    • 3 cup of fine quality rice
    • 1 kg chicken
    • 2 large onions,finely chopped
    • 1 tsp black pepper
    • 2 medium carrots,grated
    • Half cup of raisins (kishmish)
    • 1 tsp cumin seeds
    • Salt to taste

    Step 1

    Put some oil in frying pan, Fry one chopped onion in oil until it is light brown.

    Step 2

    Take out onion and mash it to make a pulp.

    Step 3

    Put chicken pieces Use the same oil to brown the.

    Step 4

    Add a cup or so of water, salt and pepper, simmer it till become tender.

    Step 5

    Remove the meat, and add the ground onion to the stock.

    Step 6

    Cook until 1 cup of stock remains.

    Step 7

    Add the 2 grated carrots and cook them in oil on low heat until light brown.

    Step 8

    Add raisins and fry till plump.

    Step 9

    Drain and set aside.

    Step 10

    Boil the rice (become little soft) and drain the rice water.

    Step 11

    Put the rice into a large size pan.

    Step 12

    Sprinkle cumin seeds.

    Step 13

    Pour the meat stock over it and stir.

    Step 14

    Put the chicken meat in to the Layer half of the blend of raisin and carrots over rice.

    Step 15

    Cover the pan tightly and give the low heat for 20 minutes.

    Step 16

    Sprinkle raisin and carrot mixture on surface.Delicious Afghani Pulao is ready to serve.

    • 1 kg lamb or mutton meat
    • 300 gm lamb or mutton fat
    • 1/4 cup butter or ghee
    • 6 green chilies
    • 2 tomatoes, cubed

    Step 1

    Place lamb fat in a large wok or karahi. Heat it up until it starts melt.

    Step 2

    Now add mutton and butter. Cook and stir for 10 minutes or until mutton colour turns white.

    Step 3

    Now add 2 cups of water. Cover and let it simmer on low heat for 1 hour or until meat is tender and all water dries up.

    Step 4

    Increase the flame and add chopped tomatoes.

    Step 5

    Season with salt. Mix well.

    Step 6

    Cook and stir for 5 minutes or until tomatoes are done.

    Step 7

    Fry well until oil comes on top.

    Step 8 

    Garnish with green chillies and put on dum for 5 minutes. Delicious Namak Mandi Karahi Gosht is ready to serve.

    • ¼ cup Malt vinegar
    • 2 cups Yoghurt
    • ¾ cup Cheese, grated
    • 3 tbsp Cream
    • 6 Green chilies, chopped
    • 1 tsp Green cardamom
    • Butter for basting

    Step 1

    Mix salt, white pepper, ½ tsp mace powder, ginger and garlic pastes with malt vinegar.

    Step 2

    Rub the mixture into the chicken and marinate for 1 hour.

    Mix the remaining ingredients (except butter) together.

    Step 4

    Transfer the marinated chicken into this yoghurt mixture.

    Step 5

    Keep aside for 3 hours.

    Step 6

    Preheat the oven to 180 degree C.

    Step 7

    Skewer the chicken pieces, 2 cm apart.

    Step 8

    Keep a tray underneath to collect the drippings.

    Step 9

    Roast in an oven or grill for 10-12 minutes.

    Step 10

    Remove and hang the skewers to allow the excess marinade to drip off.

    Step 11

    Baste with butter and roast for 3 more minutes. Afghani Kebab is ready to serve.

    Cut beef and sheep fat in cubes.
