    Mutton Nihari 

    Nihari is one of most favorite and traditional dishes of every Muslim home. Be it mutton, chicken or beef nihari, it can be relished with any kind of meat. Traditionally nihari made with the bone marrow meat. It’s a deliciously smooth flour based stew with slow cooked mutton and a myriad of spices.  Mutton Nihari takes a long time to cook but is easy to put together.

    There are lot of ready made Nihari spices available in the market. But I would not Never Never recommend. As they are full of artificial colors and preservative agents. Not a healthy approach. 🙁 You can make the Nihari powder at home by following my Nihari Masala Mix and store it in airtight container for many days.

    This is a must try recipe from my Mommy.  We normally make Nihari with small pieces of mutton as we prefer it over the bone-in mutton.

    Note:

    Preferably it must be cook on low flame, but those of you who would rather prefer a faster process can cook it in a pressure cooker though the Nihari taste wont be the same as cooked on a low flame.

    So about this Mutton Nihari recipe. As you can see, there’s no layer of fat floating on top of the nihari, As many of you know, when we go out to eat it, we want the brain, marrow and floating oil on top, not a very healthy option. My mommy tried to make it just a little healthy by adding as little butter as possible without compromising on the flavor. Less fat and believe me, just as good. Or if you do like a little oil on top, when you are ready it dish it out, leave it covered on very low heat for about 5-7 minutes. Voila, the ‘little’ amount of oil will rise to the top!

    Traditionally Nihari  served with ginger, fried onion, green chilies and the hottest crisp khameeri roti or naan.

    Mutton Nihari Recipe

This Mutton Nihari recipe takes a long time to cook but is easy to put together.

    Ingredients

    • 1-1/2 kg mutton shank portion, cut into 8 pieces
    • 1/4 cup clarified butter or desi ghee
    • 3 medium onions thinly sliced
    • 1 tablspeoon ginger paste
    • 1 tablespoon garlic paste
    • 2 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder
    • salt to taste
    • 4 tablebspoon wheat flour
    • 4 tablespoon nihari masala Mix

    Nihari Masala Mix

    • 1 tablespoon cumin seeds
    • 2 teaspoon fennel seeds
    • 1 teaspoon soonth dry ginger
    • 1/4 teaspoon nutmeg powder
    • 5-6 green cardamoms
    • 2 black cardamoms
    • 5 cloves
    • 1 bay leaf
    • 1 inch cinnamon stick
    • 10 black peppercorns

    For Garnishing

    • 1/2 cup crispy fried onion
    • 1 inch ginger cut into this strips
    • 1 lime cut into wedges
    • 2 green chilies thinly sliced
    • few fresh coriander leaves chopped
    • Juice of 1 lime

    Instructions

    Niahri Masala Mix Method

    • To make your own Nihari masala from scratch, dry roast all the whole spices for the masala and grind them to a fine powder.

    Mutton Nihari Method

    • Melt butter or ghee (you can use oil as well but ghee makes it tastier) in a heavy bottom pot.
    • saute onion slices and fry till they start to turn brown(about4-5 minutes).
    • Now add mutton pieces, ginger paste and garlic paste.
    • Stir and cook for 5-8 minutes or until meat is no longer pink and all juices run clear.
    • Now add coriander powder, turmeric powder and salt.
    • Sauté for 5 minutes.
    • Add the nihari masala and 8 cups of water.
    • Stir well.
    • Cover the pot and cook on very low flame for about 4 hours until the meat is tender.
    • Keep checking in between. The way to know that the meat is cooked is when it breaks easily with a wooden spoon.
    • Remove the lid and increase the flame.
    • Dissolve wheat flour in half cup of water such that there are no lumps.
    • Slowly pour wheat mixture into the gravy.
    • Stir to mix well.
    • Let it simmer for another 15 minutes or until the gravy is thickened.
    • Drizzle some lime juice over it.
    • Garnish with fried onion, ginger slices, green chilies and fresh coriander leaves.
    • Delicious Mutton Nihari is ready to serve. Enjoy!!

    Notes

    Serving Suggestions:
    Serve with Khameeri Roti or Naan. At time of serving, add chop fresh coriander, green chilies, Julienne cut ginger and fry onions.. and also lemon…. these things will improve the taste of nihari.

    • 3 cardamoms

    Nihari is a mild flavor curry that has it own distinct taste. Few people don’t like Nihari, they have kind of allergic with that smell but if this recipe is tried, for sure they will start having it, because in this recipe we used chicken meat. You would have a new taste.

    Nihari is mostly made with red meat but people who don’t eat beef or mutton can try this recipe!!

    • 2 kg whole chicken (cut into 10-12 large pieces)
    • 2 cup chicken stock
    • 1 – 1/2 cup oil or Ghee
    • 2 medium onions , finely chopped
    • 2 tbsp ginger-garlic paste
    • 1 cup water
    • 1 tbsp red chili powder
    • 1/2 tsp coriander powder
    • 1/2 tsp turmeric powder
    • 1/2 tsp black pepper, crushed
    • 1 cinnamon stick (about 2- inch)
    • 1 tsp cumin powder
    • 1 star aniseed
    • 1 tsp aniseed
    • 2 bay leaves
    • 1 mace
    • 1 nutmeg
    • 2 black cardamom pods
    • salt to taste

    For Garnishing:

    • fresh coriander leaves, finely chopped
    • 1-inch piece of fresh ginger, cut into thin strips
    • 4 fresh lime wedges
    • 4-5 green chilies , chopped

    Directions:

    Step 1

    Rinse and drained chicken properly.

    Step 2

    Heat oil in a large pan and fry the chicken pieces for 15 minutes or until golden brown; then remove from the oil and set aside.

    Step 3

    Again heat 1 cup of oil in a pot, add bay leaves, cinnamon stick, black cardamom pods, star aniseed, cumin seeds,nutmeg and mace into it.

    Step 4

    Cook for 2 minutes to bring out the aroma of the spices.

    Step 5

    Then add 1 onion and fry until onions become crispy and golden.

    Step 6

    Add the ginger – garlic paste and saute for a minute.

    Step 7

    Add the browned chicken and season with chili powder, salt, turmeric and coriander powder.

    Step 8

    Now add the chicken stock and 1/2 cup of water , bring to a boil then cover and simmer on low heat for 30 minutes or until chicken is cooked.

    Step 9

    Dissolve wheat flour in 1/2 cup of water and add into nihari, cook for 10-15 minutes on high heat .

    Step 10

    Continuously whisking to avoid lumps.

    Step 11

    Then add aniseed and black pepper ; stir well.

    Step 12

    In a separate pan fry onion in the remaining 1/2 cup of oil/ ghee and add to nihari.

    Step 13

    Put the lid on and simmer on low flame for 10 minutes.

    Dish it out. Garnish with chopped green chilies , ginger, chopped coriander and lime wedges.Delicious Chicken Nihari is ready to serve. ENJOY!!

    Hot ‘n’ Spicy Nihari

    Nihari is a very famous traditional dish of Pakistan. It is a type of stew cooked in fiery spices. Further more you build up the taste with the fresh chopped green chilies, ginger and lemon.

    Cook Time:2 hours 30 minutes

    Difficulty Level: Easy

     

    • 1 kg Beef Bong Ka Gosht or Mutton
    • 1 Nali (optional)
    • 1 tbsp ginger paste
    • 1tbsp garlic paste
    • 2 cups ghee
    • 4 tbsp Nihari Masala Prepared
    • 1 cup flour (Atta)
    • 1/2 cup plain flour (maida)
    • 3 tbsp chilly Powder
    • salt to taste
    • 12 cups water

    Masala For Nihari

    • 20 gm cinnamon sticks (dalchini)
    • 20 gm black cardamom
    • 20 gm green cardamom
    • 10 gm cloves
    • 1/4 cup saunf
    • 1/4 cup kas Kas
    • 10 gm javatri
    • 10 gm saunt
    • 20 gm kachri
    • 1/4 cup chana
    • 1/2 cup chilly Powder

     

    Directions:

    Step 1

    Heat ghee in a large pot over moderate heat.

    Step 2

    Add ginger garlic paste. Cook for 1 minutes or until lighlty browned.

    Step 3

    Add meat along with chilly powder, salt and nihari masala.

    Step 4

    Cook well by sprinkling little water.

    Step 5

    Add in nali and 12 cups hot water. Cover with a lid and cook for 2 minutes or until meat is almost tedner.

    Step 6

    In a small bowl, sift plain flour and atta together. Make a smooth paste with water.

    Step 7

    Pour over the meat to make thick gravy; stirring constantly. Cook on very low flame for 30 minutes or until gravy is thickened.

    Step 8

    Transfer into a large serving dish. Garnish with green chilies, lemon wedges and ginger. Hot ‘n’ Spicy Nihari is ready to serve

    Serving Suggestions:

    • Serve with finely sliced ginger, chopped green chillies, lemon, coriander leaves and tandoori Naan.
