Ingredients:
- 1 whole chicken, cut into pieces
- 1 cup chicken stock
- 2 limes, juiced
- 1/2 jalapeno pepper, minced
- 2 tbsp honey
- 2 tsp ground cinnamon
- 2 tsp chili powder
- 2 tsp salt
- 1 tsp ground cumin
- 1 tsp black pepper
Method:
- Preheat oven to 450 degrees F. Grease a baking dish with non-stick cooking spray.
- In a small bowl, combine the cinnamon, chili powder, cumin, salt, and pepper. Rub spices over the chicken pieces. Arrange chicken pieces on the prepared baking dish.
- Pour chicken stock, honey in a medium saucepan. Cook over medium-high heat for 4-5 minutes then stir in lime juice and jalapeno. Cook for 5 minutes or until sauce is thickened.
- Place chicken in the preheated oven and cook for 15 minutes, basting occasionally. Continue cooking 30 minutes or until chicken is tender and no longer pink.
- Delicious Jalapeno Chicken is ready to serve.
