Ingredients

  • 2 tbsp white vinegar
  • ¾ cup granulated sugar
  • 1 cup water
  • 1 tbsp crushed red chilli flakes
  • 1 tsp salt or to taste

Method

  1. Add the vinegar, sugar and water to a small saucepan.
  2. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves.
  3. Reduce the heat and simmer for 8–10 minutes, or until slightly syrupy.
  4. Remove from the heat and allow it to cool slightly.
  5. Stir in the crushed red chilli flakes and salt.
  6. Transfer to a clean jar and allow the sauce to rest for at least 6 hours.
  7. Taste, adjust the seasoning if necessary and serve with your favourite appetizers.

Notes

The sauce will become thicker as it cools, so avoid reducing it too much during cooking. Adjust the chilli flakes and vinegar according to your preferred balance of heat and tanginess.
