putty-like. It helps if you kneed it with a wet hand.

    Keep the dough in the fridge for 5 minutes.

    Divide this dough into 4 portions.

    Step 5

    Roll each portion into a ball and flatten it into a chapati shape (round).

    Step 6

    Spread a little oil or ghee on it.

    Make a cut in it from the center to the edge.

    Pick up the cut edge and start rolling it so that you end up with a cone.

    With the palm of your hand flatten it while twisting it so that it once again forms a ball type thing.

    Flatten it again in chapati shape and fry it on medium to low heat with three tbsp oil or more depending on the size of the frying pan.

    Step 11

    Turn it over once the bottom is golden brown. When both sides are golden brown it’s done. Besan Ki Roti is ready to serve

    Sweet Warqi Roti Recipe

    Ingredients

    • 1-1/2 cup plain flour
    • 4 tablespoon caster sugar
    • 4 tablespoon ghee or clarified butter
    • 3 tablespoon cashew nuts
    • 3 tablespoon chopped almonds
    • 1 teaspoon cardamom Powder
    • saffron few strands
    • few silver warq
    • milk for kneading the dough

    Instructions

    Method

    • Sieve flour and add all ingredients except sliver warq.
    • Knead to a fairly soft dough. Keep for 1/2 an hour.
    • Make small balls roll them put ghee and fold it over into a semi circle.
    • Put more ghee over the upper surface and fold.
    • Then fold length wise press it with fingers and roll into a round circle and cook on tawa.
    • Remove cover with warq. Sweet Warqi Roti is ready to serve. Enjoy!

  • Layered Chapati Recipe

    Ingredients:
    For the Chapaties:

    • 2 cups wheat flour
    • 1 tbsp ghee or butter
    • 1/2 tsp salt
    • For dipping the chapaties
    • 1/2 cup milk
    • 2 tsp plain flour

    For the Stuffing:

    • 2 boiled potatoes, mashed
    • 2 cups mixed boiled vegetables, mashed (French beans, carrots, cauliflower, green peas etc.)
    • 1 onion, finely chopped
    • 1 tomato, finely chopped
    • 1 green chili, finely chopped
    • 1 tsp chili powder
    • 1 tbsp fresh coriander leaves, finely chopped
    • 2 tbsp butter
    • salt to taste

    How to make Layered Chapati:

    For the chapaties

    • Mix all the ingredients for the dough together and make a soft dough.
    • Knead very well and leave aside for 1/2 hour.
    • Roll out the dough into thin chapaties and cook them lightly on a tava (griddle).
    • For the stuffing:
    • Heat the oil, add the onion and cook for 1 minute.
    • Add the tomato and green chili and fry for 1 minute.
    • Add the chopped potatoes, mixed vegetables, chili powder, turmeric powder, cashew nuts, coriander and salt.

    To Proceed:

    • Grease a baking dish.
    • Put a chapati in it and spread a little stuffing.
    • Dip another chapati in the milk and plain flour mixture and place it on top of the stuffing. Spread a little mixture again and continue ending with a dipped chapati.
    • Pour 2 tsp of melted butter on top and bake in a hot oven at 200 degree C (400 degree F) for 15 minutes.
    • Cut into slices and serve.
    • Serve with any pickle or yogurt.

  • Recipe: Missi Roti

    Missi Roti

    No meal is complete without bread or rotis .In Pakistan we have lots of variations and variety of making rotis ,paratha and puris.
    Missi roti is a delicious and healthy flatbread made with a mixture of gram flour and wheat flour and seasoned with spices. The aroma that hits one’s nostrils while making the rotis is so pleasant and appetizing.

    Ingredients

    • 2 cups whole Wheat Flour (atta)
    • 3 cups Gram flour (besan)
    • 1 onion, finely chopped
    • 1/2 cup chopped mint leaves
    • 1/2 cup chopped coriander leaves
    • 6 green chilies, finely chopped
    • 1 teaspoon Cumin seeds
    • 1 teaspoon crushed red chili
    • 1 teaspoon red pepper
    • 1 teaspoon dry coriander, crushed
    • 1/4 teaspoon garam masala powder
    • 2 tablespoon dry fenugreek leaves (methi)
    • 2 tablespoon pomegranate seeds (anar dana)
    • Salt to taste
    • Water to knead
    • butter as required

    Directions:

    Step 1

    In a mixing bowl, sift both flours.

    Step 2

    Add all the dry ingredients and mix very well.

    Step 3

    Now add onion, chopped mint leaves,chopped coriander and green chilies.

    Step 4

    Mix well.

    Step 5

    Now knead the dough very hard with cold water.

    Step 6

    Knead it for 8-10 minutes and keep it aside.

    Step 7

    After ten minutes again knead the dough for 5 minutes.

    Step 8

    Put in the refrigerator for 1 hour.

    Step 9

    After one hour, make medium balls with the help of oil or flour.

    Step 10

    Roll it with rolling pin very lightly.

    Note: ( It will be sticky so be careful.Flour will help you to roll it).

    Step 11

    Preheat griddle or tawa and cook roti with or without oil.

    Step 12

    Remove from the griddle and spread butter over the hot roti.

    Step 13

    Missi Roti is ready to serve. ENJOY!!

    Recipe Note’s

     

    1. If you feel your dough is so sticky you can add little more flour only little dont put soo much.
    2. If you have pizza stone you can also make roti in oven.
    3. You can put desi ghee on roti when you serve it.

    Regularly reflour your hands as needed to prevent the dough sticking.

    Divide the dough into 4 pieces and roll each flat and thin using a well floured rolling pin on a floured surface.

    Heat a heavy pan or griddle to a high heat and cook the chapatis without any oil for about 2 minutes on each side.

    Step 8

    Cover in foil and keep in a warm oven until required.Chapati is ready to serve.

  • Roomali Roti Recipe

    Ingredients:

    • 1-1/2 cups Whole Wheat Flour
    • 1 cup all purpose flour
    • 1/2 tsp baking powder
    • 2 tbsp oil
    • Water to knead

    How to make Roomali Roti:

    • Mix wheat flour, all purpose flour,salt and baking powder and sieve them together.
    • Pour oil in the flour and add water bit by bit and make a smooth & elastic dough and set aside covered with moist muslin cloth for 1/2 an hour.
    • Now make small balls of the dough and roll like a thin chapati of about 12″ diameter circle using little dry flour.
    • Heat an inverted griddle or tawa.
    • Place the roti carefully over it and cook till done.
    • Fold it like a handkerchief.
    • Roomali Roti is ready to serve.
    • Serve hot with vegetables!

    Spinach Roti (Palak Ki Roti)

    Ingredients

    • 2 cups flour
    • 1 cup steamed and finely chopped spinach leaves.
    • 1/2 tsp salt
    • 1/2 tsp whole cumin seeds
    • 5-6 black pepper,coarsely crushed
    • 1 tbsp oil to make dough
    • A little water to form dough
    • Oil or ghee for shallow frying

    Directions:

    Step 1

    Mix together the flour, spinach and spices.

    Step 2

    Add 1 tbsp of oil and knead with water to form a dough which is medium-soft.

    Step 3

    Cover and keep in the fridge for at least half an hour to set.

    Step 4

    Break into small balls.

    Step 5

    Roll out into small chapattis and shallow fry on medium heat in a frying pan till very lightly brown.

    Step 6

    Transfer into a serving platter. Spinach Roti ready to serve.

    Serving Suggestions:

    Serve hot with yogurt or any pickle or chutney.
