This recipe make 6 serving(s).
Ingredients:
- 3 medium tomatoes, seeded and finely chopped
- 1 cucumber, seeded and finely chopped
- 1 green bell pepper, finely chopped
- 2 cups cooked brown or wild rice
- 1 cup frozen peas
- 1/2 cup sliced radishes
- 1/2 cup sliced green onions
- 1/3 cup olive oil
- 3 tbsp lemon juice
- 2 tbsp fresh mint
- 1/2 tsp salt
- 1/4 tsp black pepper
Method:
- In a large bowl, add rice, tomatoes, peas, cucumber, green pepper, green onions and radishes.
- Toss until well combined.
- Set aside.
- In a small bowl, whisk olive oil, lemon juice, mint salt and pepper.
- Pour this mixture over the rice and vegetables.
- Toss to coat.
- Chill for at least 1 hour.
- Minty Rice Salad is ready now.
- Serve cold.
