    Ingredients

    • 4 organic eggs
    • 1 cup baby spinach leaves chopped
    • 4 tablespoon grated cheddar cheese
    • 2 teaspoon butter or olive oil
    • 1/4 teaspoon pepper
    • salt to taste

    Instructions

    • Beat eggs in a bowl.
    • Stir in the baby spinach.
    • Season with salt and pepper. Mix well.
    • Melt butter in a pan over medium heat.Pour the egg mixture it it. As egg mixture starts to cook, gently lift edges of omelet with a spatula and tilt pan so uncooked egg mixture flows underneath.Cook for 2 minute or until almost set.
    • Sprinkle cheese over the omelet.
    • Fold omelet in half, allowing cheese to melt.
    • Slide cooked omelet onto a serving plate. Delicious Spinach and Cheese Omelet is ready to serve.

    Notes

    Serve with buttered toast and green smoothie.

    Step 1

    First boil water in a pan.

    Step 2

    Once boiled, add chopped palak. Simmer for 5 minutes and then strain out the left water.

    Set the boiled palak aside to cool.

    Step 4

    Once cooled, blend the palak into a smooth paste.

    Step 5

    Separately grind onions, ginger, garlic, green chillies and tomatoes to make a fine masala paste.

    Step 6

    Heat oil in a pan and add the masala paste.

    Step 7

    Sauté till the masala turns brown.

    Step 8

    Now, add pepper powder, cumin seed powder, garam masala powder, turmeric powder, coriander powder and salt to it. Cook the mixture for 10 minutes.

    Step 9

    Now, add the palak paste and mix well.

    Step 10

    Cook for 10 more minutes add chicken and mix well.

    Step 11

    Cook for 20 to 30 minutes by covering the vessel with a lid.

    Remove from the heat when chicken pieces are fully cooked.

    • 1 teaspoon ginger garlic paste
    • 1 teaspoon coriander powder
    • 1/8 teaspoon turmeric powder

    • a pinch of garam masala powder

  • RECIPE: Spinach Paratha (Palak Paratha)

    Spinach Paratha

    Spinach paratha is another excellent variation of paratha where you can include some healthy greens in the paratha. This is a great “anytime” meal. Spinach Parathas are whole-wheat  flat bread stuffed with a spicy spinach filling.

    It doesn’t matter whether you are an expert or beginner, with this spinach paratha recipe you can prepare delicious and healthy spinach paratha in few minutes.  Its a perfect way to enjoy the goodness of spinach.

    Palak Paratha is a delicious and nutritious way of feeding spinach to the kids.

    INGREDIENTS

    For Dough:

    • 1 cup whole-wheat flour
    • 1/2 cup water
    • Pinch of salt

    For Spinach Filling:

    • 2 cups chopped spinach
    • Pinch of asafetida
    • 1/4 tsp salt
    • 1/2 tsp cumin seeds
    • 1/4 tsp red chilly flakes
    • 1/4 cup whole-wheat flour for rolling
    • Oil to cook

    Yield: 4 servings

    Directions:

    Step 1

    To Make Dough: Mix flour, salt and water together to make soft dough (if needed add more water).

    Step 2

    Knead the dough for a few minutes on a lightly greased surface to make soft, smooth and pliable dough.

    Step 3

    Set the dough aside and cover it with a damp cloth. Let the dough rest for at least ten minutes.

    Step 4

    To Make Paratha Filling: Heat the oil in a saucepan on medium-high heat. Oil is the right temperature when cumin cracks immediately after being put the oil.

    Step 5

    Add the asafetida and cumin seeds.

    Step 6

    After the cumin seeds crack, add the spinach.

    Step 7

    Stir-fry, making sure to press the spinach down so the water can evaporate.

    Step 8

    Cook the spinach until most of the water has evaporated. Spinach still should be moist and should be able to form a ball.

    Step 9

    Add the salt and pepper and mix well. Set aside until the spinach cools off.

    Step 10

    Divide the dough and spinach filling into 6 equal parts.

    Step 11

    Roll the dough into 3 inch circles.

    Step 12

    Put the filling in the center. Seal by pulling the edges together and make into a ball.

    Step 13

    Proceed to make all six balls. Each ball needs to settle for two minutes before you start rolling.

    Step 14

    Heat the griddle (Tawa) on medium high. Press the filled ball lightly on dry whole-wheat flour from both sides.

    Step 15

    Roll the ball light handed to make 6-inch circle.

    Step 16

    If the paratha sticks to the rolling pin or rolling surface, lightly dust the paratha with dry flour.

    Step 17

    Place the paratha over the griddle. After paratha start changing color and start puffing in different places flip the paratha over. You will notice some golden-brown spots.

    Step 18

    After few seconds, spread 1 tsp of oil on the paratha.

    Step 19

    Flip the paratha and lightly press the puffed areas of the paratha with a spatula.

    Step 20

    Flip again and press with the spatula making sure the paratha is golden-brown on both sides.

    Step 21

    Cool the parathas on a wire rack so they don’t get soggy. Spinach Paratha is ready to serve.

    Recipe Note’s

    1. These Parathas can be kept outside for up to 2 days wrapped in aluminum foil or in a closed container.
    2. For later use paratha can be refrigerated for 3-4 days.

    • 1 tsp shah zeera

    Add the onion paste and fry for 4-5 minutes on medium heat ensuring that it doesn’t burn.

    Add the ginger garlic paste and fry for another 2-3 minutes. Add red chilli powder and combine.

    Step 6

    Add the tomato puree and let it cook over slow fire till the ghee separates.

    Step 7

    Add the palak paste and the cashew nut paste and combine. Add a cup of water and salt. Cover and cook for 10-12 minutes on low heat.
    Stir once in a while.

    Step 8

    Lastly add the garam masala and mix well. Turn off heat.

    Step 9

    Just before serving, spread the koftas on a serving plate and pour the creamy gravy over the koftas and garnish with cream . Palak Kofta Curry is ready to serve.

    • 3 pound boneless chicken, cut into 1-1/2 inch pieces

    • 2 onions, finely chopped
    • 5 cloves garlic, finely chopped
    • 2 tomatoes, finely chopped
    • 1-inch piece of ginger, finely chopped
    • 2 whole cloves
    • 2 big cardamom pods
    • 1/4 cup water
    • 6 tbsp vegetable oil
    • 4 tbsp milk
    • 2 tbsp butter
    • 1 tsp coriander powder
    • 1 tsp garam masala
    • 1/2 tsp turmeric powder
    • 1/2 tsp cayenne pepper

    Step 1

    Place spinach and 1/4 cup water in a large pot.

    Step 2

    Bring to the boil and cook for 5 minutes or until crisp-tender.

    Step 3

    Remove from heat and let it cool. Grind spinach in a blender. Set aside.

    Step 4

    Heat 4 tablespoon oil in a large pot over medium high heat. Add chicken and cook for 5 minutes or until lightly browned.

    Step 5

    Transfer into a plate and keep aside.

    Step 6

    Heat the remaining oil in a pan. Saute onion, ginger and garlic until lightly browned.

    Step 7

    Stir in tomatoes.

    Step 8

    Season with salt, cayenne pepper, ground coriander and turmeric.

    Step 9

    Add 1 tablespoon water, cloves and cardamom. Cover and simmer for 10 minutes or until all water dries up.

    Step 10

    Return chicken to the pot.

    Step 11

    Add milk and spinach. Simmer for 20 minutes or until the chicken is tender and spinach starts sticking to the pot.

    Step 12

    Remove from heat. Transfer into a serving dish. Top with butter. Saag Chicken is ready to serve.

    • 1 cup spinach leaves palak, chopped
    • 1-1/2 cups gramflour besan
    • 1 small chopped onion
    • 2 green chilies chopped
    • 1 tsp Red chili crushed
    • 1/2 tsp Mango powder
    • 1/2 tsp cumin seeds crushed
    • 1/2 tsp coriander seeds crushed
    • Salt to taste
    • Oil for deep frying

    Instructions

    Method

    • Wash palak leaves properly and leave it for drying.
    • Chop the palak leaves. Add water to besan and make a batter of thick consistency.
    • Add chopped green chilies, cumin seeds, coriander seeds, red chili powder, and mango powder, salt and blend it well.
    • Fry small portions of mixture in oil for 5-8 minutes or until they turn golden brown.
    • Remove from oil and absorb on kitchen paper. Palak Pakora is ready to serve.

    Ingredients

    • 1 kg Sarson mustard greens, finely chopped
    • 1/4 kg Spinach finely chopped
    • 2 cm piece Ginger minced
    • 4 cloves Garlic minced
    • 2 Green Chilies minced
    • 2 Red chilies
    • 1 tbsp butter
    • salt to taste
    • ghee or clarified butter

    Instructions

    Method

    • Boil both the greens till soft.
    • Remove excess water, mash the leafy vegetables well and reserve.
    • Heat 4 tbsp ghee and add ginger, garlic, green chillies and broken red chillies.
    • When the masala has been browned, add the mashed saag and salt.
    • Mix the gram flour in a little water and add to the saag.
    • Simmer for at least 30 minutes.
    • Sarson Ka Saag is ready to serve. Enjoy!!

    Serving Suggestions:
    Serve hot, topped with a spoon of butter, with makki ki roti.

  • The Perfect Hara Bhara Paratha Recipe (Healthy and Delicious!)

    Ingredients:

    • 1 cup wheat flour
    • 3/4 cup spinach
    • 2 tsp Oil
    • salt to taste
    • 1 cup fresh coriander leaves
    • 1 tsp ginger paste
    • 1 tsp chili paste
    • 1 lemon
    • 1/2 tbsp flax seeds
    • 1/2 tbsp cumin seeds

    How to make Hara Paratha:

    For Masala:

    • Grind coriander, chili ginger paste, lemon, flax seeds and salt in a mixer.
    • Remove in a bowl and keep aside.

    For Dough:

    • Blanch the spinach and puree.
    • Make dough using wheat flour, salt, and spinach puree.
    • Do not use water.
    • Cover the dough and keep it for 5-7 minutes.

    For Paratha:

    • For each paratha, roll out 2 chapatis.
    • Apply chutney on one of them and press the other on top.
    • Heat griddle, smear it with oil and roast the paratha.
    • Remove when brown spots appear on both sides.
    • Serve hot with yogurt.

    Ingredients

    • 2 cups flour
    • 1 cup steamed and finely chopped spinach leaves.
    • 1/2 tsp salt
    • 1/2 tsp whole cumin seeds
    • 5-6 black pepper,coarsely crushed
    • 1 tbsp oil to make dough
    • A little water to form dough
    • Oil or ghee for shallow frying

    Directions:

    Step 1

    Mix together the flour, spinach and spices.

    Step 2

    Add 1 tbsp of oil and knead with water to form a dough which is medium-soft.

    Step 3

    Cover and keep in the fridge for at least half an hour to set.

    Step 4

    Break into small balls.

    Step 5

    Roll out into small chapattis and shallow fry on medium heat in a frying pan till very lightly brown.

    Step 6

    Transfer into a serving platter. Spinach Roti ready to serve.

    Serving Suggestions:

    Serve hot with yogurt or any pickle or chutney.
