Ingredients
For Ice Cream
2 cups mango pulp
1 cup milk
1 cup condensed milk
1/2 cup sugar
1/2 cup lukewarm water
1 tsp gelatin powder
1 packet fresh cream
For Custard:
1/2 liter milk
1/2 cup sugar
1/2 tsp vanilla essence
2 tbsp strawberry custard
2 cups mixed fruit
1 cup whipped cream
Cherries as required
Directions:
To Make Ice Cream:Dissolve gelatin powder in water.Set aside.
Place mango pulp, milk, cream, gelatin, sugar and condensed milk in a blender.
Blend until smooth.
Then take it out in air tight box.
Place in the refrigerator for 6-8 hours or until freeze.
To Make Custard: Dissolve custard in 1/4 cup of milk.Pour remaining milk in a saucepan. Bring to a boil then add dissolve custard.
Stir constantly and cook for 4-5 minutes or until thicken.
Stir in vanilla essence.
Take it out in a serving dish and leave it for 1 hour or until cool.
Now add frozen ice cream.
Then spread mixed fruits over it.
Top with cream and cherries.
Ice Cream Fruit Custard is ready to serve.
Serve as a dessert after any meal.

Gajar Ki Barfi is one of my all time favourite deserts, I make it more often than any other sweets. I make it lots of different way and each time it turn out to be good. Carrots are a great veg for desserts, anything made out of it taste yum, like american carrot cake and my carrot raisan cake.

So Today I came up with Gajar Ki Barfi recipe and believe me it turned out to be good.Method for making carrot barfi, prepared by cooking grated carrots in milk, is same to that of making carrot halwa. Just cook for more time and set. Hope you will love it and let me know how it turned out for you.

1/2kgcarrots
250gm ricotta cheesekhoya
1-1/2cupwhite sugar
1/2cupfull cream dry milk powder
6green cardamom
2tbspghee or clarified butter
For Garnishing
1/4cupsliced almonds
1/4cuppistachios
1/4cupcashew nuts
Instructions
Directions
Peel carrots then grate properly.
Now put grated carrots in a pan.
Cook on low heat for 10-15 minutes or until its own water dries.
Now put cooked carrots in a chopper.
Process until well chopped.
In a mixing bowl, combine chopped carrots, ricotta cheese (khoya), dry milk powder, and green cardamoms.
Mix well.
Place this mixture in the pan.
Add ghee or clarified butter in it and fry for 2-3 minutes.
Turn the heat off. Add sugar and mix well.
Pour this batter in the greased dish.
Garnished with almonds and pistachios.
Cut into small cubes and leave it for 30 minutes or until set. Gajar ki Barfi is ready to serve.Enjoy!
Notes
1. After adding khoya in carrots, keep stirring the mixture at regular intervals. Make sure it doesn’t stick to the bottom of pan. 2. This burfi will be on the softer side. But taste really yummy. 3. Instead of setting it as burfi, you can spoon it into bowls and serve as halwa.Adapted from Recipestable

Ingredients
1 liter milk
200 gm cheese
2 cups white sugar
2 tsp cornflour
1 tsp plain flour
1 tsp cardamom powder
For Garnishing:
1 tbsp chopped almonds
1 tbsp chopped pistachios
Directions:
In a saucepan, cook milk with ½ cup sugar.
Add pinch of cardamom powder.
Bring to a boil then reduce heat to low.
Cook for 30 minutes or until half milk will remain.
In a bowl, combine together Paneer, cardamom powder, cornflour and white flour.
Now make small ball out of the mixture.
In a separate pan, dissolve remaining sugar in water.
Cook for 5 to 7 minutes or until sugar syrup is ready.
Now soak prepared balls in sugar syrup and mix.
Take it out in a serving bowl.
Garnish with pistachio and almonds.
Rasmalai is ready to serve. Enjoy!!

In a large bowl, mix together the cookie crumbs and butter.
Step 3
Press crumb mixture onto bottom of 9-in springform pan.
Step 4
Bake in the preheated oven for 10 minutes.
Step 5
Meanwhile, beat cream cheese and sugar until well blended.

Stir in the flour until well combined.

Stir in the melted chocolate and vanilla.

Add eggs, 1 at a time, mixing on low speed after each just until blended.

Bake 55 minutes or until center is almost set.

Method
In a bowl, combine together khoya, sugar, desiccated coconut, cardamom powder, almonds and pistachios.
Mix until well combined.
Fill this filling in samosa patti and make samosas.
Deep fry samosas for 2-3 minutes or until light golden.
Sweet Samosa is ready to serve.
