    Truth be told – the curry and rice thing is probably my favorite type of food. Coriander, Basil, & Mint Leaves are hands down my favorite herbs of all time. If I could have the herb garden of my dreams, I would plant Mint and Basil everywhere!!

    While most of the Pakistani dishes that I cook require coriander as garnish, for this dish, the mint herb paste forms the backbone of the sauce. The combination of fresh coriander and mint makes the dish light and fragrant and gently simmering the chicken in the creamy yogurt ensures that you end up with juicy morsels of meat. 
    Please make sure that you use the tender , young leaves of Mint in this dish – the harder, older leaves will most probably end up making the dish taste bitter.

    This chicken curry bursts with flavors of mint and creamy yogurt and is bound to make you and your guests happy. The spice level of this dish will vary depending on your taste. I used just 2 green chilies and a pinch of cayenne pepper in this curry to make a mild, family-friendly dish. For more heat,  you can add a drizzle of red pepper, some of the seeds of the jalapeño, or some crushed green chilies.

    This is a quick and simple recipe to prepare using ingredients that I always have on hand. Less is more – focus on the true tastes by using fewer ingredients. Flavorful and very easy to prepare, this recipes will make your weeknight dinners stress-free . Do try it!

    Bismillah let’s get started. 
    First, You will need some boneless chicken. I prefer the breast because you get some super fine chunks out of it. But you can make both curries with bone-in pieces or boneless pieces of chicken. Obviously, boneless chicken will cook faster, and is my choice when I want to cook a quick curry. BUT, a GOOD chicken curry uses bone-in chicken pieces because the bones flavor the gravy/sauce.

    In a blender, pour 1/2 cup of yogurt yogurt, 1 small bunch of mint leaves, coriander leaves, green pepper, garlic ginger paste, cumin powder, a pinch of cayenne pepper, salt and squeezed lemon. Blend until well combined and put in the chicken; Cover and let it marinate for 30 minutes to blend flavors.

    You can marinade the chicken for a few hours or even overnight. If you really are in a rush, you can even cook the chicken straight away.

    Heat the oil over medium-low heat in a large nonstick pan.

    Then add the marinated chicken along with the marination. Cook and stir for 10 minutes on medium flame. Then cover and let it simmer for 10-15 minutes or until chicken becomes soft .

    Remove the lid and cook on high flame for just few minutes or until sauce is thickened or all water dries up. ( Make sure to not over cook it will ruined the mint taste).

    Taste and adjust seasoning with more lemon, green chili or pepper, if necessary. This Flaovrful Mint Chicken Curry is delicious with anything. We ate it with boiled rice but it is just as good with really soft naan bread.

    Assalam-o-Alaikum, how are you? Yep, it’s been almost a month since we met. First things first…I had my mid-term exams, so I was lil busy with studying and the other stuff in my life.
    However this gap between us wasn’t planned. I was hoping to catch up with you in between, but it didn’t work out.

    Finally exams are over I’m finally free to do whatever I want (blogging, eating yummy food, spending time with my plants)😌
    Anyways, the first thing I wanted to do was to just pop in here & say a quick hi to you. I hope you roll into the weekend in a joyous mood! May your day be as fantastic as you are!

    Karahi Butter Chicken (Makhni Karahi)

    To release some exams stress, I made this butter karahi by twisting my Father’s recipe…delicious goodness. Can’t wait to share it with you. He used to make the best food. He was an expert on how to make a really good Butter Chicken. Saying that, I’m not too sure how He would feel about this Karahi Butter Chicken version that I’m currently loving.

    Name me one thing that doesn’t taste better with a few dollops of cream, a knob or so of butter, a splash of milk, lashings of ghee.

    I’ll bet you’re having a hard time thinking up something. It’s a truth of the culinary world that these things all enhance the eating experience of many foods, sweet and savory foods alike and curries are no exception to this.

    Take this Karahi Butter Chicken ( Makhni Karahi), for example. I’ve taken the traditional Chicken Karahi dish and made it the way we all love, with the very flavours we all adore and then finished it up with a hearty amount of butter. What does this do? This fills every bite with the very same flavours we desire, along with a moreish, rich bite to it. Every bite tastes like a buttery dream, I tell you. This creamy and velvety gravy will melt in your mouth.

     Recipe Note’s

    My final words before I give you the recipe – my Father was an expert at Karahi’s and he always told me what with chicken Karahis, you must work fast. Have all the ingredients chopped up beforehand if you can, and cook the entire thing on high heat. Stirring constantly is imperative, otherwise you risk burning the curry or having it stick to the pan. Skimp on half the oil or butter if  you must, but I wouldn’t recommend it as a Karahi dish isn’t truly a Karahi dish without its butter or oil.

    Today, I come up with a new recipe: “Restaurant Style Lahori Mutton Karahi “. It is one of most popular Pakistani dish that you will come across almost every Pakistani restaurant menu anywhere in the world.

    Lahore is famous for its culturally enriched food items.. impossible to be on diet there 😛 lol. People here in Lahore are known as food lover, which is why many new restaurants are constantly opening.

    As all of you know, I always tempted to try popular dishes at home, and perfecting it as possible as I could. One among them was this “Restaurant Style Lahori Mutton Karahi”.

    Mutton Karahi is a specialty of Lahori food, this dish is made by stir-frying small cubes of lamb or mutton with tomatoes, green chilies, ginger, and garlic in a karahi, the wok-like pan that gives the dish its name.I made it with a less fat. But taste was so good and excellent. Meat was so tender, juicy, deeply marinated in the masala (gravy) and uniformly cooked.

    Very simple and lip smacking dish for anyone who love to have spicy treat occasionally. Its so simple that if you have ingredients in hand then Ready get set go.

    It pairs the best with butter naan, or simply plain naan and may be served along with rice, tandoor roti and even homemade chapati’s along with zeera or mint raita and onion rings.

    Mutton Nihari 

    Nihari is one of most favorite and traditional dishes of every Muslim home. Be it mutton, chicken or beef nihari, it can be relished with any kind of meat. Traditionally nihari made with the bone marrow meat. It’s a deliciously smooth flour based stew with slow cooked mutton and a myriad of spices.  Mutton Nihari takes a long time to cook but is easy to put together.

    There are lot of ready made Nihari spices available in the market. But I would not Never Never recommend. As they are full of artificial colors and preservative agents. Not a healthy approach. 🙁 You can make the Nihari powder at home by following my Nihari Masala Mix and store it in airtight container for many days.

    This is a must try recipe from my Mommy.  We normally make Nihari with small pieces of mutton as we prefer it over the bone-in mutton.

    Note:

    Preferably it must be cook on low flame, but those of you who would rather prefer a faster process can cook it in a pressure cooker though the Nihari taste wont be the same as cooked on a low flame.

    So about this Mutton Nihari recipe. As you can see, there’s no layer of fat floating on top of the nihari, As many of you know, when we go out to eat it, we want the brain, marrow and floating oil on top, not a very healthy option. My mommy tried to make it just a little healthy by adding as little butter as possible without compromising on the flavor. Less fat and believe me, just as good. Or if you do like a little oil on top, when you are ready it dish it out, leave it covered on very low heat for about 5-7 minutes. Voila, the ‘little’ amount of oil will rise to the top!

    Traditionally Nihari  served with ginger, fried onion, green chilies and the hottest crisp khameeri roti or naan.

    Mutton Nihari Recipe

    Total Time 4 hours 20 minutes

    Ingredients

    • 1-1/2 kg mutton shank portion, cut into 8 pieces
    • 1/4 cup clarified butter or desi ghee
    • 3 medium onions thinly sliced
    • 1 tablspeoon ginger paste
    • 1 tablespoon garlic paste
    • 2 teaspoon coriander powder
    • 1/2 teaspoon turmeric powder
    • salt to taste
    • 4 tablebspoon wheat flour
    • 4 tablespoon nihari masala Mix

    Nihari Masala Mix

    • 1 tablespoon cumin seeds
    • 2 teaspoon fennel seeds
    • 1 teaspoon soonth dry ginger
    • 1/4 teaspoon nutmeg powder
    • 5-6 green cardamoms
    • 2 black cardamoms
    • 5 cloves
    • 1 bay leaf
    • 1 inch cinnamon stick
    • 10 black peppercorns

    For Garnishing

    • 1/2 cup crispy fried onion
    • 1 inch ginger cut into this strips
    • 1 lime cut into wedges
    • 2 green chilies thinly sliced
    • few fresh coriander leaves chopped
    • Juice of 1 lime

    Instructions

    Niahri Masala Mix Method

    • To make your own Nihari masala from scratch, dry roast all the whole spices for the masala and grind them to a fine powder.

    Mutton Nihari Method

    • Melt butter or ghee (you can use oil as well but ghee makes it tastier) in a heavy bottom pot.
    • saute onion slices and fry till they start to turn brown(about4-5 minutes).
    • Now add mutton pieces, ginger paste and garlic paste.
    • Stir and cook for 5-8 minutes or until meat is no longer pink and all juices run clear.
    • Now add coriander powder, turmeric powder and salt.
    • Sauté for 5 minutes.
    • Add the nihari masala and 8 cups of water.
    • Stir well.
    • Cover the pot and cook on very low flame for about 4 hours until the meat is tender.
    • Keep checking in between. The way to know that the meat is cooked is when it breaks easily with a wooden spoon.
    • Remove the lid and increase the flame.
    • Dissolve wheat flour in half cup of water such that there are no lumps.
    • Slowly pour wheat mixture into the gravy.
    • Stir to mix well.
    • Let it simmer for another 15 minutes or until the gravy is thickened.
    • Drizzle some lime juice over it.
    • Garnish with fried onion, ginger slices, green chilies and fresh coriander leaves.
    • Delicious Mutton Nihari is ready to serve. Enjoy!!

    Notes

    Serving Suggestions:
    Serve with Khameeri Roti or Naan. At time of serving, add chop fresh coriander, green chilies, Julienne cut ginger and fry onions.. and also lemon…. these things will improve the taste of nihari.

    Bhuna Keema (Minced Meat With Whole Spices) Recipe

    • 500 gm mince keema
    • 1/4 cup oil
    • 2 tsp cumin seeds
    • 4 onions grated
    • 1 tbsp ginger paste
    • 1 tbsp garlic paste
    • 1 cup tomato puree
    • 1 tbsp chili powder
    • 1 tbsp coriander powder
    • 1 tsp garam masala powder
    • 1/4 tsp turmeric powder
    • salt to taste

    For Garnishing

    • 2-3 green chilies thinly sliced
    • 4 tbsp fresh coriander leaves finely chopped

    Instructions

    Method

    • Heat oil in a pan over medium heat.
    • Saute onion in hot oil until translucent.
    • Now add ginger garlic paste and mince. Cook, uncovered, on high heat for 10 minutes, stirring thrice.
    • Now stir in the tomato puree, salt, chilli, coriander powder, turmeric powder.
    • Cook at high heat for 25 minutes or until cooked is thorough.
    • Transfer into a serving dish.
    • Sprinkle Garam Masala over it.
    • Garnish with coriander leaves and green chilies. Bhuna Keema is ready to serve. ENJOY!!

    Today marks the start of spring. Traditional rites and festivals of spring revolved around its importance in growing food. Plants start to grow and animals come out of hibernation and begin reproducing. People come out of hibernation too!

    I’m really excited to be back with another Traditional Pakistani recipe (if you didn’t see my Kachnar Gosht and Karela Gosht then I’d really recommend you give those a try too).

    So let’s celebrate spring with another Traditional Pakistani food (Kachnar Keema).

    A Lil Bit About Kachnar:

    Kachnar/Orchid is a species of flowering plant in the family Fabaceae, native to southeastern Asia, from southern China west to Pakistan and India.

    Kachnar tree, Bauhinia variegate, is also known as Orchid tree or Butterfly tree because of the way it’s flowers look. This is a very popular ornamental tree in subtropical and tropical climates, grown for its scented flowers and also used as food item in South Asian cuisine.

    Varieties of Kachnar:

    Kachnar has three varieties (red, white and mauve) depending upon the colour of its flowers.

    In Pakistan, its buds are considered a delicacy. They are available for a short season only and are difficult and expensive to buy. Eating Kachnar ( Orchid)is very beneficial for our health as this vegetable is blessed with advantages and it taste is really good when cooked with addition of any mince meat(keema).

    One thing I love about cooking is discovering new flavours that go together, especially when it’s flavours that you wouldn’t necessarily think to put together and today’s Kachnar Keema recipe is one of those creations.

    My take on a traditional Pakistani Kachnar Keema with lamb mince, kachnar buds, and served hot chapatai and Raita.

    I’ve been trying to perfect Kachnar Keema for a while, but I’ve always found that it was lacking a little something – it had meatiness from the lamb, bitterness from the kachnar buds and saltiness from the spices but it needed just a hint of creaminess. A few weeks ago on a whim (figuring that mince meat and yogurt go well) I decided to add some yogurt to my Kachnar Keema and the problem was solved – it is delicious.

    If you’re reading this and thinking “hmmmm, what would be the taste, or would I like this recipe?” then stop!! Whilst you can taste the flavour of the kachnar, it compliments the mince rather than overpowering it.

    Soooooooo…. convinced? 😉

    Extra-Bonus Tips :

    Before serving sprinkle lemon juice if this is to your taste. (I think it improves the flavour.) It’s good with naan, chapattis, or any other kind of bread, and Zeera Raita (Cumin Yogurt Sauce).

    Ingredients

    • 1 kg mutton or lamb mince keema
    • 1/2 kg kachnar
    • 1/2 cup oil or ghee
    • 3 onions finely chopped
    • 2 large tomatoes finely chopped
    • 1 teaspoon ginger paste
    • 1 teaspoon garlic paste
    • 1/2 cup plain yogurt
    • 2 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon garam masala powder
    • 1/4 teaspoon turmeric powder
    • salt to taste

    Instructions

    • Wash kachnar properly with water.
    • Now heat oil in a skillet or wok over medium high heat.
    • Saute onion in hot oil until transculant.
    • Now add ginger garlic paste and cook for 30 seconds.
    • Then add tomatoes, and mince.
    • Cook on high flame for few minutes or until meat is no longer pink.
    • Season with red chili, salt, cumin powder, coriander powder and turmeric powder.
    • Add 1 cup water and cover with the lid.
    • Let it simmer for 40 minutes or until mince is cooked thoroughly.
    • Remove the lid and cook mince on high heat for 5-8 minutes or until oil comes on top.
    • Now add kachnar and yogurt.
    • Cook and stir for 10 minutes or until done.
    • Now put on dum for few minutes then dish it out. Kachnar keema is ready to serve. ENJOY!!

    Serve Kachnar Keema with hot Chapati, Zeera Raita and Salad

    Step 1

    Heat the oil in a wok or karahi over medium heat.

    Step 2

    Once hot add onion paste and ginger garlic paste.

    Step 3

    Cook for 3-4 minutes or until you get the nice fragrant from them.

    Step 4

    Then add tomatoes. And sauté them till they are translucent and soft. It will take about 15 minutes.

    Step 5

    Now add red chili, coriander powder, cumin powder, turmeric powder and salt.

    Step 6

    Cook for 2-3 minutes then add potatoes.

    Step 7

    Add 1 cup water and cook for 10 minutes or until potatoes are tender.

    Mutton Kofta Curry

    Ingredients

    For Kofta (Meatballs)

    • 1 kg mutton mince keema
    • 2 onions finely chopped
    • 2 tablespoon roasted and grounded chickpeas
    • 1 egg lightly beaten
    • 1 teaspoon chopped ginger
    • 1 teaspoon green chili paste
    • 1 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon garam masala powder
    • Salt To Taste
    • Oil for frying

    For Kofta Curry

    • 2 onions thinly sliced
    • 1/4 cup oil or butter
    • 1 cup boiled and skinned tomatoes
    • 1 teaspoon ginger garlic paste
    • 2 tablespoon yogurt
    • 1/2 teaspoon red chili powder
    • 1/4 teaspoon turmeric powder
    • 1/4 teaspoon coriander powder
    • 1/4 teaspoon garam masala powder
    • Salt To taste

    For Garnishing

    • 2 tablespoon fresh coriander leaves
    • 2 green chilies thinly sliced
    • boiled eggs optional

    Instructions

    To Make Koftas

    • Put all kofta ingredients in a food processor. Process until combined together.
    • Take it out in a bowl and shape into koftas (meatballs).
    • Put in a refrigerator for 2 hours or until firm or set.
    • Now heat oil in a deep pan and fry kofta’s for 8-10 minutes or until lightly browned.
    • Remove from the oil and Keep aside.

    To Make Kofta Curry

    • Heat 1/4 cup oil in a wok or skillet.
    • Saute onions until translucent.
    • Add ginger garlic paste and cook for few seconds.
    • Now add the rest of the curry ingredients with enough water to make a smooth gravy.
    • Bring to a boil. Cover and simmer for 30 minutes or until gravy is smooth and thickened.
    • Cook on high heat, add the fried koftas and 1 cup water.
    • Cover again and simmer for 40 minutes or until koftas are cooked inside.
    • Increase the flame and cook 5 minutes longer or until gravy is thickened.
    • Add boiled eggs.
    • Garnish with green chilies and coriander leaves. Mutton Kofta Curry is ready to eat. Enjoy!

    Notes

    Serving Suggestions:
    Serve with Naan, chapati or boiled rice.

    Step 1

    Heat oil in a large pot over moderate heat.

    Step 2

    Saute onions, ginger and garlic paste, for few minutes or until trasnculent.

    Step 3

    Add tomatoes, salt, turmeric, coriander powder and red chilli.

    Stir well.

    Step 5

    Cook for 5 minutes or until the oil comes on the top and the tomatoes and tender.

    Step 6

    Add the chicken and cook on high flame for 15-20 minutes or until no longre pink.

    Step 7

    Add 1 cup of water.

    Step 8

    Cover the pot and cook on medium flame for 20 minutes or until the chicken is cooked thorough and little water is left.

    Step 9

    Now add green bell pepper and sliced onion. Cook on high flame so that the water dries and oil comes on surface.

    Step 10

    First boil water in a pan.

    Separately grind onions, ginger, garlic, green chillies and tomatoes to make a fine masala paste.

    Sauté till the masala turns brown.

    Now, add pepper powder, cumin seed powder, garam masala powder, turmeric powder, coriander powder and salt to it. Cook the mixture for 10 minutes.

    Now, add the palak paste and mix well.

    Cook for 10 more minutes add chicken and mix well.

    Cook for 20 to 30 minutes by covering the vessel with a lid.

    Step 12

    Remove from the heat when chicken pieces are fully cooked.

    • 2 tbsp corn or wheat flour
    • 1 tbsp dry fenugreek leaves – Kasuri Methi

     

    Directions:

    Step 1

    Steam/blanch the Palak and grind.

    Fry the onion in the oil till brown.

    Step 3

    Mix all the ingredients together and add to the pot and stir till the tomato has become soft and the water has dried.

    Step 4

    Add the meat and cook again to let the water dry.

    Step 5

    Add 3-4 glasses of water cover and leave to tenderize.

    Step 6

    When meat is almost done add ground Palak, Methi and flour. Cook till water dries.

    For Balti Beef:

    • 1 kg sirloin beef roast, cut into slices
    • 1 onion, finely chopped
    • 2 red bell pepper,seeded and chopped
    • 2 tbsp desi ghee or butter
    • 2 tbsp ginger garlic paste

    For Balti Sauce:

    • 2 tbsp desi ghee or vegetable oil
    • 2 large onions,finely chopped
    • 3 tomatoes, chopped
    • 1 tbsp ginger garlic paste
    • 1 tsp paprika powder
    • 1 tsp cumin powder
    • 1 tsp coriander powder
    • 1/2 tsp turmeric powder
    • 1/2 tsp red cayenne pepper
    • 1/4 tsp cardamom powder
    • 1 bay leaf
    • salt to taste

    For Garnishing

    • Few coriander leaves, chopped

    Step 1
    To make Balti Sauce:

    Heat ghee or oil in a pot oevr medium heat. Saute onion for 5 minutes or until crisp-tender.

    Step 2

    Add ginger garlic paste and stir fry for 2 minutes.

    Step 3

    Stir in the tomatoes.

    Step 4

    Season with the paprika, turmeric powder, cumin powder, coriander powder, cayenne pepper, cardamom powder, bay leaf, and salt.

    Step 5

    Add 1 cup of water and bring to a boil.

    Step 6

    Reduce the heat. Cover and simmer for 20 minutes or until sauce is thickened.

    Step 7

    Let the sauce cool slightly, discard the bay leaf.

    Step 8

    Pour the mixture into a blender and process until smooth.

    Keep aside.

    To Make Balti Beef:

    Wipe out the pot and return it to medium heat.

    Melt ghee and add onion, garlic and stir fry for 5 minutes or until lighlt browned.

    Add the red bell pepper. Cook and stir for 2 minutes.

    Stir in the beef roast and continue cooking for 2 minutes, until it starts to turn brown.

    Step 14

    Add the balti sauce and bring to a boil.

    Step 15

    Reduce the heat to medium-low. Cover and simmer for 5 minutes or until the sauce is thickened.

    Step 16

    Adjust the seasoning according to your taste.

    Step 17

    Dish it out. Garnish with coriander leaves. Delicious Balti Beef is ready to serve.
