  • Easy Spicy Mango Chutney Recipe (Perfect for Summer!)

    Spicy Mango Chutney Recipe

    Ingredients

    • 3 large sweet mangoes slightly ripened
    • 1 tsp lemon rind finely chopped
    • 1 tsp lemon juice
    • 4 green chillies
    • 1- inch piece of ginger finely chopped
    • 1 tsp cumin seeds
    • 1/2 tsp fennel seeds
    • 1 tsp coriander seeds
    • 1 tsp mustard seeds
    • A pinch of hing
    • 3 tbsp cooking oil

    Instructions

    • Peel the mango and cut it into small chunks.
    • Heat about 2 tsp oil in a pan and fry the chunks till they turn mushy.
    • Drain, mash well and set aside.
    • Roast the methi, saunf, cumin and coriander seeds and crush coarsely using a mortar and pestle.
    • Set aside and heat the remaining oil and add the hing and mustard.
    • When the mustard crackles, add the ginger and green chillies and fry for about 1-2 minutes.
    • Add the mango, powdered masala, salt to taste, lime rinds and lime juice.
    • Bring to a boil on a low flame.
    • Remove from heat and let it cool to room temperature.
    • Store in an airtight container.
    • If boiled and cooled well, since no water is used in making this dish, it should keep well for more than a week.
    • Store it in airtight containers in the fridge.

    • 1 cup distilled white vinegar
    • 6  cups mangoes,peeled and cut in 3/4-inch pieces
    • 1 onion,finely chopped

    How to make Mango Chutney:

    • Combine sugar and vinegar in a 6 quart pot; bring to a boil, stirring until sugar dissolves.
    • Add remaining ingredients and simmer, uncovered, until syrupy and slightly thickened, 45 minutes to 1 hour.
    • Stir occasionally during cooking.
    • Pour into clean, hot jars leaving 1/2-inch head space; close jars.
    • Process in a water bath 15 minutes.

    Mughlai Chutney Chicken 

     Mughlai chutney chicken is a rich, creamy chicken curry which has a taste of chutney to it. Chicken is cooked in a almond based curry and finished with cream and freshly ground mint chutney. Sounds truly Mughlai eh. Try it.

    Prep Time: 10 minutes

    Cook Time: 1 hour

     Servings: 6

    Ingredients

    For Mughlai Chicken:

    • 1 kg chicken, cut into 16 pieces
    • 1/2 cup oil
    • 2 onions, finely chopped
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 1/2 cup cream
    • 1/2 cup yogurt
    • 1 bay leaf
    • 4 cloves
    • 1 tsp cumin seeds, roasted & crushed
    • 1 tsp red chili powder
    • 1/2 tsp green cardamom powder
    • 2 tbsp ground almonds
    • salt to taste

    For Chutney:

    • 1/2 cup fresh coriander leaves
    • 2 tbsp yogurt
    • 4 tbsp lemon juice
    • 1 tbsp coconut, grated
    • 1/2 tsp sugar
    • 1/2 tsp salt
    • 4 green chilies

    Yield: 6 servings

    Directions:

    To Make Chutney

    1. Place all chutney ingredients in a blender.
    2. Blend for 3-4 minutes or until smooth.
    3. Take it out in a bowl and keep aside.

    To Make Mughlai Chicken:

    1. Heat oil in a pan or skillet over medium high heat.
    2. Place chicken pieces in it.
    3. Fry for 10-12 minutes or until juice run clear.
    4. Remove chicken from the pan and keep aside.
    5. Add chopped onion and fry for 4-5 minutes or until light pink.
    6. Add ginger – garlic paste, bay leaf, cloves, cumin, green cardamon powder, red chili powder, and salt.
    7. Cook for 4-5 minutes then put fried chicken pieces in it.
    8. Add yogurt and cook for 15 minutes.
    9. Now add cream and prepared chutney.
    10. Reduce heat to low and cook for 10 minutes or until oil comes on top.
    11. Take it out in a serving bowl.
    12. Garnished with fried cashew nuts.
    13. Mughlai Chutney Chicken is ready to serve.

    Serve with Naan or Paratha.

    • 1 cup tamarind pulp

    • 1/2 cup jaggery

    • 1 tsp red chili powder
    • 1/2 tsp black salt
    • 1/2 tsp chat Masala
    • 1/4 tsp salt

    Directions:

    1. Place tamarind pulp, jaggery and dry ginger powder in a saucepan.
    2. Cook for 5 minutes or until jaggery dissolved.
    3. Season with chili powder, cumin seeds, dry ginger powder, salt and black salt.
    4. Add water and cook for 15 minutes or until sauce is thickened.
    5. Sprinkle chat masala over it.
    6. Tamarind Chutney is ready now.

  • Recipe: Date Chutney (Khajoor ki Chutney)

    Ingredients:

    • 3lbs dates, stoned &finely chopped
    • 1lb spring onions, chopped (white parts only)
    • 225gm raisins
    • 100gm currants
    • 225gm sugar
    • 50gm salt
    • 25gm allspice
    • 12gm mustard seeds
    • 1/2 cup vinegar

    How to make Indian Date Chutney:

    • Place all the ingredients in a large saucepan, slowly bring to the boil and cook gently, stirring from time to time, until soft and thick.
    • Spoon the hot mixture into warm jars, seal and label.
    • Indian Date Chutney is ready to serve.
