    25 Minute Chicken and Noodles Recipe

    I’m back with another post on Light Meal On Thursday. Last Thursday happened to be my brother’s birthday so there was definitely no light eating on that day, hence did not post a light meal.

    Quick & Light Neal – 25 Minute Chicken and Noodles 

    Today’s recipe is 25 Minute Chicken and Noodles.  It’s an ideal meal on lazy days or when one wants a light meal. Just make this and one is sorted.

    I really hesitated on adding this recipe to the blog.  It’s really very simple and seems like something everyone already makes.  Then I remembered that my blog is not just for my readers, but also a record of recipes I make frequently.  This is one of family favorites(especially my nano _grandma)!

    I’m not going to lie. But when I made this Chicken and Noodles for the family and grandma… they devoured it. I’m NOT KIDDING. I was SHOCKED. They were begging for me. I ended up with NO leftovers. HUH?

    And the best part? The entire recipe took 25 minutes to make. Enough yapping…Hope you enjoy!

    A quick and delicious one pot recipe with chicken broth, chicken, noodles and healthy vegetables. This quick and easy skillet dish features all your favorite ingredients from chicken noodle soup, but without the soup. It’s a hearty meal perfect for a busy day. You can make a delicious, family-friendly dinner in just 25 minutes.

    • 1 can (8 ounces) sliced water chestnuts, drained
    • 1 can (14-1/2 ounces) chicken broth
    • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
    • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
    • 1 small onion, chopped
    • 3 cups cubed cooked chicken
    • 2 cups uncooked elbow macaroni
    • 1-1/3 cups milk
    • 1/2 cup process cheese (Velveeta)
    • 1/2 cup chopped celery
    • 1/2 cup chopped green pepper
    • 1/4 cup butter, melted
    • 2/3 cups crushed saltines( about 20 crackers)
    • 3/4 cup cashew halves

    Directions:

    Step 1

    Lightly grease a 13×9-inch. baking dish with cooking spray.

    Step 2

    Layer the macaroni, chicken, cheese, celery, onion, green pepper and chestnuts in the baking dish.

    Step 3

    In a large bowl, combine the milk, soups and chicken broth.

    Step 4

    Pour this mixture over the water chestnuts.

    Step 5

    Cover and place in the refrigerator for 8 hours or overnight.

    Step 6

    In a small bowl, toss butter and cracker crumbs.

    Step 7

    Sprinkle crumbs over the casserole.

    Step 8

    Top with cashew nuts.

    Step 9

    Bake, uncovered, at 350 degree F, for 40 minutes or until macaroni is tender. Cashew Chicken Casserole is ready to serve.

    • 4 boneless & skinless chicken breasts
    • 1-1/2 cup chicken broth, low sodium
    • 1 cup long grain white rice
    • 1/2 cup margarine, melted
    • 1/2 canned whole kernel corn
    • 1 bell pepper, thinly sliced
    • 5 tbsp lemon pepper

    Preheat oven to 350 degree F.

    Place chicken breasts in a non-greased 9×13 inch glass baking dish.

    Sprinkle lemon pepper on both sides of them. Keep aside.

    In a small bowl, combine together the melted butter and the chicken broth.

    Step 5

    Pour this mixture over the chicken.

    Step 6

    Bake in the preheated oven for 20 minutes.

    Step 7

    Take it out from the oven. Remove chicken.

    Step 8

    Add rice, bell pepper and corn in the baking dish.

    Step 9

    Arrange chicken breasts back on top. Cover again.

    Put the baking dish back in the oven.

    Step 11

    Bake 40 minutes longer or until cooked thorough.

    Take it out. Delicious chicken breast and rice are ready. YUM YUM!!

    Pour water in a saucepan; bring to a bowl. Add rice then reduce heat to medium low. Cover the saucepan and simmer for 20 minutes or until rice is tender. Set aside.

    Place 1/2 tablespoon butter in a medium skillet. Saute onion and celery in butter for 2-3 minutes or until soft.

    Step 3

    Preheat oven to 350 degrees F. Place chicken, rice, onion and celery in a 9×13-inch baking dish. Stir in soup, mayonnaise and almonds. Top with crushed cornflakes and remaining butter.

    Step 4

    Bake in the preheated oven for 45 minutes or until bubbly and golden brown. Almond Chicken Casserole is ready to serve. Enjoy!
