     Pasta, for me, is the ultimate comfort food.  I love anything to do with pasta or macaroni, as they are my go-to on my lazy days. Today i am sharing a super easy Keema Macaroni recipe for busy weeknight Meals. One dish I make quite frequently when I have some mince is this one. Nice and simple, full of flavors.

    This ain’t your ordinary pasta. With flavors bursting out from every corner, this one is delicious! To make it more unique and give a distinct flavor, I have used my ever favorite Italian Pasta Sauce

    You can use any macaroni for this recipe, but I totally recommend trying elbow or something that can help hold all of those tiny pieces of mince. I used my favorite whole wheat pasta. Cook it al dente according to package instructions.

    While the pasta is cooking, saute up an onion and mince until cooked.  Then add in some garlic, herb seasoning and pasta sauce.  And once the pasta is cooked, drain and add it to the saute pan. I would add a dollop cheese or mayonnaise to make it more moist and gulp it down!

    Isn’t that to easy?? Easy enough even for a weekday night? Of Course Yes!!

    This is a really delicious pasta dish and the taste of the basil really comes through beautifully. The minced meat balances out the starch of the macaroni really well. A perfect dance of herb and spice ensues in your mouth…That you have to experience!

    As you can see, the recipe is just as good and vibrant and delicious as ever.  🙂

    Some Tips for the Perfectly Cooked Keema Macaroni:

    1. Never cook your macaroni in boiling hot water, it destroys the outer layer of the macaroni however you may not realize it. So, always throw in your macaroni or whatsoever in simmering water, a stage before boiling for best results.
    2. Always add a reasonable amount of salt to water, in which you will be cooking your macaroni.
    3. Once your macaroni has been boiled, strain it, take it out of the hot water and quickly rinse them in cold or regular tap water and the set aside. This stops the macaroni from further cooking, which results in soggy, dull and bland macaroni.
    4. Once you throw macaroni into your dish, let it cook and absorb the wonderful flavours of the dish, by letting it sit in the pan for 2-3 minutes with the lid closed and on slowest flame. Macaroni is bland, has no particular flavour so this step is very critical as well as rewarding.

    1. You can use any pasta of choice , i like the taste of brown rice pasta compared to others.
    2. You can add veggies e.g. carrots, capsicum, green peas if you like. Everything in this recipe is optional. Go as you please. Play with flavours.

    A very satisfying meal,You can categorize it as an exotic gourmet dish or a very simple homely dish,any which ways its very fulfilling and a treat to your taste buds.

    This is my mothers recipe for a simple Mince Curry or aloo keema as us Pakistanis like to call it. It is a really tasty curry especially when you add potatoes and spices like I did!     Recipe Note’s:

    1. The cooking time will vary if you are using beef or chicken.
    2. Don’t add too much water at the beginning because ground meats leave moisture as they cook.Add water at intervals as per the consistency you want.
    3. At the end of about 20 minutes of cooking you will see that oil separating from and change in color of the ground meat.

  • Bhuna Keema Recipe (Minced Meat With Whole Spices)

    When you want to throw together a meal in just a few minutes, this can seem like an impossible task but Bhuna Keema is quick meal but taste just as good as anything you’ve spent hours to create.

    Bhuna Keema (Minced Meat With Whole Spices) Recipe

    Prep Time 10 minutes
    Cook Time 35 minutes
    Total Time 45 minutes
    Servings 4

    Ingredients

    • 500 gm mince keema
    • 1/4 cup oil
    • 2 tsp cumin seeds
    • 4 onions grated
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 1 cup tomato puree
    • 1 tbsp chili powder
    • 1 tbsp coriander powder
    • 1 tsp garam masala powder
    • 1/4 tsp turmeric powder
    • salt to taste

    For Garnishing

    • 2-3 green chilies thinly sliced
    • 4 tbsp fresh coriander leaves finely chopped

    Instructions

    Method

    • Heat oil in a pan over medium heat.
    • Saute onion in hot oil until translucent.
    • Now add ginger garlic paste and mince. Cook, uncovered, on high heat for 10 minutes, stirring thrice.
    • Now stir in the tomato puree, salt, chilli, coriander powder, turmeric powder.
    • Cook at high heat for 25 minutes or until cooked is thorough.
    • Transfer into a serving dish.
    • Sprinkle Garam Masala over it.
    • Garnish with coriander leaves and green chilies. Bhuna Keema is ready to serve. ENJOY!!

    Notes

    Serving Suggestions:
    Serve with boiled rice or roti.

    Today marks the start of spring. Traditional rites and festivals of spring revolved around its importance in growing food. Plants start to grow and animals come out of hibernation and begin reproducing. People come out of hibernation too!

    I’m really excited to be back with another Traditional Pakistani recipe (if you didn’t see my Kachnar Gosht and Karela Gosht then I’d really recommend you give those a try too).

    So let’s celebrate spring with another Traditional Pakistani food (Kachnar Keema).

    A Lil Bit About Kachnar:

    Kachnar/Orchid is a species of flowering plant in the family Fabaceae, native to southeastern Asia, from southern China west to Pakistan and India.

    Kachnar tree, Bauhinia variegate, is also known as Orchid tree or Butterfly tree because of the way it’s flowers look. This is a very popular ornamental tree in subtropical and tropical climates, grown for its scented flowers and also used as food item in South Asian cuisine.

    Varieties of Kachnar:

    Kachnar has three varieties (red, white and mauve) depending upon the colour of its flowers.

    Kachnar Keema

    In Pakistan, its buds are considered a delicacy. They are available for a short season only and are difficult and expensive to buy. Eating Kachnar ( Orchid)is very beneficial for our health as this vegetable is blessed with advantages and it taste is really good when cooked with addition of any mince meat(keema).

    One thing I love about cooking is discovering new flavours that go together, especially when it’s flavours that you wouldn’t necessarily think to put together and today’s Kachnar Keema recipe is one of those creations.

    My take on a traditional Pakistani Kachnar Keema with lamb mince, kachnar buds, and served hot chapatai and Raita.

    I’ve been trying to perfect Kachnar Keema for a while, but I’ve always found that it was lacking a little something – it had meatiness from the lamb, bitterness from the kachnar buds and saltiness from the spices but it needed just a hint of creaminess. A few weeks ago on a whim (figuring that mince meat and yogurt go well) I decided to add some yogurt to my Kachnar Keema and the problem was solved – it is delicious.

    If you’re reading this and thinking “hmmmm, what would be the taste, or would I like this recipe?” then stop!! Whilst you can taste the flavour of the kachnar, it compliments the mince rather than overpowering it.

    Soooooooo…. convinced? 😉

    Extra-Bonus Tips :

    Before serving sprinkle lemon juice if this is to your taste. (I think it improves the flavour.) It’s good with naan, chapattis, or any other kind of bread, and Zeera Raita (Cumin Yogurt Sauce).

    Cook Time 1 hour 15 minutes
    Total Time 1 hour 30 minutes

    Ingredients

    • 1 kg mutton or lamb mince keema
    • 1/2 kg kachnar
    • 1/2 cup oil or ghee
    • 3 onions finely chopped
    • 2 large tomatoes finely chopped
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 1/2 cup plain yogurt
    • 2 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon garam masala powder
    • 1/4 teaspoon turmeric powder
    • salt to taste

    Instructions

    • Wash kachnar properly with water.
    • Now heat oil in a skillet or wok over medium high heat.
    • Saute onion in hot oil until transculant.
    • Now add ginger garlic paste and cook for 30 seconds.
    • Then add tomatoes, and mince.
    • Cook on high flame for few minutes or until meat is no longer pink.
    • Season with red chili, salt, cumin powder, coriander powder and turmeric powder.
    • Add 1 cup water and cover with the lid.
    • Let it simmer for 40 minutes or until mince is cooked thoroughly.
    • Remove the lid and cook mince on high heat for 5-8 minutes or until oil comes on top.
    • Now add kachnar and yogurt.
    • Cook and stir for 10 minutes or until done.
    • Now put on dum for few minutes then dish it out. Kachnar keema is ready to serve. ENJOY!!

    Serve Kachnar Keema with hot Chapati, Zeera Raita and Salad

    Ingredients

    For Kofta (Meatballs)

    • 1 kg mutton mince keema
    • 2 onions finely chopped
    • 2 tablespoon roasted and grounded chickpeas
    • 1 egg lightly beaten
    • 1 teaspoon chopped ginger
    • 1 teaspoon green chili paste
    • 1 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon garam masala powder
    • Salt To Taste
    • Oil for frying

    For Kofta Curry

    • 2 onions thinly sliced
    • 1/4 cup oil or butter
    • 1 cup boiled and skinned tomatoes
    • 1 teaspoon ginger garlic paste
    • 2 tablespoon yogurt
    • 1/2 teaspoon red chili powder
    • 1/4 teaspoon turmeric powder
    • 1/4 teaspoon coriander powder
    • 1/4 teaspoon garam masala powder
    • Salt To taste

    For Garnishing

    • 2 tablespoon fresh coriander leaves
    • 2 green chilies thinly sliced
    • boiled eggs optional

    Instructions

    To Make Koftas

    • Put all kofta ingredients in a food processor. Process until combined together.
    • Take it out in a bowl and shape into koftas (meatballs).
    • Put in a refrigerator for 2 hours or until firm or set.
    • Now heat oil in a deep pan and fry kofta’s for 8-10 minutes or until lightly browned.
    • Remove from the oil and Keep aside.

    To Make Kofta Curry

    • Heat 1/4 cup oil in a wok or skillet.
    • Saute onions until translucent.
    • Add ginger garlic paste and cook for few seconds.
    • Now add the rest of the curry ingredients with enough water to make a smooth gravy.
    • Bring to a boil. Cover and simmer for 30 minutes or until gravy is smooth and thickened.
    • Cook on high heat, add the fried koftas and 1 cup water.
    • Cover again and simmer for 40 minutes or until koftas are cooked inside.
    • Increase the flame and cook 5 minutes longer or until gravy is thickened.
    • Add boiled eggs.
    • Garnish with green chilies and coriander leaves. Mutton Kofta Curry is ready to eat. Enjoy!

    Notes

    Serving Suggestions:
    Serve with Naan, chapati or boiled rice.

    Saute onions and ginger until crisp-tender.

    Add mutton mince and Cook on high flame for 15-20 minutes or until it changes colour and the mince water completely dry.

    Step 5

    Add tomatoes, crushed chilli, red chilli powder, cumin seeds, turmeric powder, coriander powder and salt.

    Step 6

    Mix well.

    Step 7

    Adjust the seasoning according to taste.

    Step 8

    Cook on high flame for 10-15 minutes or until tomatoes are tender.

    Step 9

    Add potatoes and peas mix it well.

    Step 10

    Add 2 cups of water and cook on medium low heat and cook for 20 minutes or until potatoes and peas are cooked.

    Step 11

    Increase the flame and cook for 5 minutes or until water dries up

    Step 12

    Sprinkle garam masala, fresh coriander, green chillies over it.

    Step 13

    Put on dum for 5 minutes then dish it out.Delicious Aloo Keema Matar is ready to serve. ENJOY!!

    • 2 onions, chopped

    • 1/2 cup milk
    • 1/4 cup ghee or butter
    • 1 teaspoon ginger garlic paste
    • 1 teaspoon coriander powder
    • 1/8 teaspoon turmeric powder
    • 1/2 teaspoon red chili powder
    • 1/2 teaspoon cumin powder
    • a pinch of garam masala powder
    • salt to taste

    Directions:

    Take a large bowl, mix together the kofta ingredients.

    Shape into small balls.

    Remove from the oil and absorb on kitchen paper.

    Step 6

    Keep warm.

    To Make Kofta Curry:

    Saute onion in butter until transculant.

    Add ginger garlic paste and cook for 1 minute then add tomatoes, red chili, coriander powder, turmeric powder, cumin powder and salt.

    Add spinach, fenugreek leaves and 1 cup milk.

    Step 11

    Cover the skillet and cook on low heat for 40 minutes or until done.

    Step 12

    Remove the lid. Add koftas and cook on high heat for 20 minutes or until they cooked inside.

    Step 13

    Put on dum for few minutes the take it out in a dish. Kofta Palak is ready to serve. ENJOY!

    To Make Samosa Filling:

    Heat oil in a frying pan. Saute garlic and lamb until browned.

    Step 2

    Stir in potato, peas, turmeric, and cook, stirring to prevent the mixture from sticking for about 5 minutes.

    Season and leave to cool.

    To Make Samosa Pastry

    Sift flour and salt into a bowl, rub in butter until mixture resembles bread crumbs.

    Step 5

    Mix in milk to make tacky dough.

    Step 6

    Flour hands, break off pieces of dough, size of a walnut.

    Roll out on well-floured board to make thin circle.

    Step 8

    In center of each circle, place a good teaspoon of filling.

    Step 9

    Dampen edges, fold over to make triangular patty.

    Deep fry a few at a time until golden brown. Samosa is ready to serve.

    Step 1

    Put yogurt, coconut, khas khas, whole chilli,fried onion, cardamom and cinnamon in a blender.Blend until smooth.

    Take it out in a large bowl. Add papaya paste, ginger garlic paste, lemon juice, red pepper, cumin, mace powder, nutmeg powder and salt.Mix well.

    Step 3

    Add mince in yogurt mixture. Stir until well combined.

    Cover and marinate for 2 hours or overnight is best.

    Now heat oil in a large pot or wok over medium heat.

    Add marinated mince.Cover the wok and cook on very low flame for 30-40 minutes or until all water dries up and mince is cooked.

    Adjust the seasoning to your taste.

    Put this pot on a hot griddle and give dam on low flame.

    Chapli Kabab Peshawari Style Recipe

    Ingredients

    • 500 gm mince meat
    • 1 large tomato seeded & chopped
    • 1 large onion finely chopped
    • 1 large egg lightly beaten
    • 2 scrambled eggs
    • 2 green onion finely chopped
    • 4 green chilies finely chopped
    • 2 tablespoon Maize flour makai ka atta
    • 2 tablespoon chopped coriander leaves
    • 2 tablespoon chopped mint leaves
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon pomegranate seeds crushed
    • 1 teaspoon cumin seeds roasted & crushed
    • 1 teaspoon coriander seeds roasted & crushed
    • 1 teaspoon red chili
    • salt to taste
    • oil for shallow fry

    Instructions

    Method

    • Place onion, green onion,green chilies, ginger garlic paste, fresh coriander in a food processor. Give vegetables a good blend not too much otherwise onion will leave its water.
    • Now add mince and all remaining ingredients(except cornflour, tomato and scrambled eggs). Process again until very fine.
    • Take it out in a large bowl.
    • Add scramble egg, cornflour and finely chopped tomatoes.Mix it with hands until well combined.
    • Wet your hand with water and shape mince mixture into patties.
    • Heat oil in a shallow pan or an iron griddle over medium heat.
    • Shallow fry kebabs on both side on very low heat until golden brown.
    • Transfer into a serving platter. Delicious Peshawari Style Chapli Kabab is ready to serve.

    Notes

    Serving Suggestions:
    Serve with naan or paratha along with mint raita or any sauce of your choice.

    Recipe Note’s:

    1. Maize flour is the main ingredient of Peshawari Kebab it’s main purpose is to soften the patties and absorb excess moisture of material. If you don’t have maize flour replace it with parched gram, if u run out of both types then least choice is of simple wheat flour there might be little bit difference of flour but the purpose can b fulfilled.
    2. Mince Tips: Your mince should be dry and have less fats. Use colander to make sure there is no water content in it.If you use meat with fat it will get shrink while frying..
    3. Kebab Shape Tip: You can shape kebabs round, oval its your choice.
    4. Cooking Tip: While Frying kebabs, cover the frying pan so mince is cooked in its own water and in steam.
    5. Freezing Tip: If you want to freeze these Peshawari Kebabs; don’t add tomatoes in it. Tomatoes will leave water and your kebabs will get break. Don’t thaw cook from frozen on low heat covering your pan so meat tenders perfectly. OR you can freeze them semi cooked and when needed bake them in oven.

    • 500 gm mutton mince
    • 1/2 cup oil
    • 2 onions (finely chopped)
    • 3 tomatoes (finely chopped)
    • 1 tsp ginger paste
    • 1 tsp garlic paste
    • 1 tsp red chili powder
    • 1/4 tsp turmeric powder
    • 1/2 tsp coriander powder
    • 1/2 tsp cumin powder
    • 1/2 tsp garam masala powder
    • salt to taste

    For Garnishing:

    • 3-4 green chilies, thinly sliced
    • 1/4 cup fresh coriander leaves

     

    Directions:

    Step 1

    Heat oil in a pan or wok, add chopped onions and fry for 3-4 minutes.

    Step 2

    Then add ginger-garlic paste and stir fry for few seconds.

    Step 3

    Now put mince into it and cook for 5 minutes.

    Step 4

    Then add chopped tomatoes and let the tomato turn soft.

    Step 5

    Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix well.

    Step 6

    Add 2 cups of water, bring to a boil then reduce the heat.

    Step 7

    Put the lid on and cook for 40-45 minutes or until mince cooked thoroughly.

    Step 8

    Then, uncover, and stir fry 4-5 minutes or until water is completely
    absorbed.

    Step 9

    Remove from the heat and transfer into the serving bowl.

    Step 10

    Sprinkle garam masala powder over the top.

    Step 11

    Garnish with green chilies and fresh coriander leaves. Mutton Keema is ready to serve.

    Serving Suggestions:

    • Serve with Tandoori paratha, roti or boiled rice.

    I made this pizza last night for a quick dinner. I had been roaming around with the recipe for making the perfect pizza for so long and the thought of topping the pizza crust with minced triggered me last night all of a sudden. I had no other choice but to execute my idea.
    When it came to top the pizza crust, I went a little overboard and made ground chicken sauce.Topped the crust with the ground chicken and then with veggies, olives generously sprinkled mozzarella cheese and herbs and baked it in the oven for 30 minutes. For the entire 30 minutes, I literally peeped into the oven window and enjoyed the amazing show of crust puffing up, ground chicken getting browned and the cheese getting melted, what a divine pleasure it was!!!
    Each step I did with so much passion and waited so eagerly to have a bite of this pizza. As the pizza came out perfectly baked with a soft crust and the mince topping on it along with the melted golden cheese on it, the mere sight of it made me go wild. I screamed out of joy and I burned my tongue out of greed!

    This Easy Mince Pizza Recipe is for all those who want to prepare pizza at home but have not tried yet because making dough is not a quick process.It will reward you with infallible pizzas every time.

    Ingredients

    For Mince

    • 500 gm chicken mince
    • 6 mushrooms thinly sliced
    • 1 medium onion chopped
    • 1 teaspoon ginger garlic paste
    • 2 green chilies minced
    • 1 tablespoon cooking oil
    • 1 teaspoon crushed red chili
    • 1/2 teaspoon oregano
    • 1/2 teaspoon dried basil
    • 1/4 teaspoon rosemary optional
    • salt to taste

    For Pizza Filling & Topping

    • 1 large ball of premade pizza dough
    • 1-1/2 cup cooked chiken mince
    • 1 cup pizza sauce
    • 1/2 cup cheddar cheese
    • 1/2 cup Mozzarella cheese
    • 1 small onion thinly sliced
    • 1 small capsicum thinly sliced
    • 1 small tomato deseeded & thinly sliced
    • 4 olives thinly sliced
    • 1 teaspoon herb seasoning
    • 2 pinch oregano

    Instructions

    • Start making the mince by heating some oil in a pan over medium heat.
    • Then saute onion and cook for 3-4 minutes until translucent.
    • Now add ginger-garlic paste and cook for a minute without browning, then add the minced meat and green chilies.
    • Cook and stir well for few minutes or until lightly browned.
    • Season with salt, pepper, basil and rosemary.
    • Add mushrooms and cook for 5 minutes or until all water dries up and mince is cooked thoroughly.
    • Roll out the dough in the circle or a desired shape (I use my deep dish pizza pan, 3×12″ ), Pushing gently until fairly thin and prick the dough all over with a fork.
    • Spread on the sauce almost to the edges and sprinkle on the oregano.
    • Top generously with the shredded cheddar cheese, chicken mince, arrange some onion and pepper, tomato slices, olives over it.
    • Grate on Mozzarella to taste and sprinkle herb seasoning then place in the oven to bake for 30 minutes, or until the crust is puffy, crisp and slightly blistered.
    • Take out of oven, let sit for a few minutes, then slice, sprinkle with red pepper flakes and serve warm.

    Apply the grounded masala to the minced mutton and leave for about 3 to 4 hours.

    Wash the dal and soak in 2 cups of water for an hour, then add 1 tsp. salt and boil until cooked.

    Heat 4 tbsp Ghee or Oil and fry the sliced onions until crispy.

    Step 4

    Add a little more ghee or oil ( if required) and fry the marinated mutton, when fried to a brown color, add 1/2 cup of water and cook on a slow flame.

    Step 5

    Once all the water is absorbed mix the mutton with the cooked dal.
    Pound cumin seeds, black cumin seeds and mix with the garam masala.

    Step 6

    Heat 2 tbsp ghee or oil in a large vessel and put 1/3 of the cooked rice, over it put half mixture of mutton, sprinkle fried onions and pounded spices.

    Step 7

    Repeat the layers ending with rice, sprinkle fried onions and pour ghee or oil over it.

    Step 8

    Put the dish in an oven so that the rice gets properly cooked. Easy Keema Pulao is ready to serve. Enjoy!

    Add mutton keema, ginger, tomatoes, green chilies, coriander powder, cumin powder and red chili powder. Cook and stir for 5-8 minutes.

    Note:breaking up any lumps if formed.

    Add water. Bring to a boil. Cover and simmer for 40 minutes or until mince is tender.

    Step 5

    Add peas, salt, and the 1 cup water. Mix well.

    Step 6

    Cover and simmer for 10-15 minutes or until peas are cooked well. Adjust seasoning.

    Step 7

    Take it out in a serving dish. Sprinkle garam masala over it. Garnish with green chilies and ginger slices. Delicious Keema Matar is ready to serve.

    • 4 tsp besan flour
    • Oil for deep frying
    • Few coriander leaves and curry leaves, finely chopped

     

    Directions:

    Step 1

    Boil potatoes, peel the skin and mash the potatoes.

    Step 2

    Grind ginger and garlic to fine paste. Grind cloves, cinnamon, cardamoms and poppy seeds.

    Step 3

    Add this to mashed potato mixture then add coriander leaves and curry leaves and mix well.

    Step 4

    Wash keema.

    Step 5

    Add onions, salt, chilli powder and turmeric to keema, mix well add some water and cook.

    Step 6

    When cooked grind this and add ginger-garlic paste and mashed potato mixture to it.

    Step 7

    Take besan flour and add some water and beat eggs in that and mix well.

    Step 8

    Heat oil in a shallow pan over medium heat. Take Keema mixture and make small balls.

    Step 9

    Take each ball and dip in the besan flour mixture and put them in oil and fry until golden brown.

    Step 10

    Deep fry all the keema balls. Keema Cutlet is ready to serve.

    Serving Suggestions:

    • Serve hot with tamarind sauce.
