    Shawarma is eaten in Arab countries, Pakistan, South Africa and the United Kingdom, and the meats, toppings and sauce vary depending on the country. Traditionally, Shawarma is made with chicken, lamb, beef, or goat that has been marinated, and is wrapped and cooked on a vertical rotisserie (similar to Greek gyro meat). When an order is placed, meat is shaved off and served as a wrapped sandwich (using pita bread) with fresh pickles and sauce.

    So today, I’m going to share this awesome Chicken Shawarma Wraps recipe with my fans. This dish is not hard to make, it just requires a little bit of planning ahead. Well worth the effort!

    This Chicken Shawarma Wraps recipe is bursting with middle eastern flavors. Simple to make. Think of your favorite gyro place where they are slicing meats from a spit, and placing it inside of warm pita or flat-bread, along with sauces and vegetables. That’s shawarma, and this is my take on it. Did I mention my entire family was totally in love with this??

    It is really difficult to recreate the taste of shawarma at home, but this recipe I think, does it justice. The key is to leave the chicken marinading overnight for maximum flavour, and to have the grill smoking hot when cooking. And I made the Shawarma Pickles two days before and made a batch of sour cream as well as hummus sauce.

    Important Tips:

    1. Try not to pile the pitas on top of each other until after they have cooled. This keeps them nice and plump for filling.
    2. To store pita breads, you can wrap them in cling film and freeze for up to 3 weeks.
    3. For the filling you can use any mixture of your choice with salad, just slit the pitas and stuff them with your favorite ingredients.
    4. You can also make pita breads on a frying pan or hot griddle or even it a bread-maker.

    Chicken Shawarma Rice

    As a change from the normal, I sometimes love having chicken shawarma over rice as opposed to rolled up in a pita. This is a must-try recipe.

    Ingredients

    For Chicken Shawarma

    • 1 pound boneless chicken breast cubed
    • 2 tbsp vegetable oil
    • 2 tbsp yogurt
    • 1 tbsp ginger garlic paste
    • 1 tbsp lemon juice
    • 1 tsp red chili powder
    • 1 tsp cumin powder
    • 1 tsp tandoori masala
    • 1 tsp salt
    • 1/4 tsp turmeric powder

    For Chicken Shawarma Rice

    • 2 cups rice
    • 2-1/2 cups chicken stock
    • 1 small onion
    • 2 tbsp vegetable oil
    • 1 tbsp butter
    • 1/2 tsp ginger-garlic paste
    • 1 cinnamon stick
    • 1 cardamom pod
    • 2 cloves
    • 1 green chilli finely chopped
    • 1 tbsp chopped green onions
    • 1 tsp cumin powder
    • 1/4 tsp black pepper
    • 1/4 tsp. turmeric powder
    • 1/4 tsp cinnamon powder
    • salt to taste

    Other Ingredients

    • Garlic sauce or plain yoghurt.
    • 1 to mato thinly sliced
    • 1 onion thinly sliced
    • 1/4 chopped cabbage
    • 1/4 cup pickled cucumber
    • 1 tbsp pepper sauce
    • French Fries
    • Lettuce Leaves

    Instructions

    Method

      To Make Chicken Shawarma

      • In a small bowl, combine the yogurt, oil, ginger garlic paste, red chili powder, cumin powder, tandoori masala, salt and lemon juice.
      • Pour this mixture over the chicken cubes.
      • Toss to coat evenly.
      • Cover and marinate for 4 hours to blend flavors.
      • After 4 hours, thread chicken on the metal skewers.
      • Grill on each side for 5 minutes or until tender.
      • Remove from the skewers.
      • Chop into chunks.
      • Set aside and and keep warm.

      To Make Chicken Shawarma Rice

      • Wash rice with few changes of water then soaked for 30 minutes.
      • Drain rice and set aside. Heat the butter and oil in a large skillet over medium heat.
      • Add onions and cook for 5 minutes or until translucent. Add garlic paste and cook for 30 seconds.
      • Add green chillis and all other spices. Cook and stir 1 minute longer. Note: (Careful not to let them burn.)
      • Add chicken stock. Bring to a boil and let it simmer. Season with salt.
      • Add rice and stir a little.
      • Cook on high heat for 3-4 minutes then reduce the heat to medium-low.
      • Cover and let it simmer for 8-10 minutes or until all water dries up and rice are cooked evenly.
      • Now reduce the heat. Cover the skillet by using wetting a kitchen towel.
      • Placing kitchen towel over the skillet.
      • Then placing a lid on top of it.
      • Cook the rice on very low heat for 10 minutes.
      • Turn the heat off. Remove the lid and fluff the rice up.
      • Transfer rice into a large servings dish.
      • Top with chicken shawarma, lettuce leaves, cabbage, cucumber pickle, tomato and onion.
      • Drizzle with pepper sauce.Chicken Shawarma Rice is ready to serve. enjoy!

      Notes

      Serving Suggestions:
      Serve with french fries.

      Prep Time: 20 minutes

      This recipe make 20 serving(s).

      Ingredients:

      • Water – Around 6 cups
      • Pickling salt – Enough to float an egg
      • Vinegar – 2 Tablespoons
      • Cucumber
      • Turnip
      • Carrot
      • Beet
      • Chili Peppers

      Method:

      • Place water and egg into an earthenware dish.
      • Add and dissolve the pickling salt until the egg floats to the surface.
      • Add the vinegar.
      • Pierce the carrots, cucumbers and turnip with a fork a few times (don’t have to peel).
      • Slice the beets (1/4 inch).
      • Put all into the earthenware pot and weight down so that no part of the vegetables are exposed to the air.
      • Cover and leave at room temperature for 6 to 8 weeks.
      • As the brine ferments, some scum and mould may form of the surface which needs to be skimmed off.
      • After 6-8 weeks, remove the vegetables and rinse in clean water.
      • Strain the brine to remove the surface scum and place in clean jars (minus the beets).
      • These can now be stored in the refrigerator for several months.
      • Shawarma Pickle is ready to use.
      • Enjoy!
