    You don’t need to wait for an occasion to savor the sweet and creamy Suji halwa with Khoya as it can be prepared at home in just few minutes and does not require any expert cooking skills.     Ingredients

    • 1 cup semolina suji
    • 1 cup sugar
    • 1/2 cup clarified butter or ghee
    • 2 green cardamoms
    • 2 cups water
    • 1 cup khoya

    For Garnishing:

    • 2 tablespoon chopped peanuts
    • 2 tablespoon chopped almonds
    • 2 tablespoon chopped pistachios

    Instructions

    • Heat ghee in a pan over medium heat.
    • Add cardamom and semolina (suji) and roast it well.
    • Add sugar and water. Stir continuously till sugar is dissolved.
    • Leave it on low flame for 10 minutes to cook perfectly.
    • When ghee comes on top add khoya.Stir well.
    • Dish it out. Garnish with nuts. Suji Halwa with Khoya is ready to eat. ENJOY!!

    Notes

    1. Replace khoya with 4 tablespoons of dry milk powder and increase amount of sugar.
    2. It can be served as a dessert or as a sweet accompaniment to main dish.
    3. Serve it along with puri’s to entertain the guests.

    Peel Loki and grate properly.

    Step 2

    Then put in a pan and cook in steam for 25 minutes or until soft.

    Now add sugar and cook until sugar is dissolved.

    Now add desi ghee or butter and green cardamoms, cook well until ghee comes on top.

    Step 5

    Now add khoya, dry milk powder and cover for 5 minutes.

    Knead to a firm dough without using any water.

    Heat oil or ghee in a deep pan over medium low heat.

    10. Cover the pot or until gulab jamun  absorbed the syrup.
    11. Dish it out.

    Gajar Ki Barfi is one of my all time favourite deserts, I make it more often than any other sweets. I make it lots of different way and each time it turn out to be good. Carrots are a great veg for desserts, anything made out of it taste yum, like american carrot cake and my carrot raisan cake.

    • 1/2 kg carrots
    • 250 gm ricotta cheese khoya
    • 1-1/2 cup white sugar
    • 1/2 cup full cream dry milk powder
    • 6 green cardamom
    • 2 tbsp ghee or clarified butter

    For Garnishing

    • 1/4 cup sliced almonds
    • 1/4 cup pistachios
    • 1/4 cup cashew nuts

    Instructions

    Directions

    • Peel carrots then grate properly.
    • Now put grated carrots in a pan.
    • Cook on low heat for 10-15 minutes or until its own water dries.
    • Now put cooked carrots in a chopper.
    • Process until well chopped.
    • In a mixing bowl, combine chopped carrots, ricotta cheese (khoya), dry milk powder, and green cardamoms.
    • Mix well.
    • Place this mixture in the pan.
    • Add ghee or clarified butter in it and fry for 2-3 minutes.
    • Turn the heat off. Add sugar and mix well.
    • Pour this batter in the greased dish.
    • Garnished with almonds and pistachios.
    • Cut into small cubes and leave it for 30 minutes or until set. Gajar ki Barfi is ready to serve.Enjoy!

    Notes

    1. After adding khoya in carrots, keep stirring the mixture at regular intervals. Make sure it doesn’t stick to the bottom of pan.
    2. This burfi will be on the softer side. But taste really yummy.
    3. Instead of setting it as burfi, you can spoon it into bowls and serve as halwa.

    Gajrela (Carrot Pudding)

    Gajrela is one of the most eaten dessert in winters even throughout the year. Try this gajrela recipe and don’t forget to add lots of khoya as it is one of main ingredients of dessert.

    Ingredients

    • 3 liters milk
    • 1 kg carrots peeled and grated
    • 200 gm khoya optional
    • 1-1/2 cup boiled rice
    • 1 cup sugar or to taste
    • 1/2 cup puree ghee or butter
    • 1/2 cup almonds sliced
    • 1/2 cup walnuts chopped
    • 1/4 cup pistachios chopped
    • 1 tin condensed milk
    • few drops kewra essence
    • 4 green cardamom
    • silver leaves

    Instructions

    Directions

    • Take 2-1/2 milk in a large pot. Boil with the green cardamom.
    • Melt ghee in a separate pan, add grated carrots in it. Cook and stir for 15 minutes or until well cooked.
    • Put boiled rice and remaining milk in the blender. Process until smooth.
    • Pour in the boiled milk. Add carrots. Simmer on low flame for 15 minutes or until the carrots have become soft and rice has almost dissolved.
    • Now add the sugar and the condense milk. Note: since the condense milk is sweet so be careful while adding sugar.
    • Stir in the sliced almond.
    • Keep stirring so that it dosent stick to the bottom.
    • When the gajrela has thicken and the texture has become creamy remove from the flame and add khoya if desired.
    • Take it out in a dish. Garnish with pistachios, walnuts and silver paper.
    • Allow to cool completely.
    • Place in the refrigerator for 4-6 hours or until chilled. Delcious Gajrela is ready to serve. ENJOY!!

    Step 1

    Grease a 9 inch square cake pan with butter. Set aside.

    Step 2

    Dissolve saffron in milk and set aside.

    Step 3

    In a large bow, beat egg yolks with sugar till pale and fluffy.

    Step 4

    Now add ricotta cheese.

    Step 5

    Again beat for 2 minutes or until smooth.

    Step 6

    Stir almonds, cardamom powder, dissolve saffron and vanilla essence in it.

    Step 7

    In a separate bowl, beat egg whites for 3-4 minutes or until thick and creamy.

    Step 8

    Then fold into the Egg yolk batter. Pour this batter into the prepared pan.

    Step 9

    Preheat oven to 350 degree F. Place cake pan in the preheated oven.

    Bake for 30 to 35 minutes or until a toothpick inserted in the centre comes out clean.

    Let it cool for 5 minutes on the wire rack.

    Badami Shahi Tukray is one of a famous delight of South Asian cuisine and as its name suggests its a royal dessert. It can be regarded as continental version of bread pudding.     Badami Shahi Tukray Recipe

    Ingredients

    • 10 bread slices
    • 150 gm sugar
    • 1 packet fresh cream
    • 1-1/2 milk
    • 1/2 cup ricotta cheese khoya
    • 1 tbsp hot milk
    • 1 tbsp almond sliced
    • 1 tbsp pistachios sliced
    • 1 tbsp kewra water
    • 1/2 tsp saffron

    Instructions

    • Preheat oven to 180 degree C.
    • Cut bread sliced into four pieces.
    • Heat ghee in a deep pan.
    • Fry bread slices for 2-3 minutes or until golden.
    • Remove from the oil and arrange in a tray.
    • Dissolve sugar and saffron in 1 cup of milk.
    • Pour this mixture over the fried bread.
    • In a small bowl, combine remaining 1 cup milk with cream and khoya.
    • Mix well.
    • Pour over the soaked bread and leave it for 10 minutes.
    • Sprinkle sliced almonds, pistachios, kewra water over it.
    • Bake for 15 minutes or until well done.
    • Badami Shahi Tukray are ready to serve.
    • Serve chilled.

    • 1/2 cup clarified butter (desi ghee)
    • 1/2 cup khoya
    • 1/2 cup water
    • 2 green cardamoms
    • 4 tablespoon sugar or to taste
    • 10 Cashew nuts, broken
    • 10 Pistachios, chopped

    Wash and soak the lentils for 30 minutes.

    Step 2

    Drain out water and grind into a rough paste.

    Step 3

    Heat ghee in a deep pan over medium heat.

    Step 4

    Fry the lentil paste till light golden in colour.

    Step 5

    Put the sugar and water to boil in another pan.

    Step 6

    Stir continuously till the sugar dissolves completely.

    Step 7

    Boil rapidly for 5 minutes.

    Step 8

    Add to the fried daal. Cook, stiring vigorously till the mixture becomes thick.

    Step 9

    Add cardamom powder and stir well.

    Step 10

    Dish it out. Garnish with khoya, cashew nuts and pistachios. Moong Dal Halwa is ready to serve.
