Cheese Cutlets
A quick and easy cheese cutlets recipe, where you can serve this up on your tea trolley, or great as a lunch or snack option. These cheese cutlets are a must try recipe, served with ketchup or sauce of your choice.

- 1 ounce grated Parmesan cheese
- 3 egg yolks
- 1 tbsp cream
- 1/4 tsp Mace powder
- 1/2 tsp cayenne
- salt to taste
- 1 tbsp thick white sauce
- oil for frying

Step 1
To the well-beaten egg yolks, add cream and grated Parmesan
cheese, and season with mace, cayenne and salt.
Step 2
Beat until very light and add the thick white sauce.
Step 3
Pour into a shallow greased pan and steam over hot water
until firm.
Step 4
When cold, cut in shapes with a fancy cutter.
Step 5
Dredge with grated cheese and fry in deep fat to a delicate brown.
Step 6
Remove from the oil and drained on paper towel. Cheese Cutlets is ready to serve.

- Serve at once on fried bread along with French fries and coleslaw.
