    • 3 green cardamom
    • 1/2 piece of nutmeg
    • 1 pinch mace
    • 1 black cardamom
    • 1 inch piece of cinnamon
    • 1 tsp red pepper, crushed
    • 1 tsp black pepper
    • 1 tsp cumin seeds, roasted
    • salt to taste

    • 1-1/2 kg whole chicken
    • 2 tbsp vinegar
    • 2 tbsp lemon juice
    • 3 tbsp yogurt
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 1 tbsp red chili powder
    • 1 tsp cumin powder
    • 1 tsp garam masala powder
    • 1 tsp coriander powder
    • 1 tsp turmeric powder
    • 1/2 tsp black pepper
    • 1/2 tsp cubebs
    • 1/2 tsp yellow food color
    • salt to taste
    • oil for frying

    For Garnishing:

    • 1/2 tsp chat masala
    • 3-4 lemon wedges
    • Salad leaves

    Directions:

    Step 1

    Rinse the chicken inside and outside properly then pat dry.

    Step 2

    Makes4-5 deep incisions or cuts on whole chicken by using a sharp knife then keep aside.

    Step 3

    Put all the ingredients in a blender and make a smooth paste of it.

    Step 4

    Rub this paste evenly over the chicken, cover and leave to marinate for at least 2-3 hours or overnight if possible.

    Step 5

    Take a deep pot and place a sieve upside in the base of the pot.

    Step 6

    Add one cup of water in it and put the chicken on the sieve.

    Step 7

    Put the lid on and steam on low heat for 30 minutes.

    Step 8

    Heat oil in a deep pan (karahi ) until too hot, then reduce the heat to medium .

    Step 9

    When oil is hot, fry steamed chicken for 12-15 minutes or until it turn golden brown on both side.

    Step 10

    Then remove from the oil and drain on absorbent paper.

    Step 11

    Sprinkle chat masala onto it.

    Step 12

    Garnish with lemon wedges and salad leaves. Lahori Chargha is ready to serve.

    Chatkhara Murgh Musallam

    Ingredients

    • 1 whole chicken
    • 1 ground onion
    • 250 gm yogurt
    • 1/2 cup oil
    • 1/2 cup lemon juice
    • 10 green chilies
    • 2 tsp carom seeds roasted & crushed
    • 2 tsp cumin seeds roasted & crushed
    • 2 tsp red chili powder
    • 1 tsp garlic powder
    • 1 tsp ginger powder
    • 1/2 tsp ground nutmeg
    • 1/2 tsp ground mace
    • salt according to taste

    Instructions

    • In a small bowl, combine together carom seeds, cumin seeds, ginger powder, garlic powder, salt, nutmeg, mace, chili powder and lemon juice.
    • Apply this paste over the whole chicken.
    • Marinate for 1 hour.
    • Heat oil in deep pan.
    • Add copped green chilies and fry for 1 minute.
    • Now add marinated chicken and fry well from both sides for 10 minutes or until its change colour.
    • Add yogurt and ground onion.
    • Stir well.
    • Reduce heat to low and cook for 30 minutes or until chicken is tender
    • Cook on high flame for 5 minutes or until all water dries up.
    • Transfer into a serving dish.
    • Chatkhara Murgh Musallam is ready to serve. ENJOY 🙂

    Notes

    Serving Suggestions:
    Serve with fried chips and dipping sauce.

    Step 1

    Rinse chicken thoroughly and prick it with a fork.

    Step 2

    In a small bowl, combine together the ginger garlic paste, vinegar and lemon juice. Apply this paste all over the chicken. Place in the refrigerator for an hour or overnight. In another bowl, mix yogurt, red chili powder, salt, chargha spice, cumin, whole coriander and red food color.

    Step 3

    Preheat oven to 200 degree C.

    Step 4

    Take chicken out and marinate in yogurt mixture. Lightly grease a baking dish with cooking spray.

    Step 5

    Place whole chicken on the baking tray. Brush oil all over the whole marinated chicken. Bake chicken in the pre-heated oven for approximately 5o minutes or until chicken is tender and all juices run clear.

    Step 6

    Take it out from the oven. Sprinkle remaining chargha spice over it. Baked Chargha is ready to serve. ENJOY!!
