    Ingredients

    • 1 4 pound whole chicken
    • 2 lemons juiced
    • 1 cup butter softened
    • 1 tbsp garlic powder
    • 1 tsp freshly ground black pepper
    • 1 tsp dried thyme
    • 1 tsp dried parsley
    • 1 tsp dried rosemary
    • 1 tsp seasoning salt

    Instructions

    Method

    • Preheat oven to 175 degrees C.
    • Rinse chicken thoroughly and pat dry with paper towels.
    • In a small bowl, mix together the margarine,garlic powder, black pepper, thyme, parsley,rosemary and lemon juice.
    • Rub this mixture outside and inside of the chicken thoroughly.
    • Place chicken into a baking dish.
    • Bake, in the preheated oven, for 2 hours or until chicken is lightly browned and all the juices run clear.
    • Remove from oven. Roasted Herb Chicken is ready to serve.

    • 4 boneless skinless chicken breasts
    • 2 tablespoon lemon juice
    • 2 tablespoon vinegar
    • 2 tablespoon soy sauce
    • 1 tablespoon plain flour
    • 1 tablespoon mustard paste
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon butter
    • 1 teaspoon red chili powder
    • 1/2 teaspoon black pepper
    • salt to taste
    • For Chicken Roast Burger
    • chicken roast
    • 1 to mato sliced
    • 4 burger buns
    • 4 lettuce leaves
    • 4 slices mozarrella cheese
    • For Serving
    • coleslaw salad
    • french fries
    • chilli garlic sauce

    Instructions

    • Place chicken in a large bowl. Add lemon juice, vinegar, soy sauce, plain flour, mustard paste, ginger garlic, red chili, black pepper and salt.
    • Mix to coat evenly.
    • Marinate for 30 minutes to blend flavors.
    • Preheat oven to 180 degree C.
    • Place chicken pieces in a greased baking dish or tray.
    • Bake, in the preheated oven, for 20 minutes or until chicken is done.
    • Remove from the oven and cut the chicken meat in chunks or strips.
    • Set aside and keep warm.
    • Cut the buns in half and toast.
    • Place lettuce leaves and tomato slices on the bottom half of the each bun.
    • Put roasted chicken pieces and Mozzarella cheese.
    • Cover with the top of the bun. Press down. Delicious Chicken Roast Burger is ready to serve. ENJOY!

    You can Replace the chicken with a piece of freshly cooked beef fillet for a satisfying steak cambo.

    Step 1

    Clean the lamb leg trim the extra fat, wash it under running water and pat dry with kitchen towel.

    Step 2

    Prick the lamb leg with fork.

    Step 3

    Season it with ginger-garlic paste, salt, lemon juice, turmeric and red chilli powder.

    Step 4

    Allow it to rest for an hour at warm place.

    Step 5

    Second marination of lamb leg should be done in black cardamom powder, clove powder, yogurt balsamic vinegar and mustard oil.

    Step 6

    Allow it to rest for three-four hours in a refrigerator.

    Step 7

    Heat mustard oil. Fry shahi zeera along with sliced onions till golden brown.

    Step 8

    Put marinated lamb leg in a pot and gently pour in hot oil along with brown onion on the meat.

    Step 9

    Partially immerse the lamb leg in meat stock or water and allow it to cook gently on slow flame with covered lid.

    Step 10

    When the meat is 80 percent cooked remove the lid and cook on high flame so that excessive moisture gets evaporated. Allow it cool.

    Step 11

    Place the meat in a tandoor for a 10-12 minutes or preheated oven for 12-15 minutes. Tandoori Raan is ready to serve. ENJOY!!

    Remove meat from refrigerator about 3 hours prior to cooking to bring it to room temperature.

    Pre-heat oven to 550 degrees.

    Mix salt, pepper, garlic, onion and garlic powder together in small bowl.

    Spray a shallow roasting pan with Pam or line pan with aluminum foil.

    Rub the olive oil all over the meat to coat it.

    Rub meat all over generously with seasonings from bowl.

    Place meat in roasting pan. Cook for about 30 minutes.

    When cooking time has ended turn off oven, but DO NOT open oven.

    Leave meat in oven until oven has cooled off (about 1-2 hours) and then remove to a warmed platter.

    Step 10

    Cover and let it rest for 15 minutes while you make the sauce. De-glaze roasting pan by adding BBQ sauce and bring to a boil and whisk in 3 tablespoons of butter and a pinch of salt and ground pepper.

    Step 11

    Place sauce in serving container. Beef Roast is ready to serve. Enjoy!

    Step 1

    Heat the ghee and fry sliced onions to a golden brown. Remove, grind and keep aside.

    Step 2

    Remove all the white membranes from the surface of the meat.

    Prick the leg thoroughly down to the bone with a fork.

    Except ghee, mix all the ingredients including fried ground onions, and apply evenly all over the leg.

    Prick again so that spices enter the body of the meat. Marinade for 2 hours.

    Ingredients of Spicy Chicken Broast:

    • Chicken pieces – 8
    • Rice flour – ½ cup
    • Plain flour – ½ cup
    • Corn flour – ½ cup
    • Baking powder – 1 tbsp
    • Beaten egg – 1
    • Salt – to taste
    • Ginger garlic paste – 2 tbsp
    • Red chilli powder – 1 ½ tbsp

    How to make Spicy Chicken Broast:

    • Marinate chicken pieces with salt, ginger garlic paste, red chilli powder, red crushed chilli and leave for 15 to 20 minutes.
    • Then mix rice flour, plain flour, corn flour and baking powder in a bowl.
    • Now roll chicken pieces in a beaten egg, then in dry mixture and deep fry until it’s crispy and golden brown.
    • Spicy Chicken Broast is ready to serve.

    Ingredients for Saffron Roast Chicken:

    • 1 chicken, about 1.6 kg

    For saffron butter

    • 50 gm unsalted butter, softened
    • 1/2 packet saffron threads, crumbled
    • 1/2 tsp salt

    For the onions

    • 1 tbsp olive oil; 25 gm butter
    • 450 gm onions, halved and thinly sliced
    • 2 tsp garam masala;
    • 2 tsp cumin seeds
    • 6 cardamom pods, lightly crushed
    • 2 tsp finely chopped fresh ginger
    • 50 gm sultanas

    How to make Saffron Roast Chicken:

    • Preheat oven to 200C/Gas Mark 6.
    • Loosen the skin from the chicken breast by easing your fingers under the neck flap, over the breast and down to the legs, without puncturing the skin.
    • Mix the ingredients for the saffron butter and spread evenly over the chicken breast under the skin.
    • Secure the neck flap under the bird with a cocktail stick.
    • Heat the oil and butter in a wide pan and deep fry the onions until softened.
    • Add all the spices and cook for 2-3 minutes.
    • Add the sultanas, then transfer to a roasting dish and place the chicken on top, breast side down.
    • Roast for 45 minutes.
    • Lower setting to 190C/ Gas 5 and turn the chicken breast side up.
    • Stir the onions, piling some of the lighter ones on top of the chicken to keep it moist.
    • Roast for a further 45 minutes or until the chicken is cooked through and the onions are crisp.
    • Saffron Roast Chicken is ready to serve.

    • Serve with Lemon Wedges.

    • 4 table spoon Worcestershire sauce
    • 1 table spoon red chili powder

    How to make Meat Roast:

    • Punch the meat well with a fork.
    • Rub red chili powder and salt all over the meat.
