For Cake:

  • 3 (1 ounce) squares unsweetened chocolate
  • 2 eggs, beaten
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 cup water
  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 1/2 cup sour milk
  • 1 tsp baking soda
  • 1 tsp vanilla extract

For Cake filling

  • 1 (5 ounce) can evaporated milk
  • 3/4 cup sugar
  • 1/2 cup chopped pecans
  • 1/2 cup chopped dates
  • 1/4 cup chopped seedless raisins
  • 1/4 cup water
  • 1 tsp vanilla extract

For Chocolate Icing:

  • 1 (6 ounce) package semisweet chocolate chips
  • 1/2 cup sour cream
  • 1 pinch salt
  • Whipped cream

Step 1

Preheat oven to 350 degree F. Grease and flour two 8-inch. cake pans. Set aside. Place butter, oil and chocolate in a small saucepan. Cook and stir on low heat until chocolate melts. Add water and allow to cool for 15 minutes.Place flour, baking soda, sugar, eggs and sour milk in a large mixing bowl. Beat well. Stir in vanilla. Fold in chocolate mixture. Pour this batter into prepared cake pans. Bake for 30-35 minutes or until toothpick insert into the center comes out clean. Let it cool in pans for 5 minutes.

Step 2

Meanwhile, in a small saucepan, combine milk, sugar and water. Cook over medium heat for 3-4 minutes or until sugar is dissolved. Stir in dates and raisins. Cook for 5 minutes or until thickened. Remove from the heat then stir in vanilla and nuts. Allow to cool.
Step 3

Melt chocolate chips in top of a double boiler over hot water. Remove from the heat. Stir in salt and sour cream. Stir with a spoon until smooth. Let it cool for 5 minutes or until frosting is of spreading consistency.
Step 4

Place one cake layer, upside down, on a plate. Spread prepared filling on top. Place other layer over and frost entire cake. Place in a refrigerator for 1 hour or until chill. Holiday Chocolate Cake is ready to serve.
