This recipe make 6 serving(s).

Ingredients:

  • 3 medium tomatoes, seeded and finely chopped
  • 1 cucumber, seeded and finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cups cooked brown or wild rice
  • 1 cup frozen peas
  • 1/2 cup sliced radishes
  • 1/2 cup sliced green onions
  • 1/3 cup olive oil
  • 3 tbsp lemon juice
  • 2 tbsp fresh mint
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method:

  • In a large bowl, add rice, tomatoes, peas, cucumber, green pepper, green onions and radishes.
  • Toss until well combined.
  • Set aside.
  • In a small bowl, whisk olive oil, lemon juice, mint salt and pepper.
  • Pour this mixture over the rice and vegetables.
  • Toss to coat.
  • Chill for at least 1 hour.
  • Minty Rice Salad is ready now.
  • Serve cold.
