    • 2 tablespoon ginger garlic paste
    • 1 teaspoon crushed black pepper
    • 1 teaspoon crushed red chilli
    • 1 teaspoon green chili paste
    • 1 teaspoon cumin powder
    • 1/2 teaspoon garam masala powder
    • Salt to taste
    • oil or melted butter for brushing

    Step 1

    Put chicken in a large bowl. Add alll ingredients except oil. Mix well

    Step 2

    Cover and marinate for at least 2 hours to blend flavors.

    Step 3

    Preheat oven at 180 degree C.

    Step 4

    Thread chicken pieces on metal skewers and grill in the pre heat oven for 20 mins or until chicken is tender and all juices run clear.

    Step 5

    Turn and basting occasionally with butter and left over marination after every 5 minutes.

    Step 6

    Remove from the oven. Transfer into a serving platter.Tandoori Moti Tikka is ready to serve. ENJOY!!

    Mutton Kofta Curry

    Ingredients

    For Kofta (Meatballs)

    • 1 kg mutton mince keema
    • 2 onions finely chopped
    • 2 tablespoon roasted and grounded chickpeas
    • 1 egg lightly beaten
    • 1 teaspoon chopped ginger
    • 1 teaspoon green chili paste
    • 1 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon garam masala powder
    • Salt To Taste
    • Oil for frying

    For Kofta Curry

    • 2 onions thinly sliced
    • 1/4 cup oil or butter
    • 1 cup boiled and skinned tomatoes
    • 1 teaspoon ginger garlic paste
    • 2 tablespoon yogurt
    • 1/2 teaspoon red chili powder
    • 1/4 teaspoon turmeric powder
    • 1/4 teaspoon coriander powder
    • 1/4 teaspoon garam masala powder
    • Salt To taste

    For Garnishing

    • 2 tablespoon fresh coriander leaves
    • 2 green chilies thinly sliced
    • boiled eggs optional

    Instructions

    To Make Koftas

    • Put all kofta ingredients in a food processor. Process until combined together.
    • Take it out in a bowl and shape into koftas (meatballs).
    • Put in a refrigerator for 2 hours or until firm or set.
    • Now heat oil in a deep pan and fry kofta’s for 8-10 minutes or until lightly browned.
    • Remove from the oil and Keep aside.

    To Make Kofta Curry

    • Heat 1/4 cup oil in a wok or skillet.
    • Saute onions until translucent.
    • Add ginger garlic paste and cook for few seconds.
    • Now add the rest of the curry ingredients with enough water to make a smooth gravy.
    • Bring to a boil. Cover and simmer for 30 minutes or until gravy is smooth and thickened.
    • Cook on high heat, add the fried koftas and 1 cup water.
    • Cover again and simmer for 40 minutes or until koftas are cooked inside.
    • Increase the flame and cook 5 minutes longer or until gravy is thickened.
    • Add boiled eggs.
    • Garnish with green chilies and coriander leaves. Mutton Kofta Curry is ready to eat. Enjoy!

    Notes

    Serving Suggestions:
    Serve with Naan, chapati or boiled rice.

    Mooli Paratha (Radish Paratha)

    Mooli Paratha is one whole meal by itself it is sure to win everyone’s heart, serve this delicious paratha with chutney, yogurt or just a little pat of butter.They are best enjoyed hot and crisp straight from the tava (griddle).Give it a try!!

    Ingredients

    • 3 cups of Whole Wheat Flour
    • 2 cups grated White Radish
    • 1 medium Onion , finely chopped
    • 1/4 cup fresh coriander leaves, finely chopped
    • 1 tsp red chilli powder
    • 1 tsp carom seeds (Ajwain)
    • 1/2 tsp garam masala
    • salt to taste
    • 2 tbsp Butter
    • 1/2 cup Butter or Cooking Oil

    Directions:

    Step 1

    Mix together the flour, butter, and salt thoroughly in a bowl.

    Step 2

    Then add sufficient water to make a dough, knead for 5 minutes, cover and set aside for 15 minutes.
    Wash the radish well and grate it using a vegetable grater.

    Step 3

    Add a teaspoon of salt to the grated radish, mix well and set aside for 3-5 minutes.

    Step 4

    Now squeeze out the water.

    Step 5

    To the squeezed radish, add garam masala , red chilli powder, onions, coriander leaves, and carom seeds.

    Step 6

    And mix well.

    Step 7

    Divide this mixture into 1 inch sized balls. And set aside.

    Step 8

    Divide the dough into slightly larger than 1 inch size balls, flatten each ball into a circle.

    Step 9

    Place the grated radish balls at the center of the flattened dough.

    Step 10

    Then, gently stretch the dough to envelope the mixture completely, such that all the edges meet at the top of the dough ball.

    Step 11

    Using your fingers seal the dough well so that all the stretched up edges blend into one.

    Step 12

    Dust with some flour and roll out the dough into a circle.

    Step 13

    Heat a frying pan and when frying pan is very hot, place the rolled out dough on it.

    Step 14

    Leave dough for a minute and turn over.

    Step 15

    After a minute or so the paratha will slowly start to bubble up.

    Step 16

    Now drizzle one teaspoon of melted butter or cooking oil on top of the paratha and turn over.

    Step 17

    The paratha immediately starts to rise.

    Step 18

    Repeat the drizzling with melted butter or cooking oil on the other side as well.

    Step 19

    Turn over again and let it rise once more.

    Step 20

    When golden brown on both sides, remove from frying pan. Mooli Paratha is ready to serve.

    • Serve with yogurt or mint raita.

    Cover the pot and cook on medium flame for 20 minutes or until the chicken is cooked thorough and little water is left.

    Now add green bell pepper and sliced onion. Cook on high flame so that the water dries and oil comes on surface.

    Heat oil in a pot over medium high heat.

    Saute onions and ginger until crisp-tender.

    Add ginger garlic paste. Fry till lightly golden brown.

    Cook on high flame for 10-15 minutes or until tomatoes are tender.

    Add potatoes and peas mix it well.

    Add 2 cups of water and cook on medium low heat and cook for 20 minutes or until potatoes and peas are cooked.

    Increase the flame and cook for 5 minutes or until water dries up

    Sprinkle garam masala, fresh coriander, green chillies over it.

    First boil water in a pan.

    Once boiled, add chopped palak. Simmer for 5 minutes and then strain out the left water.

    Set the boiled palak aside to cool.

    Separately grind onions, ginger, garlic, green chillies and tomatoes to make a fine masala paste.

    Heat oil in a pan and add the masala paste.

    Sauté till the masala turns brown.

    Now, add pepper powder, cumin seed powder, garam masala powder, turmeric powder, coriander powder and salt to it. Cook the mixture for 10 minutes.

    Now, add the palak paste and mix well.

    Cook for 10 more minutes add chicken and mix well.

    Cook for 20 to 30 minutes by covering the vessel with a lid.

    Remove from the heat when chicken pieces are fully cooked.

    Step 1

    Boil rice with salt and vinegar till 2/3 is done.

    Step 2

    Drain water and keep aside.

    Step 3

    Heat oil in a large pot or skillet over medium heat.

    Fry onion when brown add ginger garlic paste.

    Add tomatoes, tomato paste, green chilis whole, salt chili powder, chili flakes, cumin seeds, yogurt and boiled chickpeas.
    Cook and simmer for 5 minutes till oil separates and water dries.

    Now take a large pot, layer half of boiled rice then layer all chickpea masala and top with other layer of rice.

    Step 7

    Pour lemon juice, milk and few drops of food colour on top and put on dum for 15 minutes.

    Step 8

    Lastly garnish with fried onion, green chiliess and green coriander and close lid. Turn off stove after 5 minutes.

  • Spicy & Smoky: Authentic Chicken Karahi Recipe (Restaurant-Style at Home!)

    Chicken Karahi

     Chicken Karahi is a very delicious and easy to make main dish. You can substitute chicken with mutton, and serve with peas pilaf or naan. Give it a try!!

    Chicken Karahi is one of the recipes that is probably available in every restaurant and road side dhaba. Karahi refers to Pakistani style wok which is slightly deeper (compared to Chinese wok) and narrower in diameter with a round bottom and curved handles.
    Since in Karahi ghost no water or stock is used to cook the ghost and rather the mutton cooks in the masala and its own stock, karahi makes sure the meat doesn’t burn and simmers away slowly braising the meat. Having said that, you may as well cook it in a deep bottom pot with a little stock to help you through.

    It is a traditional Pakistani dish which is easy-to-make at home with less oil. In this recipe, chicken nicely is cooked with tomatoes, ginger garlic, green chilli, yogurt and traditionsl Pakistani spices. This simple dish can make your dinner more fantastic.

    Ingredients

    • I kg chicken (cut into medium pieces)
    • 1 cup oil
    • 1 medium onion, finely chopped
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 4 tomatoes,peeled and chopped
    • 1/2 cup plain yogurt
    • 1 tsp red chili powder
    • 7 whole peppercorns, crushed

    For Garnishing:

    • 1/2 tsp garam masala powder
    • 5 green chilies,thinly sliced
    • 2 tbsp fresh ginger(julienne)
    • fresh Coriander leaves, finely chopped

     

    Directions:

    Step 1

    Rinse and drained chicken properly and set aside.

    Step 2

    Heat oil in a karahi(pan), add chopped onions and cook it for 2-3 minutes.

    Step 3

    After 2 minutes add ginger,garlic paste and stir fry it.

    Step 4

    Add chicken in it and cook for 10 minutes.

    Step 5

    Then add tomato puree,yogurt,salt and chili powder.

    Step 6

    Cover with lid and continue cooking.

    Step 7

    When the water dries and chicken is tender add the peppercorns,and cook for 2 more minutes.

    Step 8

    Then remove from heat.

    Step 9

    Sprinkle garam masala on it.

    Step 10

    Garnish chicken karahi with julienne ginger,fresh coriander and green chilies. Chicken karahi is ready to serve.

     

    • Serve with naan and mint chutney.

     

    Note:

    If you want creamy mixture, you can also add 2-3 tablespoon fresh cream in the last step and simmer for 1-2 minutes and turn off the stove.
    Adding onion to your desired level, above one is a medium spicy curry.
    Adding peppercorn is optional, but sure it gives nice flavor and taste to the curry.
    For dry masala skip the onion.

    Fry the onion in the oil till brown.

    Mix all the ingredients together and add to the pot and stir till the tomato has become soft and the water has dried.

    Add the meat and cook again to let the water dry.

    Add 3-4 glasses of water cover and leave to tenderize.

    Step 6

    When meat is almost done add ground Palak, Methi and flour. Cook till water dries.

    Dish it out. Garnish with fresh chopped green chilies. Palak Gosht is ready to serve.

    Ingredients

    • 500 gm bhuna gosht
    • 350 gm chana Dal
    • 1 tsp Salt
    • 1 tsp chilli powder
    • 1 tsp garam masala
    • 2 tbsp fresh chopped coriander
    • 2 green chilies chopped

    Instructions

    Method

    • Wash dal in few changes of water until water run clear then leave to soak in cold water for about one hour.
    • Drain dal and keep aside.
    • Prepare bhuna gosht.
    • Add dal, salt and chili powder. Mix well and pour enough water to cover dal by one inch.
    • Cover with tight fitted lid, reduce heat.
    • Cook for 30 minutes or dal is tender and about one cup of water is left.
    • Add garam masala, coriander leaves and green chilies. Chana Dal Gosht is ready to serve.
