    Step 1

    Place lamb chunks in a mixing bowl. Add papaya, ginger garlic, lemon juice, tikka masala, cumin, salt and red pepper. Stir to coat evenly. Cover and refrigerate for 4 hours to blend flavors.

    Preheat a grill over medium high heat. Thread meat on skewers. Grill for 15 minutes or until water dry and meat is cooked thorough.

    • 2 pounds chicken, cut into pieces
    • 1/2 onion, finely chopped
    • 1 clove garlic, finely chopped
    • 1/4 cups plain yogurt
    • 2 tbsp lemon juice

    • 1 tsp garam masala powder

    • 1 tbsp raw papaya paste

    Dhuwan Dahi Gosht (Smoked Yogurt Mutton)

    Dhuwan Dahi Gosht is a smoked mutton curry in which mutton is cooked in a spicy onion and creamy yogurt based curry and then infused with the smoke released from a burning piece of charcoal. The charcoal is drizzled with oil or melted butter, which releases a very fragrant smoke which is trapped in the curry giving it a lovely earthy flavours.     • Now add ginger garlic paste and cook for 1-2 minutes.
    • Then add mutton pieces and cook it for 5 minutes.
    • Add red chili, salt, coriander powder, turmeric powder, cumin powder, and mix it well.
    • Now cook it in its own water for few minutes.
    • Beat yogurt with black pepper till it becomes creamy.
    • When the mutton dries its own water then add yogurt mixture and cook it covered for 1 hour or until meat becomes tender.
    • Remove the lid and cook on high flame for 4-5 minutes or until oil comes on top.
    • Sprinkle with garam masala powder, mint leaves, coriander leaves and green chilies.
    • Put a piece of bread in the middle of the pan and then put the burning coal on it.
    • Drop a little bit of oil or butter on burning coal and cover the pan immediately for 3-4 minutes.
    • Discard the coal.
    • Transfer mutton in a serving dish. Dhuwan dahi Gosht is ready to serve.

    Gola kabab Recipe

    A soft Gola kabab that melts in your mouth. It is a barbecue favorite which is so simple, yet appetizing

    Ingredients

    • 1 kg minced meat (preferably grinded 2-3 times at the butchery but without any fat)
    • 4 fried onion crushed
    • 1 egg
    • 4 green chilies
    • 2 teaspoon raw papaya paste
    • 2 tablespoon yogurt
    • 2 tablespoon mint leaves chopped
    • 2 tablespoon coriander leaves chopped
    • 2 tablespoon ginger garlic paste
    • 2 teaspoon chili powder
    • 1 teaspoon cumin seeds roasted and crushed
    • 1 teaspoon garam masala powder
    • 1/1 teaspoon black pepper powder
    • 1/2 teaspoon mac powder
    • 1/2 teaspoon nutmeg powder
    • 1/2 teaspoon cardamom powder
    • salt accordind to taste
    • 1/4 cup butter or desi ghee

    Instructions

    Method

    • Put minced meat, green chilies, ginger garlic paste, fried onion, and raw papaya in a chopper. Grind until well combined.
    • Now add yogurt, egg, mint leaves, coriander, chili powder, black pepper, mac powder, nutmeg, cardamom powder, cumin powder, garam masala powder and salt.
    • Mix well.
    • Leave to marinate for half an hour.
    • Now put on skewers and barbecue 12-15 minutes or until meat is no longer pink from inside, occasionally basting with butter or desi ghee.
    • Alternately, make flat and round (or elongated) kebabs and shallow fry both sides in oil or butter.
    • Transfer into a serving platter. Gola Kabab is ready to serve.

    • 1 kg Beef undercut
    • 1/2 cup onion
    • 6 tablespoon oil
    • 1 tablespoon garlic paste
    • 2 tablespoon lemon juice
    • 1 teaspoon salt
    • 300 gm sheep fat

    Directions:

    Step 1

    Cut beef and sheep fat in cubes.

    Step 2

    Grind onion, lemon juice, garlic and a little bit of water. Drain liquid with muslin cloth.

    Step 3

    Marinate beef and fat in this liquid, also salt and leave for 2 hours.

    Step 4

    Thread on skewers with fat and beef; pour all remaining liquid on skewers.

    Grill them, BBQ or cook on greased grilled pan. Afghani tikka is ready to serve.
