    Loaded with veggies and flavorful chicken, warm spices like cumin, cinnamon, nutmeg and mace and the heat of green chilies this Mix Vegetable Chicken Pulao is a delight to the taste buds in every bite!

    Chicken broth and seasonings are added to give it lots of flavor and moisture. It’s a one-pot meal to prepare and cook in a pot that comes together quickly for a hearty and hot week-night dinner.

    There are some Rice Pulao that are overly packed with gorgeous spices flavors, but this isn’t one of those. This Chicken pulao is a medley of rice, chicken, spices, and vegetables. I just add a tiny sprinkle of green onion as a garnish, just to add a little more color when serving. Pairs perfectly with any raita or curry of your choice.

    What goes in Mix Vegetable Chicken Pulao

    The ingredients you need to make this Mix Vegetable Chicken Pulao are:

    • Best rice for pulao – basmati rice is the best for both flavor and fluffiness. Basmati is a type of long grain rice – the longer the grain, the fluffier the rice. It also has a lovely subtle fragrance that really compliments the flavors in this rice pilaf; You can use brown rice as well for this pulao recipe.
    • Chicken: The juicy thighs or chicken breast are the ideal meat choices for making pulao. You can use either the boneless pieces or the bone-in ones like leg pieces. I personally, like pulao with boneless chicken pieces.
    • Fat – Ideally desi ghee (clarifying butter) is the best choice for making the pulao. I choose the clarified butter (desi ghee) for flavor, but if the aroma and taste of ghee are too over-powering for you, use unsalted butter, coconut oil, or any other cooking oil.
    • Flavor Base – sautéed ginger and onion, to add savouriness;
    • Pulao Spices – I’ve used a combination of cinnamon, cloves, nutmeg, mace, bay leaves and cumin in this Mix Vegetable Chicken Pulao. It’s reminiscent of traditional Middle Eastern flavors but also a festive combination. Feel free to customize this to your own taste;
    • Broth OR water – For extra flavor, I almost always make my pulao with broth. However, water will work just fine as well, though I’d add an extra pinch of each of the spices;
    • Vegetables – Use any vegetables you like here. I like using carrot and green peas for a vibrant color, and potatoes because the flavor melds in nicely with the rice. Cabbage and Capsicum also work well but be aware that they provide a sharper pop of flavor. Broccoli would also be great.
    • Garnishing – I’ve used green onions in this mix vegetable chicken pulao recipe. I adore both the flavor and fresh green color that green onion bring to this pulao. Fresh Coriander and Mint Leaves are also great!

    How to make Mix Vegetable Chicken Pulao:

    Mix Vegetable Chicken Pulao is straight forward to make.

    1. Soak the rice for 30 minutes then drain.
    2. Sauté onion and whole spices in butter, then add the ginger and chicken along with seasoning. Cook for 20 minutes or until chicken is no longer pink and all juices run clear.
    3. Then add carrots, green peas and potatoes cook 5-7 minutes or until vegetables crisp-tender then add chicken broth and bring it to boil. Then add rice cover the pot and let it simmer on medium low flame or until the rice is tender and the liquid has been absorbed. This takes roughly 10 minutes.
    4. Now give a dum for a further 15 minutes. Fluff the rice and dish it out.

    But here are my tips for how to make the best Pulao every time!

    • Soaking Rice or not: Soaking white rice for about half an hour before cooking allows moisture to get to the middle of the kernel. During cooking, the heat transfers quicker to the middle and the rice will be done in about eight minutes, causing less damage to the outside of the kernel. Thus, it’s more evenly cooked, and easier to separate than the non-soaked rice.
    • Right liquid to rice ratio – 1 1/2 Cups of liquid to 1 cup of rice will yield perfectly cooked fluffy rice. Adding too much liquid to cook rice always results in a mushy and sticky pulao
    • Do not peek while rice is cooking! Escaped heat compromises the cooking of the rice;
    • Rest undisturbed – this is the most important step for cooking rice. This is when the rice finishes cooking and becomes fluffy!

    What To Serve With Mix Vegetable Chicken Pulao?

    This is home-style, hearty chicken pulao with delicious flavors full of spices and aroma. I suggest, serve it hot right after dum (steaming) with zeera raita, or mint raita and kachumber salad for best taste. It would also go really well with my Chicken Shorba– a mild flavored desi style chicken stew with a great combination of Oriental spices.

    The Flavorful Mix Vegetable Chicken Pulao Recipe

    Nothing like a good plate of aromatic pulao! This Flavorful Mix Vegetable Chicken Pulao hits all the right spots with its wonderful aroma and exotic flavors! Spice up your week with this flavorful Pulao!

    • 2 pounds Boneless Chicken
    • 3 cups long gran rice (basmati rice)
    • 1/2 cup clarified butter/ desi ghee or oil
    • 1 onion (thinly sliced)
    • 4 inch Ginger piece (thinly sliced)
    • 4 carrots (peeled and cubed)
    • 3 potatoes (peel and cubed)
    • 2 cups Green Peas
    • 2 green onions (thinly sliced( only green part))
    • 4 Green Chilies (thinly sliced)
    • 1 large Cinnamon Stick (daarcheeni)
    • 2 Black Cardamom (bari elachi)
    • 5-6 Cloves ((loong))
    • 2 Bay Leaves (tezpaat)
    • 1 tsp Cumin Seeds ((zeera))
    • 1 tsp nutmeg and mace powder
    • 1/2 tsp Black Peppercorns ((kali mirch))
    • 2 tsp Red Chili Flakes
    • 1 tsp all spice powder (garam Masala powder)
    • 2 tsp salt or according to your taste
    • 6 cups Chicken Broth (Yakhni)
    1. Rinse the basmati rice till the water becomes clear. Then soak it in water for 20 minutes. After soaking, drain the rice and keep it ready.
    2. Take a heavy bottom skillet or pot and melt clarified butter in it.
    3. Add the onions and sauté until they are a deep golden brown. This can take up to 5-7 minutes over a low heat. You will need to check and stir a couple of times. Don’t be tempted to rush this stage because this adds a lot of flavor to the finished dish.
    4. Add the cumin seeds, cinnamon stick, black cardamom, black peppercorns and cloves. Sauté for 2 minutes or until popping and fragrant.
    5. Now add the ginger slices and Chicken, cook for 15-20 minutes or till chicken turns golden brown before adding the vegetables.
    6. Now add Carrot, Potatoes and green Peas. Sauté and cook for 10 minutes or until vegetables are just tender-crisp.
    7. Season with salt, red pepper flakes and some garam masala.
    8. Next, add green chilies and sauté for a second and adjust the seasoning and add more salt if needed.
    9. Add Chicken Stock and once the it starts boiling add the soaked basmati rice and mix it gently.
    10. Now, wait for it to boil again, then cover and simmer on medium low flame or until the rice is tender and the liquid has been absorbed. This takes roughly 10 minutes.
    11. Put the pot covered (give a dum) for a further 15 minutes.
    12. Now, uncover the pot sprinkle green onion (only green part)and fluff the rice gently from the corners
    13. Remove from the heat and dish it out.
    14. Enjoy flavorful Mix Vegetable Chicken Pulao!!

    This year, I decided to try more salad recipes to stick to healthy diet. This was the first one on the list and it turned out excellent. Although I had it for lunch, I don’t know if I would recommend this for a main course, but definitely a great dinner salad.

    With only few ingredients, it’s quick and easy to make. The only tricky part is cutting the oranges.

    1. Fruit: Apples & Oranges
    2. Dry Fruit: Raisins & Walnuts
    3. For Garnishing: Mint Leaves
    4. For dressing: Vinegar, Olive Oil, Orange or mosambi juice salt and pepper

    How to Make this Apple and Orange Salad:

    This apple and orange salad is super easy to make. To make this salad, simply:

    1. Prepare the salad dressing: To make the salad dressing recipe, just whisk all of the ingredients together in a bowl (or shake them up in a mason jar) until combined.
    2. Fruit Cutting: Next you need to peel an orange and cut it in small pieces. Then Core the apples and cut them in small pieces as well, equal to the orange pieces.
    3. Toss all of your salad ingredients together: Add the oranges and apples to the bowl with raisins and add about 2/3 of a cup of roughly chopped walnuts to the salad. Drizzle evenly with the dressing, then toss lightly until combined and voila!!
    4. And…serve!  Sprinkle fresh mint leaves and enjoy!  🙂

    1. You can add Pecan or roasted almonds in place of Walnuts.
    2. You can use ground Cinnamon to spice up your Salad.

    Apple Orange Salad Recipe (Healthy & Easy!)

    A light, refreshing Apple and Orange Salad loaded with apples, oranges, raisins and walnuts with a flavorful dressing – perfect as an appetizer or entree!

    For Salad Dressing:

    • 1 tbsp olive oil
    • 1 tbsp vinegar
    • 4 tbsp orange juice (freshly squeezed)
    • 1/4 tsp salt
    • 1/4 tsp black pepper (freshly ground)

    For Salad:

    • 2 oranges (peeled, seeded, sectioned and chopped)
    • 3 red apples (cored and cut into small pieces)
    • 1/2 cup raisins
    • 1/2 cup walnuts (roughly chopped)
    • few mint leaves (chopped (optional))
    1. In a large bowl, whisk the olive oil, vinegar, orange juice, salt and black pepper.
    2. Set it aside.
    3. Peel the orange and cut it into small pieces.
    4. Core the apples and cut them in small pieces.
    5. Add the oranges, apples, walnuts to the bowl with raisins.
    6. Toss everything together very well.
    7. Adjust the seasoning.
    8. If desired, garnish with fresh mint leaves.
    9. Delicious Apple and Orange Salad is ready to serve.

    Imagine if you will that a lamb meat patty married a corn fritter and they had babies = Lamb corn Fritters. I’m not sure why I hadn’t thought of this sooner. They are healthier than regular lamb fritters; being half meat and half veggie and they are super juicy and flavorful.

    Here’s a healthy recipe for Lamb Corn Fritters – without deep frying! Because nobody likes soggy fritters. And nobody wants to deal with a vat of oil tonight! Dinner really doesn’t get any easier than this! These Lamb Corn Fritters are so easy, you can practically whip up these juicy fritters in no time!

    These fritters are ideal to make with fresh corn cut off the cob, but can be made with canned or frozen corn. Serve for breakfast, lunch, dinner!

    What you need to make really great, Lamb Corn Fritters

    Here’s what you need to make these Lamb Corn fritters:

    Ground Lamb: I like to grind my lamb at a ratio of about 80% lean. I feel this brings out the most flavor. The best places to buy fresh ground lamb is your local butcher shop. If you want to use lamb, ask your butcher to grind it for you or, to make your own ground lamb, start with a lean cut. You can also use lean ground beef or turkey instead.
    Corn: as noted above, fresh is better for both flavor and crispiness. But canned and frozen work too, you just need to make an effort to dry it out as much as you can.
    Egg: egg to bind the meat and corns. It will help to get mince to stick together better.
    Ricotta Cheese: – for a good hit of savory flavor AND to make the fritters extra juicy and flavorful!
    Green Masala: Green onion, green chilies and coriander – for a hit of freshness.
    Seasoning: salt, black pepper and red pepper flakes (my fav)
    Olive oil: to sauté

    How to make Lamb Corn Fritters

    And here’s how to make them.

    1. Mixing: Place lamb mince and corn in a bowl. Then add 1 lb fresh ground lamb. 1 egg, finely sliced green chilies, green onions, fresh coriander, salt, black pepper, red pepper and 1 cup ricotta cheese. Mix until well combined. Let it rest for 15 minutes.
    2. Cooking: Heat a large non-stick skillet over medium heat and add 2 Tbsp. extra light olive oil. Place a heaping tablespoon of the mixture into your hand and form a oval or round shaped patty about 1/3-inch thick. Cook over medium heat uncovered for 5-7 minutes, then flip, cover and cook for another 5 minutes more or until meat cooked through. Add more oil to the pan as needed for subsequent batches.
    3. The fritters take a good 12-15 minutes to cook so they’re golden on the outside and for the raw meat to cook through (remember, these are fritters so they are not very thick).
    4. Pro Tip: You can use an ice cream scooper with a lever to scoop the batter into the pan. Then flatten using a greased spatula! But don’t crowd the skillet, adding more oil to pan if required.

    3. Season with salt, red pepper flakes and black pepper, mixing to a smooth batter. Set aside 15 minutes.
    4. Heat a large non-stick pan over medium heat and add 2 tbsp extra light olive oil.
    5. Place a heaping tablespoon of the mixture into your hand and form a round or oval patty about 1/3-inch thick.

    6. Cook over medium heat uncovered for 5-7 minutes, then flip, cover and cook for another 5 minutes more or until cooked through.
    7. Repeat with 2 or 3 more, but don’t crowd the skillet, adding more oil to pan if required.
    8. Take it out in a serving platter.
    9. Delicious Lamb Corn Fritters are ready to serve.

    Serve with salad leaves, tomato relish and sauce of choice for dunking!

    Best Ever Roasted Lamb Burgers Recipe

    Do something different on burger night…take it to another level ! If you've made roast lamb but don't know what to do with the leftovers, then make this best Ever Roasted Lamb Burgers Recipe. This burger is next-level!

    • 2 burger buns
    • 350 gm lamb roast (cooked for recipe click here)
    • 1 onion (cut into rings)
    • 1 cucumber (cut thin slices)
    • 1 to mato (cut into thin slices)
    • 1/2 red pepper (cut into thin slices)
    • 1/2 green pepper (cut into thin slices)
    • salad leaves

    For Sauce:

    • 1 tbsp ketchup
    • 2 tbsp chili garlic sauce
    • 2 tbsp mayonnaise
    • 1 tbsp chopped red bell pepper
    1. Preheat the leftover lamb roast and roughly shred the meat with a fork.
    2. Cut the burger buns into halves and toast them.
    3. In a small bowl, mix together the ketchup, chili garlic sauce, mayonnaise and chopped red bell pepper.
    4. Set aside.
    5. Spread the sauce over the bottom of bun.
    6. Arrange the salad leaves evenly on the burger bun.
    7. Top the base of the burgers with shredded meat and sliced onions, tomato slice, cucumber.
    8. Add a tablespoon of prepared sauce to each burger.
    9. Top with the red and green bell pepper slices and cover with other half of the burger.
    10. Cut into halves.

    Why I like these Stuffed Chicken Buns?

    I love all breads but I have a special soft corner for stuffed buns and bread rolls. It makes for sumptuous snacks and the possibilities are endless. Stuffed buns are my favorite gateway to finish up leftovers and clear out the refrigerator. Though I did not use leftovers for this one since I had guests over but feel free to go where your imagination takes you.

    On the outside, these golden buns resemble ordinary dinner rolls. But one bite reveals the tasty filling inside! You know that saying: It’s not what is outside but its what is inside that counts? Yeah, well its kind of the case here. Only that the outside is just as good. Soft and fluffy Stuffed Chicken buns with the most unexpected surprise ever!

    I just love it when something looks so innocent and unassuming and then when you bite into it! Hits you with an unexpected but most pleasant burst of flavor.

    Ingredients in Stuffed Chicken Buns Recipe?

    • For Dough:  flour, dry milk powder, sugar, yeast, salt, egg, oil, warm milk
    • Creamy Chicken Filling: boiled chicken shredded, butter, onion, plain flour, milk, Cheddar Cheese, black pepper, red pepper, salt , few coriander and mint leaves.
    • For Buns Topping: Egg white, sesame seeds for sprinkling, melted butter for brushing

    How to Bake Perfect Stuffed Chicken Buns every time!

    1. Dough: These stuffed buns are an easy bake with only a single rise needed for the dough. That makes it a comparatively quicker snack. When making anything with yeast, including these buns, let the dough rise to the point the recipe says it should, e.g., “Let the dough rise till it’s doubled in bulk.” Rising times are only a guide; there are so many variables in yeast baking (how you knead the dough; what kind of yeast you use) that it’s impossible to say that bread dough will ALWAYS double in bulk in a specific amount of time.
    2. Stuffing: They prepared a cheesy chicken filling and stuff into these soft buns and life will be so much simpler for you. You can fill up your buns with lots of different things. I like to add some mushrooms and olives to mine, but you can use any kind of vegetables, meat stuffing you prefer! Pizza sauce would be another great addition. Or throw in some fresh herbs. Oh, the possibilities are endless!
    3. Shaping: Shape them as per your liking and bake. For slightly smaller buns, divide the dough into 12 pieces instead of 10. Bake the buns for 12 to 15 minutes, instead of 15 to 18 minutes. And how about “slider buns” — about 3″ in diameter? Divide the dough into 24 pieces, and bake for 12 to 15 minutes. Proceed with the recipe as written.
    4. Alternative way of Shaping: What’s another easy way to shape buns, besides rolling them into balls and flattening? Gently deflate the dough, and form it into a smooth 8″ log. Slice the log as though you were slicing cinnamon buns. Gently pull each slice into a circle.
    5. Brushing: Brushing buns with melted butter will give them a soft, light golden crust. Brushing with an egg-white wash (1 egg white beaten with 1/4 cup water) will give them a shinier, darker crust. For seeded buns, brush with the egg wash; it’ll make the seeds adhere. And, feel free to add the extra yolk to the dough, reserving the white for the wash.

    Stuffed Chicken Buns Recipe

    There’s nothing like Stuffed Chicken Buns: perfectly baked ,soft, warm buns stuffed with hot savory chicken filling. Simply delicious and so hard to resist. You'll amaze your family and friends with my easy to make Stuffed Chicken Buns.

    For Dough:

    • 2-1/2 cup flour
    • 3 tbsp dry milk powder
    • 2 tbsp sugar
    • 2-1/4 teaspoon yeast
    • 1 teaspoon salt
    • 1 egg
    • 1/2 cup oil
    • 1/2 cup warm milk

    For the filling:

    • 1-1/2 cups boiled chicken (shredded)
    • 3 tbsp Butter or Oil
    • 1 medium onion (finely chopped)
    • 1 tbsp plain flour (maida)
    • 1 cup Milk
    • 1 cup Cheddar Cheese
    • 1 tsp black pepper (crushed)
    • 1 tsp red pepper (crushed)
    • Salt to taste
    • few coriander and mint leaves (chopped)

    For Buns Topping

    • 1 Egg white (for egg wash)
    • White sesame seeds for sprinkling
    • 2 tbsp melted butter (for brushing)

    To Make The Dough:

    1. Sieve the flour, salt and dry milk powder in a large mixing bowl. Add sugar, instant yeast, and milk powder then add in an egg, oil and warm milk. Knead almost 10 minutes or till it forms a soft smooth dough. If required add a few splashes more of warm milk.

    2. Place the dough in a greased bowl and apply oil on the dough. Cover with a damp towel and keep in a warm corner of your kitchen to rise for 1 hour or till the dough is double in volume.

    3. Punch down the dough lightly using your palm and divide them equally.

    To Make The Chicken Filling:

    1. Meanwhile dough is rising, prepare your buns filling. Melt butter in a pan over medium heat.
    2. Saute onion in butter until translucent. Now add flour and cook for 2-3 minutes or till it gives out a nice aroma. Now add milk and cook for 4-5 minutes or until it turned into nice creamy thickened texture.

    3. Add the shredded chicken and stir well. Season with salt, red pepper and black pepper.

    4. Sprinkle fresh coriander leaves and 1/2 cup cheddar cheese.Stir until well combined and remove from the heat. Let it cool completely.

    To Assemble the Stuffed Chicken Buns:

    1. Preheat the oven at 180 degree C for 15 minutes before baking.
    2. Once the dough has risen, take a small portion of the dough and flatten it on Spider Strainer. Place a spoonful of the chicken stuffing in the center, top off with a little cheddar cheese and pull the edges together to seal and roll the dough into a smooth ball.
    3. Place the dough ball with seam side down on a greased baking tray. Likewise shape all the buns with stuffing and place on the baking tray an inch apart from each other.

    4. Now brush the top of all buns with egg wash and sprinkle sesame seeds on top. Cover with a cloth and let it prove for another 20 minutes.

    5. Bake in a preheated oven at 180°C for 20 minutes. Remove from the oven and brush the buns top with butter (it will gives them soft texture). Delicious Stuffed Chicken Buns are ready to serve. ENJOY 🙂

    Serve with Chili Garlic Sauce or favorite Dipping Sauce and Tea or Lemonade.

    The Low-Carb Solution to Egg in a Hole Recipe

    Can’t decide whether to make a grilled kabab or an egg in a hole? Make both!
    Two of my favorite food groups—eggs and toast—unite in this take on the playful dish also known as egg in a hole, Egg in a Basket or Egg in a Boat or, more simply, egg in toast. I fancy it up by filling the bread center with mince crust and topping with basil or chili flakes. And It came out so delicious!

    Egg in-a-hole – Look at that perfect texture !!

    For this recipe, I used a normal mince kabab mixture for filling the bread , to keep it low carb. The outside was crunchy and crispy and inside was so juicy and tasted so good with the egg in the middle. A nice way to add some more protein to a sandwich, while also providing something of a sauce from the egg yolk (depending on how you cook your egg). It’s adds just a little oomph of flavor to the sandwich.

    Watch carefully as you cook the mince crust, and don’t raise the heat higher than medium: The goal is for the mince crust to brown and the egg to set simultaneously. Save the crust center for making breadcrumbs.

    Also how well the eggs must be cooked is a personal choice. Some like over easy, sunnyside up or completely cooked through. No matter how you make it, this will remain a favorite breakfast option passed on for many generations to come. When you make this cute breakfast-for-dinner recipe, you can vary it by using cheese, vegetables or sauteed Spinach in place of the mince filling.

    This Low-Carb Solution to Egg in a Hole Recipe can be an excellent addition to a healthy weight loss diet. They’re not only low-carb and low in calories but also high in protein and fiber that keep you feeling full.

    Low Carb Egg In a Hole Recipe

    Whether you call it Egg in a Hole, Egg in a Basket or Egg in a Boat, this easy healthy breakfast is sure to delight. Serve with a side of fruit for a wholesome, satisfying start to the day.

    • 1 slice Multigrain bread ((You can use your favorite kind of bread))
    • 1/4 cup Mince Kabab (You can get recipe from here )
    • 1 teaspoon olive oil
    • 1 whole egg
    • few red pepper flakes
    • a pinch of dried basil (optional)
    • a pinch of salt
    • Optional: shredded cheese (I like cheddar)
    1. Take a thick slice of bread (I like the multigrain bread because of its texture and flavor, but you can use whole wheat or white bread).
    2. Cut the middle of the bread from the slice leaving a ½-inch (1 cm) border of crust.
    3. Stuff the bread slice hole with some Mince Kabab filling.
    4. Heat a frying pan over medium-high heat.
    5. Put your bread over it and cook on the mince side.
    6. Cover and let it cook until it is light golden, a couple minutes.
    7. Flip your bread slice.
    8. Now with a spatula or spoon make a hole inside of the bread.
    9. Then carefully crack your egg into the hole on top of the mince topping to make sure the egg does not spill over.
    10. Season with salt and red pepper and a sprinkle of basil.
    11. Cover the pan and Cook until the egg is pretty set on the bottom, another minute or so.
    12. Cook until the other side of the egg white is set but the middle is still runny.
    13. You can add some cheese.
    14. Transfer to a plate.

    15. Your Delicious Egg-in-a Hole is ready to eat.

    16. Enjoy!

Try making these if you’re looking for the ultimate comfort food.

    I’ve made it twice in the last week, once for bringing life to the original recipe concept and taking some photos, and once for “recipe testing”. Aka licking the filling and testing the dough. Again. More. Soft Buns In my mouth. I like this recipe a lot, you guys.

    Unlike store bought buns, these are healthy and homemade, and can be packed with any filling of your choice, be it cheese, chicken, lamb or mutton, mushrooms (choices are endless). These vegetable stuffed buns are a fun way of using leftover dough and any stuffing of your choice. These can be eaten for tea or breakfast or a satisfying meal with some salad. It works well as a snack for children to take to school, or to simply enjoy with a favorite drink at any time of the day.

    These stuffed buns succeeds in titillating your senses with its soft, tenderness, and that fresh sesame-ish flavour makes these buns more appetizing. Bake Stuffed buns not because you must but because it tastes so yummy that you would regret not making it at your earliest once you devour its first bite! Having said that, I am not dropping more clues, get ready with some all purpose flour and some basic ingredients (filling of your choice) and get ready to bake fresh stuffed buns this weekend!     Vegetable Stuffed Buns Recipe

     So warm, soft, Fluffy, fragrant and stuffed with fresh veggies – no can or frozen veggies, all real – totally yummy  ( + point is it contains only 200 calories). Try making these if you’re looking for the ultimate comfort food.

    For Buns Dough

    • 3 1/2 cups all-purpose flour
    • 1 cup warm milk
    • 2 tablespoon dry milk powder
    • 1/2 cup water (might use less)
    • 1 egg (lightly beaten)
    • 2 teaspoon sugar sugar
    • 4 tablespoon olive oil (you can use simple cooking oil)
    • 4 tablespoon melted butter
    • 1-1/2 teaspoon instant yeast
    • 1 teaspoon salt

    For Buns Stuffing

    • 2 boiled potatoes
    • 1 cup shredded cabbage
    • 1/2 cup sweet corns
    • 1/2 cup fresh green peas (boiled)
    • 2 green onion (thinly sliced)
    • 2 green bell pepper (thinly sliced)
    • 2 carrots (thinly sliced)
    • 1 teaspoon hot pepper sauce
    • 2 teaspoon soy sauce
    • 1 teaspoon herb seasoning (optional (its my fav))
    • 1/2 teaspoon black pepper (freshly ground)
    • salt to taste
    • 1 teaspoon butter

    Other Ingredients

    • 2 tablespoon sesame seeds (i used white + black seeds)
    • 1 egg yolk beaten with a little milk (for brushing the buns before baking)
    • melted butter (for brushing)
    1. In a small bowl, add warm milk, sugar, salt and yeast and stir until the sugar and yeast dissolves and rest for 10 minutes.
    2. Sieve the flour in a large mixing bowl.
    3. Then add dry milk, oil, melted butter and egg in it.
    4. Mix well.
    5. Add the yeast mixture in the flour and knead for few minutes.
    6. Start kneading together and gradually add the water a little at a time.
    7. You may not need to use all the water, so add it sparingly until your dough comes together and is nice and soft.
    8. Knead for a good 8-10 minutes. The more you knead the dough, the softer the buns will be.
    9. Touch a bit of oil with your fingertips and apply all over the ball of dough and trasnfer into a bowl.
    10. Cover the dough with wet cloth and set aside for 1 hour for it to double in size.
    11. Meanwhile, prepare your buns stuffing.
    12. Peel potatoes and mash them roughly.
    13. Melt 1 teaspoon butter in a frying pan over medium heat.
    14. Add green peas, carrots and sweet corns. Cook and stir for few minutes until crispy-tender.
    15. Now add green pepper, cabbage and green onions, cook for 2-3 minutes.
    16. Add potatoes and a splash of soy sauce and hot sauce.
    17. Season with salt and pepper.
    18. Cook and stir for 2 more minutes or until all done.
    19. Sprinkle the herb seasoning over it and turn the heat off and let it cool down completely.
    20. Once dough risen, Punch it down and divide it into 18 small balls ( depending on the size of buns your would like).
    21. Line the baking tray with baking sheets.
    22. Roll out each ball into a circle.
    23. Place vegetable stufing in the center, then ball it up and seal the edges.
    24. Place it on the prepared baking tray and repeat it with remaining dough.
    25. Cover the tray with a light cloth and let them rose for 30 minutes.
    26. Now brush each buns with beaten egg.
    27. Then sprinkle some sesame seeds all over.
    28. Bake in the pre-heated (180 degree C) oven for 18-20 minutes or until buns turn golden brown.
    29. Remove from the oven.
    30. Brush butter on top of the buns and cover them with a cloth so they get really soft.
    31. Serve warm and enjoy.

    Serving Suggestions:
    Serve warm with coffee or tea.

    Extra Bonus Tips:

    1. It can last  for a week in an air tight container in the refrigerator or it can be frozen for longer. Any time you wish to serve these heat them in the microwave for 15-20 seconds or preheat in the oven for 2-3 minutes and enjoy the warm, soft vegetable-y stuffed buns!
    2. What I really love is that once you have this basic idea, the variety of stuffing you can make for these buns is absolutely endless.

    Every day the same question pops up “What to make for Lunch today?” and when the same question is asked on a weekend the response has to be something that’s not the usual and really delicious. 

    What better way to spice up the weekend lunch than with a Kebab Paratha Rolls stuffed with flavorful hot and spicy sauces and bright colorful vegetables pickles.

    It’s the age of one pot meal and who says one pot meal has to be a rice dish. It can be bread based dish as well. I believe wraps or rolls loaded with meat, kebabs and veggies also come in the genre of one pot meal and why not, bread gives us starch while veggies help bring a balance diet while meat gives us protein.

    The best thing about it is, that its a wholesome meal and can be prepared with leftover kebab’s too. Its as simple as assembling it all together (if that makes sense).

    The ingredients you need to make this Hot and Spicy Kebab Paratha Rolls are:

    For Kebabs: meat, onion, ginger, green chilies, fresh coriander, red chili powder, cumin powder, coriander powder, all spices powder, salt, butter for busting
    For Parathas:  whole wheat flour, white flour, Salt, clarified butter, water for kneading and black seeds (optional)
    For Topping & Stuffing: mayo garlic sauce, mint chutney, pickle cucumber, onion, carrot, green chili, few salad leaves, red chili flakes (optional)

    How to make Hot and Spicy Kebab Paratha Rollso:

    Hot and Spicy Kebab Paratha Rolls are straight forward to make. Prepared kebabs then make paratha’s and stuff with kebabs, sauce and topping.
    Pretty simple!!

    For this recipe, I’ve prepared the homemade Paratha’s but you can use store bought frozen paratha in case you don’t feel like making your own and keeping it all quick and simple.

    You can pack them and stuff your lunch box too making it a totally mess free meal for yourself. As with all wraps, you can use filling of your choice. For me it had to be this kebab paratha rolls, with some garlic sauce, minty yogurt chutney and  colorful pickle that were wrapped in the paratha rolls and gave those hot, zingy and spicy flavors that were sure to tickle those taste buds!

    Hot and Spicy Kebab Paratha Rolls Recipe

    What better way to spice up the weekend lunch than with a Kebab Paratha Rolls stuffed with flavorful hot and spicy sauces and colorful veggies.

    For Kebabs

    • 300 gm mince meat
    • 1 large onion (minced)
    • 1 inch piece of ginger (crushed)
    • 4 green chilies (chopped)
    • 1/4 bunch fresh coriander
    • 1 teaspoon red chili powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon all spices powder (garam masala)
    • salt to taste
    • 2 tablespoon oil or butter for busting

    For Parathas

    • 1 cup whole wheat flour
    • 1 cup white flour
    • Salt to taste
    • 2 tablespoon clarified butter (desi ghee)
    • Water as required
    • black seeds as required (optional)

    For Paratha Roll Topping & Stuffing

    • 4 tablespoon mayo garlic sauce
    • 4 tablespoon mint yogurt chutney
    • 1 cup pickle (cucumber, onion, carrot, green chili etc)
    • few salad leaves
    • chili flakes ((optional))

    Method

    To Make Kebab’s

    1. Put mince, onion, green chilies, ginger, coriander, red chili, cumin seeds, salt and all spices in a chopper. Process until well combined.
    2. Now make shape of long seekh kebabs and set aside.
    3. Heat 2 tablespoon oil or butter in a pan over medium heat.
    4. Shallow fry the kebabs covered on low heat for 10-15 minutes or until all the water of mince dries and kebabs are done.

    To Make Parathas

    1. Place flours in a large bowl. Add ghee and salt in it. Knead a soft dough with water.
    2. Let it rest for 1 hour at room temperature.
    3. Preheat the iron griddle or pan over low heat.
    4. Now make round shape parathas with the help of rolling pin.
    5. Sprinkle black seeds over it and press gently.
    6. Cook parathas with butter on medium heat until crispy.
    7. Take it out in a plate and set aside.

    To Assemble kebab Paratha Roll

    1. Now place paratha’s on a clean surface.
    2. Spread mayo garlic sauce over the paratha’s.
    3. Put salad leaves and 2 seekh kebabs over the each paratha.
    4. Pour minty yogurt chutney over it.

    5. Sprinkle pickles and chili flakes (if like it). Roll up tightly and secure with wooden pick.

    6. Now Cut the paratha roll from the center. Hot and Spicy Kebab Paratha Roll is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve hot with sauce and salad of your choice along with Lemonade.

So Today, I come up with an innovative way to present chapati’s, that’s filling, nutritious and super yummy.

    One of my favorite things to eat is a roll stuffed with goodies.I enjoy food that I can eat with my hands and this dish is no exception. It’s very easy to make and delicious to eat. These chapati rolls is excellent for suhoor meals that can be made quickly with the left over chapati’s.

    Also Perfect to bring on a trip or a picnic as they are easy to wrap and taste just as great when eaten lukewarm or chilled. Give a try and enjoy.

    Chapati Rolls Stuffed with Mince Recipe

    A simple and nutritious snack, chapati (flatbread) stuffed with spicy mince filling, salad and chutney, perfect for busy morning breakfast and also lunch.

    For Mince Stuffing

    • 300 gm ground mince
    • 2 medium sized onions (finely chopped)
    • 2 garlic cloves (minced)
    • 1 tablespoon chopped ginger
    • 1 tablespoon cooking oil or butter
    • 2 green chilies (finely chopped)
    • 2 tablespoon chili garlic sauce
    • 1 tablespoon soy sauce
    • 1/2 teaspoon red pepper flakes
    • Salt to taste
    • few mint leaves (finely chopped)
    • few corinader leaves (finely chopped)

    For Chapati Rolls

    • 4 chapati’s {check chapati recipe here}
    • 4 tablespoon Mint Tamarind chutney {check chapati recipe here}
    • 4 tablespoon mayonnaise
    • thinly sliced salad veggies {like cucumber (cabbage,tomato,onion, carrot})
    • french fries

    Method

    1. Heat oil or butter in a large pan over medium high heat.
    2. Saute onion for 2-3 minutes. When the onions have softened up but not yet golden in colour add ginger and garlic, and cook for 1 minute.
    3. Then add mince and let it drain out most of the moisture for about 4-5 minutes.
    4. Add green chilies, red pepper and salt.
    5. Reduce the heat on low and cover the pan. Let it simmer for 25 minutes or until mince is cooked thorough and all water dries up.
    6. Remove the lid and cook on high flame for 3-4 minutes then add chili garlic sauce and soy sauce.
    7. Cook 2 minutes longer then turn the heat off.
    8. Sprinkle mint and coriander leaves.

    To Assemble Chapati Rolls

    1. Reheat chapati’s.
    2. Place chapati on a clean board, spread 1 tablespoon mayonnaise on it. Then add the mince stuffing across the center.
    3. Drizzle some mint chutney.
    4. Sprinkle veggie salad and roll up the chapati.
    5. Secure with toothpick. Don’t worry if it gets a little messy eating that’s just a art of the fun of eating a roll. ENJOY 🙂

    Serving Suggestions:
    Serve with salad, french fries and chutney.
    Or you can serve everything separate and let your guests or family prepare their own stuffed chapati rolls.

     

    Recipe Note’s:

    1. You can also stuff these chapati rolls with chicken or beef mince, or colorful veggies.
    2. If you prepare the chapatis ahead make sure to store them in an airtight container. If not they will become very hard and dry.

    This is a simplest kebab curry you can imagine. It can be made in a jiffy and taste great with either rice or roti. So good.

    Don’t skip the papaya paste . That’s the one of two ingredients that make the kabab so melt in mouth . The other ingredient is lamb fat . In authentic recipe kebab is used for this kabab , but beef would do too . If you can’t find the mutton or beef fat , don’t worry substitute it with ghee .

    Ingredients

    For kebab

    • 500 gm lamb mince (keema)
    • 200 gm lamb fat
    • 1 large red onion (finely chopped)
    • 4 cloves garlic (finely chopped)
    • 5 green chillies
    • 2 tablespoon grated ginger
    • 2 tablespoon chopped coriander
    • 1 tablespoon papaya paste
    • 1/2 teaspoon red chili powder or to taste
    • 1/2 teaspoon cumin powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon garam masala powder
    • 1/2 teaspoon black pepper (freshly ground)
    • salt to taste
    • 2 tablespoon oil or melted butter

    For Gravy

    • 1/2 cup oil or ghee
    • 2 medium red onions (finely chopped)
    • 2 to matoes (finely chopped)
    • 1/2 cup plain yogurt
    • 1 teaspoon ginger garlic paste
    • 2 green chillies
    • 1 teaspoon red chili powder
    • 1/4 teaspoon coriander powder
    • 1/4 teaspoon turmeric powder
    • salt to taste

    For Garnishing

    • few coriander leaves
    • 1 inch piece of ginger (cut into julienne)
    • 2 green chillies (thinly sliced)

    Directions

    To Make Kebabs

    1. Place mince(keema) and fat in a food processor or chopper. Add red onion, papaya paste, garlic, green chillies, ginger, coriander, red chili powder, cumin powder, coriander powder, garam masala powder, black pepper and salt.
    2. Process until well combined.
    3. Take it out in a bowl and make kebab’s from the mixture.
    4. Lightly greased a pan with some oil and place the kebeabs on it.
    5. Cook on medium heat for 15 minutes or until they are done.
    6. Set aside.

    To Make Gravy

    1. Heat oil in a wok or pan over medium heat.
    2. Saute onion and ginger garlic paste for3-4 minutes or until the onions turn light brown.
    3. Add spices, yogurt and tomatoes and cook on high heat with constant stirring until the tomatoes are cooked.
    4. Add a splash of water if necessary.
    5. Now add all the spices and adjust the seasoning according to your taste.
    6. Add 1/2 cup water and stir well.
    7. Bring to a boil and add your kebabs and cover the wok.
    8. Cook on very low heat for 20 minutes or until gravy is well done.
    9. Take it out in a serving dish.
    10. Garnish with coriander, green chillies and ginger julienne.
    11. Delicious Kebab Karahi is ready to serve. ENJOY!!

    You can also make these kebabs from chicken or beef mince.

    Aloo Keema (Minced Lamb With Potatoes)

    A very satisfying meal,You can categorize it as an exotic gourmet dish or a very simple homely dish,any which ways its very fulfilling and a treat to your taste buds.

    This is my mothers recipe for a simple Mince Curry or aloo keema as us Pakistanis like to call it. It is a really tasty curry especially when you add potatoes and spices like I did! Here’s a classic Aloo Keema – Minced Lamb With Potatoes Recipe that everyone, even the fussy kids, will love. Do try and don’t forget to share your experience with us!!

    Minced Lamb With Potatoes (Aloo Keema)

    • 500 gm lamb minced (keema)
    • 2 onions (finely chopped)
    • 2 to matoes (finely chopped)
    • 1 tablespoon ginger garlic paste
    • 3 medium potatoes (peeled & cubed)
    • 4 tablespoon sunflower oil
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • 1 teaspoon red chili powder
    • 1/2 teaspoon cayenne powder
    • 1/4 teaspoon turmeric powder
    • salt to taste
    • 2 tablespoon plain yogurt
    • 4 green chilies (thinly sliced)
    • few coriander leaves

    Method

    1. Heat oil in a deep pot or wok over medium high heat. Add the onions and cook for 3-4 minutes or until they turn light brown.
    2. Add the garlic and ginger paste. and saute for about 1 minute till you smell the aroma.
    3. Now add the chopped tomatoes next along with cumin powder, turmeric, cayenne, coriander and red chilli powder.
    4. Stir and cook for 5 minutes or until oil comes on top.
    5. Add minced. Turn heat to high and stir it with a spoon for 20 minutes on medium high heat.
    6. The meat will start separating,changing color, sweating and becoming watery. Do not worry, everything is going as per plan.
    7. Now add yogurt, 1/4 cup water and salt. Stir well.
    8. Turn the heat to the lowest possible on your burner.
    9. Cover the pot with a lid and let it simmer on low heat for about 20 minutes or until minc is cooked thorough. Note; {You ll need to stir and check periodically to ensure that lamb is not sticking to the bottom. Add more water if needed.}
    10. Now add the potatoes and again cover the pot.
    11. Cook covered for 10 minutes or until the potatoes are almost cooked.
    12. Remove the lid. Check the seasoning and cook on high again for 5 minutes till everything comes together.
    13. Garnish with chopped coriander and green chilies.
    14. Dish it out. Minced Lamb With Potatoes are ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with chapati or brown rice along with green salad.

    Recipe Note’s:

    1. The cooking time will vary if you are using beef or chicken.
    2. Don’t add too much water at the beginning because ground meats leave moisture as they cook.Add water at intervals as per the consistency you want.
    3. At the end of about 20 minutes of cooking you will see that oil separating from and change in color of the ground meat.

    How to make Egg Paratha 

    Learn how to make egg Paratha by following the step by step instructions as shown in  pictures. The recipe is simple and very easy to follow. You would successfully cook it in first attempt. (InshaAllah)

    Bismillah Let’s Begin!

    Step 1 : Mix the wheat flour with salt, water and knead to a smooth dough. Keep it aside for 30 minutes.

    Step 2: Then make small balls from the dough and keep it aside.

    Step 3: Take a mixing bowl, add mashed eggs add salt, pepper, chili powder, coriander and little bit of oil. Mix thoroughly.

    Step 4:Take the dough balls and roll out each ball into a thin disc or a chapati.

    Step 5:In the middle, place the filling mixture on one round chapati and cover with a another round chapati and seal the edges.

    Step 6:Now sprinkle a little dry flour on top, then roll the paratha to a thin round shape chapati. Take care it should not break while rolling it out.

    Step 7:Grease your tava OR griddle with Ghee (clarified butter) and place the paratha over it and when the base turns slightly golden color, apply Ghee (clarified butter) on the top and turn the paratha on the other side.

    Step 8:Fry these parathas on both sides, pressing gently and keep turning the paratha until it turns golden brown.

    Spinach and Cheese Omelet Recipe

    This organic spinach and cheese omelet is full of flavors, it makes a perfect healthy breakfast. Enjoy it!

    • 4 organic eggs
    • 1 cup baby spinach leaves (chopped)
    • 4 tablespoon grated cheddar cheese
    • 2 teaspoon butter or olive oil
    • 1/4 teaspoon pepper
    • salt to taste
    1. Beat eggs in a bowl.
    2. Stir in the baby spinach.
    3. Season with salt and pepper. Mix well.
    4. Melt butter in a pan over medium heat.Pour the egg mixture it it. As egg mixture starts to cook, gently lift edges of omelet with a spatula and tilt pan so uncooked egg mixture flows underneath.Cook for 2 minute or until almost set.
    5. Sprinkle cheese over the omelet.
    6. Fold omelet in half, allowing cheese to melt.
    7. Slide cooked omelet onto a serving plate. Delicious Spinach and Cheese Omelet is ready to serve.

    Serve with buttered toast and green smoothie.

    • 4 onions (grated)

    • 1 tbsp coriander powder
    • 1 tsp garam masala powder
    • 1/4 tsp turmeric powder
    • salt to taste

    For Garnishing

    • 2-3 green chilies (thinly sliced)
    • 4 tbsp fresh coriander leaves (finely chopped)

    Method

    1. Heat oil in a pan over medium heat.
    2. Saute onion in hot oil until translucent.
    3. Now add ginger garlic paste and mince. Cook, uncovered, on high heat for 10 minutes, stirring thrice.
    4. Now stir in the tomato puree, salt, chilli, coriander powder, turmeric powder.
    5. Cook at high heat for 25 minutes or until cooked is thorough.
    6. Transfer into a serving dish.
    7. Sprinkle Garam Masala over it.
    8. Garnish with coriander leaves and green chilies. Bhuna Keema is ready to serve. ENJOY!!

    Serving Suggestions:
    Serve with boiled rice or roti.

    • 2 tablespoon chili garlic sauce
    • 2 teaspoon green chili sauce
    • few lemon wedges
    • oil for shallow frying

    Directions

    1. Cook paratha’s on a hot griddle until crispy on both sides.
    2. Keep warm and set aside.
    3. Beat egg in a small bowl.
    4. Dip shami kabab’s in egg then fry in hot oil for 2 minutes or until golden brown.
    5. Remove from the oil and absorbent on kitchen paper.
    6. Apply mayonnaise on paratha’s.
    7. Put two shami kabab’s on each paratha.
    8. Top with onion, tomato slices and lettuce leaves.
    9. Drizzle chili garlic and green chili sauce over them.
    10. Roll them tightly and secure with a wooden pick. Delicious Shami Kabab Paratha Rolls are ready to serve.

    Serving Suggestions:
    Serve with French fries and Chili Garlic Sauce.
