    Eid Mubarak to all the readers of my blog. Eid has come and gone, and we are settling down to our routine and trust me it is very difficult after being spoiled by the easy going Ramadan timings. Lots happened during Ramadan even if it is considered to be a slow month.

    Eid is a special time in Pakistan: “Festive season, Get together with friends , dinner party, dessert which comes to my mind immediately is ‘Phirni’.” After a heavy main course like Biryani or any spicy curries, phirni is something which cools and soothes you.

    Phirni is a wonderful, creamy dessert made with ground rice combined with milk, cream, sugar and some saffron strands for flavoring. Phirni is a kind of Rice Pudding, made with coarsely ground rice. It is similar to what we call “kheer” in Pakistan, but unlike Kheer, it does not use whole grains of rice. The dish is decorated with chopped or ground almonds or pistachio nuts.  The consistency of this pudding varies from thick,- where one has to really scoop out with a spoon, to creamy- where the dessert will gently coat a spoon.

    The history of Phirni goes back a very long way; it seems to have originated in ancient Persia or the Middle East; and to have been introduced to Pakistan and India by the Mughul’s. In Indian and Pakistan, phirni is associated with Muslim festivals (like eid, ramadan etc.)

    Traditionally in Pakistan, Phirni is served chilled in earthen pots or small clay plates  called tothie’s. Other than just making it look pretty, the clay pot also absorbs some of the liquid giving it a thicker consistency. It tastes better when the flavors are allowed to mature for 6-7 hours or even  for a day.

    The recipe is a keeper and I really urge you to try this. This Phirni recipe is easy and simple steps with the list of all ingredients needed to prepare it.

    Phirni: Rice Pudding with Nuts

    Phirni Recipe

    Phirni is a wonderful, creamy dessert made with ground rice combined with milk, cream, sugar and some saffron strands for flavoring. Phirni is a kind of Rice Pudding, made with coarsely ground rice.

    • 1-1/2 liter whole milk
    • 4 tablespoon raw rice
    • 4 tablespoon sugar
    • 4 tablespoon cold milk
    • 2 tablespoon heavy cream (optional)
    • 1/2 teaspoon green cardamon powder
    • 1/2 teaspoon rose essense
    • 12 almonds (chopped)
    • 2 pistachios (chopped)

    Method

    1. Wash the rich thoroughly and soak in water for 30 minutes to 1 hour. The grains will get longer & white.
    2. Drain the water and spread all the rice in a thin layer on a paper towel.
    3. Set aside till completely dry to touch. The best way would be to leave it overnight.
    4. Grind the dry rice till the rice becomes a fine powder.
    5. Dissolve rice powder in 4 tablespoon cold milk. Stir until well combined. If to thick then add a little more milk to make it thin because if you add the thick paste to hot milk it will become lumpy.
    6. Now pour milk in a large pot and bring to a boil on high flame, then reduce it to low to medium and cook for 20 to 25 minutes.
    7. Add the sugar, green cardamom powder mix well, make sure the sugar dissolves.
    8. Once the sugar dissolves then add the rice paste in the hot milk, keep stirring as it tends to stick to the bottom and burn.Cook it on low to medium heat for 5-7 minutes or until the milk thickened and creamy.
    9. Add rose water and heavy cream. Stir well.
    10. Remove from the fire and dish it out in a clay dish and garnish it with almonds and pistachios.
    11. Let it cool completely and set in a refrigerator for 4 hours or until chilled.
    12. Delicious Phirni is ready to serve.

    Serving Suggestions:
    Serve as a dessert after any meal.

    Today I made a Walnut Rice Pudding for the first time. And this concept was new to me. But I tried it anyway only with 1 litre of milk. Alhamdulillah, it was so yummy and exotic. Totally different but delicious flavour. Its a must try for those of you, who never tasted it.

    Walnut Rice Pudding

    This Walnut rice pudding recipe has been family tested and approved and can be whipped up in no time.

    • 1 cup walnuts pieces
    • 2 tablespoon rice flour
    • 1/2 cup white sugar
    • 1 litre milk
    • 1 teaspoon walnut or almond extract
    1. Soak walnuts in hot water for 15 minutes.
    2. Now grind the walnuts into a smooth thick paste.
    3. While grinding add the little milk .
    4. Pour milk in a saucepan.
    5. Add ground mixture, rice flour and sugar.
    6. Mix until no lump remain.
    7. Bring to a boil in medium to low heat. Keep stirring without burning at the bottom.
    8. When it reaches a semi-thick consistency, add the walnut or almond extract.
    9. Stir and cook for few minutes or until thicken.
    10. Turn off the stove.
    11. Dish it out.
    12. Garnish with chopped walnuts. Delicious walnut Rice Pudding is ready to serve.

    Note:
    Either you can remove the walnut skin or just leave it. I prefer to leave it, the peel too has nutrition.

    Serving Suggestions:
    You can serve it chilled or serve warm.
    But tastes delicious when served chilled after any meal.

    Coconut Rice Pudding Recipe

    • 8 cups evaporated milk
    • 1/2 cup basmati rice
    • 1/2 cup condensed milk
    • 1/2 cup sugar or to taste
    • 1/2 cup coconut flakes
    • 1/2 teaspoon cardamom powder
    • 2 tablespoons chopped coconut
    • 2 tablespoon raisins
    • 2 tablespoons sliced almonds
    1. Wash the rice thoroughly with few changes of water.
    2. Soak in water for 20 minutes.
    3. Put rice in a deep pot.
    4. Pour milk in it.
    5. Bring water to a boil then reduce heat to the low and gently boiling for 1 hour or until the rice is thoroughly cooked and the milk has thickened to a pudding consistency.
    6. Now stir in the condensed milk, sugar, cardamom and coconut. Cook 5 minutes longer or until thickened.
    7. Dish it out or distribute into 12 serving dishes.
    8. Garnish with raisins, coconut and almonds.
    9. Let it cool completely then put in the refrigerator for 4 hours to chill. Coconut Rice Pudding is ready to serve.ENJOY!!

    Serve as a dessert after any meal.

    Gajar ki Kheer

    • 4 cups milk
    • 2 cups grated carrots
    • 1/2 cup sugar
    • 4 tbsp grain Rice
    • 2 tbsp almonds
    • 1 tbsp rose water
    • 1/2 tsp cardamom
    • 1/4 cup chopped pistachios
    • 1/4 cup fresh cream
    1. Pour milk and rice in a big saucepan. Bring it to boil and keep the heat moderate.
    2. Stir well and keep it on heat for 20 minutes.
    3. Heat it for another 15 minutes uncovered with carrots added.
    4. Add sugar and almonds and cook it for further 10 minutes.
    5. Stir it till the mixture starts sticking to the bottom of the pan.
    6. Remove from heat and keep it to cool down at room temperature.
    7. Add cream, cardamom, and rose water. Keep it in freeze.
    8. If the Kheer is thick once you remove it from freeze add a little milk to it and stir it. Add pistachios and serve it cool. Gajar ki kheer is ready to eat. Enjoy!

    Ingredients

    • 1 liter milk
    • 2 tbsp rice flour( soak in 1/2 cup milk)
    • 1 cup pineapple chunks
    • 1 tin ( 400 gm) condensed milk
    • 1/2 tsp pineapple essence

    For garnishing:

    • pineapple slices & cashew nuts

    Method

    • Place pineapple in a blender.
    • Process until smooth.
    • Take it out in a bowl.
    • Set aside.
    • Pour milk in a saucepan and let it come to a gentle boil.
    • Now add the soaked rice flour.
    • Stirring constantly with a whisk to prevent any lumps from forming.
    • Now stir in the pineapple puree and pineapple essence.
    • Keep stirring and cook on low heat for 5 minutes or until it thickens.
    • Now add condensed milk and cook 2 minutes longer or until phirni is thick and done.
    • Transfer into a serving dish.
    • Garnish with pineapple slices and cashew.
    • Place in the refrigerator for 2 hours or until chilled.
    • Delicious Pineapple Phirni is ready to serve.

    • 2-1/2 cups milk
    • 1/4 cup almonds, blanched
    • 5 tbsp sugar
    • 4 tbsp rice flour

    • 8 strands saffron

    Method

    • In a blender, add almonds and 1/2 cup milk.
    • Process until smooth Transfer into a small bowl.
    • Stir in rice flour. Keep aside.
    • Boiled milk in a small saucepan.
    • Stir in sugar until dissolved.
    • Soaked saffron threads in one tablespoon of hot milk. almond-rice paste into boiled milk.
    • Add saffron. Stir continuously for 4-5 minutes or until milk gets thicker like yogurt.
    • Sprinkle cardamom powder on it.
    • Pour it in the individual bowls.
    • Top each bowl with pistachios and almonds.
    • Let it cool completely.
    • Badam Phirni is ready to serve.
