    • 1 cup plain yogurt
    • 2 tbsp fresh lemon juice
    • 1 tbsp ginger garlic paste
    • 2 tbsp cayenne pepper
    • 1 tsp garam masala powder
    • 1 tsp cumin powder
    • 1/2 tsp turmeric powder
    • 1/3 tsp salt
    • 1/3 tsp black pepper, freshly ground
    • melted butter, for brushing
    • lemon wedges, for serving

    Step 1

    Rinse chicken and cut it into bite size pieces.

    Step 2

    Prick the chicken with a fork.

    Step 3

    Place chicken in a large bowl. Drizzle lemon juice over the chicken and set aisde for 30 minutes.

    Step 4

    In a small bowl, combine together the yogurt, garlic, ginger, cumin, garam masala, turmeric, cayenne, salt and pepper.

    Step 5

    Pour this mixture over the chicken and marinate for at least 2 hours, preferably overnight.

    Step 6

    Thread chicken cubes onto the metal skewers.

    Step 7

    Heat a charcol grill with a nice flame.

    Step 8

    Put chicken skewers on the grill grate. Cook chicken approximately 5 minutes on each side for until nicley done; turning and basting occasionally.

    Step 9

    Brush with butter.

    Step 10

    Place skewers in a serving plate or dish. BBQ Chicken Tikka is ready to serve. ENJOY!

    Add ginger and chillies.

    Fry for few minutes.

    Add chopped onions and tomatoes. Cook until done.

    Add salt, red chilli powder, turmeric powder and stir well.

    Add the mashed dals and boil for few minutes.

    To make Balti Sauce:

    Heat ghee or oil in a pot oevr medium heat. Saute onion for 5 minutes or until crisp-tender.

    Season with the paprika, turmeric powder, cumin powder, coriander powder, cayenne pepper, cardamom powder, bay leaf, and salt.

    Add 1 cup of water and bring to a boil.

    Reduce the heat. Cover and simmer for 20 minutes or until sauce is thickened.

    Step 7

    Let the sauce cool slightly, discard the bay leaf.

    Pour the mixture into a blender and process until smooth.

    Keep aside.

    To Make Balti Beef:

    Wipe out the pot and return it to medium heat.

    Step 11

    Melt ghee and add onion, garlic and stir fry for 5 minutes or until lighlt browned.

    Step 12

    Add the red bell pepper. Cook and stir for 2 minutes.

    Step 13

    Stir in the beef roast and continue cooking for 2 minutes, until it starts to turn brown.

    Step 14

    Add the balti sauce and bring to a boil.

    Step 15

    Reduce the heat to medium-low. Cover and simmer for 5 minutes or until the sauce is thickened.

    Step 16

    Adjust the seasoning according to your taste.

    Step 17

    Dish it out. Garnish with coriander leaves. Delicious Balti Beef is ready to serve.

    Make equal size 12 balls from the dough.

    Roll into 4 inch round on a floured surface.

    Put 1 teaspoon dal stuffing in the center. Brush some water on the edges.

    Bring together all the edges and pinch them to seal properly.

    Step 10

    Roll into a 4 inch kachori. Repeat this procedure with remaining ingredients.

    Keep the kachori’s covered with a wet cloth.

    To Make Frying Kachori’s

    Heat oil in a deep pan over medium heat.

    Fry the kachori’s for 3-4 minutes on each side or until crispy, flaky and golden brown.

    Fish Tikka Boti Recipe

    Ingredients

    • 1 kg fish fillets cut into cubes
    • 2 tablespoon ginger garlic paste
    • 1/2 cup plain yogurt
    • 1/2 cup fresh cream
    • 2 tablespoon lemon juice
    • 2 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala powder
    • 1 teaspoon green chili paste
    • 1/2 teaspoon turmeric powder
    • salt to taste
    • few drops of food color
    • skewers as required
    • oil for basting

    For Garnishing

    • few salad leaves
    • lemon wedges

    Instructions

    Method

    • Wash fish and pat dry.Cut fish fillets into 1 inch cubes.
    • Put in a large bowl. Add salt, green chili paste, garlic- ginger paste, lemon juice, yogurt, fresh cream, red chili, turmeric powder, cumin powder, coriander powder, Garam masala powder and food color. Mix well.
    • Cover and marinate for at least 1 hour to blemd flavours.
    • Soak the bamboo skewers into the water for 20 minutes, so they don’t get burnt while grilling.
    • Thread fish cubes on the wet bamboo skewers.
    • Grill them on charcoal grill for 5 minutes on each side or until they turn into golden color.
    • Bust with oil. Remove from the skewers and transfer into a serving platter.
    • Garnish with lemon wedges and salad leaves. Delicious Fish Boti Tikka is ready to serve. ENJOY!!

    Notes

    Serving Suggestions:
    Serve it with green salad and Naan bread.

    • 2 chicken breasts, boneless & skinless
    • 3 tbsp natural yogurt
    • 1 tsp red chili powder
    • 1 tsp tandoori masala powder
    • 1 tsp salt
    • 3 tbsp lemon juice

    • 4 green chilies, finely chopped
    • 1 tbsp vegetable oil
    • 4 naans
    • 8 onion rings
    • 1 tomato
    • 1/2 cup shredded cabbage

    Step 1

    Clean chicken and pat dry.

    Step 2

    Then cut into bite-size pieces and set aside.

    In a small bowl, Combine together yogurt, red chili powder, salt, lemon juice, chopped coriander, tandoori masala and green chillies.

    Pour this marinade over the chicken cubes, turn to coat evenly.

    Step 5

    Cover and marinate for 1 hour to blend flavors.

    Step 6

    By using a sharp knife, cut each naan into the middle and make a small pocket of it.Set aside.

    Step 7

    Preheat oven at 180 degree C.

    Step 8

    Place chicken on a baking tray. Bake, in the preheated oven, for 20 minutes or until chicken is done and all juices run clear.

    Step 9

    Remove from the oven and brush with oil

    Fill each naan pocket with cooked chicken, onion rings, tomato and shredded cabbage.

    Ingredients

    • 1 whole chicken
    • 4 tbsp lemon juice
    • 2 tbsp oil
    • 2 tbsp yogurt
    • 1 tsp garlic paste
    • 1 tsp ginger paste
    • 1 pinch of orange food color or
    • 1 tsp Kashmiri chili powder
    • 1 tsp red chili powder
    • salt to taste

    Instructions

    Method

    • Mix together all the ingredients and coat the chicken with it. Leave to marinate for 3-4 hours.
    • Bake in an oven, at 180 degree C for 45 minutes or until done. Tandoori Roast Chicken is ready to serve.

That’s this recipe for me. I made it the other day and thought, I need to share this with you!

    • 1 tsp red Chili powder
    • 2 tsp Coriander powder

    • 1/2 tsp garam masala powder

    • 1/4 cup oil

    Heat oil in a pan, saute onions first,then add ginger-garlic paste,green chillies,salt and curry leaves.

    Step 2

    Saute it until onions turn brown.

    Step 3

    Add in all the powders and fry it for few minutes.

    Throw in tomato slices and continue sauteing till the masala is well browned and oil starts to separate.

    Step 5

    Add chicken pieces and stir well for few minutes,and then add half cup of water,cover it and allow the chicken pieces to cook well.

    Add more water if needed.

    Simmer it for 5 more minutes.

    Step 8

    Mix the spices, coloring, lemon juice, ginger and garlic up into a paste with a little water.

    Stir in well with the yogurt to make a tandoori marinade.

    Marinate the chicken in the marinade for 2-3 hours.

    Preheat the oven to it’s highest heat for at least 20 minutes.

    Step 5

    Shake off excess marinade and place chicken pieces on skewers on a wire rack in the oven.

    Step 6

    Cook for 15-20 minutes and check the chicken is cooked by piercing the thickest piece with a skewer, if the juices run clear it’s cooked.

    Step 7

    Remove from the skewers. Garnish with salad leaves ring onions and tomatoes. Special Chicken Tikka is ready to serve.

    Then add the chicken,yogurt, water, salt and pepper.

    Reduce heat to low,covered and cooked for 30 minutes or until chicken is cooked through.

    Remove from the heat and transfer into a serving dish.

    Adjust seasoning ,sprinkle garam masala powder over it.

    • 2 kgs mutton chops
    • 4 tablespoon raw papaya paste
    • 4 tablespoon plain yogurt
    • 4 tablespoon lemon juice
    • 2 tablespoon ginger garlic paste
    • 2 tablespoon red chili, crushed
    • 1 tablespoon green chili paste
    • 1 teaspoon cumin powder
    • salt to taste
    • oil for busting
    • chat masala for sprinkling

     

    Directions:

    Step 1

    Pound the mutton chop with the meat hammer by holding the bone and firmly pounding the oval of meat until it is 1/2 inch thick.

    Step 2

    Marinate chops with lemon juice, ginger paste and raw papaya.

    Step 3

    Place in the refrigerator for 4 hours to blend flavours.

    Step 4

    Now add red chili powder, green chili, yogurt, cumin powder and salt. Mix until well combined.

    Step 5

    Marinate for another 4 hours.

    Step 6

    Put mutton chops on the metal skewers.

    Step 7

    Grill or BBQ on low heat for 20-25 minutes or until meat is tender and done.

    Step 8

    Basting with oil or butter.

    Step 9
