    Looking for the perfect recipe can be exhausting because there are just so many out there. I’ve tried countless cupcakes over the years, but this is my top favorite recipe. I know we all have different preferences when it comes to our taste buds, but I honestly don’t think you can go wrong with this.

    The absolute best recipe to make Chocolate Cupcakes that are super easy, super moist, chocolaty and really delicious. If chocolate is what makes you go weak in the knees, then these are for you. This one is a must try for all Chocolate Lovers out there.

    One of the great things about this happy little dessert is that it doesn’t take long to make and it doesn’t break the bank!  Not only is the dessert met with smiles and giggles, it’s an easy and inexpensive way to make everyone at the table happy!  And making everyone happy is what its all about.

    I made the Chocolate Coffee ganache with hot cream, good quality chocolate, butter and coffee extract. The higher the quality of chocolate used, the better the flavor and texture your ganache will have in the end. Coffee and coffee extract enhances the flavor of chocolate. It enhances the chocolate, and brings out the flavors in the chocolate while adding richness to the taste. I love to add coffee to all of my chocolate cakes. Some things are classics.I put chocolate cupcakes in that category. Pillows of rich chocolate cake. Top with chocolate ganache.

    Super Moist Chocolate Cupcakes Recipe

    Like the title says, these are the Super Easy,Super Moist Chocolate Cupcakes. They are perfectly moist and insanely chocolaty, topped with a Chocolate Coffee Ganache. Royal Treat ♥

    Chocolate Cupcakes

    • 1-1/3 cups all-purpose flour
    • 1/2 cup cocoa powder
    • 3/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup un-slated butter (softened to room temperature)
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon pure vanilla extract
    • 1 teaspoon instant espresso powder
    • 1/2 cup whole milk
    • 1/2 cup hot water

    Chocolate Coffee Ganache

    • 8 ounces semisweet chocolate (cut into small pieces)
    • 3/4 cup heavy whipping cream
    • 2 tablespoons unsalted butter
    • 1 teaspoon coffee extract

    For Topping

    • 2 teaspoon coconut flakes
    1. Preheat oven to 180 C or 350 F.
    2. Line a cupcake pan or muffin tin with cupcake liners and set aside.

    For the Cupcakes

    1. In a medium bowl, sift together flour, cocoa powder, espresso powder, baking soda, and salt. Keep aside.
    2. In another bowl, beat together the butter and sugar on medium speed until light and fluffy, about 2-3 minutes.
    3. Scrape down the sides and bottom of the bowl as necessary.
    4. On medium speed, beat in eggs, one at a time, beating well after each addition.
    5. Stir in the vanilla extract and beat until combined.
    6. With the mixer on low speed, add half of the dry ingredients and beat just until combined. Then beat in milk, followed by the other half of the dry ingredients, beating slowly until combined.
    7. Add hot water and beat just until combined.
    8. Do not over mix—the less you mix, the lighter the cake will be. The batter should be liquid.
    9. Divide batter evenly between cups, filling them about ¾ full.
    10. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
    11. Allow cupcakes to sit for 10 minutes, then remove from pan and allow to cool completely on a wire rack.

    For The Ganache

    1. Place the chopped chocolate in a medium-sized heatproof bowl.
    2. Set aside.
    3. Heat the cream and butter in a small saucepan over medium heat. (Can also heat the cream and butter in the microwave.)
    4. Bring just to a boil.
    5. Immediately pour the boiling cream over the chocolate and allow to stand, without stirring, for a few minutes.
    6. Stir gently (as you do not want to incorporate air into the ganache) with a spoon or whisk until smooth.
    7. If desired, add the coffee extract.
    8. Use Ganache immediately to decorate cupcakes, or store in the fridge, covered, for up to 3 days. Before using, bring to room temperature and whisk until smooth.
    9. Sprinkle coconut flakes or chocolate curls over the cupcakes. Your Super Moist Chocolate Cupcakes are ready to serve. ENJOY!!

    Extra Bonus Tips:

    1. If you would like to add coffee to the recipe, either add 1 teaspoon espresso powder or instant coffee granules along with the sifted dry ingredients, or replace the water with room temperature brewed coffee.
    2. Please make sure that you bake these for 20 minutes and not more. Baking timing is the most crucial thing for any cake recipe. A few minutes over and you’ll have a hard rock in the name of muffin. So keep checking!
    3. And yes..no peeking and opening the oven door for the first 15 minutes at  least.
    4. Cupcakes are best the same day they’re made, but can be kept in an airtight container at room temperature for up to 3 days.
    5. Un-frosted cupcakes can be kept in the freezer for up to 2 months. Thaw, still covered, on the counter or overnight in the fridge.

    Cupcakes are an easy way to make an beautiful yet tasty dessert without much effort. Today I’m sharing one of my favorite Vanilla Cupcakes recipe. I love this recipe because it includes butter milk to make it lighter and fluffier. The best ever recipe that makes the moistest cupcakes and perfect chocolate on top of it! This recipe is perfect for the upcoming holiday summer season and is sure to become a favorite.

    I actually made these a long time back but never really got around to editing the pictures which is why I didn’t post them. They look super pretty and I wanted them to look like it in the pictures so I took my time with them.

    These cupcakes are plain vanilla flavored (which is very difficult to get right) and are so moist that they’ll actually dissolve in your mouth the minute you take a bite. Pillowy soft, these cupcakes are topped with favorite chocolate frosting made with unsalted butter and whipping cream which gives it that perfect flavour without making it heavy.

    Having a staple recipe is so handy, and this one is great with other flavours added. The frosting.. well it’s a whole other thing! It is divine, and rich, and well, perfect to go with anything.

    Vanilla Cupcakes with Chocolate Frosting Recipe

    Pillowy soft, these Vanilla cupcakes are topped with favorite chocolate frosting made with unsalted butter and whipping cream which gives it that perfect flavour without making it heavy.

    Vanilla Cupcakes

    • 1-1/2 cups all purpose flour
    • 1/2 cup butter (unsalted at room temperature)
    • 2/3 cups granulated sugar
    • 3 large eggs
    • 1-1/2 teaspoon baking powder
    • 1/4 cup butter milk
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon salt

    For Chocolate Frosting

    • 2 cups 350 gm best-quality semisweet chocolate, melted and cooled
    • 1 cup 250 gm butter, softened
    • 1 cup icing sugar (sifted)
    • 1/2 cup cocoa powder
    • 1/4 cup fresh cream

    To Make Vanilla Cupcakes

    1. Preheat oven to 175°C or 350°F.
    2. Line a muffin tin with cupcake papers.
    3. To make the cupcakes, whisk butter and sugar until light and fluffy using an electric mixer for about 5 minutes and longer with a hand whisk.
    4. Add the eggs, one at a time, beating well after each addition.
    5. Add in the vanilla extract and whisk again.
    6. Sieve the flour, baking powder and salt directly into this mixture and mix using a spatula until combined.
    7. Do not use an electric mixer because you risk knocking the air out that you created in step 1.
    8. Add in the butter milk and mix until you form a nice batter.
    9. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended.
    10. Carefully spoon the batter into the cupcake liners, or fill using a piping bag, filling them about three-quarters full.
    11. Bake for 20-22 minutes, or until they spring back when pressed.
    12. Cool the cupcakes in the tins for 10 minutes. Remove from the tins and cool completely on a wire rack before icing.

    To Make Chocolate Frosting

    1. While the cupcakes are baking you can start preparing your frosting.
    2. Combine cocoa and the fresh cream, stirring until cocoa has dissolved.
    3. With an electric mixer on medium-high speed, beat butter and confectioners’ sugar until pale and fluffy.
    4. Reduce speed to low.
    5. Add melted and cooled chocolate, beating until combined and scraping down sides of bowl as needed.
    6. Beat in the cocoa mixture.Avoid over mixing.
    7. Transfer the frosting to a piping bag and set it in the fridge to be used later.
    8. Once your cupcakes are done, let them cool for about 2 hours before you start piping them with the frosting. Once frosted, sprinkle some grated chocolate and icing sugar on top to make your cupcakes pretty. Enjoy!

    Extra-Bonus Tip:

    Dark chocolate lovers, be sure to use bittersweet chocolate.

    I mentioned a couple weeks ago that I’d be bringing you some new basic favorites and I started with a Banana Chocolate Loaf cake. Today, we are talking about these Extra Easy  cupcakes and I’m pumped! One of the things that I’m always messing with is vanilla cake or simple cupcakes. It’s the never ending quest for all the best versions.There are so many ways to vary a Simple cupcake and I want the best of all of them! I’m greedy like that. Plus, I know not every has the same idea of the perfect cupcake, so I like to have options.

    So let’s talk a bit about these Extra Easy cupcakes. These cupcakes use butter and are lighter and super moist. We’ve got the usual suspects in this cupcake, starting with the dry ingredients: all-purpose flour, baking powder and salt. Easy, common ingredients that you should totally have in your pantry already. Mix ’em all together and set ’em aside.

    Next are the wet ingredients:butter, sugar, milk, vanilla extract and eggs. The butter is the fat component instead of vegetable oil and in my opinion, tends to make a more moist cake that stays moist for longer. Totally true for these cupcakes. The milk  adds to the structure of the cake, in addition to adding moisture. Milk adds fluff and I love some fluff.

    I used a teaspoon of vanilla extract to make sure there’s plenty of delicious vanilla flavor. Then the eggs add more moisture, structure and flavor. I switched it up in these and went with whole eggs instead of egg whites. No more egg yolks getting wasted here!

    Once the wet and dry ingredients are combined, the milk is added.

    There’s so much moisture in these cupcakes! I love them! I’m a big, big fan of their ease of making, their flavor and moisture. They use such simple ingredients that you likely already have in your pantry too – score!

    Extra Easy Cupcakes Recipe

    • 200 gm plain flour
    • 3 eggs
    • 200 gm butter
    • 200 gm sugar
    • 1 tsp baking powder
    • 1/2 tsp vanilla essence
    • 1/2 cup milk
    • 12 cupcases
    1. Preheat oven to 325°F (180°C) and prepare a cupcake pan with liners.
    2. Add the flour, sugar, baking powder and salt to a large mixer bowl and combine. Set aside.
    3. In a medium bowl, cream butter with sugar. Then add eggs and beat well.

    4. Add the wet ingredients to the dry ingredients and beat until well combined. Stir vanilla in it.

    5. Slowly add the milkr to the batter and mix on low speed until well combined.
    6. Scrape down the sides of the bowl as needed to make sure everything is well combined. Please note that the batter will be very thin.
    7. Fill the cupcake liners about half way and bake for 15-17 minutes, or until a toothpick comes out with a few moist crumbs.
    8. Remove the cupcakes from oven and allow to cool for 2 minutes, then remove to a cooling rack to finish cooling.Extra Easy Cupcakes are ready to serve.

    Serve with tea or coffee.

    This recipe make 24 serving(s).

    Ingredients

    • 1 package (18-1/4 ounces) chocolate or yellow cake mix

    For Filling:

    • 1 egg, lightly beaten
    • 1 cup cream cheese, softened
    • 1 cup semisweet chocolate chips
    • 1/3 cup sugar

    Method:

    • Prepare cake mix batter according to package directions for cupcakes.
    • Fill 24 paper pan-lined muffin cups 2/3 rd full.
    • Place cream cheese, egg and sugar in a small bowl.
    • Beat until smooth.
    • Stir in chocolate chips.
    • Drop by one tablespoonfuls into the batter.
    • Bake at 350 degree F, for 20 minutes or until a wooden-pick inserted in the center comes out clean.
    • Allow to cool for 5 minutes.
    • Picnic Cupcakes are ready to serve.
    • Enjoy.

    Serving Suggestions:
