    My Mom made some Shami Kababs for a dinner party few weeks ago and had some left, so during one of the weekdays, I made these shami kabab burgers which weren’t just filing but very delicious as well. My Brother kept asking for more but I only had a few shami kababs left. This is a very simple and filling snack that is worth trying!

    Ingredients

    • 8 shami kababs =>>>Check out my Shami Kabab recipe
    • 4 burger buns
    • 4 eggs lightly beaten
    • 1 onion cut into rounds
    • 1 cup shredded lettuce
    • 4 tablespoon green chutney
    • 4 tablespoon ketchup
    • 2 tablespoon mayonnaise
    • 4 cheese slices optional

    Instructions

    Directions

    • Fry shami kabab in hot oil and keep aside.
    • Fry egg and keep aside.
    • Toast burger buns and spread mayonnaise over them.
    • Place shami kababs, lettuce and onion over the buns.
    • Drizzle with ketchup and green chutney.
    • Place some cheese on one side of the bun and toast till cheese melts away.
    • Place the cheesed bun on the top.
    • Cut into halves. Shami Kabab Burger is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with chips and ketchup.

    Ingredients

    • 500 gm chicken mince
    • 1/4 cup cooking oil
    • 2 onions finely chopped
    • 1 tablespoon ginger garlic paste
    • 1 tablespoon lemon juice
    • 2 to matoes finely chopped
    • 1 teaspoon red chili powder
    • 1 teaspoon coriander powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon black pepper freshly crushed
    • 1/2 teaspoon garam masala powder
    • salt to taste

    For Garnishing:

    • Few coriander leaves
    • few green chilies thinly sliced

    Instructions

    • Heat oil in a clay pot over medium heat.
    • Saute onion in hot oil until they turn to light pink in color.
    • Add ginger garlic paste and cook for 30 seconds. Now add tomatoes, red chili, coriander powder, cumin powder, turmeric powder and salt.
    • Cook for 4-5 minutes or until all water dries up.
    • Now add chicken mince (keema) and cook well for 15-20 minutes or until chicken is no longer pink.
    • Now add lemon juice and put on dum for 5 minutes or until well done.
    • Garnish with coriander leaves and green chilies. Chicken Keema Handi is ready to serve. ENJOY!!

    Notes

    Serve with Garlic Rice or Chapati.

    • 500 gm cabbage chopped or thinly sliced
    • 1 tsp olive oil
    • 2 onions finely chopped
    • 2 to matoes finely chopped
    • 1 teaspoon lemon juice
    • 1 teaspoon red pepper powder
    • 1/2 teaspoon rai powder
    • 1/2 teaspoon cumin powder
    • salt according to taste
    • For Garnishing:
    • few green chilies
    • few coriander leaves

    Instructions

    • Heat oil in a pot or pan over medium heat.
    • Sauté onion in hot oil until translucent.
    • Now add rai, tomatoes, red pepper, cumin powder and salt.
    • Add a little water and cook for a while.
    • Now add cabbage. Cover the lid and cook for 10 minutes.
    • Remove the lid and cook on full heat to dry out the water.
    • Dish it out. Garnish with green chilies and coriander leaves. Cabbage Dry Curry is ready to serve. ENJOY!!

    Notes

    The left overs can be used as a filling for a grilled sandwich that will make for a quick lunch box or after school snack for your kid.

    Ingredients

    • 4 large eggs
    • 4 tablespoon milk
    • 1 cooked chicken breast thinly sliced
    • 1/4 cup chopped green onion
    • 2 green chilies finely chopped
    • 1/4 cup grated cheese
    • 1/4 teaspoon cayenne pepper
    • salt to taste
    • 1 tablespoon butter

    Instructions

    • In a small bowl, whisk together the eggs and milk.
    • Season with salt and pepper. Mix well.
    • Melt butter in a non-stick pan over medium heat. Add chicken, green onion and green chili. Cook and stir for 1-2 minutes then pour egg mixture over it.
    • As eggs set at the edges, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath.
    • Cook on low flame for 2 minutes or until almost set.
    • Sprinkle cheese on half of the omelette.
    • Fold other half over cheese.
    • Remove from the heat and transfer into a platter.
    • Cut omelette in half. Spicy Chicken Omelette is ready to serve. ENJOY!!

    Ingredients

    • 3 cups of Whole Wheat Flour
    • 2 cups grated White Radish
    • 1 medium Onion , finely chopped
    • 1/4 cup fresh coriander leaves, finely chopped
    • 1 tsp red chilli powder
    • 1 tsp carom seeds (Ajwain)
    • 1/2 tsp garam masala
    • salt to taste
    • 2 tbsp Butter
    • 1/2 cup Butter or Cooking Oil

    Directions:

    Step 1

    Mix together the flour, butter, and salt thoroughly in a bowl.

    Step 2

    Then add sufficient water to make a dough, knead for 5 minutes, cover and set aside for 15 minutes.
    Wash the radish well and grate it using a vegetable grater.

    Step 3

    Add a teaspoon of salt to the grated radish, mix well and set aside for 3-5 minutes.

    Step 4

    Now squeeze out the water.

    Step 5

    To the squeezed radish, add garam masala , red chilli powder, onions, coriander leaves, and carom seeds.

    Step 6

    And mix well.

    Step 7

    Divide this mixture into 1 inch sized balls. And set aside.

    Step 8

    Divide the dough into slightly larger than 1 inch size balls, flatten each ball into a circle.

    Step 9

    Place the grated radish balls at the center of the flattened dough.

    Step 10

    Then, gently stretch the dough to envelope the mixture completely, such that all the edges meet at the top of the dough ball.

    Step 11

    Using your fingers seal the dough well so that all the stretched up edges blend into one.

    Step 12

    Dust with some flour and roll out the dough into a circle.

    Step 13

    Heat a frying pan and when frying pan is very hot, place the rolled out dough on it.

    Step 14

    Leave dough for a minute and turn over.

    Step 15

    After a minute or so the paratha will slowly start to bubble up.

    Step 16

    Now drizzle one teaspoon of melted butter or cooking oil on top of the paratha and turn over.

    Step 17

    The paratha immediately starts to rise.

    Step 18

    Repeat the drizzling with melted butter or cooking oil on the other side as well.

    Step 19

    Turn over again and let it rise once more.

    Step 20

    When golden brown on both sides, remove from frying pan. Mooli Paratha is ready to serve.

    • 500 gm mutton mince
    • 1/2 cup oil

    For Garnishing:

    • 3-4 green chilies, thinly sliced
    • 1/4 cup fresh coriander leaves

     

    Directions:

    Step 1

    Heat oil in a pan or wok, add chopped onions and fry for 3-4 minutes.

    Step 2

    Then add ginger-garlic paste and stir fry for few seconds.

    Step 3

    Now put mince into it and cook for 5 minutes.

    Step 4

    Then add chopped tomatoes and let the tomato turn soft.

    Step 5

    Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix well.

    Step 6

    Add 2 cups of water, bring to a boil then reduce the heat.

    Step 7

    Put the lid on and cook for 40-45 minutes or until mince cooked thoroughly.

    Step 8

    Then, uncover, and stir fry 4-5 minutes or until water is completely
    absorbed.

    Step 9

    Remove from the heat and transfer into the serving bowl.

    Step 10

    Sprinkle garam masala powder over the top.

    Step 11

    Garnish with green chilies and fresh coriander leaves. Mutton Keema is ready to serve.

    Serving Suggestions:

    Mint Roti (Pudina Roti)

    Mint is a magic ingredient, which adds zing to any preparation, however simple. Here is a simple process of dry roasting and crushing the leaves boosts the aroma of mint extraordinarily, adding a flavourful punch to the whole wheat flour rotis.

    Ingredients:

    • 2-1/2 cups flour
    • 1 cup mint,finely chopped
    • 2 tbsp oil or butter
    • Oil for shallow frying
    • Salt to taste

    How to make Mint Roti:

    • Sift the flour and salt in a bowl.
    • Add 2 tbsp of oil and mint and knead a stiff but non-sticky dough..
    • Cover with a damp cloth and leave aside for 30 minutes.
    • Divide the dough into 15 parts.
    • Shape like balls and press flat with the palm of your hand.
    • Roll out the roti into a round disc about 5″ diameter.
    • Put roti on a preheated griddle, dry roast both sides first then spread oil on both sides and shallow fry until well browned.
    • Mint Roti is ready to serve.
    • Serve with any pickle or raita.
    • Enjoy!
  • RECIPE: Moong Dal Paratha (Protein Rich Yellow Lentil Stuffed Paratha)

    Moong Dal Paratha 

    Ingredients:
    For the Filling:

    • 3/4  cup yellow split moong dal (soaked for 30 minutes)
    • 2 tsp chopped ginger
    • 1 tsp chopped green chillies
    • 1/2 tsp turmeric powder
    • 1 tsp cumin seeds
    • 1 tsp coriander powder
    • 1 tsp cumin powder
    • 1 tsp garam masala powder
    • 2 tsp dry mango powder
    • 3 tbsp fresh coriander leaves, finely chopped

    For the Dough:

    • 2 cups whole wheat flour
    • 1 tsp salt
    • Water to knead the dough
    • Oil or ghee for cooking

    How to make Dal Paratha:

    For the Filling:

    • Soak the moong dal for 30 minutes.
    • Once soaked, steam the moong dal for about 25 minutes until cooked, draining all excess water.
    • Once steamed and cooked,allow it to cool.
    • Add the remaining ingredients to the dal and mix it until it becomes like a ball of mass.
    • Divide it into 12- 15 equal portions.
    • Set aside.

    For The Dough:

    • Add flour and salt in a large bowl, adding little water at a time to make soft, pliable dough.
    • Knead dough until it is smooth and elastic.
    • Add 1 tsp oil to coat the dough and knead little more.
    • The dough will be soft and non sticky.
    • Set aside covered for 10 minutes.
    • Make 12- 15 lemon sized balls of the dough and roll them out thin to approximately 3 inches in diameter.
    • Note tossing the dough in dry flour while rolling will prevent it from getting sticky when rolling them out.
    • Add a portion of the stuffing in the center. Gather the sides and bring them together, as shown in the picture.
    • Remove the little excess dough which popped out when you brought them together.
    • Press the stuffed dough down. Toss it in some flour and roll it gently applying just even pressure to roll.
    • Roll it to desired thickness and your comfort level in rolling.
    • Place the stuffed parathas on the hot griddle/skillet.
    • Cook for about 1/2 a minute, flip over and add 1 teaspoon of oil/ ghee in and around the paratha.
    • Keep pressing the parathas while on the skillet so the dough gets cooked and the stuffing also gets the heat and gets pressed down into the parathas.
    • Flip and cook the other side for about 1 minute adding 1 more teaspoon of oil.
    • Cook until light golden spots appear on the parathas.
    • Dal Paratha is ready to serve.
    • Enjoy!
  • RECIPE: Cauliflower Paratha (Gobhi Paratha)

    Ingredients:
    For Dough:

    • 4 cups whole wheat flour
    • 3 cups cold water
    • 3/4 cup ghee or clarified butter

    For Filling:

    • 2 tbsp ghee or clarified butter
    • 1 tbsp ginger,finely chopped
    • 1 tsp garlic,finely chopped
    • 1/2 cup onions,finely chopped
    • 1/4 tsp turmeric powder
    • 1/8 tsp hot chili peppers
    • 1 medium cauliflower florets trimmed, and coarsely chopped
    • 1 tbsp hot green peppers, finely chopped
    • 1 tsp ground cumin
    • 1 tsp salt
    • 8 tbsp ghee or clarified butter

    How to make Cauliflower Paratha :

    For Dough:

    • In a small bowl, combine the whole-wheat flour and 1/4 cup of the ghee.
    • With your fingertips rub the flour and fat together until they look like flakes of coarse meal.
    • Pour 1 cup of water over the mixture all at once, knead together vigorously, and gather the dough into a compact ball.
    • If the dough crumbles, add up to 2 cups more water, 1/4 cup at a time, until the particles adhere.
    • On a lightly floured surface, knead the dough by folding it end to end, then pressing it down and pushing it forward several times with the heel of  your hand.
    • Repeat for 7 or 8 minutes, until the dough is smooth and elastic.
    • Again gather it into a ball.
    • Place the dough in a bowl, drape a kitchen towel over the top, and let it rest at room temperature for at least 30 minutes before rolling it.

    For Filling:

    • Meanwhile, in a heavy 10 to 12-inch skillet, heat 2 tbsp of ghee over high heat until a drop of water flicked into it splutters instantly.
    • Stir in the ginger and garlic, then the onions.
    • Lower the heat to moderate and, stirring constantly, fry the mixture for 7 or 8 minutes, until the onions are soft and golden brown.
    • Stir in the turmeric, red pepper, cauliflower, chili, cumin and salt.
    • Reduce the heat to low, cover tightly and cook for 10 minutes, or until the cauliflower is tender but still slightly resistant to the bite.

    To make the parathas:

    • Divide the cauliflower mixture into 9 equal portions.
    • Divide the dough also into 9 portions and drape a dampened kitchen towel over them to keep the dough moist.
    • One at a time, on a lightly floured surface, roll a ball of dough into a round about 5 inches in diameter.
    • Place a portion of the filling mixture in the
    • center of the round and fold the edges over it,
    • pressing them together to enclose the filling
    • securely.
    • Pat the filled paratha flat with your hands, then
    • gently roll it again to make a round about 5
    • inches in diameter.
    • As you shape and fill the parathas, set them
    • aside, covered with a dampened kitchen towel to
    • keep them from drying out.
    • Heat an ungreased 10 to 12-inch skillet with a non
    • stick finish or a well-seasoned cast-iron skillet
    • or griddle until it is hot enough for a drop of
    • water flicked into it to splutter instantly.
    • Place one of the parathas in the pan and, moving
    • it about constantly with your fingers or the edge
    • of a metal spatula, cook for a minute or so.
    • With a wide spatula, turn the paratha over and
    • brush about a tsp of the ghee on the top.
    • Cook for 2 minutes, then turn it over, spread with
    • another teaspoon of ghee and cook for 1 minute.
    • Turning frequently, continue to cook until the
    • paratha is brown on both sides.
    • Serve hot with mint chutney or fresh curd.

    For Dough:

    • 1 sachet yeast, rapid rise
    • 4 cups self rising flour
    • 3/4 cup warm water
    • 2 tablespoon oil
    • 2 tablespoon yogurt
    • 1 teaspoon sugar
    • water for kneading

    For Keema Filling:

    • 1 kg chicken mince (keema)
    • 1 small onion, finely chopped
    • 3 green chilies, finely chopped
    • 2 tablespoon chopped fresh coriander
    • 2 tablespoon chopped mint leaves
    • 1 teaspoon ginger garlic paste
    • 1 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1 teaspoon whole coriander, crushed
    • 1 teaspoon garam masala powder
    • 1 teaspoon crushed red chili
    • 1 teaspoon pomegranate seeds (anardana)
    • salt to taste

    Step 1

    To Make the Dough: Add yeast and sugar in warm water and let it rise for 10 minutes.

    Step 2

    Make a well in flour and add yeast mixture, yogurt and oil. Mix well. Knead a soft dough you can use extra warm water if needed.

    Step 3

    Cover with kitchen towel in warm place. Let the dough rise for about 35 minutes.

    Step 4

    Punch the dough and take out air. Let it sit again for 30 minutes.

    Step 5

    Make small balls out of the dough and cover them with awet cloth.

    Step 6

    Place chicken keema in a large bowl. Now put all the filling ingredients in keema. Mix well and set aside.

    Step 7

    Heat a griddle on medium heat.

    Step 8

    Turn the oven to broiler setting and put the rack on top most part.

    Step 9

    Roll the ball into about 3-inch circle.

    Step 10

    Take Keema mixture and fill in the circle and make ball again like you make for kachori.

    Step 11

    Roll out into a size of naan you want.

    Step 12

    Make depressions with the tip of fingers or with soft baby spoon handle.

    Step 13

    Put the naan on tawa on low to medium heat and spray Pam on it. Let it cook for 10 minutes or you see the keema is changing the color to pink or light brown.

    Step 14

    Transfer naan into the oven. Let it broil for 10 minutes or until it turns to your desired color.

    Step 15

    Remove from the oven. Chicken Keema Naan is ready to serve. ENJOY!!

    This is an Easy version of  triangle paratha!  Learn how to make layered triangle paratha by following this easy Recipe.

    Ingredients

    • 2 cups whole wheat flour
    • 3/4 cup warm water
    • 1 tablespoon olive oil
    • 1/2 teaspoon sea salt
    • olive oil cooking spray
    • additional flour for dusting the parathas

     

    Directions:

    Step 1

    In a large mixing bowl, combine the ingredients for the dough.

    Step 2

    Knead on a floured counter top for about 5 minutes or until the dough is smooth and elastic.

    Step 3

    Divide into 8 balls, cover with a damp kitchen towel and let them rest for 30 minutes.

    Step 4

    Roll out a piece of dough to about 6″ in diameter on your floured counter top.

    Step 5

    Fold the dough in half onto itself to create a semi-circle.

    Step 6

    Fold the semi-circle in half to create a triangle shape & then roll out the triangle just a bit.

    Step 7

    Heat a little olive oil cooking spray in the large skillet on medium heat.

    Step 8

    Cook paratha until brown on the bottom – then flip & cook until browned on both sides.

    Step 9

    Remove from heat and repeat with the remaining dough. Triangle Paratha is ready to serve. Enjoy!

    Ingredients

    • 2 cups wheat flour

    • 1/2 tsp carom seeds

    Instructions

    Method

    • In a bowl, combine together wheat flour, carom seeds, salt, chili powder, oil.
    • Gradually add water and knead a soft dough.
    • Make small balls out of the dough.
    • Roll into a quarter plate size.
    • Spread 1 tbsp of ghee over it.
    • Cut a slit from the outer edge till the centre.
    • Start rolling from the slit to form cone.
    • Roll out to a thick paratha.
    • Sprinkle mint leaves on it.
    • Roll again.
    • Heat a griddle( tawa) over medium heat.
    • Put paratha on hot griddle.
    • Fry paratha on each sides for 2 minutes or until light golden.
    • Lacha Pudina Paratha is ready to serve. ENJOY!!

    This Methi Chicken is one of my go-to recipes when I want to cook a simple, wholesome non-vegetarian meal for my family. The basic recipe for this dish is my Mother’s so I know it is good as I grew up eating it. The fresh Methi (fenugreek) leaves add a lovely, earthy flavor to this dish. You can also use dried fenugreek if you don’t have access to fresh leaves and you should be able to find both fairly easily in any grocery.

    • 1-1/2 kg chicken cut into karahi pieces

    For the marinade:

    • 1 tsp each, ginger and garlic paste
    • 2 tsp yogurt
    • 1 tsp red chilli powder
    • ½ tsp cumin powder
    • Salt to taste

    For the Gravy:

    • 2 cardamoms
    • 1 cinnamon stick
    • 3 green chillies, chopped
    • 1/2 tsp black cumin seeds
    • 2 cups chopped fenugreek leaves
    • 1 lemon juice
    • 2 onions, finely chopped
    • 2 tomatoes, finely chopped

    Mix all the ingredients and marinate the chicken for 30 minutes.

    Grill in a pre-heated oven till golden brown.

    For the gravy, roast cardamom, cinnamon, black cumin seeds and chopped onions till golden brown.

    Add fenugreek leaves and saute for four minutes.

    Step 5

    Add tomatoes and chicken and cook till the aroma of the fenugreek leaves comes out.

    Put lemon juice, garnish with ginger julienne. Methi Chicken is ready to serve.

    Ingredients:

    • 500 gm minced chicken
    • 250 gm plain wheat flour
    • 6 green chillies, finely chopped
    • 4 tomatoes, chopped
    • 1 tablespoon ginger garlic paste
    • 2 tablespoon ghee or oil
    • 1 teaspoon red chilli powder
    • 1 teaspoon garam masala powder
    • salt to taste
    • a handful – chopped coriander leaves
    • ghee for parathas as required

     

    Directions:

    To Make Chicken filling:

    Step 1

    First of all, heat ghee, fry ginger and garlic. Put in minced chicken and simmer well.

    Step 2

    Stir in garam masala, salt and chilli powder. Add tomatoes and fry till tender, and ghee begins to separate.

    Step 3

    Add onions, green chillies and chopped coriander leaves. Set it aside to cool it off.
    To Make Chicken Paratha:

    Step 1

    First take wheat flour. Rub in some ghee and 1/2 teaspoon salt.

    Step 2

    Add some water to make a dough. Knead well till it is smooth and pliable.

    Step 3

    Roll it out with your hands into a long roll about 2 inches in diameter.

    Step 4

    Cut into pieces of equal size and flatten it.

    Step 5

    Fill in the chicken mixture.

    Step 6

    Put other flattened pieces on the first, weld the edges, flatten, roll out with a rolling pin into a cake.

    Step 7

    Shallow fry on a hot tawa (griddle)on both sides till light brown. Chicken Paratha is raedy to serve. ENJOY!!

    Serving Suggestions:

    • Serve with mint chutney.
