    Loaded with veggies and flavorful chicken, warm spices like cumin, cinnamon, nutmeg and mace and the heat of green chilies this Mix Vegetable Chicken Pulao is a delight to the taste buds in every bite!

    Chicken broth and seasonings are added to give it lots of flavor and moisture. It’s a one-pot meal to prepare and cook in a pot that comes together quickly for a hearty and hot week-night dinner.

    There are some Rice Pulao that are overly packed with gorgeous spices flavors, but this isn’t one of those. This Chicken pulao is a medley of rice, chicken, spices, and vegetables. I just add a tiny sprinkle of green onion as a garnish, just to add a little more color when serving. Pairs perfectly with any raita or curry of your choice.

    What goes in Mix Vegetable Chicken Pulao

    The ingredients you need to make this Mix Vegetable Chicken Pulao are:

    • Best rice for pulao – basmati rice is the best for both flavor and fluffiness. Basmati is a type of long grain rice – the longer the grain, the fluffier the rice. It also has a lovely subtle fragrance that really compliments the flavors in this rice pilaf; You can use brown rice as well for this pulao recipe.
    • Chicken: The juicy thighs or chicken breast are the ideal meat choices for making pulao. You can use either the boneless pieces or the bone-in ones like leg pieces. I personally, like pulao with boneless chicken pieces.
    • Fat – Ideally desi ghee (clarifying butter) is the best choice for making the pulao. I choose the clarified butter (desi ghee) for flavor, but if the aroma and taste of ghee are too over-powering for you, use unsalted butter, coconut oil, or any other cooking oil.
    • Flavor Base – sautéed ginger and onion, to add savouriness;
    • Pulao Spices – I’ve used a combination of cinnamon, cloves, nutmeg, mace, bay leaves and cumin in this Mix Vegetable Chicken Pulao. It’s reminiscent of traditional Middle Eastern flavors but also a festive combination. Feel free to customize this to your own taste;
    • Broth OR water – For extra flavor, I almost always make my pulao with broth. However, water will work just fine as well, though I’d add an extra pinch of each of the spices;
    • Vegetables – Use any vegetables you like here. I like using carrot and green peas for a vibrant color, and potatoes because the flavor melds in nicely with the rice. Cabbage and Capsicum also work well but be aware that they provide a sharper pop of flavor. Broccoli would also be great.
    • Garnishing – I’ve used green onions in this mix vegetable chicken pulao recipe. I adore both the flavor and fresh green color that green onion bring to this pulao. Fresh Coriander and Mint Leaves are also great!

    How to make Mix Vegetable Chicken Pulao:

    Mix Vegetable Chicken Pulao is straight forward to make.

    1. Soak the rice for 30 minutes then drain.
    2. Sauté onion and whole spices in butter, then add the ginger and chicken along with seasoning. Cook for 20 minutes or until chicken is no longer pink and all juices run clear.
    3. Then add carrots, green peas and potatoes cook 5-7 minutes or until vegetables crisp-tender then add chicken broth and bring it to boil. Then add rice cover the pot and let it simmer on medium low flame or until the rice is tender and the liquid has been absorbed. This takes roughly 10 minutes.
    4. Now give a dum for a further 15 minutes. Fluff the rice and dish it out.

    But here are my tips for how to make the best Pulao every time!

    • Soaking Rice or not: Soaking white rice for about half an hour before cooking allows moisture to get to the middle of the kernel. During cooking, the heat transfers quicker to the middle and the rice will be done in about eight minutes, causing less damage to the outside of the kernel. Thus, it’s more evenly cooked, and easier to separate than the non-soaked rice.
    • Right liquid to rice ratio – 1 1/2 Cups of liquid to 1 cup of rice will yield perfectly cooked fluffy rice. Adding too much liquid to cook rice always results in a mushy and sticky pulao
    • Do not peek while rice is cooking! Escaped heat compromises the cooking of the rice;
    • Rest undisturbed – this is the most important step for cooking rice. This is when the rice finishes cooking and becomes fluffy!

    What To Serve With Mix Vegetable Chicken Pulao?

    This is home-style, hearty chicken pulao with delicious flavors full of spices and aroma. I suggest, serve it hot right after dum (steaming) with zeera raita, or mint raita and kachumber salad for best taste. It would also go really well with my Chicken Shorba– a mild flavored desi style chicken stew with a great combination of Oriental spices.

    The Flavorful Mix Vegetable Chicken Pulao Recipe

    Nothing like a good plate of aromatic pulao! This Flavorful Mix Vegetable Chicken Pulao hits all the right spots with its wonderful aroma and exotic flavors! Spice up your week with this flavorful Pulao!

    • 2 pounds Boneless Chicken
    • 3 cups long gran rice (basmati rice)
    • 1/2 cup clarified butter/ desi ghee or oil
    • 1 onion (thinly sliced)
    • 4 inch Ginger piece (thinly sliced)
    • 4 carrots (peeled and cubed)
    • 3 potatoes (peel and cubed)
    • 2 cups Green Peas
    • 2 green onions (thinly sliced( only green part))
    • 4 Green Chilies (thinly sliced)
    • 1 large Cinnamon Stick (daarcheeni)
    • 2 Black Cardamom (bari elachi)
    • 5-6 Cloves ((loong))
    • 2 Bay Leaves (tezpaat)
    • 1 tsp Cumin Seeds ((zeera))
    • 1 tsp nutmeg and mace powder
    • 1/2 tsp Black Peppercorns ((kali mirch))
    • 2 tsp Red Chili Flakes
    • 1 tsp all spice powder (garam Masala powder)
    • 2 tsp salt or according to your taste
    • 6 cups Chicken Broth (Yakhni)
    1. Rinse the basmati rice till the water becomes clear. Then soak it in water for 20 minutes. After soaking, drain the rice and keep it ready.
    2. Take a heavy bottom skillet or pot and melt clarified butter in it.
    3. Add the onions and sauté until they are a deep golden brown. This can take up to 5-7 minutes over a low heat. You will need to check and stir a couple of times. Don’t be tempted to rush this stage because this adds a lot of flavor to the finished dish.
    4. Add the cumin seeds, cinnamon stick, black cardamom, black peppercorns and cloves. Sauté for 2 minutes or until popping and fragrant.
    5. Now add the ginger slices and Chicken, cook for 15-20 minutes or till chicken turns golden brown before adding the vegetables.
    6. Now add Carrot, Potatoes and green Peas. Sauté and cook for 10 minutes or until vegetables are just tender-crisp.
    7. Season with salt, red pepper flakes and some garam masala.
    8. Next, add green chilies and sauté for a second and adjust the seasoning and add more salt if needed.
    9. Add Chicken Stock and once the it starts boiling add the soaked basmati rice and mix it gently.
    10. Now, wait for it to boil again, then cover and simmer on medium low flame or until the rice is tender and the liquid has been absorbed. This takes roughly 10 minutes.
    11. Put the pot covered (give a dum) for a further 15 minutes.
    12. Now, uncover the pot sprinkle green onion (only green part)and fluff the rice gently from the corners
    13. Remove from the heat and dish it out.
    14. Enjoy flavorful Mix Vegetable Chicken Pulao!!

    Chicken Shashlik Sticks

    When a friend blogger posted Chicken Shashlik Sticks recipe on Instagram AND I saw it pinned on Pinterest on the same day, I knew it was a sign that I had to make this. The pictures looked so good, and the recipe seemed too easy to be true (spoiler alert, it isn’t!). So I added it to my weekly meal plan. I finally got a chance to make it yesterday, and I am praising the convenience and tastiness of this dish.

    This is an easy recipe for Tender & Juicy Chicken Shashlik Sticks. The shashlik sticks were loaded with tender pieces of chicken between juicy tomato chunks, sweet peppers and flavorful onions. The chicken was marinated in a sweet and tangy sauce before firing and the sticks were brushed with the leftover marination while they were being cooked. What a great combination of flavors!

    Remove from the grill or griddle and serve immediately. The combination of the juicy chicken bites and colorful veggies with the Shashlik sauce is fantastic! I loved how juicy they turned out.

    Chicken Shashlik Sticks Recipe

    Delicious, tender, juicy Chicken Shashlik Sticks the whole family loves in less than 40 minutes! These Shashlik Sticks are EASY to make and so versatile.

    • 500 gm boneless chicken (cut into cubes)
    • 1 teaspoon ginger garlic paste
    • 1/4 cup tomato ketchup
    • 2 tablespoon soy sauce
    • 1 tablespoon mustard paste
    • 1/2 teaspoon red chili flakes
    • 1/2 teaspoon black pepper
    • salt to taste
    • 1 large green bell pepper (cubed)
    • 1 large tomato (deseeded and cubed)
    • 1 medium onion (cubed)
    • 2 tablespoon olive oil
    • 1 lemon
    • 12 wooden sticks
    1. Marinade chicken cubes in ginger garlic paste, ketchup, soya sauce, mustard paste, salt, black pepper, red flakes.
    2. Leave it for 30 minutes or you put it in fridge for overnight to enhance the flavuor.
    3. First, soak wooden sticks in cold water for five minutes.
    4. Now thread chicken, tomato, green bell pepper and onion in it.
    5. Repeat and fill all your sticks.
    6. Heat a griddle pan or grill and apply a little oil.
    7. Place chicken skewers on hot griddle or grill.
    8. Cook over medium-high heat, turning and brushing with leftover marination sauce often, for 12-15 minutes, until chicken is fully cooked.
    9. Squeeze lemon juice over all sticks when they are ready. Delicious Chicken Shashlik Sticks are ready to serve.

    Serving Suggestions:
    Serve with salad and your favorite dipping sauce for a complete satisfying meal.

    Extra-Bonus Tip: 

    Make sure you don’t use too big of pieces of chicken because you want everything to cook evenly. I have had one too many (okay, two total- but still that is more than necessary) meals ruined because my chicken wasn’t all the way cooked.

    If I ask what my brother wants for dinner, more than likely he will say “sandwiches/burgers.” This recipe is a twist on the usual burgers and packs a big taste punch with the pulled chicken, cheese and barbecue sauce. If you’re anything like me then a burger needs to be covered in cheese, ice-berg leaves, and many slices of olives and tomatoes.

    Next time you’re craving a burger or sandwich, give this recipe a shot. It will become your new favorite! Your Dinner guests are guaranteed to be impressed with this deceptively easy Pulled Chicken Sandwich recipe, which includes a few-ingredient rub and a simple 15-minute sauce that comes together while the chicken oven baked. 

    Did I mention these sandwiches are braised in a special sweet and tangy sauce? Yep! It gives the chicken a deep, rich flavor that intensifies with age, so you can make the chicken a day ahead and your sandwiches will taste even better! Perfection!

    You can serve this chicken in many ways, but I made them in sandwich form because, honestly, what man can resist a toasty bun piled high with tender, juicy pulled chicken, oodles of caramelized onions, tangy barbecue sauce and melty cheese? I can’t think of one! You can serve this on a sandwich as I did, or you can serve on tacos, nachos and burritos, Ole! I’m already thinking of the delicious ways I plan to use this in the future.

    Pulled Chicken Sandwiches Recipe

    For Chicken

    • 500 gm boneless chicken thighs
    • 1 teaspoon grated ginger
    • 1 teaspoon garlic (minced)
    • 1 teaspoon hot sauce
    • 1 teaspoon paprika
    • 1 teaspoon cumin powder
    • 1/4 teaspoon freshly ground (black pepper)
    • salt to taste
    • cooking spray

    For Sauce

    • 1 small onion (minced)
    • 2 teaspoons canola oil
    • 1 tablespoon dark brown sugar
    • 1 teaspoon red chili powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon mustard powder
    • 1/4 teaspoon ground allspice
    • 1/8 teaspoon crushed red chili
    • 1/2 cup tomato ketchup
    • 2 tablespoons apple cider vinegar

    Remaining ingredients

    • 4 burger buns (toasted)
    • 4 slices Mozarella cheese
    • 1/4 cup cheddar cheese (grated)
    • ice burg leaves
    • tomato slices
    • olives as required

    To Make Chicken

    1. Preheat oven to 200 degrees C.
    2. Place chicken in a large bowl. Add ginger, garlic, hot sauce, paprika powder, cumin powder, black pepper and salt.
    3. Rub evenly over the chicken.
    4. Place chicken on an oven grill rack coated with cooking spray, and bake 20 minutes or until the chicken is nicely browned.
    5. Let stand for 5 minutes.
    6. Remove chicken from the oven and shred with two forks and set aside.

    To Prepare Sauce

    1. While chicken cooked, heat oil in a small saucepan over medium heat.
    2. Add onion and cook for 5 minutes or until translucent or, stirring occasionally.
    3. Stir in brown sugar, chili powder, garlic powder, mustard powder, allspice and red chili.
    4. Cook for 30 seconds then stir in the apple cider vinegar and tomato ketchup.
    5. Bring to a boil.
    6. Reduce heat to medium low and let it simmer for 10 minutes or until slightly thickened.
    7. Now Stir in chicken and cook 2 more minutes.

    To Make Pulled Chicken Sandwiches

    1. Place iceberg lettuces and mozzarella slices on the bottom half of each bun.
    2. Divide chicken mixture into 4 equal portions and put it on cheese slices.
    3. Top each bun with grated cheese, tomato slices and olives.
    4. Cover with remaining bun. Delicious Pulled Chicken Sandwiches are ready to serve. ENJOY

    Serve on buns, over fresh greens, or on top of a baked potato for a filling dinner. enjoy 🙂

    Spring seems to be here, which is just amazing – I honestly just want to run around outside all day everyday and enjoy the beautiful sunshine! I love how the world changes when the sun comes out, everyone is so much happier and life just seems brighter and more awesome. It’s one of my favorite season of the year because of it’s colors, flowers,  birds cheering. What a great blessing of Allah (SWT). Alhumdulillah. 

    One of the most important things about this season is the positive impact you can make for your health and well being! So, Today I am sharing a SUPER yummy healthy, nutritious pasta recipe that has become a new family favorite around here (jus 237 calories)!!

    Chicken Tikka Masala Macaroni (Clean Eating Version)

    Normally I’m not a huge pasta lover. But this Chicken Tikka Masala Macaroni is exactly how I like to eat macaroni when I want to follow my clean eating diet and don’t wish to work with many ingredients and want to cook dinner easily! This macaroni is in  Pakistani Style, tossed with chicken, tikka marinade, and fresh veggies.

    Pretty nutritious isn’t it? Honestly, it’s a dish which will satisfy your taste buds and same time will give you a proper nutritious lunch or dinner.

    Yeah, I know you will say’hey, Macaroni is surely not so Asian’, not in clean eating and will give me a doubtful look. But trust me that you will never be disappointed if you will give that Asian twist to any of your dishes.

    This Chicken Tikka Masala Macaroni is so easy and will be made with such ingredients, which you can find at your kitchen any time. So surely, it will be a time save too. For clean eating purpose, please make sure you are using whole grain pasta and Organic chicken. 

    This may not be the more traditional version you’re thinking of, but it’s close enough to get the job done and it definitely qualifies as comfort food.

    Serve this decadent dish with a fresh green salad or some lightly steamed broccoli with a squeeze of lemon. By the way, this dish could just as easily be vegetable tikka mac and cheese if you substitute the chicken with some veggies such as cauliflower, zucchini or eggplant instead.     Chicken Tikka Macaroni (Clean Eating Version)

    Chicken tikka Masala works well with macaroni. Who knew?This Chicken Tikka Masala Macaroni(Clean Eating Version) is exactly how I like to eat macaroni when I don’t wish to work with many ingredients and I want to cook easily!

    • 1 packet whole wheat macaroni
    • 500 gm boneless Organic chicken (cubed)
    • 1 onion (cubed)
    • 1 medium size capsicum (cubed)
    • 1 tablespoon butter or olive oil

    Chicken Tikka Marinade

    • 2 tablespoon fresh yogurt
    • 1 teaspoon ginger garlic powder
    • 1 teaspoon red chilli powder
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon dry mango powder
    • 1/2 teaspoon garam masala powder
    • 1/4 teaspoon red pepper flakes
    • 1 lemon (juice)
    • few drops of hot sauce (optional)
    • salt to taste

    For Garnishing

    • few green chilies (thinly sliced)
    • few coriander leaves (chopped)

    Method

    1. Put marinade ingredients over the chicken cubes. Mix to coat evenly.
    2. Cover and marinade for 20-30 minutes to blend flavors.
    3. Meanwhile,boil macaroni to al dente according to instructions on the package. Keep aside.
    4. Now melt butter in a deep pan or skillet over medium heat.
    5. Stir fry tikka chunks until they start releasing thier juices.
    6. Mix well.
    7. Cover and let it simmer on medium heat for 3-4 minutes or until chicken is tender.
    8. Add green chilies, capsicum, onion and saute for 3-4 minutes.
    9. Add macaroni and stir well to coat evenly.
    10. Turn the heat off and take it out in a serving dish.
    11. Garnish with green chilies, coriander leaves.
    12. Your Chicken Tikka Macaroni is ready.

    Serve with steamed veggies

     What can we say about Chicken Nuggets?   Perfectly delightful titbits, enjoyable as finger food or as part of a snack/meal with fries or potato wedges, or even enclosed in a wrap with some salad and sauce. Try this copycat Chicken Nuggets recipe at home, tastes just like store bought.They are tender and juicy on the inside and crispy on the outside. Give it a try!

    Chicken Nuggets

    • 500 gm boneless chicken breast (cubed)
    • 1 tablespoon soy sauce
    • 1 teaspoon lemon juice
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon mustard powder
    • 1/2 teaspoon red pepper flakes
    • 1/2 teaspoon black pepper powder
    • 1/2 teaspoon salt

    For Breading

    • 1 cup breadcrumbs
    • 1/2 cup flour
    • 2 eggs (beaten with 1 tsp milk)
    • a pinch of salt and pepper
    • salt and pepper
    • oil for deep frying

    Method

    1. Pound chicken cubes with a mallet.
    2. Place chicken pieces in a large bowl. Add soy sauce, mustard powder, garlic powder, lemon juice, salt, pepper and red chili flakes. Toss to coat evenly.
    3. Marinate chicken for at least 30 minutes to blend flavors.
    4. Now, beat eggs with a teaspoon of milk and season with a pinch of salt and pepper.
    5. Place breadcrumbs in a separate bowl.
    6. Place flour in another shallow bowl.
    7. Now roll the chicken cubes in flour mixture. Then dip in the egg and milk mixture, then coat with breadcrumbs.
    8. Heat oil in a deep pan over medium heat.
    9. Fry chicken nuggets in batches for 5-8 minutes or until they turn golden in color.
    10. Remove and drain any excess oil. Delicious Chicken Nuggets are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with Chili Garlic Sauce.

    Today i am bringing you guys an amazing fusion dish. Fusion cooking is a delight! It creates magic and is fairly easy to do. When we combine a number of cuisines in one meal, we get a delicious combination of new tastes and flavors.
    If you love pizza and you love BBQ aroma – then this is totally your kind of Pizza.It sounded AH-mazing!…and it sure was! It was “love at first bite”!

    Chicken tikka is Asian style of barbecued chicken and it tastes fabulous as a topping on pizza. It has become widely popular in Pakistan.

    I made it yesterday for my family and especially for my brother. He is a true pizza lover. He was sad when it got over and even though he knew there was no more pizza left he was talking about how he felt like having this pizza the next day. He still talks about it. And while writing this post, I wish I had some pizza dough so that I could make this again now.
    If you ask me what makes a good pizza, i would definitely say that it is the sauce. I will overlook a ‘meh’ crust if the sauce is good. Yeah, but of course, i would prefer when both the crust and sauce are amazing, but the highlight of a pizza for me is definitely its sauce. And this sauce is just ‘magical perfection’. Talking about the crust, i prefer thin crust pizza over a thick chewy one. And this recipe gives you the perfect crust. The best part is that it is super easy. Hope you guys give this recipe a try and be fall illustrious among your friends and relatives for making finest an admirable Chicken pizza.

    So let the fun begin

    1st Prepare Chicken Tikka:

    Marinate the chicken with the lemon juice, yogurt, ginger garlic paste, roasted cumin powder, garam masala, red chilli powder, tikka masala powder and salt.Marinate for atleast 4 hours ( perferably marinate overnight).

    Now broil on high for 8-10 minutes, turning over once. Or grill till cooked.
    Transfer into a bowl and keep side.

    Note:Sorry I din’t get grilling process pictures as I was on in a hurry to assemble the pizza. 😛

    Now Make Pizza Dough :

    In a large mixing bowl, mix 2 cups flour, yeast, sugar, milk powder and salt.
    Combine warm water, egg and butter in a small bowl.

    Add this in the flour mixture and beat with an electric mixer on High for 3 minutes.
    Using a wooden spoon, stir in as much of the remaining flour as you can. or knead with hand.
    Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic ( 3 to 5 minutes ).
    Shape dough into a ball. Place in a lightly greased bowl, turning once to grease dough surface.

    Cover bowl and let the dough rise in a warm place until double in size ( 50 to 60 minutes ).
    Punch dough down. Turn dough out onto a lightly floured surface.
    Cover and let rest for 10 minutes.

    To Make Pizza Sauce :
    Blend tomato paste, tomato sauce, oregano in a blender.
    Heat 1 teaspoon butter in a pan, add garlic paste & fry for 1 minute.
    Add blended tomato mixture & paprika.
    Cook on medium heat until sauce is thick. Keep aside and let it cool competely.

    To Assemble The Pizza

    Preheat oven to the highest setting on your oven. Mine goes to 250 C degree.
    If you have a pizza stone, place it in the oven. I do not have one, and I use the back of my sheet pan.
    You do not have to preheat your sheet pan. Dust your sheet pan.
    Roll out your pizza dough.
    Drizzle some melted butter on top of your rolled out pizza.
    Prick with fork and let it rest for 10 minutes.
    Spread pizza sauce over it.
    Top generously with the chicken tikka and capsicum.
    Sprinkle cheddar cheese and mozzarella cheese.
    Sprinkle parsley and oregano on top the pizza.
    Bake for 20 minutes or until cheese has melted and crust has cooked.
    Sprinkle some extra parsley. Let cool a little. Cut into slices and serve.

    Lets go to weekend Programming class with this fabulous pizza. I’m sure my class-fellow’s will enjoy this pizza. 🙂

    Recipe Notes:

    1. .FOR PIZZA DOUGH:  If you want to store the extra pizza dough for future use, just oil the dough ball all around and put each ball into separate zippered freezer bag. You can freeze this way for about 2-3 days.The day before you plan on using them, just transfer the dough to the refrigerator. And on the day of usage, remove from fridge, place on a floured counter and gently press the ball into 1/2 inch thickness and let rise for 2 hours.

    FOR PIZZA CRUST: The crust cooks really fast. Mine actually took just 12 minutes. Do not over cook or your crust will become hard. By the time the cheese melts, the crust will get cooked. Even then just check before taking out.

    FOR PIZZA SAUCE: This recipe makes about 1-1/2 cups of pizza sauce, I often have a bit leftover for during the week if I want to make bread pizza pinwheels or homemade pizza rolls. Sometimes, I place the extra sauce in sterilized jars and freeze it until i need it next. I just let it thaw in the refrigerator when I know I am going to need it.

    FOR TIME SAVING: You wont require much time in the kitchen if you prepare the dough and marinate the chicken the night before. The next day, you will just have to grill the chicken, and thaw the dough for 2 hours and assemble the pizza.

    Chicken Tikka Pizza

    For Pizza Dough

    • 2 cups flour
    • 1 egg (beaten)
    • 1/4 cup Luke warm water
    • 1 tablespoon butter
    • 2 tablespoon dry milk powder
    • 2 teaspoon yeast
    • 1 teaspoon sugar
    • 1 teaspoon salt

    For Chicken Tikka

    • 500 gm boneless chicken (cubed)
    • 2 tablespoon plain yogurt
    • 1 tablespoon oil or butter
    • 1 teaspoon ginger garlic paste
    • 1 tablespoon tikka masala powder
    • 1 teaspoon crushed red chili
    • 1 teaspoon salt
    • 1 teaspoon garam masala powder
    • 1/2 teaspoon cumin powder

    For Pizza Topping

    • 1 cup cheddar cheese (grated)
    • 1/2 cup Mozzarella cheese (grated)
    • 4 tablespoon pizza sauce
    • 1/2 teaspoon oregano
    • 1/2 teaspoon dried parsley
    • 1 capsicum (sliced)

    Directions

    To Make Dough

    1. Knead all the dough ingredients with lukewarm water.
    2. Keep covered in an oiled bowl in a warm place for 1 hour or until doubled and well risen.

    To Make Chicken Tikka

    1. Marinate all chicken tikka ingredients for 30 minutes then cook on high heat for 20 minutes or until chicken is tender and all juices run clear.

    To Assemble The Pizza

    1. Roll out the dough onto a floured surface and line a pizza plate with it.
    2. Spread pizza sauce.
    3. Top with chicken tikka, cheeses, oregano and let rise again in a warm place for 20 more minutes.
    4. Sprinkle some dried parsley over it.
    5. Bake at 200 degrees C for 20 minutes or till cheese has melted and dough is cooked.
    6. Remove from the oven and cut into wedges. Chicken Tikka Pizza is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with Chili Sauce.

    Boneless chicken are marinated in soya sauce, egg, cornflour, chili sauce and pepper, then deep fried and then seasoned again in sauces.

    It tastes hot, sweet and sour. A very simple dish to cook, but has lot of unhealthy stuff in the restaurant style dry chilli chicken, like ajinomotto, food color and lot of oil since they are deep fried.

    To make this Boneless chilli chicken, I have not used ajinimotto (chinese salt), no food color, yet tastes good. The quintessential Chinese chicken can now be savoured in the comfort of your homes with these few simple steps.Give it a try!!

    Boneless Chilli Chicken Recipe

    • 500 gm boneless chicken (cut into cubes)
    • 2 egg (lightly beaten)
    • 1/2 cup corn flour
    • 1 teaspoon garlic paste
    • 1 teaspoon ginger paste
    • 1 teaspoon pepper
    • salt to taste
    • Oil for deep frying

    For Sauce

    • 1 onions (thinly sliced)
    • 2 green chillies (thinly sliced)
    • 2 tablespoon vinegar
    • 1 tablespoon soy sauce
    • 1 tablespoon chilli sauce
    • 1/2 teaspoon red chili flakes
    • a pinch of salt or to taste

    For Garnishing

    • green chillies (slit)
    • ginger slices
    • green onion (thinly sliced)

    Method

    1. Place chicken in a large bowl.
    2. Add egg, cornflour, garlic and ginger paste, pepper and salt. Mix well to coat evenly.
    3. Cover and marinate for 30 minutes ot blend flavors.
    4. Heat oil in a deep pan oevr medium heat.
    5. Deep-fry the chicken pieces over high heat to begin with and then lower the heat till chicken is cooked through.
    6. Remove from the oil and drain on absorbent paper.
    7. Heat 2 tablespoon oil in a wok or pan.
    8. Add onions and stir-fry over high heat for 4-5 minutes or until they are translucent.
    9. Add the green chillies and stir a few times.
    10. Then add salt, soy sauce, vinegar, and chilli sauce.
    11. Add fried chicken.
    12. Stir to coat evenly. Cook for 2 minutes or until sauce is thickened.
    13. Dish it out. Garnished with the green chillies and green onion. Delicious Boneless Chilli Chicken is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with Steamed Rice or Fried Rice

    7. Keep stirring.
    8. Cook for 8-10 minute or until turn golden brown.

    10. Now add soya sauce ,vinegar and honey.
    11. Simmer for 5 minutes or until sauce has thickened.
    12. Turn off the heat.
    13. Take it out into a serving dish.
    14. Sprinkle green chilies over it.Rapid Fire Chili Chicken is ready to serve.

    Serving Suggestions:
    Enjoy with boiled rice.

  • Better than Takeout Chinese Chicken Fried Rice Recipe

    It’s my favorite fried rice again ! And I am sure it’s also the favorites of many of you out there. Because no one, simply no one I have heard of who doesn’t fancy a fried rice so far. And today version is further topped with salmon cubes and edamame beans ! And with the plus fact that it’s more protein packed than usual because there’s simply more eggs than rice in this fried rice !

    Also for the fact that I am trying to reduce my rice intake, so this plate of fried rice uses one whole chunk of salmon and 2 full eggs but only contains slightly more than 1/2 cup of short grain rice. So you can visualize yourself enjoying the ingredients rather than eating fried rice then. Lol.

    But I must reiterate that it’s still a fried rice nevertheless because it was intended to be one, and a very tasty one too ! Because salmon and edamame beans are healthy and delicious foods to begin with, so they can never go wrong with the scrambled eggs and Japanese short grain rice.

    Recently I saw someone sharing some thoughts about posting recipes that I find it very meaningful and true. It goes on to say something liked ~ instead of sharing very elaborate recipes which you would need to go to great strengths to produce that excellent food, why not share some down to earth and simple recipes which the majority of us can follow or even improvise to an even better one which would in turn benefit more people. And I am so in agreement with this. So here I am, sharing this quick and fuss free recipe here ! Hope you will like it too !

    Chinese Chicken Fried Rice Recipe

    • 6 cups cooked white rice
    • 3 cups cooked chicken (cut into cubes)
    • 1/2 cup fresh pea pods
    • 3 eggs (lightly beaten)
    • 1 green onion (chopped)
    • 1 large carrots (diced)
    • 1 green bell pepper (diced)
    • 1 red bell pepper (diced)
    • 4 tbsp soy sauce
    • 1 tbsp sesame oil
    • salt and pepper to taste

    Method

    1. Heat oil in a large wok or skillet over medium heat. Crack in eggs, stirring quickly to scramble eggs.

    4. Stir-fry 5 minutes or until vegetables crisp-tender.
    5. Add rice and mix thoroughly.Drizzle with soy sauce.
    6. Cover and cook another 5 minutes or until heated through.

    Chicken Chilli Nuggets Recipe

    • 1 kg boneless chicken
    • 2 bread slices
    • 2 eggs (lightly beaten)
    • 2 tablespoon chopped parsley
    • 2 teaspoon chicken powder
    • 1 teaspoon garlic powder
    • 1 teaspoon red pepper flakes
    • 1 teaspoon black pepper
    • 1 teaspoon hot sauce
    • 1 teaspoon green chili paste (optional)
    • salt according to taste
    • 2 cups bread crumbs (for coating)
    • Oil for deep frying

    Method

    1. Soak bread slices in water or milk for few minutes. Then squeezed properly and keep aside.
    2. Place chicken in a chopper or a food processor.Add bread slices, garlic powder, chicken powder, hot sauce, black pepper, red pepper, salt and parsley.
    3. Cover and keep aside for 30 minutes or until mince is firm.
    4. Shape mixture into nuggets, dip in egg and coat with breadcrumbs.
    5. Heat oil in a deep pan over medium heat.
    6. Fry Chicken Chilli nuggets for 4-5 minutes or until crispy and golden brown.
    7. Remove from the oven and drain on paper towel. Delicious Chicken Chilli Nuggets are ready to serve. ENJOY!!
    Recipe Note’s:
    To Freeze Chicken chilli Nuggets: After coating in bread crumbs, arrange them individually on a tray and place in the refrigerator. Once freeze keep them in freezer bag or in air tight container. When needed fry from frozen. You can freeze these Chicken Nuggets for 1 month.
    To Make Different Shapes of Nuggets: You can also shape mixture into fun shapes nuggets such as squares or squiggles etc.

    Serving Suggestions:
    Serve with Chilli Sauce or any dipping sauce.

    • 500 gm boneless chicken, cubed
    • 1 egg, lightly beaten
    • 2 tablespoon cornflour
    • 1 tablespoon soy sauce
    • 1 teaspoon ginger garlic paste
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon red pepper flakes
    • 1/4 teaspoon sugar (optional)
    • salt to taste
    • oil for frying

    FOR MANCHURIAN SAUCE

    • 1 cup chicken stock (yakhni)
    • 4 tablespoon cooking oil
    • 4 tablespoon tomato ketchup
    • 2 teaspoon tomato puree
    • 1 teaspoon ground ginger
    • 1 teaspoon garlic paste
    • 1 teaspoon sugar
    • 1 teaspoon soy sauce
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon red pepper, crushed
    • salt according to taste
    • 2 teaspoon corn flour mixed with water to make a paste

    For EGG FRIED RICE:

    • 4 cups boiled rice
    • 4 tablespoon cooking oil
    • 4 eggs, lightly beaten
    • 2 spring onions, thinly sliced
    • 1 green pepper, thinly sliced
    • 1 large carrot, thinly sliced or grated
    • 1 cup chopped cabbage
    • 2 teaspoon soy sauce
    • 1 teaspoon black pepper
    • salt according to taste

    TO MAKE MANCHURIAN

    Step 1

    Take a large bowl, add chicken, egg, cornflour, soy sauce, ginger garlic paste, suagr, salt, black and red pepper. Mix well.

    Step 2

    Cover and marinate for 30 minutes to blend flavors.

    Step 3

    Now heat oil in a large pan over medium heat. Fry chicken pieces for 5-7 minutes or until crispy and golden brown.

    Step 4

    Set aside and keep warm.

    Step 5

    Meanwhile, heat 4 tablespoon oil in another wok or pan.

    Step 6

    Add ginger garlic paste. Cook and stir for a minute or until aromatic.

    Step 7

    Now stir in the tomato paste, sugar and tomato ketchup.

    Step 8

    Season with salt and pepper.

    Step 9

    Cook for 5 minutes, then add the chicken stock (yakhni).

    Step 10

    Bring to a boil.

    Step 11

    Reduce the heat to medium low. Let it simmer for 2- 4 minutes

    Step 12

    Now add the corn flour paste in it. Keep stirring.

    Step 13

    Cook for 2 minutes or until sauce is thickened.Now add the fried chicken with a splash of soya sauce.Stir well.

    Step 14

    Adjust the seasoning. Cook and stir another 2 minutes on low heat.

    Step 15

    Turn the heat off and take it out in a warm serving dish.Chicken Manchurian is ready to serve.

    TO MAKE EGG FRIED RICE:

    Step 1

    Beat 4 eggs in a small bowl. Add some salt and pepper according to your taste. Mix well and set aside.

    Step 2

    Heat the 4 tablespoon oil in a large skillet or wok over high heat.

    Step 3

    Pour egg mixture in hot oil. Cook and stir for 2-3 minutes or scramble it.

    Step 4

    Now add green onion, carrot, cabbage and green pepper. Cook and stir for 2-3 minutes.

    Step 5

    Now add the cooked rice. Cook and stir fry for 2 minutes.

    Step 6

    Drizzle soya sauce over it.

    Step 7

    Season with salt and pepper.Mix well.

    Step 8

    Reduce the heat on very low and cover the skillet with a lid.

    Step 9

    Let it cook for 10 minutes or until done.

    Step 10

    Dish it out. Delicious Egg Fried Rice are ready to serve. ENJOY !!

    1. FOR FRIED CHICKEN: Do not over fry the Manchurian Chicken, otherwise chicken will turn so hard.

    • 6 fresh red chilies, cut into strips
    • 4 tbsp oil

    Directions:

    3. After 30 minutes, cook chicken in a wok for 10-12 minutes or until chicken is tender.
    4. Now give coal smoke and cover with a lid.
    5. Remove the coal piece.
    6. Take it out in a bowl, add mayonnaise.
    7. Mix well.
    8. Toast bread slices and place chicken mixture over each bread slice.
    9. Put 2 cucumber pieces and salad leaves on it.
    10. Cover with another bread slice then cut it from the medium.
