    This is the first time I had such a wonderful mix vegetable Biryani. The taste was out of this world. This rice dish is packed with vegetables for a quick and easy dinner option. A very simple and easy Mix Vegetable Biryani recipe without much spices. I had this with mint raita and it tasted awesome.     • 1 kg basmati rice
    • 3 medim potatoes, cut into finger and soaked in salted water
    • 2 medium carrots, diced
    • 2 medium onions, thinly sliced
    • 1 small cauliflower, flowerets separated
    • 1 cup green peas
    • 1 cup fresh green baens, cut into small pieces
    • 1/2 cup yogurt
    • 1/2 cup cooking oil or ghee
    • 2 boiled eggs
    • 2 lemons
    • 1 Bay leaf
    • 5 cardamoms
    • 1 inch cinnamon stick
    • 1 tablespoon ginger garlic paste
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon cumin seeds, crushed
    • 1/4 teaspoon cloves
    • Salt to taste

    Directions:

    Step 1

    Heat a little oil in a pan and fry all the vegetables separately.

    Step 2

    Then fry the sliced onions till golden brown.

    Step 3

    Take out half of the fried onions from pan and leave half in the pan.

    Step 4

    Now add yogurt, ginger and garlic paste, the fried vegetables and the garam masala (spices) to the same pan.

    Step 5

    Also squeeze lemon juice on it and let it cook on low heat.

    Step 6

    Put the rice in a sieve and wash thoroughly.

    Step 7

    In another pan boil water. Add the washed rice, vinegar and garam masala (spices) and boil.

    Step 8

    Let it cook for about 12 minutes so that it is parboiled. Drain and keep aside.

    Step 9

    Place a layer of rice in a large pan (the same one you used for boiling the rice), then put a layer of the vegetable mixture and again put a layer of the remaining rice.

    Step 10

    Sprinkle fried onions and sliced boiled eggs on the rice.

    Step 11

    Put the pan on a heated griddle (tava). Cover with a tight lid. Do not stir.

    Step 12

    Allow cooking for another 20 minutes on very low heat.

    Once the dish is cooked, leave it covered for a few minutes.

    Step 14

    Then remove the lid, fluff up the rice with a fork. Mix Vegetable Biryani is ready to serve.

    Lobia Biryani

    Lobia Biryani is an easy, quick and healthy one pot meal. This is a delicious veggie biryani consists of Kidney beans layered with mint leaves, tomatoes and green chillies over boiled rice.     Ingredients

    • 1 kg boiled basmati rice,(boiled with cumin seeds and mint)
    • 1 cup lobia (kidney beans)
    • 1 cup yogurt
    • 1/2 cup oil or ghee
    • 1/2 cup tomato paste
    • 4 onions, thinly sliced
    • 1 tablespoon ginger paste
    • 1 tablespoon garlic paste
    • 2 tablespoon jayfal and jawintri powder
    • 2 tablespoon kewra essence
    • 2 green cardamom pods
    • 2 black cardamom pods
    • 1 cinnamon stick
    • 4 cloves
    • 1/2 black pepper
    • 1 teaspoon cumin seeds
    • 1 teaspoon red pepper
    • 1 teaspoon food colour
    • 1/4 teaspoon turmeric powder
    • salt to taste

    For Layers on Rice:

    • 1/2 cup mint leaves
    • 8 green chillies, thinly sliced
    • 2 lemon slices
    • 1/2 cup tomato slices

    Directions:

    Step 1

    Fry onion in oil ,put garlic and ginger paste in it.

    Step 2

    Then put all ingredients of garam masala with tomato paste and yogurt, then put lobia (kidney beans) it with high quantity of water for tenderizing it.

    Step 3

    After that when lobia is also absorbs water keep frying it till then it leaves oil in it.

    Step 4

    In a big pan make one layer of rice ,spread lobia’s gravy on it with tomato, lemon slices and green chillies with mint leaves.

    Step 5

    Then make another layer and repeat that method as above again.

    Step 6

    Put yellow food colour on the top of the side of rice with kewra essence.

    Step 7

    Leave it for 15 minutes for taking dam. Lobia Biryani is ready to serve.

     

    • Serve with fresh salad or raita.

    Ingredients

     

    • 1 cup basmati rice
    • 1/4 cup boiled and mashed potatoes
    • 1 cup mixture of finely chopped carrot, cabbage , grated 
    • 1/4 cup boiled and mashed green peas
    • 1/4 cup fresh mint leaves
    • 1/4 cup chickpea flour
    • 2 tablespoon rice flour
    • 2 tablespoon fresh coriander leaves, finely chopped
    • 2 tablespoon ginger garlic paste
    • 2 tablespoon green onions, chopped
    • 2 tablespoon plain yogurt
    • 1 onion, thinly sliced
    • 1 tomato, chopped
    • 1 bay leaf
    • 1 cinnamon stick.
    • 1 cloves
    • 2 green chilies, thinly sliced
    • 1 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1/2 teaspoon garam masala powder
    • salt to taste
    • oil for deep frying

     

    Directions:

    Step 1

    Wash and soak rice in water for 30 minutes.

    Step 2

    Boil basmati rice by adding 2 cups of water. Drain and keep aside.

    Step 3

    Take a large bowl, add the potatoes, boiled vegetables, green peas, fresh coriander, chickpea flour and rice flour.

    Step 4

    Add the red chilli powder, coriander powder, garam masala, salt. Mix until well combined. Now make small balls of it.

    Step 5

    Heat oil in a deep pan for medium heat. Fry the balls for 3-4 minutes or until crispy and golden brown.

    Step 6

    Take another medium pot or pan, heat 3 tablespoon oil in it. Add bay leaf, clove, cinnamon and cook for 30 minutes (Fry until the begins to darken but not burn.)

    Step 7

    Add chopped onions, ginger-garlic paste and saute for 3-4 minutes or until onions turns light brown in color.

    Step 8

    Then add tomatoes, green chilli and saute till the tomatoes are nicely cooked.

    Step 9

    Now add yogurt and salt and saute for 5-8 minutes so that the raw smell goes away, in a medium flame. (Do not let it burn)

    Step 10

    Now add the boiled rice to the mixture and mix well.

    Step 11

    Simmer it for about 2 minutes and then add the fried koftas. (Mix carefully. Do not break the koftas). Sprinkle mint leaves over it.

    Step 12

    Take it out in a serving dish. Garnish with spring onions. Vegetable Kofta Biryani is ready to serve.

    • Serve with raita.

    Ingredients:

    • 500 gm potatoes, cut into cubes
    • 4 cups boiled rice
    • 4 boiled eggs
    • 1 cup fried onion
    • 1/2 cup plain yogurt
    • 1/2 cup  mint leaves, finely chopped
    • 1/4 cup oil or ghee
    • 6 green chilies
    • 6 plums
    • 1 tablespoon ginger garlic paste
    • 2 teaspoon red chili powder
    • 1 teaspoon black cumin
    • 1 teaspoon black pepper
    • 1 teaspoon all spice
    • 1/2 teaspoon yellow food color, (mixed in 2 tbsp milk)
    • few drops of biryani essence
    • star anise
    • Oil as required

    Directions:

    • Heat oil in a deep pan over medium heat.
    • Fry potatoes for 10 minutes or until lightly browned.
    • In a small bowl, mix together the yogurt,ginger garlic paste, black cumin, black pepper, all spice powder, red chili powder, plum, star anise, biryani essence and salt.
    • Set aside.
    • Now heat 1/4 cup oil in a deep skillet.
    • Add fried potatoes and yogurt mixture.
    • Cook  on low heat for 20 minutes or until all water dries up and oil separate.
    • Add green chillies and boiled eggs.
    • Spread rice over it.
    • Drizzle yellow food color over the rice.
    • Top with mint leaves and fried onion.
    • Cover with a lid and cook on low flame for 15-20 minutes.
    • Mix throughly.
    • Dish it out.
    • Delicious aloo biryani is ready to serve.
    • ENJOY!!
