    Ingredients

    For Jalebi:

    • 1 cup Plain Flour
    • 2 teaspoon cornflour
    • 1 teaspoon instant yeast
    • 1 teaspoon oil
    • 1/8 teaspoon cardamom Powder
    • 1 tablespoon plain yogurt
    • a pinch of orange food color
    • 3/4 cup Warm Water

    For Sugar Syrup:

    • 1-1/4 cups Sugar
    • 1 cup Water
    • 1 teaspoon lemon juice
    • 1/4 teaspoon cardamom powder
    • few strand of saffron

    Instructions

    • In a bowl, mix together the plain flour, cardamom powder, instant yeast and cornflour.
    • Add yogurt, oil, and Water to the dry ingredients.
    • Mix well until there are no lumps.
    • When done, cover the jalebi batter.
    • Place it in a warm place for 24 hours or overnight, till it is fermented (the batter will rise on fermentation).
    • Once the batter is fermented stir the batter in a cut and fold motion to combine it once again.

    To Make Sugar Syrup:

    • Take a saucepan, add Water, sugar and saffron. Cook for 15 minutes on medium heat.
    • Reduce flame to a low simmer and add Cardamom Powder and Lemon Juice.
    • Stir well.
    • When the sugar becomes thick and stringy of one string consistency.Turn off the heat and keep aside.

    To Make The Jalebi:

    • Preheat oil for frying the jalebi’s.
    • Mix the fermented jalebi batter well and put it in a ketchup or mustard bottle with a spout (zipper bag or piping bag can be used).
    • Squeeze out the batter into the hot oil in approximately 8 small circular motions.
    • Jalebi should about 2-3 inches in diameter.
    • Fry until the bottom side looks golden and flip once to cook the other side.
    • With tongs, remove jalebi, shake off excess oil and place directly into sugar syrup.
    • Allow jalebi to remain in the syrup for just a minute (flipping to coat both sides), shake off excess sugar syrup and place onto a plate. Jalebi is ready to serve. ENJOY!!

    Notes

    • The consistency of the batter should be thick and not watery, similar to the butter cream batter. You should be able to make a shape when piped in a piping bag.
    • Don’t over stir you want the air pockets in the batter to remain. This will help in the jalebi being crisp and also in turn help it absorb the sugar syrup.
    • The oil for frying should be medium hot. If it is too hot, the jalebis will end up burnt.
    • Also make sure you keep the heat on low when you pipe the jalebis into the oil, this will ensure you can see the circles you are piping and also the jalebis will rise up slowly.
    • You can store in an air-tight container. They will remain fresh for 4-5 days un refrigerated.
    • Serve as a dessert after any meal or as a tea time snack.

    Ingredients

    • 1 cup semolina suji
    • 1 cup sugar
    • 1/2 cup clarified butter or ghee
    • 2 green cardamoms
    • 2 cups water
    • 1 cup khoya

    For Garnishing:

    • 2 tablespoon chopped peanuts
    • 2 tablespoon chopped almonds
    • 2 tablespoon chopped pistachios

    Instructions

    • Heat ghee in a pan over medium heat.
    • Add cardamom and semolina (suji) and roast it well.
    • Add sugar and water. Stir continuously till sugar is dissolved.
    • Leave it on low flame for 10 minutes to cook perfectly.
    • When ghee comes on top add khoya.Stir well.
    • Dish it out. Garnish with nuts. Suji Halwa with Khoya is ready to eat. ENJOY!!

    Notes

    1. Replace khoya with 4 tablespoons of dry milk powder and increase amount of sugar.
    2. It can be served as a dessert or as a sweet accompaniment to main dish.
    3. Serve it along with puri’s to entertain the guests.

    Heat oil in a large skillet or wok over medium heat.

    • 250 gm dates
    • 250 gm khoya
    • 50 gm pistachios
    • 50 gm butter
    • 1 cup desiccated coconut
    • 4 tbsp flour
    • 2 tbsp castor sugar
    • 2 tbsp fresh cream
    • 1 tbsp coloured vermicelli
    • 1/2 tsp cardamom powder
    • a pinch of red color
    • a pinch of green color
    • 6 shashlik sticks

     

    Directions:

    1. Place dates in the butter.
    2. Fry for 5-6 minutes or until oil comes out on top.
    3. Now add flour and cook for 5 minutes or until well cooked.
    4. Take this mixture out in a large bowl.
    5. Add khoya, almond, pistachio, cream, castor sugar and ground cardamom.
    6. Mix well.
    7. Make small balls out of the mixture.
    8. Divide desiccated coconut into 3 portions.
    9. Mix a pinch of red food color in one portion.
    10. Mix a pinch of green color in other portion.
    11. Keep the third portion white.
    12. Coat date balls in all the 3 colored desiccated coconut.
    13. Thread onto shashlik sticks.
    14. Sprinkle colored vermicelli on it.
    15. Coconut Date Balls are ready to serve.
    16. Enjoy!

    6. Meanwhile, bring water to a boil in a  large pot.
    7. Add sugar and cardamom powder.
    8. Cook for 30 minutes or until sugar syrup  is thickened.
    9. Put gulab jamun in the sugar syrup.
    10. Cover the pot or until gulab jamun  absorbed the syrup.
    11. Dish it out.
    12. Garnish with silver paper.
    13. Sprinkle almonds and pistachios over the  gulab jamuns.
    14. Delicious Gulab Jamun is ready to serve.

    In a deep pan boil milk and add white flour, Sprouted Wheat flour and then lemon salt.

    Step 2

    Stir lightly.

    Step 3

    Let it boil for 5 minutes.

    Step 4

    Now Paneer will separate and cook on low heat, constantly.

    Step 5

    When paneer mixture is reduced to half, gradually put sugar, keep stirring slowly, otherwise lumps may form.

    Step 6

    Now a smooth mixture will be formed.

    Step 7

    When it is thick, add ghee & cook.

    Step 8

    After 20-25 minutes, it will not stick to the pan & it will leave the sides and ghee.

    Step 9

    Mix almond and walnut & take out & spread it in a dish evenly & cut into the desired shapes like diamond or square pieces.

    Step 10

    Garnish with pistachios and almonds. Multani Sohan Halwa is ready to serve. Enjoy!

    Gajar Ki Barfi is one of my all time favourite deserts, I make it more often than any other sweets. I make it lots of different way and each time it turn out to be good. Carrots are a great veg for desserts, anything made out of it taste yum, like american carrot cake and my carrot raisan cake.

    So Today I came up with Gajar Ki Barfi recipe and believe me it turned out to be good.Method for making carrot barfi, prepared by cooking grated carrots in milk, is same to that of making carrot halwa.     Gajar Ki Barfi

    Ingredients

    • 1/2 kg carrots
    • 250 gm ricotta cheese khoya
    • 1-1/2 cup white sugar
    • 1/2 cup full cream dry milk powder
    • 6 green cardamom
    • 2 tbsp ghee or clarified butter

    For Garnishing

    • 1/4 cup sliced almonds
    • 1/4 cup pistachios
    • 1/4 cup cashew nuts

    Instructions

    Directions

    • Peel carrots then grate properly.
    • Now put grated carrots in a pan.
    • Cook on low heat for 10-15 minutes or until its own water dries.
    • Now put cooked carrots in a chopper.
    • Process until well chopped.
    • In a mixing bowl, combine chopped carrots, ricotta cheese (khoya), dry milk powder, and green cardamoms.
    • Mix well.
    • Place this mixture in the pan.
    • Add ghee or clarified butter in it and fry for 2-3 minutes.
    • Turn the heat off. Add sugar and mix well.
    • Pour this batter in the greased dish.
    • Garnished with almonds and pistachios.
    • Cut into small cubes and leave it for 30 minutes or until set. Gajar ki Barfi is ready to serve.Enjoy!

    Notes

    1. After adding khoya in carrots, keep stirring the mixture at regular intervals. Make sure it doesn’t stick to the bottom of pan.
    2. This burfi will be on the softer side. But taste really yummy.
    3. Instead of setting it as burfi, you can spoon it into bowls and serve as halwa.

    Step 1

    Pre-heat the oven on 275 degree C.

    Step 2

    Lightly greased a 8×8 baking pan with butter and keep aside.

    Step 3

    Remove the crust from all side of bread.

    Step 4

    Put the bread, sugar and cheese (paneer) in a food processor or blender.

    Step 5

    Process until well combined.

    Step 6

    Stir in the cardamom and 1/2 almonds.

    Note: Mixture should be moist, if it appears to be dry add 3 tablespoon of milk.

    Step 7

    Put the mixture on the preapred baking dish. Spread evenly and top with remaining almonds.

    Step 8

    Cover with foil.

    Step 9

    Bake in the preheated oven for 20-25 minutes or until a knife inserted into the center comes out clean.

    Step 10

    Remove from the oven and leave it cover for about 15 minutes so burfi remain moist with the steam.

    Step 11

    When Paneer burfi comes to the room temperature, cut into your desired shapes. Paneer Burfi is ready to serve.

    • 1 cup clarified butter or desi ghee
    • 1/2 cup desiccated coconut
    • 1/2 cup almonds
    • 1/2 cup cashew nuts

    • 1 cup dry Dates
    • 1/2 cup walnuts
    • 1/2 cup raisins
    • 1/2 cup dried apricot
    • 1/2 cup dried figs
    • 1-1/2 cup caster sugar

    Directions:

    Step 1

    Chop cashews, almonds, walnuts, and Pistachio into medium size. Make sure not to crush them.

    Step 2

    Soak Dry Dates, apricots and figs in warm water for 15 minutes.

    Step 3

    Drain out the water and chop the Dates, Apricots and figs.

    Step 4

    Heat a cup of ghee in a pan. Add all these fruits in ghee and mix it well.

    Step 5

    Now add sugar and also mix it properly with a mixture (taste the sugar amount, if need add sugar).

    Step 6

    Remove from the heat, while still hot form 3 cm balls to make about 40 ladoos. Dry Fruit Ladoo are ready to serve. Enjoy!

    Shahi Tukra (Bread Pudding) Recipe

    Ingredients

    • 8 bread slices
    • 1 liter milk
    • 1 cup white sugar
    • 4 tablespoon clarified butter or desi ghee
    • 1 tablespoon raisins
    • 1 tablespoon chopped pistachios
    • 1 tablespoon chopped almonds
    • 1/4 teaspoon ground cardamom elaichi powder

    Instructions

    • Cut the bread slice edges out and cut diagonally.
    • Heat the milk after adding sugar. Stir continuously.
    • Add 1 teaspoon of clarified butter into the milk so that it doesn’t flow over.
    • Let the milk simmer for creamy sweet toast recipe until it is reduced to half.
    • Stir in the raisins, and cardamom powder.
    • Take bread slices and fry them in clarified butter.
    • Soak the fried slices in milk for two minutes.
    • Take out the slices and put into the milk previously prepared.
    • Garnish with pistachios and almonds. Shahi Tukra is ready to serve. Enjoy!!

    Step 1

    Dry roast the sesame seeds in a flat pan on medium heat. Do this till they are a very pale golden color and aromatic.

    Step 2

    Put the jaggery and water in a pan and melt to form a thick syrup.
    Note: To test if it is done drop a little into a bowl of chilled water. If it forms a ball, the syrup is ready. If not, cook some more. Test again till ready.

    Step 3

    Add the toasted sesame seeds to the syrup and mix well.

    Step 4

    Add the ghee and cardamom powder and mix well.

    Step 5

    Take off from heat.

    Step 6

    Grease your palms and when the mixture is still hot (but cool enough to handle) take enough in your hand to form a golf ball-sized lump.

    Step 7

    Roll between your palms till smooth. Lay on a greased plate to cool.

    Step 8

    Repeat till all the mixture is used up. The laddoos will soon harden to candy-like texture.

    Step 9

    Store for up to 10-15 days in an air-tight container. Sesame Ladoo’s are ready to eat. Enjoy!
