    LET’S CELEBRATE SPRING

    Today marks the start of spring. Traditional rites and festivals of spring revolved around its importance in growing food. Plants start to grow and animals come out of hibernation and begin reproducing. People come out of hibernation too!

    I’m really excited to be back with another Traditional Pakistani recipe (if you didn’t see my Kachnar Gosht and Karela Gosht then I’d really recommend you give those a try too).

    So let’s celebrate spring with another Traditional Pakistani food (Kachnar Keema).

    A Lil Bit About Kachnar:

    Kachnar/Orchid is a species of flowering plant in the family Fabaceae, native to southeastern Asia, from southern China west to Pakistan and India.

    Kachnar tree, Bauhinia variegate, is also known as Orchid tree or Butterfly tree because of the way it’s flowers look. This is a very popular ornamental tree in subtropical and tropical climates, grown for its scented flowers and also used as food item in South Asian cuisine.

    Varieties of Kachnar:

    Kachnar has three varieties (red, white and mauve) depending upon the colour of its flowers.

    Kachnar Keema

    In Pakistan, its buds are considered a delicacy. They are available for a short season only and are difficult and expensive to buy. Eating Kachnar ( Orchid)is very beneficial for our health as this vegetable is blessed with advantages and it taste is really good when cooked with addition of any mince meat(keema).

    One thing I love about cooking is discovering new flavours that go together, especially when it’s flavours that you wouldn’t necessarily think to put together and today’s Kachnar Keema recipe is one of those creations.

    My take on a traditional Pakistani Kachnar Keema with lamb mince, kachnar buds, and served hot chapatai and Raita.

    I’ve been trying to perfect Kachnar Keema for a while, but I’ve always found that it was lacking a little something – it had meatiness from the lamb, bitterness from the kachnar buds and saltiness from the spices but it needed just a hint of creaminess. A few weeks ago on a whim (figuring that mince meat and yogurt go well) I decided to add some yogurt to my Kachnar Keema and the problem was solved – it is delicious.

    If you’re reading this and thinking “hmmmm, what would be the taste, or would I like this recipe?” then stop!! Whilst you can taste the flavour of the kachnar, it compliments the mince rather than overpowering it.

    Soooooooo…. convinced? 😉

    Extra-Bonus Tips :

    Before serving sprinkle lemon juice if this is to your taste. (I think it improves the flavour.) It’s good with naan, chapattis, or any other kind of bread, and Zeera Raita (Cumin Yogurt Sauce).

    Ingredients

    • 1 kg mutton or lamb mince keema
    • 1/2 kg kachnar
    • 1/2 cup oil or ghee
    • 3 onions finely chopped
    • 2 large tomatoes finely chopped
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 1/2 cup plain yogurt
    • 2 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon garam masala powder
    • 1/4 teaspoon turmeric powder
    • salt to taste

    Instructions

    • Wash kachnar properly with water.
    • Now heat oil in a skillet or wok over medium high heat.
    • Saute onion in hot oil until transculant.
    • Now add ginger garlic paste and cook for 30 seconds.
    • Then add tomatoes, and mince.
    • Cook on high flame for few minutes or until meat is no longer pink.
    • Season with red chili, salt, cumin powder, coriander powder and turmeric powder.
    • Add 1 cup water and cover with the lid.
    • Let it simmer for 40 minutes or until mince is cooked thoroughly.
    • Remove the lid and cook mince on high heat for 5-8 minutes or until oil comes on top.
    • Now add kachnar and yogurt.
    • Cook and stir for 10 minutes or until done.
    • Now put on dum for few minutes then dish it out. Kachnar keema is ready to serve. ENJOY!!

    Step 1

    Heat the oil in a wok or karahi over medium heat.

    Step 2

    Once hot add onion paste and ginger garlic paste.

    Step 3

    Cook for 3-4 minutes or until you get the nice fragrant from them.

    Step 4

    Then add tomatoes. And sauté them till they are translucent and soft. It will take about 15 minutes.

    Step 5

    Now add red chili, coriander powder, cumin powder, turmeric powder and salt.

    Step 6

    Cook for 2-3 minutes then add potatoes.

    Step 7

    Add 1 cup water and cook for 10 minutes or until potatoes are tender.

    Step 8

    Add green pepper (shimla mirch) and onion. Mix well.

    Step 9

    Now Cover the pan and cook it till potatoes are done.

    Step 10

    It will take about 10 minutes and all the water will absorbed.

    Step 11

    Sprinkle garam masala over it and stir well. Aloo Shimla Mirch is ready to serve.

    I love fried fishWhile it make my tummy rumble in ecstasy, my blood vessels are shuttering with fear of all that cholesterol. 😛

    We usually have the batter made out of white flour, or maybe cornflour (hello, sky-high insulin), and then deep-fried in some vat of polyunsaturated fat that has been used over and over, creating a huge batch of trans-fat laden ooze that your fish is swimming in before it reaches your plate, all to wreck havoc on your health. Okay, so maybe now you don’t love fried fish so much? Sorry to ruin it for ya! But here’s my healthy, and lip-smacking alternative!!

    Salmon Fish Fry (Clean Eating Version)

    Ingredients

    • 800 gm Salmon Fish

    For Fish Marinade

    • 3 tablespoon chickpea flour besan
    • 1 teaspoon lemon juice
    • 1 teaspoon garlic powder
    • 1 teaspoon ginger paste
    • 1 teaspoon cumin powder
    • 1 teaspoon black pepper (crushed)
    • 1 teaspoon red chili powder
    • 1 teaspoon dried parsley
    • 1/2 teaspoon dry mango powder
    • salt to taste

    For Frying

    • 2 tablespoon olive oil

    For Garnishing

    • lemon wedges

    Instructions

    Method

    • Rinse and pat fish with paper towels. Cut fish into 4 inch thick pieces. and set aside.
    • Now make the marinade. Place the marinade ingredients in a spice grinder with about a tablespoon of water and make a smooth paste.
    • Put the marinade over the fish. Cover and allow to marinade for an hour.
    • Heat oil in a frying pan or griddle over medium heat.
    • When the oil is hot enough to brown a piece of bread in about 20 seconds.
    • Fry your fish fillets in batches.
    • With a slotted spoon, carefully lower the fish fillets into the hot oil and cook until they are light brown – about 4 minutes each side.
    • Now put the lid on for 2 minutes.
    • Fry fish for further 5 minutes until the fish is crusty and golden brown.
    • Remove from the griddle and transfer into a serving plate.
    • Sprinkled dried parsley over it and garnish with lemon wedges.

    Serving Suggestions:
    Serve with roasted veggies (broccoli, carrots, beans etc).

    • 1/2 cup desi ghee or clarified butter
    • 2 tablespoon ginger garlic paste

    • 1 teaspoon red chili powder

    • 500 gm basmati rice
    • 2 Onions, thinly sliced
    • 2 bay leaves
    • 5 cloves
    • 1 teaspoon roasted cumin seeds
    • 2 cinnamon sticks
    • 4 whole black pepepr
    • 2 black cardamom
    • 1 bunch mint leaves
    • 1/4 cup cashew nuts
    • 2 tablespoon milk
    • 1/4 teaspoon yellow food color

    For Garnishing

    • 2 tablespoon fresh coriander leaves
    • 2 tablespoon mint leaves
    • lemon wedges

    Step 1

    To Make Mutton Marination:

    Place mutton masala ingredients except ghee in a large bowl. Mix well.

    Step 2

    Cover and marinate for 2 hours.

    Step 3

    Meanwhile soak rice in cold water for 30 minutes.

    Step 4

    Heat ghee in an earthen pot or heavy bottom pot over medium heat.

    Step 5

    Add onions and fry for 5-8 minutes or until they turn golden brown and crispy.

    Step 6

    Remove from the oil and keep aside.

    Step 7

    Now fry the cashew nuts in remaining ghee for few seconds until lightly browned.

    Note: Don’t burn them.

    Step 8

    Now add bay leaves, cloves, cardamom,whole black pepper and cinnamon sticks.

    Step 9

    Saute for few seconds then add the marinated mutton pieces.

    Step 10

    Cover the pot and simmer for 1 hour or until meat is almost tender and gravy is thickened.

    Step 11

    Meanwhile, cook the soaked rice with salt till half boil.

    Step 12

    Drain the water and spread it on a large dish and sprinkle clarified butter over the rice.

    Step 13

    Now put some mutton mixture in a large pot.

    Step 14

    Spead 1/2 boiled rice over the mutton.

    Step 15

    Sprinkle hald chopped mint leaves, coriander leaves and fried cashew nuts.

    Step 16

    Continue the process for all the layers till the rice and mutton is over.

    Step 17

    Drizzle food color in milk over the top.

    Step 18

    Top with fried crisp brown onions.

    Step 19

    Cover the pot and cook biryani on slow flame for the dum flavour 10-15 minutes or until the rice is cooked.

    Step 20

    Dish it out. Hyderabadi Mutton Dum Biryani is ready to serve. ENJOY!!

    I had some extra chicken cooked and was looking to use it in a super fast and easy recipe. Since I also had few slider buns in my fridge, this fit the bill perfectly. I love the idea of the Slider cups (I can’t wait to get creative and try other things with that concept) and the filling was ooey-gooey, warm and cheesy. This is a very quick and simple way to get that comfort food taste/feeling.

    Here is my first try. I was thrilled they turned out just right.  They look so Lip smacking and appetizing (thus the name Lip Smacking Cheesy Chicken Cups). These are just as beautiful as they are delicious. My taste buds are going crazy, and I cannot wait for the next course in this meal.
    For a change of pace from your average dinner, this Cheesy Chicken Cups fits the bill! Unusual as it may be, once you take a bit, you will be reminded of some of your favorite chicken recipes. This is cheesy, flavorful, and will be loved by the whole family. Try making it tonight!

    Extra Cheesiness Alert

    Alright, lets move to the cheesiness of this recipe.  


    Cheesy chicken filling, extra cheese on top and pepper flakes all stuffed up in a crispy slider bun shell.  Slider Buns are great for so many appetizers.  I used regular sized muffin tins, so I used bun half per cup, overlapping the corners so that all the edges are covered.   This whole recipe is sure to leave you stuffed and satisfied!

    What I Love About The Cheesy Chicken Cups?

    What I love about these Cheesy Chicken Cups – they are SO SIMPLE.  Seriously, simple ingredients, and half an hour are all it takes to make these Lip Smacking Cheesy Chicken Cups!   They are very good and easy to make, filled with a delicious cheesy chicken filling that everyone will love. We normally have all these items on hand. Mini Slider Buns make great cups for these cheesy treats. You can also use any leftover chicken for this.

    Lip Smacking Cheesy Chicken Cups Recipe

    Lip Smacking Cheesy Chicken Cups – baked to perfection in muffin tins! Great for holidays and lunch boxes – it’s portable and makes for easy serving!

    Ingredients

    • 6 mini slider buns

    For Cheesy Chicken Filling:

    • 1 cup boiled chicken shreded
    • 1 small onion chopped
    • 1 tablespoon plain flour
    • 1 cup milk
    • 1/2 cup cheddar cheese
    • 2 tablespoon butter
    • 1 teaspoon black pepper freshly ground
    • 1 teaspoon dried basil
    • 1/2 teaspoon red chili flakes
    • salt to taste

    For Topping:

    • 1/2 cup grated cheese
    • red pepper flakes
    • dried or fresh basil

    Instructions

    • Preheat oven to 180 degrees C.
    • Lightly greased a muffin pan with non-stick cooking spray or butter.

    To Prepare the Chicken Filling:

    • Melt butter in a frying pan over medium heat.
    • Fry onion till soft and translucent. Now add the plain flour and stir well.
    • Stir in the milk and cook for 2-3 minutes or until sauce is thickened.
    • Season with salt, black pepper, red chili flakes.
    • Stir in the shredded chicken and keep stirring for few minutes or until well combined.
    • Add cheese and dried basil and give it a good stir.
    • Turn the heat off.

    To Assemble the Cheesy Chicken Cups:

    • Cut buns into halves and put each half into the prepared muffin pan.
    • Press the buns into the holes to form cups.
    • Spoon chicken filling evenly into cups.
    • Sprinkle remaining cheese over them.
    • Top with chili flakes and dried basil (optional).
    • Bake for 12 to 15 minutes or until cheese is melted and they turn golden brown.
    • Take it from the oven. Remove from the muffin pan.
    • Lip Smacking Cheesy Chicken Cups are ready to serve. ENJOY!!

    Pizza is a popular and delicious dish of Italian origin, that has become extremely popular all over the world.
    Today i am bringing you guys an amazing fusion dish. Fusion cooking is a delight! It creates magic and is fairly easy to do. When we combine a number of cuisines in one meal, we get a delicious combination of new tastes and flavors.
    If you love pizza and you love BBQ aroma – then this is totally your kind of Pizza.It sounded AH-mazing!…and it sure was! It was “love at first bite”!

    Chicken tikka is Asian style of barbecued chicken and it tastes fabulous as a topping on pizza. It has become widely popular in Pakistan.

    I made it yesterday for my family and especially for my brother. He is a true pizza lover. He was sad when it got over and even though he knew there was no more pizza left he was talking about how he felt like having this pizza the next day. He still talks about it. And while writing this post, I wish I had some pizza dough so that I could make this again now.
    If you ask me what makes a good pizza, i would definitely say that it is the sauce. I will overlook a ‘meh’ crust if the sauce is good. Yeah, but of course, i would prefer when both the crust and sauce are amazing, but the highlight of a pizza for me is definitely its sauce. And this sauce is just ‘magical perfection’. Talking about the crust, i prefer thin crust pizza over a thick chewy one. And this recipe gives you the perfect crust. The best part is that it is super easy. Hope you guys give this recipe a try and be fall illustrious among your friends and relatives for making finest an admirable Chicken pizza.

    So let the fun begin

    1st Prepare Chicken Tikka:

    Marinate the chicken with the lemon juice, yogurt, ginger garlic paste, roasted cumin powder, garam masala, red chilli powder, tikka masala powder and salt.Marinate for atleast 4 hours ( perferably marinate overnight).

    Now broil on high for 8-10 minutes, turning over once. Or grill till cooked.
    Transfer into a bowl and keep side.

    Note:Sorry I din’t get grilling process pictures as I was on in a hurry to assemble the pizza. 😛

    Now Make Pizza Dough :

    In a large mixing bowl, mix 2 cups flour, yeast, sugar, milk powder and salt.
    Combine warm water, egg and butter in a small bowl.

    Add this in the flour mixture and beat with an electric mixer on High for 3 minutes.
    Using a wooden spoon, stir in as much of the remaining flour as you can. or knead with hand.
    Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic ( 3 to 5 minutes ).
    Shape dough into a ball. Place in a lightly greased bowl, turning once to grease dough surface.

    Cover bowl and let the dough rise in a warm place until double in size ( 50 to 60 minutes ).
    Punch dough down. Turn dough out onto a lightly floured surface.
    Cover and let rest for 10 minutes.

    To Make Pizza Sauce :
    Blend tomato paste, tomato sauce, oregano in a blender.
    Heat 1 teaspoon butter in a pan, add garlic paste & fry for 1 minute.
    Add blended tomato mixture & paprika.
    Cook on medium heat until sauce is thick. Keep aside and let it cool competely.

    To Assemble The Pizza

    Preheat oven to the highest setting on your oven. Mine goes to 250 C degree.
    If you have a pizza stone, place it in the oven. I do not have one, and I use the back of my sheet pan.
    You do not have to preheat your sheet pan. Dust your sheet pan.
    Roll out your pizza dough.
    Drizzle some melted butter on top of your rolled out pizza.
    Prick with fork and let it rest for 10 minutes.
    Spread pizza sauce over it.
    Top generously with the chicken tikka and capsicum.
    Sprinkle cheddar cheese and mozzarella cheese.
    Sprinkle parsley and oregano on top the pizza.
    Bake for 20 minutes or until cheese has melted and crust has cooked.
    Sprinkle some extra parsley. Let cool a little. Cut into slices and serve.

    Recipe Notes:

    1. .FOR PIZZA DOUGH:  If you want to store the extra pizza dough for future use, just oil the dough ball all around and put each ball into separate zippered freezer bag. You can freeze this way for about 2-3 days.The day before you plan on using them, just transfer the dough to the refrigerator. And on the day of usage, remove from fridge, place on a floured counter and gently press the ball into 1/2 inch thickness and let rise for 2 hours.

    FOR PIZZA CRUST: The crust cooks really fast. Mine actually took just 12 minutes. Do not over cook or your crust will become hard. By the time the cheese melts, the crust will get cooked. Even then just check before taking out.

    FOR PIZZA SAUCE: This recipe makes about 1-1/2 cups of pizza sauce, I often have a bit leftover for during the week if I want to make bread pizza pinwheels or homemade pizza rolls. Sometimes, I place the extra sauce in sterilized jars and freeze it until i need it next. I just let it thaw in the refrigerator when I know I am going to need it.

    FOR TIME SAVING: You wont require much time in the kitchen if you prepare the dough and marinate the chicken the night before. The next day, you will just have to grill the chicken, and thaw the dough for 2 hours and assemble the pizza.

    Ingredients

    For Pizza Dough

    • 2 cups flour
    • 1 egg beaten
    • 1/4 cup Luke warm water
    • 1 tablespoon butter
    • 2 tablespoon dry milk powder
    • 2 teaspoon yeast
    • 1 teaspoon sugar
    • 1 teaspoon salt

    For Chicken Tikka

    • 500 gm boneless chicken cubed
    • 2 tablespoon plain yogurt
    • 1 tablespoon oil or butter
    • 1 teaspoon ginger garlic paste
    • 1 tablespoon tikka masala powder
    • 1 teaspoon crushed red chili
    • 1 teaspoon salt
    • 1 teaspoon garam masala powder
    • 1/2 teaspoon cumin powder

    For Pizza Topping

    • 1 cup cheddar cheese grated
    • 1/2 cup Mozzarella cheese grated
    • 4 tablespoon pizza sauce
    • 1/2 teaspoon oregano
    • 1/2 teaspoon dried parsley
    • 1 capsicum sliced

    Instructions

    Directions

      To Make Dough

      • Knead all the dough ingredients with lukewarm water.
      • Keep covered in an oiled bowl in a warm place for 1 hour or until doubled and well risen.

      To Make Chicken Tikka

      • Marinate all chicken tikka ingredients for 30 minutes then cook on high heat for 20 minutes or until chicken is tender and all juices run clear.

      To Assemble The Pizza

      • Roll out the dough onto a floured surface and line a pizza plate with it.
      • Spread pizza sauce.
      • Top with chicken tikka, cheeses, oregano and let rise again in a warm place for 20 more minutes.
      • Sprinkle some dried parsley over it.
      • Bake at 200 degrees C for 20 minutes or till cheese has melted and dough is cooked.
      • Remove from the oven and cut into wedges. Chicken Tikka Pizza is ready to serve. ENJOY!!

      Notes

      Serving Suggestions:
      Serve with Chili Sauce.

      Ingredients

      For Kofta (Meatballs)

      • 1 kg mutton mince keema
      • 2 onions finely chopped
      • 2 tablespoon roasted and grounded chickpeas
      • 1 egg lightly beaten
      • 1 teaspoon chopped ginger
      • 1 teaspoon green chili paste
      • 1 teaspoon red chili powder
      • 1 teaspoon cumin powder
      • 1/2 teaspoon coriander powder
      • 1/2 teaspoon garam masala powder
      • Salt To Taste
      • Oil for frying

      For Kofta Curry

      • 2 onions thinly sliced
      • 1/4 cup oil or butter
      • 1 cup boiled and skinned tomatoes
      • 1 teaspoon ginger garlic paste
      • 2 tablespoon yogurt
      • 1/2 teaspoon red chili powder
      • 1/4 teaspoon turmeric powder
      • 1/4 teaspoon coriander powder
      • 1/4 teaspoon garam masala powder
      • Salt To taste

      For Garnishing

      • 2 tablespoon fresh coriander leaves
      • 2 green chilies thinly sliced
      • boiled eggs optional

      Instructions

      To Make Koftas

      • Put all kofta ingredients in a food processor. Process until combined together.
      • Take it out in a bowl and shape into koftas (meatballs).
      • Put in a refrigerator for 2 hours or until firm or set.
      • Now heat oil in a deep pan and fry kofta’s for 8-10 minutes or until lightly browned.
      • Remove from the oil and Keep aside.

      To Make Kofta Curry

      • Heat 1/4 cup oil in a wok or skillet.
      • Saute onions until translucent.
      • Add ginger garlic paste and cook for few seconds.
      • Now add the rest of the curry ingredients with enough water to make a smooth gravy.
      • Bring to a boil. Cover and simmer for 30 minutes or until gravy is smooth and thickened.
      • Cook on high heat, add the fried koftas and 1 cup water.
      • Cover again and simmer for 40 minutes or until koftas are cooked inside.
      • Increase the flame and cook 5 minutes longer or until gravy is thickened.
      • Add boiled eggs.
      • Garnish with green chilies and coriander leaves. Mutton Kofta Curry is ready to eat. Enjoy!

      Notes

      Serving Suggestions:
      Serve with Naan, chapati or boiled rice.

      First boil water in a pan.

      Step 2

      Once boiled, add chopped palak. Simmer for 5 minutes and then strain out the left water.

      Set the boiled palak aside to cool.

      Once cooled, blend the palak into a smooth paste.

      Separately grind onions, ginger, garlic, green chillies and tomatoes to make a fine masala paste.

      Step 6

      Heat oil in a pan and add the masala paste.

      Sauté till the masala turns brown.

      Now, add pepper powder, cumin seed powder, garam masala powder, turmeric powder, coriander powder and salt to it. Cook the mixture for 10 minutes.

      Step 9

      Now, add the palak paste and mix well.

      Step 10

      Cook for 10 more minutes add chicken and mix well.

      Step 11

      Cook for 20 to 30 minutes by covering the vessel with a lid.

      Step 12

      Remove from the heat when chicken pieces are fully cooked.

      Step 13

      Garnish with fresh cream. Palak Chicken is ready to serve.

       Chicken Karahi is a very delicious and easy to make main dish. You can substitute chicken with mutton, and serve with peas pilaf or naan. Give it a try!!

      Chicken Karahi is one of the recipes that is probably available in every restaurant and road side dhaba. Karahi refers to Pakistani style wok which is slightly deeper (compared to Chinese wok) and narrower in diameter with a round bottom and curved handles.
      Since in Karahi ghost no water or stock is used to cook the ghost and rather the mutton cooks in the masala and its own stock, karahi makes sure the meat doesn’t burn and simmers away slowly braising the meat. Having said that, you may as well cook it in a deep bottom pot with a little stock to help you through.

      It is a traditional Pakistani dish which is easy-to-make at home with less oil. In this recipe, chicken nicely is cooked with tomatoes, ginger garlic, green chilli, yogurt and traditionsl Pakistani spices. This simple dish can make your dinner more fantastic.

      Ingredients

      • I kg chicken (cut into medium pieces)
      • 1 cup oil
      • 1 medium onion, finely chopped
      • 1 tbsp ginger paste
      • 1 tbsp garlic paste
      • 4 tomatoes,peeled and chopped
      • 1/2 cup plain yogurt
      • 1 tsp red chili powder
      • 7 whole peppercorns, crushed

      For Garnishing:

      • 1/2 tsp garam masala powder
      • 5 green chilies,thinly sliced
      • 2 tbsp fresh ginger(julienne)
      • fresh Coriander leaves, finely chopped

       

      Directions:

      Step 1

      Rinse and drained chicken properly and set aside.

      Step 2

      Heat oil in a karahi(pan), add chopped onions and cook it for 2-3 minutes.

      Step 3

      After 2 minutes add ginger,garlic paste and stir fry it.

      Step 4

      Add chicken in it and cook for 10 minutes.

      Step 5

      Then add tomato puree,yogurt,salt and chili powder.

      Step 6

      Cover with lid and continue cooking.

      Step 7

      When the water dries and chicken is tender add the peppercorns,and cook for 2 more minutes.

      Step 8

      Then remove from heat.

      Step 9

      Sprinkle garam masala on it.

      Step 10

      Garnish chicken karahi with julienne ginger,fresh coriander and green chilies. Chicken karahi is ready to serve.

       

      • Serve with naan and mint chutney.

       

      Note:

      If you want creamy mixture, you can also add 2-3 tablespoon fresh cream in the last step and simmer for 1-2 minutes and turn off the stove.
      Adding onion to your desired level, above one is a medium spicy curry.
      Adding peppercorn is optional, but sure it gives nice flavor and taste to the curry.
      For dry masala skip the onion.
      If you want to add more colour to the dish, add one teaspoon of tomato paste with the tomatoes. You may have to play around a bit with the chili heat. I find four to six chilies do the trick, my mommy always adds eight. Perhaps one could start with two for a taste-test.

      For Kofta (meatballs)

      • 1 kg mutton or chicken mince
      • 1 cup brown onion, crushed
      • 4 green chilies
      • 1 egg
      • 1 teaspoon ginger paste
      • 1 teaspoon garlic paste
      • 1/2 teaspoon coriander powder
      • 2 teaspoon cornflour
      • 1 teaspoon poppy seeds (khashkhask)
      • 1 teaspoon red chili
      • salt to taste
      • oil for frying

      For Palak Curry:

      • 1/2 kg spinach ( palak), boiled and chopped
      • 2 tablespoon dried fenugreek leaves (methi)
      • 2 onions, chopped
      • 2 tomatoes, chopped
      • 1/2 cup milk
      • 1/4 cup ghee or butter
      • 1 teaspoon ginger garlic paste
      • 1 teaspoon coriander powder
      • 1/8 teaspoon turmeric powder
      • 1/2 teaspoon red chili powder
      • 1/2 teaspoon cumin powder
      • a pinch of garam masala powder
      • salt to taste

      Directions:

      Step 1

      Take a large bowl, mix together the kofta ingredients.

      Step 2

      Shape into small balls.

      Step 3

      Heat oil in a deep pan over medium heat.

      Step 4

      Fry koftas for 5-8 minutes or until they turn golden.

      Step 5

      Remove from the oil and absorb on kitchen paper.

      Step 6

      Keep warm.

      Step 7

      To Make Kofta Curry:

      Melt butter in a deep skillet or wok over medium heat.

      Step 8

      Saute onion in butter until transculant.

      Step 9

      Add ginger garlic paste and cook for 1 minute then add tomatoes, red chili, coriander powder, turmeric powder, cumin powder and salt.

      Step 10

      Add spinach, fenugreek leaves and 1 cup milk.

      Step 11

      Cover the skillet and cook on low heat for 40 minutes or until done.

      Step 12

      Remove the lid. Add koftas and cook on high heat for 20 minutes or until they cooked inside.

      Step 13

      Put on dum for few minutes the take it out in a dish. Kofta Palak is ready to serve. ENJOY!

      Boneless Chilli Chicken Recipe

      Ingredients

      • 500 gm boneless chicken cut into cubes
      • 2 egg lightly beaten
      • 1/2 cup corn flour
      • 1 teaspoon garlic paste
      • 1 teaspoon ginger paste
      • 1 teaspoon pepper
      • salt to taste
      • Oil for deep frying

      For Sauce

      • 1 onions thinly sliced
      • 2 green chillies thinly sliced
      • 2 tablespoon vinegar
      • 1 tablespoon soy sauce
      • 1 tablespoon chilli sauce
      • 1/2 teaspoon red chili flakes
      • a pinch of salt or to taste

      For Garnishing

      • green chillies slit
      • ginger slices
      • green onion thinly sliced

      Instructions

      Method

      • Place chicken in a large bowl.
      • Add egg, cornflour, garlic and ginger paste, pepper and salt. Mix well to coat evenly.
      • Cover and marinate for 30 minutes ot blend flavors.
      • Heat oil in a deep pan oevr medium heat.
      • Deep-fry the chicken pieces over high heat to begin with and then lower the heat till chicken is cooked through.
      • Remove from the oil and drain on absorbent paper.
      • Heat 2 tablespoon oil in a wok or pan.
      • Add onions and stir-fry over high heat for 4-5 minutes or until they are translucent.
      • Add the green chillies and stir a few times.
      • Then add salt, soy sauce, vinegar, and chilli sauce.
      • Add fried chicken.
      • Stir to coat evenly. Cook for 2 minutes or until sauce is thickened.
      • Dish it out. Garnished with the green chillies and green onion. Delicious Boneless Chilli Chicken is ready to serve. ENJOY!!

      Serve with Steamed Rice or Fried Rice

      Ingredients

      • 1 cup cornflour
      • 1 cup bread crumbs
      • 1/2 cup mayonnaise
      • 2 tbsp mustard paste
      • 2 tbsp white vinegar
      • 1/2 tsp red chili powder
      • 1/2 tsp black pepper
      • salt to taste
      • oil for frying
      • lettuce leaves for garnishing

      Instructions

      Method

      • Pound fish into circular shape pieces.
      • Marinate fish with vinegar, black pepper, chili powder and salt.
      • Now roll each fish piece in cornflour. Turn to coat evenly.
      • Dip fish in beaten egg.Then roll in breadcrumbs.
      • Pressing gently.
      • Deep fry fish for 5-8 minutes or until golden.
      • Remove from the oil and drain on an absorbent paper.
      • Cut burger buns in half.
      • Slightly toast on a hot griddle or pan.
      • Remove from the heat.
      • Spread mayonnaise and mustard paste on them.
      • Place fried fish piece on it. Top with lettuce leaves.
      • Cover with another half of bun. Fish Burger is ready to serve. ENJOY 🙂

      Ingredients

      • 1 Kg. mutton
      • 1 Kg. Spinach Or Palak
      • 1-1½ tsp salt (according to taste)
      • ¼ tsp. turmeric powder
      • 1 tsp. chili powder
      • 4-6 tbsp oil
      • 1 tsp. ginger paste
      • ½ tsp. garlic paste
      • 2 tomato-chopped
      • 6-8 whole black pepper
      • 3-4 cloves
      • 2 black cardamom
      • ¼ tsp. cumin seeds
      • 3-4 green chilies
      • 1 small piece of ginger –sliced
      • 2 tbsp corn or wheat flour
      • 1 tbsp dry fenugreek leaves – Kasuri Methi

       

      Directions:

      Step 1

      Steam/blanch the Palak and grind.

      Step 2

      Fry the onion in the oil till brown.

      Step 3

      Mix all the ingredients together and add to the pot and stir till the tomato has become soft and the water has dried.

      Step 4

      Add the meat and cook again to let the water dry.

      Step 5

      Add 3-4 glasses of water cover and leave to tenderize.

      Step 6

      When meat is almost done add ground Palak, Methi and flour. Cook till water dries.

      Step 7

      Dish it out. Garnish with fresh chopped green chilies. Palak Gosht is ready to serve.

      Serving Suggestions:

      • Serve with naan, or boiled rice.
